The Effects of the Improvement of the Food Service Environment on Patients′ Satisfaction with the Hospital Food Service - Focused on Case Studies - (급식환경 개선이 환자식 만족도에 미치는 영향 -사례 연구 중심으로 -)

  • The purpose of this study was to assess how the changes in the food services environment on patients satisfaction with the hospital food service. Statistical data analyses were completed using the SPSS 11.0 program. The results can be summarized as follows: The flow line and environment of the food services in the hospital were improved through remodeling, which included the replacement of all cooking utensils, ventilation facilities and material storages, the purchase of a combi steamer, and the change of meal carts and trays. After the remodeling, the hospital food service was improved so that it provided spoons at each meal, diversified the menu utilizing the combi steamer, served event meals three times a week as well as water boiled with burned rice in the morning twice a week. In addition, various types of tableware were used in the table settings to produce attractive visual effects. Among the 10 items included on the patient satisfaction questionnaire, ″satisfaction with offered menus″ (p < 0.01) showed significantly higher scores before the remodeling. ″cooking/seasoning of food″, ″amount of meals″ and ″taste of meals″ were not statistically significant, but showed increased satisfaction after the remodeling. However ″temperature of food″, ″cleanliness of clothes and features″ and ″satisfaction with meal times″ were not statistically significant, but showed decreased satisfaction after the remodeling. Facilitating Pre-Service Elementary Teachers' Productive Reflection on Their Science Teaching through Meta-Analysis of Their Reflective Journals (수업 반성 저널의 메타 분석 활동을 통한 초등 예비교사의 생산적 반성 증진)

  • In this study, the researcher aimed to increase productive reflection of pre-service elementary teachers through meta-analysis of their own reflective journals. The meta-analysis activities are expected to enhance their learning effectively as a kind of self-assesment. During 8 week simulation teaching, 26 pre-service teachers kept individual journal writing and the meta-analysis activities were implemented twice (after the 3rd and 8th week). Right after the first meta-analysis, the pre-service teachers' productive reflection increased clearly. However this would not guarantee the effect would last long time period. By analyzing 8 week reflective journals, reports on meta-analysis activities and small group interview, this study shed light on practical ways of enhancing reflective teacher education.

A Change of Mathematics Teaching Efficacy of Pre-service Mathematics Teachers in Teaching Practice Course (교육실습을 통한 예비수학교사들의 수학교수효능감 변화)

  • The purpose of this article is to study the change of mathematics teaching efficacy of pre-service mathematics teachers in teaching practice course. For this purpose we collect data through questionnaire from 61 pre-service mathematics teachers. To make a questionnaire we rearrange Ryang's MTES items. The pre-service mathematics teachers fill out the questionnaire before and after teaching practice course. The data are analyzed by paired t-test using SPSS23. The result of paired t-test show that the difference between pre-test scores and post-test scores is significant statistically. So we can conclude that the mathematics teaching efficacy of pre-service mathematics teachers is changed and improved after teaching practice course.

  • Coronavirus disease 2019 (COVID-19) is a new type of respiratory disease that has been announced as a pandemic. The COVID-19 outbreak has changed the way we live. It has also changed the food service industry. This study aimed to identify trends in the food and food service industry after the COVID-19 outbreak and suggest research themes induced by industry trends. This study investigated the industry and academic information on the food and food service industry and societal trends resulting from the COVID-19 outbreak. The most noticeable changes in the food industry include the explosive increase in home meal replacement, meal-kit consumption, online orders, take-out, and drive-through. The adoption of technologies, including robots and artificial intelligence, has also been noted. Such industry trends are discussed in this paper from a research perspective, including consumer, employee, and organizational strategy perspectives. This study reviews the changes in the food service industry after COVID-19 and the implications that these changes have rendered to academia. The paper concludes with future expectations that would come in the era of COVID-19.

  • Externally, there is urgent need Strengthening the competitiveness of agriculture in terms of production, processing and consumption. And development of high-quality services is particularly essential for provide safe food to consumers, internally. We studied the concept of service science, service models and service development methodology, then researched strengthening agricultural competitiveness through analysis of service viewpoint. After then, in the service level and service science, we elicit the service components for the defined new business, which is composed of private service and supporting service for Mungyeong omija industry. In this research, we evaluate the possibilities that agriculture is not primary industries but service industries for competitiveness. We suggest four key service composition for win-win strategy in Mungyeong omija industry. That is authenticity service, decision price service, decision rating service, establish infrastructure for year-round sale.

  • We assess service delivery system for outpatients of general hospital(A) using. service blueprint. Service blueprint for outpatients' service process currently being implemented in general hospital(A) is analysed to improve hospital services and define hospital service delivery system more accurately. In addition, comparative analysis of service blueprint before and after improvement was conducted to find that health care services is now more customer-oriented and hospital employees can link their duties with service delivery system. The analysis of service blueprint of outpatients' service process suggested in this study are useful for setting strategies for health care service. It also helps service process design and service digitalization of other general hospitals in the future.

