  • Objectives: This study was performed to compare the dietary life of single- and non single-person households in the Korea National Health and Nutrition Examination Survey (KNHANES). Methods: A nationally representative sample of 20,421 19-64-year-olds who had 24-hour recall data was taken from the 2014-2016 Korea National Health and Nutrition Examination Survey (KNHANES). Single- and non single-persons were compared for nutrient intake, dietary behaviors, food consumption patterns, nutrition education and confirm nutrition label. Results: The dietary intakes of dietary fiber and iron were lower in single-person households than in non single-person households. The lower the level of education and income, the lower the nutrient intake of single-person households. In the case of those aged 19 to 29, the breakfast skipping rate was higher in single-person households than in non single-person households. The higher the education level, the higher the breakfast skipping rate and the eating out frequency in the single-person households. In the food intake survey, the frequency of healthy food intake in single-person households was much lower than that of non single-person households. The confirmation rate of nutrition labeling was lower in single-person households than in non single-person households. Conclusions: This study shows that single-person households have poorer health-nutritional behaviors than multi-person households. Therefore, a nutrition education program based on the data of this study needs to be developed for health promotion of single-person households.

  • Purpose: The purpose of this study was to investigate the nutritional intake status, according to the risk of diabetic complications in Type 2 diabetes patients. Methods: This was a secondary data analysis study that included 83 patients. The nutritional intake was assessed, using 24-hour dietary recall. The risk of diabetic complications was measured, using the Framingham Risk Score (FRS) and Michigan Neuropathy Screening Instrument Questionnaire (MNSIQ). The nutritional intake was analyzed using the CAN-pro 4.0 program. Data were analyzed using descriptive statistics, Chi-square test, and Independent t-test, using the SPSS WIN 26.0 program. Results: The mean FRS and MNSIQ scores for the participants was 14.46± 4.09 and 2.30± 2.22, respectively. Thirty two participants (38.6%) were in the high-risk groups for cardiovascular disease and peripheral neuropathy. The participants consumed high amounts of grain and low amounts of vegetables, fruits, and dairy products when compared to the recommended intake. However, the nutritional intake did not differ according to FRS or MNSIQ levels. Consumption of vegetables and fruits were significantly different between high and low risk groups of MNSIQ. Conclusion: It is necessary to consider the composition of dietary intake to improve the imbalanced diet in Type 2 diabetes patients and prevent diabetic complications. Type 2 diabetes patients should reduce the intake of grains and sodium, and increase vegetable intake. More deliberate future studies are needed, to investigate the relationship between food intake and the risk status for diabetic complication.

  • This survey was carried out to obtain the information concerning nutritional status, including factors of food habits and nutrient intake of the long-lived elderly men and women living in Ganghwa-gun. In order to assess the quality of dietary intake among the elderly, a survey was conducted during December 2003 of 103 subjects who were over 85 years of age. Dietary nutrient intake data were obtained through the 24 hr recall method. Chi-square test and t-test were the main data analysis method. Their dietary habits such as three meals a day and a regular meal time have shown that they have generally good eating habits. Average daily calorie intake ($\%$ RDA) was 1233.2 kcal ($68.8\%$) for male and 1215.8 kcal ($75.8\%$) for female which were lower than the Recommended Dietary Allowances (RDA) for Koreans. Energy intake of females got closer to RDA than that of male. Protein intake was 49.3 g for male and 46.9 g for female (which was $82.3\%$ RDA for male and $85.1\%$ RDA for female) for elderly person, the proportion of animal protein to total protein intake were $45.2\%$ for male and $39.0\%$ for female. Average CPF ratio of energy intake for both male and female were 68.7 : 16.1 : 15.2 and 69.6 : 15.4 : 15.0. SFA : MUFA : PUFA ratio of the subject was 0.78 : 1.03 : 1.00 for male and 0.64 : 0.92 : 1.00 for female. Calcium intakes for both males and females were 321.3 mg and 377.2 mg. Vitamin A was the nutrient found to be least sufficient. Mean daily intakes of most of the vitamins and minerals for both males and females were lower than RDA except vitamin C and Zn for female, especially $\%$ RDAs of vitamin A, Ca for male and vitamin A for females were less than $50\%$ of RDA. In conclusion, long-lived elderly in Ganghwa areas did not consume enough nutrients quantitatively as well as qualitatively, especially Ca, Fe, vitamin A, vitamin $B_2$ and vitamin E. These results suggest that nutritional guidelines for older Koreans should focus on the maintenance of adequate energy intake. In addition, selection of foods with high protein and calcium, such as dairy food, should be emphasized, particularly in the long-lived elderly.

