모시대 분말을 첨가한 미용식품(모시대 두부)의 품질 특성 (Quality Characteristics of Inner Beauty Food (Mosidae Tofu) by the Addition of Adenophora remotiflora Powder)

  • In this study, physio-chemical, mechanical, and sensory characteristics of Tofu containing 0, 0.5, 1.0, and 2.0% Adenophora remotiflora powder were examined. In addition, we examined the potential of utilizing Adenophora remotiflora powder as a functional food material by estimating total phenol contents, electron-donating abilities, and hydroxyl radical scavenging activities of the hot water and ethanol extracts of Adenophora remotiflora powder in the range from 0~2.0%. The total phenol content of the ethanol extracts of Adenophora remotiflora powder was $487.93{\mu}g/mL$ while the that of the water extract of Adenophora remotiflora powder was $403.70{\mu}/mL$. The electron-donating abilities of the ethanol and water extracts of Adenophora remotiflora powder were 75.37 and 86.10%, respectively. The hydroxyl radical scavenging activities of the ethanol and water extracts of Adenophora remotiflora powder were 65.50 and 66.22%, respectively. We also evaluated the quality characteristics of Tofu containing Adenophora remotiflora powder. In the case of color values, as the level of Adenophora remotiflora powder increased, the values of L (lightness) and a (redness) decreased, whereas that of b (yellowness) increased. In the case of mechanical properties, as the level of Adenophora remotiflora powder increased, hardness, gumminess, and chewiness values increased (p<0.05), whereas springiness and cohesiveness values decreased (p<0.05). In the case of sensory evaluation, MPT1.0 scored significantly higher in color, flavor, tenderness, texture, and overall quality. To sum up, Tofu containing 1% Adenophora remotiflora powder showed the highest overall preference.

  • Sulgidduk samples containing 1, 2, and 4% Adenophora remotiflora powder and a control were examined for moisture content, gelatinization property, color, textural characteristics, and sensory qualities to determine the optimal ratio of Adenophora remotiflora powder in the formulation. The highest viscosity, lowest viscosity, final viscosity, setback and breakdown decreased as the contents of Adenophora remotiflora powder increased in the gelatinization property of flour blends of rice cake made with Adenophora remotiflora powder. The water content of rice cake with Adenophora remotiflora powder was 40.54~41.30% and there was no significant difference between samples with Adenophora remotiflora powder. L values indicating brightness were highest in the control group and all of the a values displayed green color indicating that they were negative. The b values were lowest in the control group and the values increased as the level of Adenophora remotiflora powder increased. Evaluation of the mechanical characteristics of rice cake with Adenophora remotiflora powder, hardness, cohesion, adhesion and chewiness were all higher in the control group and as its contents were rich, such properties were reduced. In addition, there was no significant difference between adhesion and chewiness. Adhesion and elasticity were low in the control group and as its contents were rich, such properties increased. The results of the sensory test revealed that the, control group containing 1% Adenophora remotiflora powder had the highest color, flavor, taste and overall preference.

모시대 분말 첨가 수준에 따른 옐로우 레이어 케이크의 품질 특성 (Quality Characteristics of Yellow Layer Cake Prepared with Different Levels of Adenophora remotiflora Powder)

  • The purpose of this study was to improve the quality of yellow layer cake by adding the Adenophora remotiflora powder. The effects of the Adenophora remotiflora powder in on the final product quality of yellow layer cake and the optimum amount of the Adenophora remotiflora powder in the yellow layer cake formula were investigated. The more increased amounts of Adenophora remotiflora powder was added to the samples, the resulted in "L", and Hunter's "a" and "b" values of the crust color of yellow layer cake were significantly decreased (p<0.05). In the case of crumb color, the more increased levels of Adenophora remotiflora powder led to the samples, the "L" and "a" values were significantly decreased (p<0.05), but "b" value increased significantly (p<0.05). As more Adenophora remotiflora powder was added to the cake samples, the Hardness, Gumminess and Chewiness were significantly increased (p<0.05), but Springiness and Cohesiveness were did not. The results of sensory evaluation showed revealed that the addition of 2% of Adenophora remotiflora powder of overall acceptability were most preferred. Larger scanning electron microscopy revealed the presence of numbers of greater concentrations of cells with different sizes were observed for in samples from products that received 1 % Adenophora remotiflora powder addition. Collapsed cells and cell coalescence with big large and irregular shapes were shown observed in samples that were amended with at 2, 4, and 8% addition Adenophora remotiflora power. The addition of Adenophora remotiflora powder was shown to improved the functionality and quality characteristics such as color, taste and flavor of yellow layer cake. Therefore, it was expected that the 2% addition of Adenophora remotiflora powder will improve the preference to the yellow layer cake.

