This study investigated the interactions of bone health with several variables such as outdoor activity hours, nutritional status including habitual intake of calcium andvitamin D status in 72 high school girls aged 16-17 yearsattending day classes or night classes. The subjects consisted of 39 day-class students and 33 night-class students. Dietaty nutrient intakes were estimated using the 24-hour recall method. The daily activities of each subject were assessed using an activity questionnaire. Urinary calcium and creatinine excretion were assayed from subjects' 24-hoururine, while 25-OH-vitamin D[25-(OH)-D] and osteocalcin were measured from the subjects' fasting blood. Intake of energy, iron, vitamin A and vitamin C were worse in the night-class students. There was no significant difference in dietary calcium between the subjects in the different class types. Time spent on outdoor activities was significantly less in subjects attending night classes. Urinary calcium excretion of the night-class subjects was significantly higher than that of the day-class subjects (p<0.05). There was no significant difference in serum 25-(OH)-D level according to class type. Serum osteocalcin for night-class subjects was significantly higher than that for day-class subjects (p<0.01). It appeared that the night-class students had poorer dietary habits as well as fewer outdoor activities. Even though the estimated bone health of both groups of subjects appeared to be normal, the overall nutritional intake and duration of outdoor activities appeared to be important for maintaining bone health and lowering the future risk of osteoporosis.
This study was conducted to evaluate the health status, life style, dietary habits and nutritional status of 44 industry workers that were routinely exposed to unclean environments while consuming 3 major pork dishes 2 times a week for 6 weeks. The health status, life style and dietary habits of the workers were investigated by a survey questionnaire, and the nutritional status was evaluated using the 24-hour recall method. Overall, the subjects reported that their health status was fairly good throughout the year, but that they felt dizziness and fatigue often. In general, the subjects did not exercise regularly and drank alcohol very often. The average daily energy intake increased from 1,708.3 kcal to 1,859.5 kcal without a change in the BMI or WHR when the respondents were fed pork dishes. However, the mineral intake did not differ significantly in response to the consumption of pork, although the Zn intake tended to increase. Moreover, the vitamin $B_1$, niacin, and E intakes increased after consuming pork(p<0.05), while the cholesterol intake decreased from 425.2 mg to 356.7 mg after eating pork(p<0.05). Additionally, both the fat intake and the PUFA intake increased after the consumption of pork with the intake of oleic, linoleic and linolenic acids increasing significantly(p<0.001). Finally, the intake of essential amino acids also increased significantly in response to the consumption of pork(p<0.01). Based on the results, regular consumption of pork dishes improved the nutritional status of industry workers without any adverse effect in terms of the intake of relative fat and cholesterol.
BACKGROUND/OBJECTIVES: Few epidemiological studies examined the association between fried food intake and hypertension. This study examined whether fried food intake was associated with higher prevalence of prehypertension and hypertension combined in a cross-sectional study of the Filipino Women's Diet and Health Study (FiLWHEL). SUBJECTS/METHODS: This study included a total of 428 women aged 20-57 years who have ever been married to Korean men. Prehypertension was defined as 120 - < 140 mmHg of SBP or 80 - < 90 mmHg of DBP and hypertension as SBP ≥ 140 mmHg or DBP ≥ 90 mmHg. Fried food intake was assessed using one-day 24-hour recall. Fried foods were categorized into total, deep/shallow and pan/stir fried foods. The odds ratio (OR)s and 95% confidence interval (CI)s were calculated using multivariate logistic regression. RESULTS: The prevalence of prehypertension and hypertension combined was 41.36% in this population. High fried food intake was associated with high prevalence of prehypertension and hypertension combined. The odds of having prehypertension and hypertension was higher in the 3rd tertile of fried food intake among fried food consumers compared to non-fried food consumers (OR = 2.46, 95% CI = 1.24, 4.87; P for trend = 0.004). Separate analysis for types of frying showed that deep and shallow fried food intake was associated with prevalence of prehypertension and hypertension combined for comparing the 3rd tertile vs. non-fried food consumers (OR = 2.93; 95% CI = 1.57-5.47; P for trend = < 0.001). CONCLUSIONS: This study showed the evidence that high fried food intake was significantly associated with high prevalence of prehypertension and hypertension combined among Filipino women married to Korean men.
