길항미생물에 의한 된장 중 아플라톡신 제어 및 그 품질특성 (Control of Aflatoxin and Characteristics of the Quality in Doenjang(soybean paste) Prepared with Antifungal Bacteria)

  • 본 연구는 아플라톡신 생성균의 생육을 억제시킬 수 있는 길항 미생물을 분리하고 그 길항미생물을 이용한 된장 제조시 아플라톡신 제어 효과와 된장의 품질에 미치는 영향을 조사하였다. 아플라톡신 생성균인 Asp. flavus와 Asp. parasiticus에 대해 길항력이 가장 강력한 균을 분리하였으며 그 균은 Bacillus 속의 특성을 보였다. 분리한 길항균과 아플라톡신 생성균을 처리하여 제조한 된장의 아플라톡신 함량은 Asp. flavus을 처리하였을 때 아플라톡신 $B_1$이 27.2 ppb에서 길항균과 함께 처리로 87.5% 감소한 3.4 ppb였으며 Asp. parasiticus을 처리하였을 때 아플라톡신 $B_1$이 30.3 ppb에서 길항균과 함께 처리로 87.8% 감소한 3.7 ppb였다. 길항균과 아플라톡신 생성균을 처리한 된장의 유리지방산, 유리당, 유기산함량은 대조구와 큰 차이 없이 비슷하였다. 유리아미노산 총 함량은 길항균과 아플라톡신 생성균 처리로 다소 낮아지는 경향을 보였으나 큰 영향을 미치지 못하였다. 주로 glutamic acid, aspartic acid, tryptophan이 감소하였다. 된장의 향기성분은 아플라톡신 생성균을 처리하였을때 대조구에 비하여 큰 변화가 없었다. 그러나 길항균 처리로 변향인 2-pentyl furan와 불쾌취인 butanoic acid류가 소멸되거나 감소하고 octadecene 화합물은 생성 되었다. 결국 분리된 길항균은 아플라톡신 생성을 억제시켰으며 된장의 품질에는 그다지 영향을 미치지 않았다.

  • The determination of fungal flora in some kinds of cereals have been carried out in other to obtain an appropriate information of the population of fungi and toxin productivity The results were summarized as follow; 1. The predominant genera were Aspergillus, Penicillium, Mucor, Rhizopus, Alternaria, Fusarium. 2. Six of Aspergillus flavus were aflatoxin-producing strains. 3. Sample barleys were found to contain the highest content of aflatoxin. 4. In electron microscopic studies of liver cells from mouse which had been injected with crude toxin, the liver cells showed the cytoplasmic change.

  • Effect of allylisothiocyanate on the enzyme activites including malate degydrogenase, isocitrate dehydrogenase, NADPH and acetyl CoA which were related to aflatoxin production of Aspergillus parasticus R-716 were invetigated. The activities of malate dehydrogenase (EC.1.1.1.37), isocitrate dehydrogenase (E.C.1.1.1.42) and NADPH oxidase (E.C.1.6.99.1) indicated relatively high in the 50 ppm allylisothiocyanate-added-culture. In contrast, the activity of acetyl CoA in the 50 ppm allylisothiocyanate-added-culture showed rather lower level through the cultivation.

  • In order to survey the distribution of molds in Korean Ginseng and its products, molds were isolated from their sample to obtain 22 strains. Among them, 3 strains were found to produce aflatoxin and identified as Aspergillus flavus, Aspergillus paraciticus and Penicillium puberulum. The type of aflatoxin produce was identified as $B_1$, $B_2$ and $G_1$.

  • Through a modification of allicin structure a disagreeable odor and chemical instability of allicin can be improved. 3-Alkoxy-6-allylthiopyridazine derivatives exhibit a superior effect for prevention and treatment of hepatic diseases induced by carbon tetrachloride and aflatoxin B1 and for prevention of human tissues from radiation. These compounds inhibit also efficiently SK-Hep-1 cell proliferation through induction of apoptosis. So another 4,5-mono- or di-substituted 3-alkyloxy-6-allylthiopyridazine derivatives were synthesized on purpose to find out SAR of allylthiopyridazine in hepatoprotective and hepatotherapeutic acitivitis and to develop more effective drug candidate.