모시대(Adenophora remotiflora) 개체군의 식생구조에 관한 연구;강원도 점봉산 단목령을 중심으로 (Vegetation structure of the Adenophora remotiflora population;Focusing on community Danmoknyeong in Jeombongsan of Gangwon-do)

  • Objectives : This study was carried out to investigate vegetation structure of Adenophora remotiflora population found to be distributed in Jeombongsan Danmokryeong. Methods : From 2007 June until November, $2m{\times}2m$ quadrat was established in Adenophora remotiflora community in order to record a dominants and coverage. Results : 1. The vegetation of Adenophora remotiflora community was classified into Astilbe chinensis subcommunity and Calamagrostis langsdodfii subcommunity. Differential species of community was Angelica deacrusica and Lychnis cognata. The Adenophora remotiflora community was found in south face, high of altitude and low slope degree. 2. The value of species diversity ranged from 5.547152 to 10.077886, euenness ranged from 0.779749 to 0.986358 and dominance ranged from 0.013642 to 0.220251. 3. Aconitum jaluense was located at the higher altitudes than those of other species. Lychnis cognata, Lychnis cognata and Pedicularis resupinata was located at the lower altitudes and slope degree than those of other species. Conclusions : The vegetation of Adenophora remotiflora community was classified into Astilbe chinensis subcommunity and Calamagrostis langsdodfii subcommunity. The value of species diversity was low and community was dominated by a large number species. The Adenophora remotiflora community was found in south face, high of altitude and low slope degree.

  • Objectives : A morphological classification among Adenophora triphylla var. japonica, Codonopsis lanceolata, Adenophora remotiflora and Codonopsis pilosula was made through microscopic observation. Method : The slice of the tested material made by paraffin section technique was colored with Safranine Malachite Green contrast methods, and then observed and photographed by olymphus-BHT. Result : 1. Codonopsis pilosula is like a long cone, with amole-like projected parts at the beginning of the roots. 2. Adenophora triphylla var. japonica, Codonopsis lanceolata, Adenophora remotiflora, and Codonopsis pilosula are all similar as following: 1) Cork layers are composed of a few to over 10 subsidiary cells, with individual or a group of stone cells among them. 2) Phloem is wide and has a milk tube. Conclusion : Adenophora triphylla var. japonica, Codonopsis lanceolata, Adenophora remotiflora, and Codonopsis pilosula are all similar and difficult to be distinguished through microscopic observation, so that chemical experiments should be conducted for their identification.

Adenophora remotiflora protects human skin keratinocytes against UVB-induced photo-damage by regulating antioxidative activity and MMP-1 expression