This study was conducted to examine contribution of specific foods to absolute intake and between-person variation in nutrients consumed by 2037 adults living in Korean rural area using one day 24-hour recall method. To measure contribution of food to absolute nutrient intake, all foods consumed were ranked by percentages calculated as the sum of the nutrient intake contributed by a given food divided by the total nutrient intake from al categories. To assess between-person variability in nutrient intake, stepwise multiple regression analysis was used with total nutrient intake from al foods as the dependent variable and the nutrient amount from each of all foods as independent variables. The kind and the number of foods necessary to account for the variation in nutrient intake among persons varied significantly depending on the nutrient. The nutrients contributing more than 80% of total intake with a few number of food items were ${\beta}$-carotene(ll), vitamin C(15) and vitamin A(16). Foods sometimes overlooked as important sources were found in some instances to be quantitatively important to population intake. Even though rice and Korean cabbage kimchi do not contain much nutrients in quantity, they made a major contribution to most nutrient intake of subjects because of large serving size and high frequency of intake. The food items and contributing order for between person variance was different from those of absolute intake. A large fraction of the variability of nutrient intake in this population was explained by a small number of foods. Fewer foods were required to explain a given proportion of the between-person variance in intake than to account for the same proportion of the popylation\`s total intake. The purpose of this study is to suggest the menu patters of people in Kangbukgu for the basic data of the nutrition education program in its health center. The dietary intake was investigated by the 24-hour recall method for 488 subjects. To analyze patterns, dishes were classified into major staple food, kimchi, soup and side dishes and also classified into 24 categories by cooking method. Patterns by the kind of dishes for the subjects were cooked rice + soup + kimchi 〉noodle + kimchi > cooked rice + kimchi in the order of frequency of use. Patterns for breakfast were, cooked rice + soup + kimchi > coated rice + soup + two dishes of kimchi. For lunch, patterns were, noodle + kimchi > footed rice + kimchi = cooked rice + soup + kimchi. For dinner, patterns were, cooked rice + soup + kimchi = cooked rice + kimchi > noodle + kimchi. Results of analyzing by the number of dishes, were cooked rice + soup + kimchi + one side dish 〉cooked rice + soup + kimchi + two side dishes. It was significantly different by meal(p<0.01). The results of analyzing patterns for the main staple foods were cooked rice〉noodle > bread in that order. It was significantly different by meal(p<0.01). The results of analyzing patterns, with those considered basic food, cooked rice, soup and stew, were cooked rice + soup > cooked rice > cooked rice + stew. It was significantly different by meal(p < 0.01). With these results, the menu patterns of people in Kangbukgu were different by meal. The main dish was mostly cooked rice and the menu has the traditional menu patters, composed of cooked rice, soup and kimchi.
The purpose of this study was to fad the specific character of menu patterns by sex, age and health risk of subjects for the basic data of a nutrition education program. To analyze patterns, dishes were classified into major staple foods ; kimchi, soup and side dishes and also classified into 24 categories by the cooking method. For the men, a frequently served pattern was cooked rice + soup + kimchi. For the women, the pattern was also cooked rice + soup + kimchi. For the 20-49 year olds and the 50-64 year olds, frequently served patterns were cooked rice + soup + kimchi > noodle + kimchi. For the 65-74 year olds, those patterns were cooked rice + stew > cooked rice + kimchi. For the normal group and the risk group, the frequently served pattern was cooked rice + soup + kimchi. The most used menu pattern by the number of dishes was cooked rice + soup + kimchi in the male, female, normal group and risk group. For the 20-49 year olds, the pattern was cooked rice + soup + kimchi and noodle + kimchi. For the 50-64 year olds, it was cooked rice + soup + kimchi. For the 65-74 years old, it was cooked rice + stew. The result of analyzing patterns for the most used main staple food was cooked rice in all groups. The results of analyzing patterns, with those considered basic food, cooked rice, soup and stew, showed that frequently served patterns were cooked rice + soup > cooked rice > cooked rice + stew in all groups. With these results, we can summarize that the menu patterns of people in Kangbukgu was the younger, the more non-traditional. Also, the normal group had more various patterns than those of the risk group. Thus, we need further research about menu patterns to provide adequate nutrition education.
The purpose of the study was to examine the changes of food and nutrient intakes of college students between 1999 and 2009. Dietary survey of 169 college students was conducted by a 24-hour recall method for three days in 2009. Food and nutrient intakes in 2009 were compared with the data from 106 students collected by the same methods in 1999. The intakes of cereals & grain products and vegetables in 2009 were lower than those of 1999, but the intakes of meats, eggs, milk & milk products, and manufactured food were higher. The intake of rice per person decreased greatly from 452.2 g in 1999 to 351.4 g in 2009 in males, and from 306.9 g to 237.2 g in females. While the intakes of protein, fat, thiamin, niacin, vitamin $B_6$, phosphorus, potassium, zinc, and cholesterol were significantly higher, the intakes of dietary fiber were significantly lower in 2009 compared to 1999 both in males and females. The nutrients consumed less than the Recommended Intakes were vitamin A, riboflavin, vitamin C, and calcium in males and additionally folate, iron, and zinc in females in both 1999 and 2009. The ratio of carbohydrate, protein and fat as energy was 61 : 15 : 24 and 60 : 14 : 26 in 1999, and 54 : 16 : 30 and 56 : 15 : 29 in 2009 in males and females respectively, showing that carbohydrate intake decreased and fat intake increased greatly. Our data suggest that nutrition education is necessary for college students to help them consume more vegetables and fruits and less fat and cholesterol.
