Manufacturing and Characteristics of Yoghurts from Milk Added with Domestic Nuts (국산 견과류 첨가 요구르트의 제조 및 특성에 관한 연구)

  • Curd yoghurts were manufactured by addition of chestnuts and walnuts which were special agricultural products in Chungnam area. The nut powders were added to the yoghurts in the given concentration of 1~4%. The yoghurts after 12 hours fermentation were examined for pH, acidity, cell counts of lactic acid bacteria, viscosity, chemical composition and sensory test and preservation of yoghurts. The results obtained were summarized as follows; 1. The chestnut powder decreased pH, whereas increased acidity in yoghurts, however, the walnut powder did not change significantly for pH and acidity in yoghurts. 2. The cell counts of lactic acid bacteria was higher for 2% chestnut powder yoghurt ($2.6{\times}10^9/ml$) than 2% walnut powder yoghurt ($1.7{\times}10^9/ml$) and control yoghurt. 3. The viscosity of yoghurt was higher for 4% chestnut powder yoghurt (3,225 centipoise) than control (1,638 centipoise) and 4% walnut powder yoghurt (2,010 centipoise). 4. The protein content of yoghurts were 3.99% for both 2% chestnut powder and 2% walnut powder yoghurts, and solid-non-fat contents of yoghurt were 15.10% for chestnut powder yoghurt and 13.65% walnut powder yoghurt. 5. The scores of sensory tests were higher in chestnut powder yoghurt for tastes, odor and texture, and in walnut powder yoghurt for tastes, odor and texture compared to control yoghurt. 6. When yoghurts were stored at $5^{\circ}C$ for 14 days for preservation test, the acidity and number of lactic acid bacteria were not changed significantly.

Epidemiological Studies on Respiratory Infection in Adullt Rabbits (성토의 호흡기 감염증에 관한 역학적 연구)

  • For the epidemiological studies of the respiratory infection from 1,918 heads of adult rabbits from January 1980 to December 1985 at an integrated farm, the causative agents were. Isolated samples 92 from of lungs and nasal discharges, and identified by serological and non-serololgical tests, the loss rates by the infection were also investigatyed, and the antimicrobial sensitivities of the isolates were determined. The results obtained were as fellows : 1. The loss rate by respiratory infection was 11.9% among 1,819 heads which raised and 41.7% among 518 heads which lost by diseases, and the rate increased annually. 2. The loss rate of rabbits in Spring (45.0%), Summer (45.5%) and Winter (53.5%) showed significantly higher (P < 0.01) than that in Autumn(29.1%). 3. The loss rate of Rex (56.3%) showed significantly higher (P<0.05) than New Zealand White (40.7%) and Californian (42.0% ). 4. P. multocida.(37.9%), B. brouchiseptica (16.0%), E. coli (10.6%) and so forth were isolated from 92 samples of lungs and nasal discharges. 5. Sixty fours trains of P. multocida were typed by serological or non-serological tests and their all serotypes were A type (62 strains) except 2 strains of untypable. 6. In antimicrobial sensitivity test for 64 isolates of P. multocida, all the strains tested were highly sensitive to chloramphenicol(95.3%), colistin (95.3%), gentamicin (92.2%), kanamycin (90.6%), neomycin (82.8%) and tetracycline (81.3%), but exhibited low sensitivity to streptomycin (26.6%), and all strains were resistant to lincomycin. 7 Twenty seven isolates of B. brouchiseptica showed higher sensitivity to cephalothin (100%), erythromycin (100% ), gentamicin (100%). trimethoprim+sulfamethoxazole (100%), chloramphenicol(88.9%), kanamycin(88.9%), neomycin (88.9%) and colistin (85.2%), but lower sensitivity to nitrofurantoin (18.5%), penicillin(18.5%). streptomycin(18.5%) and ampicillin (14.8%), and all strains were resistant to lincomycin.