  • BACKGROUND/OBJECTIVES: Chronic ultraviolet (UV) exposure-induced reactive oxygen species (ROS) are commonly involved in the pathogenesis of skin damage by activating the metalloproteinases (MMP) that break down type I collagen. Adenophora remotiflora (AR) is a perennial wild plant that inhabits Korea, China, and Japan. The present study investigated the protective effects of AR against UVB-induced photo-damage in keratinocytes. MATERIALS/METHODS: An in vitro cell-free system was used to examine the scavenging activity of 2,2-diphenyl-1-picrylhydrazyl (DPPH) free radical and nitric oxide (NO). The effect of AR on ROS formation, antioxidant enzymes, elastase, MMP-1 level, and mRNA expression of MMP-1 were determined in UVB-irradiated human keratinocyte HaCaT cells. RESULTS: AR demonstrated strong DPPH free radical and NO scavenging activity in a cell-free system exhibiting $IC_{50}$ values of 1.88 mg/mL and 6.77 mg/mL, respectively. AR pretreatment dose-dependently attenuated the production of UVB-induced intracellular ROS, and antioxidant enzymes (catalase and superoxide dismutase) were enhanced in HaCaT cells. Furthermore, pretreatment of AR prevented UVB-induced elastase and collagen degradation by inhibiting the MMP-1 protein level and mRNA expression. Accordingly, AR treatment elevated collagen content in UVB-irradiated HaCaT cells. CONCLUSION: The present study provides the first evidence of AR inhibiting UVB-induced ROS production and induction of MMP-1 as a result of augmentation of antioxidative activity in HaCaT human keratinocytes. These results suggest that AR might act as an effective inhibitor of UVB-modulated signaling pathways and might serve as a photo-protective agent.

한국특산종 외대잔대(Adenophora racemosa)의 분자계통학적 위치 (Molecular Phylogenetic Position of Adenophora racemosa, an Endemic Species in Korea)

  • Adenophora racemosa is recently reported as a new Korean endemic plant species. However, the phylogenetic relationship of this genus has been controversial due to the morphological similarity and frequent morphological change of aerial parts. To verify the phylogenetic position of Adenophora racemosa and phylogenetic relationship of genus Adenophora, we analyzed the internal transcribed spacer (ITS) sequence of nuclear ribosomal DNA (nrDNA) and random amplified polymorphic DNA (RAPD) using 21 individual of 6 Adenophora species, A. verticillata, A. divaricata, A. racemosa, A. remotiflora, A. stricata and A. tetraphylla. In comparative analysis of the nrDNA-ITS sequences, we could not found not only any species specific nucleotide sequence but also could not estimated their inter or intra species. In the phylogenic analysis based on the RAPD derived DNA polymorphism, Adenophora species were classified into four groups by clustering analysis of the UPGMA. These results suggest that the DNA fingerprinting based on RAPD is more suitable than nrDNA-ITS sequence for the phylogenetic analysis of Adenophora species.

모시대(Adenophora remotiflora) 추출물의 휘발성 성분 및 항산화 활성 (Volatile Compounds and Antioxidant Activities of Adenophora remotiflora)

  • 신선 및 자연건조 모시대의 휘발성 성분을 SDE 방법으로 추출한 후 GC 및 GC/MS를 이용하여 분석하였으며, 모시대의 휘발성 성분 추출물을 시료로 하여 linoleic acid system과 DPPH 방법으로 유리라디칼 소거 활성을 측정하였다. 신선한 모시대에서 산류 4종, 알데하이드류 7종, 알코올류 12종, 에스터류 9종, 탄화수소류 23종, 케톤류 2종 및 기타 3종의 총 60종 휘발성 성분이 확인되었다. 자연건조한 모시대에서 확인된 성분은 총 72종으로 산류 6종, 알데하이드류 11종, 알코올류 14종, 에스터류 10종, 탄화수소류 25종, 케톤류 3종 및 기타 3종이었다. Linoleic acid peroxidation 억제효과를 살펴보면, BHT가 가장 높은 억제 효과가 나타났고 ${\alpha}-tocopherol$과 비교하였을 때 신선한 모시대 추출물의 휘발성 성분의 억제효과가 높았으며, 자연건조 시료는 동일하였고 동결건조 시료는 낮게 나타났다. 또한 모시대 휘발성 성분 추출물의 항산화 활성을 DPPH로 측정한 결과, BHT가 가장 높았으며 자연건조한 모시대의 휘발성 성분이 ${\alpha}-tocopherol$ 보다 높은 유리라디칼 소거활성을 보였으며 신선한 모시대의 휘발성 성분도 ${\alpha}-tocopherol$과 같은 수준의 활성을 나타내었고 동결건조 시료는 낮게 나타났다.