This analysis was performed to investigate the relationship between nutrition and anthropometric indices using the data from a cross-sectional survey of a large national sample, '98 Korean national health and nutrition examination survey. Subjects were selected by stratified multistage probability sampling design and completed dietary questionnares including food intakes for one day by 24-hour recall method. For this analysis, 6566 subjects were selected by age(over 20 years old). For anthropometry, height, weight, and waist- and hip- circumference were measured. They were classified by body mass index(BMI, weight(Kg)/$height^2 $($m^2 $)) and waist-hip ratio(WHR, waist circumference(Cm)/hip circumference(Cm)). The nutrients intake of subjects were compared with the recommended daily allowances(RDA). Mean adequacy ratio(MAR) was calculated. Mean heights, weights, BMIs were higher in the groups with nutrient intake over 125% of RDA than the lower intake groups for most nutrients. However, Mean WHR was the highest in the groups with nutrient intake under 75% of RDA for most nutrients excluding iron intake of women aged 20-64 years. Among women aged 20-64 years, means of MAR were 0.71 for obese individuals(BMI>30), 0.72 for subjects with underweight(BMI<18.5), and 0.76 for subjects with normal weight(18.5$\leq$BMI<25). Normal subjects has statistically significantly higher MAR than those of other groups. However, among elderly people aged over 65 years, obese group had the highest MAR, 0.68. Women with abdominal obesity(WHR>0.9) had lower MAR, 0.71 than those with normal weight(MAR=0.76). From these results, obesity and abdominal obesity seems to be the results of malnutrition including both undernutrition and overnutrition rather than simple problem of excess energy intake. Obesity in elderly people needs to be handled differently from adults.
The purpose of this study was to investigate whether the health status as determined by a self-assessment checklist was related to the nutritional status of elderly Korean women. We interviewed 59 female subjects living in the Daegu area aged over 55 years. Information on their dietary intake on two consecutive days was collected by the 24-hour Recall Method. Their body compositions were measured using a Bio-electrical Impedence Fatness Analyzer. Their zinc status was evaluated according to their dietary zinc intake and urinary zinc excretion in urine samples collected for 24 hours. Their heath status was determined by a NSI Checklist. While 50.9% of the total subjects belonged to a moderate nutritional risk group,23.7% of the subjects were at a high nutritional risk. It appeared that only 25.4% of the subjects were evaluated as being healthy. Therefore, the overall nutritional health status of the elderly females belonged to the moderate nutritional risk group. Except for vitamin C, the average daily nutrient intake of the subjects was below the level of the recommended dietary allowances (RDA) for Koreans. The lower the nutritional health score, the better was their dietary intake of energy (p<.05), protein (p<.001), and zinc (p<.01). A positive relationship between their nutritional health score and body fat ratio was also observed (p<.05). Therefore, we suggest that the NSI Checklist could be used as a practical screening tool at the beginning of nutritional surveillance of the elderly in the community.
The present study was conducted to evaluate nutrient intakes of industrial workers with hyperlipidemia and cholesterol-saturated fat indices(CSI) of their daily meals and various side dishes accompanied with alcohol. Thirty eight male subjects of 41.0$\pm$6.5 years whose average serum cholesterol and triglyceride levels were 222.9$\pm$37.7 and 282.3$\pm$139.3mg/이 were interviewed on daily intakes of foods and drinking habits including types and amounts of side dishes using 24-hour recall and questionnaire methods. Average energy habits including twenty six non-drinkers and twelve drinkers were 2365$\pm$41 and 2822$\pm$417kcal, respectively but intakes of other nutrients were not very different between two groups. Carotene intakes was, however, low in drinkers. Intakes of saturated fat, cholesterol and CSI of subjects' daily meals were 15.4$\pm$5.4g, 229$\pm$114mg and 27.1$\pm$10.4 for non-drinkers and 18.7$\pm$7.8g, 238$\pm$69mg and 30.8$\pm$9.8 for drinkers. CSI of their daily meals varied from 10 to 60 without much differences in energy values and were positively correlated with serum cholesterol levels(r=0.2606, p<0.05). Average alcohol intakes obtained from subjects' drinking habit was 89.5$\pm$46.8g per day and major side dish was roasted beef giving 660$\pm$234kcal of energy and 24.3$\pm$8.0 of CSI. From the present study, it is concluded that industrial workers are more prone to have hyperlipidemic diets due to alcohol. To improve their diet and health, an appropriate nutrition education should be necessary and CSI of various Korean foods and meals can be used as handy self-control education tool.