  • The $^{14}C$-warfarin used as rodenticids was identified from various organs of sprague dawley with scintillation counter. And the cytochrome p-450 which was induced by coumarin derivatives was identified with electrophoresis. The distributions of $^{14}C$-warfarin after $14.8{\mu}Ci/kg$ oral application at each organ was as follows; urine-7.5%, blood-0.44%, feces-0.9%, liver-0.66%, lung-0.86%, kidney-0.8%, heart-0.43% and spreen-0.33% after 24hrs. The cytochrome p-450 was purified by Octyl Sepharose CL-4B hydrophobic chromatography and isozymes were 50.8 Kd in control group, 53.3 Kd and 55.2 Kd in coumarin pretreated group and 50.8 Kd, 54.6 Kd and 57.7 Kd in warfarin pretreated group.

Pysicochemical and Bacteriological Properties of Yogurt made by Single or Mixed Cultures of L. bulgaricus and S. thermophilus (L. bulgaricus 와 S. thermophilus 의 단독 및 혼합배양에 의한 요구르트의 이화학적 미생물학적 특성)

  • The pysicochemical and bacteriological properties of yogurts made by single or mixed cultures of L. bulgaricus FRI025 and S. thermophilus CHI were investigated. L. bulgaricus FRI025 which was isolated from raw milk was selected as starter culture among 22 strains of lactic culture by measuring viscosity, flavor, growth and acid production ability. The acid production and number of viable cell were increased by using L. bulgaricus FRI025 and S. thermophilus CHI together in ratio of apporximately 1:1. The pH, titratable acidity, viable cell number and viscosity of yogurt were 4.08, 1.14%, $2.5{\times}10^{10}/ml$ and 2100 cp after 9 hours incubation at $40^{\circ}C$, respectively. The pH and viable cell number were decreased on the other hand titratable acidity and viscosity were increased after 7 days of storage at $4^{\circ}C$. The changes of quality did not show significantly after storage. The selected starter was much higher than commercial yogurt starter in the acid production and growth of starter. The yogurt nanufactured with selected starter was better than with commercial yogurt in sensory evalution such as taste, texture, flavor and overall acceptability.

Evaluation of Prescription Data for Development of Warfarin Nomogram in Korean Patients with Cerebral Infarction (뇌졸중 환자군의 Warfarin Nomogram 설정을 위한 실제 처방전 평가)

  • Warfarin is the most widely used oral anticoagulant in the world but maintenance of proper therapeutic range and prevention of adverse drug events always need to be careful. Especially, in Korea, warfarin dosing for patients with cerebral infarction is currently based on the nomogram which is done by foreign clinical trials not for the Korean. Therefore we evaluate warfarin dose of patients in the neurology and eventually get the base data of warfarin nomogram for Korean with stroke. We performed this study retrospectively on reviewing the medical charts to evaluate the prescribed loading dose (LD) and maintenance dose (MD) of warfarin and each responding International Normalized Ratio (INR) with any bleeding adverse drug reaction including of patient's characteristics for total 75 patients with stroke in the department of neurology of Kangnam ST. Mary's Hospital from January 2005 to June 2008. All evaluated patients should not be treated with warfarin in the past at all and should be initiated warfarin therapy first.ly at this time. All evaluated patients were divided as two classes by wafarin LD which is; 1) HDG - a high loading dosing group prescribed over 5mg, and 2) LDG - a low loading dosing group prescribed 5mg or below. As a result, average LD was $9.34{\pm}0.22$ mg (p=0.000) in HDG and $4.25{\pm}0.39$ mg (p=0.000) in LDG. Average baseline INR was $0.91{\pm}0.05$ (p=0.161) in HDG and $1.26{\pm}0.14$ (p=0.002) in LDG. On the first and second week, daily MD was $4.21{\pm}0.14$ mg (p=0.000) and $2.96{\pm}0.19$ mg (p=0.696) in HDG and also in LDG, $2.95{\pm}0.29$ mg (p=0.000) and $3.14{\pm}0.36$ mg (p=0.696). Also average reacting daily INR was respectively $2.53{\pm}0.12$ (p=0.141) and $2.51{\pm}0.16$ (p=0.678) in HDG, and in LDG, $2.11{\pm}0.17$ (p=0.141) and $2.42{\pm}0.14$ (p=0.678). After the second week, INR was not measured in regularly. Also most of underlying diseases were hypertension (n=38), diabetes mellitus (n=14), dyslipidemia (n=8) in order. Four ADRs with simple hemorrhage were occurred and those were due to drug interaction by comedication. In the conclusion, proper starting LD for Korean with stroke is 10 mg if baseline INR is around 1.0 or 5 mg if over 1.3. Proper MD need to be more evaluated in the future for setting up warfarin nomogram to make prospective study.