  • The aim of this study was to use the Healthy Eating Index-2005 (HEI-2005) to assess diet quality and determine the relationship between the HEI-2005 and the energy and nutrient intakes of adolescents. A cross-sectional study was conducted on 1,104 healthy adolescents, mean age of $15.8{\pm}1.24$ years. Dietary intake was measured with the 24-hour dietary recall method, and dietary quality was assessed by means of the HEI-2005. Diet quality scores ranged from 23.7 to 77.5. The mean score was found to be $51.5{\pm}9.07$ according to the HEI-2005. There were no differences according to gender, 42.8% had a poor diet and 57.2% had a diet that needs improvement. No subjects had a "good diet". Lower mean subgroup scores were found for whole grains, total vegetables, total fruits, dairy products, and meat and beans. Fruits and vegetables scores were significantly high in girls, whereas sodium, oil, and meat and beans scores were significantly high in boys. Total HEI-2005 scores were increasingly associated with parental education level when age and gender were adjusted. There was a negative correlation between HEI-2005 scores and age, total energy intake, and fat intake. Positive correlation was only observed in the HEI-2005 scores for protein and dietary fibre intakes. Consequently, the overall diet quality and nutritional habits of Turkish adolescents need modification and improvement. In the family, measures should be initiated by the government, including advertisements and campaigns.

  • This study was designed to assess the iron nutritional status of girls at puberty in Kangnung area. The subjects consisted of 161 adolescents in sixth-grade in primary school and first-grade in middle school girls. Anthropometric measurements were taken for body weight, height, percentage of body fat, and circumferences of waist and hip. Nutrient intakes were assessed by modified 24-hour recall method. Food models and other measuring tools were also used. Fasting blood samples were obtained and analyzed for hemoglobin(Hb) concentration, hematocrit(Hct), serum iron(FE) and total iron binding capacity(TIBC). Mean values for Hb, Hct, Fe, TIBC, TS and serum ferritin were $13.6{\pm}0.9g/dl$, $39.6{\pm}3.9%, 91.3{\pm}36.3{\mu}g/dl$, $327.9{\pm}45.2{\mu}g/dl$, $28.3{\pm}11.8%$ and $37.4{\pm}24.2ng/ml$, respectively. Prevalence of iron deficiency greatly varied by indices from 4.8% when judged by Hb to 18.4% by serum Fe concentration. The Hb concentration was positively correlated with Hct(r=0.641), serum iron(r=0.266) and transferrin saturation(r=0.237)(p<0.05). On the other hand, serum ferritin concentration showed significantly negative correlation with TIBC(r=-0.572). Mean daily intake of iron was 14.94mg and heme iron intake was 1.13mg and which was 7.6% of total iron intake. Total absorbable iron calculated by the method of Mosen was 1.38mg and bioavailability of dietary iron was 9.3%. These results suggest that the prevalence of iron deficiency of pubertal girls is very high, therefore the guidelines for diet and social supports, such as, school food service system should be provided to improve their iron status in middle school students.

  • It has been proposed that differences in diet between smokers and nonsmokers may partially explain the positive association between cigarette smoking and chronic diseases such as cancer and coronary heart disease. To investigate the potential for this confounding, the authors studied the relation between cigarette smoking and dietary pattern including nutrient intake in 152 Korean elderly people aged 59∼84years. Dietary intake was determined by a 24-hour recall method and a food frequency questionnaire. Male smokers were lighter than nonsmokers and had a lower body mass index(BMI)(p<0.05). But there were no differences in body weight and BMI between female smokers and nonsmokers. Female smokers had lower intakes of energy and carbohydrates than nonsmokers(p<0.05), but in male, smokers and nonsmokers did not show the difference in energy intake. The mean intake of fiber, protein, fat, minerals, and vitamins did not vary significantly by smoking status. However, both male and female smokers consumed fewer fruits than nonsmokers and ate fresh fruits less often than nonsmokers. The total food frequency score which reflect dietary quality of smokers was lower than those of nonsmokers(p<0.05). Male exsmokers' diet were similar to those of smokers, but in female, dietary patterns of exsmokers were similar to those of nonsmokers. These results confirm that elderly smokers have partially different nutrient and food intake patterns from nonsmokers. The decreased ingestion of fruits and less balanced diet by cigarette smokers could contribute to their increased risks of chronic disease compared with those by nonsmokers. The increased ingestion of nutrients and improved nutritional balance in the diet of exsmokers may help to reduce their risks as well.