A Study on Changes of Primary Caregivers' Fatigue, Depression and Life Satisfaction by Using Dementia Day Care Service (치매노인의 주간보호서비스 이용에 따른 주부양자의 피로, 우울, 생활 만족도 변화)

  • Purpose: This study is to examine how dementia day care service affects fatigue, depression and life satisfaction of caregiver. Methods: The study was conducted using a convenient sampling method from 6 Dementia Day Care Center in Incheon. Thirty nine primary caregivers answered the questionnaires. Pre-test was done before demented elders start using the dementia day care center and post-test was done five months after. Data were analyzed by using descriptive statistics and paired t-test. Results: There was a significant difference in caregivers' fatigue level after using dementia day care service(t=2.188, p=.035). Results of subcategories were as follows; There was a significant difference in caregivers' physical fatigue level(t=2.270, p=.029) and psychological fatigue level(t=2.277, p=.029) after using dementia day care service. However, there was not significant difference in caregivers' neurological fatigue level(t=1.312, p=.197). There was a significant difference in caregivers' depression level(t=3.066, p=.004) and life satisfaction(t=-2.131, p=.040) after using dementia day care service. Conclusion: The results indicated that dementia day care service is helpful for family with demented elders. Therefore it is necessary to expand dementia day care center in terms of its size and numbers in order to support increasing number of demented elders and their families.

Analysis of the Change of Health Status Among the Republic of Korea Air Force Soldiers During Military Service

  • Objectives: The aim of this study was to investigate whether the health status of Republic of Korea Air Force (ROKAF) soldiers changed after one year of military service. Methods: We selected 483 ROKAF soldiers from the 11 749 recruits who participated in the 2011 physical examination. The selected soldiers underwent another physical examination in 2012 for advancement to senior airman. Data from 2011 and 2012 were merged. To collect data on lifestyle, a questionnaire was sent to all included subjects via the military intranet e-mail service. Results: The percentage of recruits with an abnormal alanine transaminase level (normal range <40 IU/L) decreased from recruitment (13.7%) to the following year (2.7%). Moreover, the percentage of obese soldiers (body mass index ${\geq}25kg/m^2$) decreased from recruitment (20.5%) to the following year (10.4%). There was a significant change in mean duration of exercise carried out each day before ($0.8{\pm}1.3$ hours) and after ($1.0{\pm}0.7$ hours) joining the ROKAF service. Conclusions: These ROKAF soldiers were generally in good health before and after joining the armed service. After one year of military service, the health status of most soldiers improved, especially with respect to body mass index and alanine transaminase level.

Analysis on the effects of first aid and emergency rescue in-service program for the first respondents(drivers) (최초반응자의 특성에 따른 "구조 및 응급처치 교육"에 대한 분석)

  • This study is implemented in the Department of Emergency Medical Technology of the Cheju Halla College in to evaluate behavioral changes in the recognition of the importance of the first aid, coping ability in the field, and competence of the first aid skills after taking the in-service program. The in-service program was hold from December 14 to December 22, 1998 under the title of "1998 First Aid and Emergency Rescue Training" for 176 drivers. The Questionnaire was distributed to 176 drivers, among them, 88 drivers took in-service program and 88 ones did not. After the data analysis, following conclusions we re made. 1. There are no significant statistical differences among demographic factors such as the level of education, age, career, and marital state of the subjects in the recognition of the importance of the first aid and competence of the first aid skills. 2. The drivers, who were the in-service program, significantly higher score in educated in represented all the area of recognition of the importance of first aid than non-educated drivers. 3. The drivers, who were educated in the in-service program, showed also significantly high score in competence of the first aid skills. According to the conclusions, there were significant change made In the recognition of the importance of the first aid and competence of the first aid skills after the in-service program. Therefore, nationwide emergency training program should be considered to improve emergency care ability of the nation. To make the program more effective for drivers, the in-service program should be required to newly licensed drivers during orientations or licence issuing.

Objects The objectives of this study were to examine the present state of Oriental clinical service based on Constitutional medicine and to make an accurate estimate of it’s scale after 10 years. 2. Methods The data for this study were collected from a questionnaire survey to 319 Traditional Korean Medical doctors who were selected as random samples. And this questionnaire is consist of several inquiries related with management and application of constitutional medicine. 3. Results and Conclusions The major results of this survey are following: l. The 52.8% facilities of all Oriental medical centers and Clinics in the whole country are applying Constitutional medicine for treating patients. 2. The 24.8% persons of all health workers are engaged in Constitutional clinical service. 3. The proportion of sales by Constitutional clinical services to the total sales by Traditional clinical service is 23.5% in 2005. 4. The proportion of application to medical care insurance by Constitutional clinical service is 17.9% of all amounts After taking these results into consideration, the sales of Constitutional clinical service now are estimated to make up 23.8% percent of the total traditional medical service and the amount of it’s sales after 10 years is expected to increase up to 3.6 times as much as the current quantity.