Survey on the General Physical and Chemical Characteristics of Apple Orchard Soils (사과원토양(園土壤)의 일반이화학적성질(一般理化學的性質)에 관(關)한 조사연구(調査硏究))

  • General physical and chemical characteristics of eleven apple orchard soils derived from granite, granodiorite, diorite, arkose sandstone and shale were investigated in relation to soil profile. The results are summerized as follows: 1. Soils were mostly sandy and showed pH 4.35 to 6.75, 1.14 to 5.58 of organic matter, 0.065 to 0.209% of nitrogen. All properties decreased with depth. 2. Total exchangeable bases of surface soils were comparablly low (4.89 to 17.81me/100g, Ca>Mg>K>Na). Cation exchange capacity ranged from 7.74 to 21.72 mg/100g and base saturation percentage from 22.52 to 94.62%. 3. Phosphorus content of surface soil was very low (less than 35.5 mg/100g). The contents of potassium (7.2-79.2 mg/100g), available copper (1.0-16.9 ppm) and water soluble boron (0.18-0.72 ppm) were high in surface soil but low with depth. The content of manganese showed clear difference with pH, that is, at pH 4 to 6 water soluble manganese ranged from 0.42 to 17.8 ppm and exchangeable manganese from 9.82 to 66.38 ppm but above pH 6 the water soluble was less than 0.70 ppm and the exchangeable less than 22.25 ppm.

Convergence Effect of College Students Knowledge on the Elderly and Recognition of Retirement on the Preparation for Retirement (대학생의 노인에 대한 지식과 노후인식수준이 노후준비에 미치는 융합적 영향)

  • The purpose of this study is to find out impact of level of awareness about old age, knowledge of the elderly and preparing for later life on college students in Korea. The study was composed of 133 students who were studying in 4-year system at colleges. Data were collected from October 1st to November 31st, 2019. Data analysis included an independent t-test, ANOVA, Pearson correlation coefficients and multiple regression using the SPSS 19.0 program. As a result of this study, factors influencing the subject's preparing for later life included knowledge of the elderly (β = 0.21, p = .012), men (β = 0.28, p = .001), and level of awareness about old age (β = 0.23, p =. 005), and the accounting power of these factors was 18% in total (F=9.14, p<.001). The results of this study suggest that understanding of the elderly must be improved in order to effectively prepare for later life and gender should be taken into account when planning for intervention.

Evaluation of Foodservice Workers' Food Safety Knowledge and Practices at Senior Welfare Centers (노인종합복지관 급식업무 종사자들의 위생지식 및 수행 평가)

  • The purpose of this study was to evaluate food safety practices and knowledge of foodservice workers at senior welfare centers. A self-administrated questionnaire was administered to 1200 foodservice workers at senior welfare centers in Seoul, Incheon and Gyeonggi province. Two hundred five responses were returned, with 181 usable for analysis. Statistical analyses were conducted using SPSS for Windows(ver.14.0). Volunteers of respondents comprised 64.1% while chefs and employees comprised 20.9%. Food safety practices were assessed using a 5-point scale(1: strongly disagree - 5: strongly agree), and the average score of food safety practices was 4.27. For specific practices, 'personal hygiene (4.46)' scored the highest, followed by 'cleaning and sanitizing(4.43)', 'separate handing(4.40)', 'cooking process(4.11)', and 'receiving and storing(4.05)'. There were significant differences in the practice average score by age(p<0.01) and experience of food safety education(p<0.01). The total score for food safety knowledge was 14.43 out of 20 points. In the category of food knowledge, 'equipment and facility(80.5%)' had the highest correct answer rate, followed by 'personnel hygiene(75.9%)', 'cooking process(70.4%)', and 'cleaning sanitizing(65.8%)'. There were significant differences in the knowledge total score by job type(p<0.05), age(p<0.05), working experience(p<0.05), chef certification (p<0.01), and frequency of food safety education(p<0.01). The knowledge and practice scores were significantly correlated(p<0.01). This study suggests that food safety education for foodservice workers should be conducted continuously and repetitively, and the development of proper education materials is needed to improve the effectiveness of food safety education for chefs, employees and volunteers at senior welfare centers.