  • Anemia diagnosed early in pregnancy is associated with increased risks of low birth weight and preform delivery. The purposes of this study were to assess the maternal iron status during pregnancy and to evaluate the relationships between the iron indices of maternal-umbilical cord serum iron and ferritin levels and pregnancy outcomes. Dietary intakes of the pregnant women were estimated by 24 hour-recall (3 times). Serum iron and ferritin levels in maternal blood and umbilical cord were measured at 1st-, 2nd-, 3rd- trimester and delivery, respectively. The mean of maternal se겨m iron levels of the trimester and delivery were $124.27\;{\mu}g/dl,\;97.03\;{\mu}g/dl,\;94.32\;{\mu}g/dl,\;and\;145.53\;{\mu}g/dl$. Those maternal levels were significantly lower than that of umbilical cord blood ($222.59\;{\mu}g/dl$). Serum ferritin levels of maternal trimester and delivery were 22.68 $22.68\;{\mu}g/l,\;11.09\;{\mu}g/l,\;14.18\;{\mu}g/l,\;and\;\;24.54\;{\mu}g/l$, which were significantly lower than those of umbilical cord blood ($184.35\;{\mu}g/l$) (p < 0.0001). This prevalence of anemia of total subjects was $30.3\%$ by WHO criteria (Hb < 11.0 g/dl, Hct < $33\%$). Iron levels of 2nd-trimester was significantly higher in the normal group than in the anemia group. And ferritin levels of 3rd-trimester and delivery was significantly higher in the normal group than in the anemia group. Therefore, we suggest for successful pregnancy outcome and delivery differential iron supplementation programs will be carried out with individual Pregnant women on the basis of pre-Pregnancy nutrition. • Nutrition factors play an important role in the pathogenesis of osteoporosis. The purpose of this study is to investigate the relationship between nutritional status and bone mineral density of elderly women. Three hundred thirty five elderly women (over 65 years) in Asan were divided into three age groups (group 1, less than 70 y ; group 2, from 70 to 75 y ; group 3, 75 y or more). Total alkaline phosphatase and serum calcium (Ca) were analyzed using spectrophotometric procedure. Data for food and nutrient intakes were obtained by a 24-hour recall method. Bone density was measured by broadband ultrasound attenuation (BUA) using QUS-2. Age differences were tested with the X 2 test for categorical variables and with ANOVA and Tukey's test for continuous variables. Correlation was conducted to test the association between bone density and nutrient intake. The subjects in age groups 1,2 and 3 were $36.7\%$, $32.8\%$ and $30.4\%$, respectively. Height and body weight of the subjects were significantly decreased with age. Average bone density of the subjects in group 3 was lower than the other age groups. Osteoporosis determined by t-score is $17.9\%$ for group 1, $24.5\%$ for group 2 and $55.9\%$ for group 3 (p < 0.001). The serum Ca level of the subjects in group 2 was significantly lower than that of group 1 although mean values in all age groups are within the normal range. Dietary Ca intake, nutrient adequacy ratio (NAR) and index of nutrient quality (INQ) were decreased with age. Bone density was negatively correlated with age (p < 0.001), while body mass index (p < 0.01) was positively related with bone density. Although partial correlation did not reveal the significant correlation of BMD and dietary calcium after controlling for age, since calcium intake was very poor compared to sodium and phosphorous intakes, recommendation of more calcium intake for elderly women especially those over 75 years must be continuously emphasized.

  • This study was performed to assess the effect of eating behaviors and health-related variables on overall dietary quality. Ninety-four(male 21, female 73) elderly who were over 60 residing in middle income areas in Cheongju city participated. Information on general characteristics of the elderly, health-related life style, regularity of meal, meal balance and desirable eating habits were obtained by interview based on questionnare. Dietary nutrient intake data were obtained through the 24 hour recall method. The mean age and BMI of the subjects were 73.3 years old and 23.3(male 21.8 female 23.7) respectively. The proportions of underweight and hypertension were 19.2% and 36.2%. Most nutrients except vitamin $B_2$ and calcium were consumed over 75% of the RDA. The Mean Adequacy of Ratio(MAR) of nutrient intake was 0.64(male 0.72, female 0.62). The average score of regularity of meal, meal balance, and desirable eating habits was 14.4 out of a possible 16, 13.7 out of a possible 24 and 5.5 out of a possible 16 points respectively. Male than female, older subjects than young subjects, and those living with their spouses than with other family or living alone had better scores in eating behaviors. Smoking, chewing ability and eating alone vs eating with company affected overall of regulality of meal and meal balance(p<0.05). Positive correlation (p<0.05) was also dietary quality. There was a positive correlation between the mean adequacy ratio, score observed between scores in regularity of meal and meal balance. Therefore, the elderly should be encouraged to eat a variety of food, maintain good dental health, keep regularity of meal and have meals with company to help improve overall dietary quality and eventually achieve optimal nutritional status.