Effect of Health Belief of Emerging Infectious Disease on Self-Efficacy for Healthcare among General Hospital Nurses (종합병원 간호사의 신종감염병 관리에 대한 건강신념이 건강관리 자기효능감에 미치는 영향)

  • This study was to examine relationships among health belief of emerging infectious disease and self-efficacy for healthcare and identify the factors that influence on self-efficacy for healthcare in the general hospital nurses. The data were collected from 150 nurses working in the three general hospitals, located in S and Y city using self-administered questionnaires. Data was collected from January 11, 2021 to January 22. Among sub-factors of the health beliefs, perceived benefit (β=.17, p=.040), perceived sensitivity (β=.19, p=.020), and age (β=.21, p=.005), and these variables explained 14.0% of self-efficacy for healthcare(F=4.28, p<.001). Through this study, it is necessary to develop educational program self-efficacy for healthcare is needed for improving perceived benefit and perceived sensitivity among general hospital nurses.

Comparison of the Operative Results of Performing Endoscopic Robot Assisted Minimally Invasive Surgery Versus Conventional Cardiac Surgery (수술용 내시경 로봇(AESOP)을 이용한 최소 침습적 개심술과 동 기간에 시행된 전통적인 개심술의 결과에 대한 비교)

  • Background: The improvements in endoscopic equipment and surgical robots has encouraged the performance of minimally invasive cardiac operations. Yet only a few Korean studies have compared this procedure with the sternotomy approach. Material and Method: Between December 2005 and July 2007, 48 patients (group A) underwent minimally invasive cardiac surgery with AESOP through a small right thoracotomy. During the same period, 50 patients (group B) underwent conventional surgery. We compared the operative time, the operative results, the post-operative pain and the recovery of both groups. Result: There was no hospital mortality and there were no significant differences in the incidence of operative complications between the two groups. The operative $(292.7{\pm}61.7\;and\;264.0{\pm}47.9min$, respectively; p=0.01) and CPB times ($128.4{\pm}37.6\;and\;101.7{\pm}32.5min$, respectively; <0.01) were longer for group A, whereas there was no difference between the aortic cross clamp times ($82.1{\pm}35.0\;and\;87.8{\pm}113.5min$, respectively; p=0.74) and ventilator times ($18.0{\pm}18.4\;and\;19.7{\pm}9.7$ hr, respectively; p=0.57) between the groups. The stay on the ICU $(53.2{\pm}40.2\;and\;72.8{\pm}42.1hr$, respectively; p=0.02) and the hospitalization time ($9.7{\pm}7.2\;and\;14.8{\pm}11.9days$, respectively; p=0.01) were shorter for group A. The Patients in group B had more transfusions, but the difference was not significant. For the overall operative intervals, which ranged from one to four weeks, the pair score was significantly lower for the patients of group A than for the patients of group B. In terms of the postoperative activities, which were measured by the Duke Activity Scale questionnaire, the functional status score was clearly higher for group A compared to group B. The analysis showed no difference in the severity of either post-repair of mitral ($0.7{\pm}1.0\;and\;0.9{\pm}0.9$, respectively; p=0.60) and tricuspid regurgitation ($1.0{\pm}0.9\;and\;1.1{\pm}1.0$, respectively; p=0.89). In both groups, there were no valve related complications, except for one patient with paravalvular leakage in each group. Conclusion: These results show that compared with the median sternotomy patients, the patients who underwent minimally invasive surgery enjoyed significant postoperative advantages such as less pain, a more rapid return to full activity, improved cosmetics and a reduced hospital stay. The minimally invasive surgery can be done with similar clinical safety compared to the conventional surgery that's done through a median sternotomy.
