Preparation of Imitation Sauce from Enzymatic Hydrolysate of Cod Skin Gelatin (대구피 젤라틴의 효소적 가수분해물을 이용한 조미간장의 제조)

  • The imitation sauce was prepared by using the enzymatic hydrolysate of cod skin gelatin and its product quality was also compared with three kinds of soy sauce on the market sensually. The major molecular weight of the hydrolysate used in this study was 5, 800Da and glycine, proline, serine, alanine, hydroxyproline, glutamic acid, and aspartic acid having sweet taste accounted for 65.9% of the total amino acid being in the hydrolysate. The imitation sauce was prepared the mixture of the liquor and fermented sauce (8 : 2 = v : v), where the liquor was prepared by dissolving with 10.0g the hydrolysate, 10.0g NaCl, 3.0g sucrose, 0.5g monosodium glutamate, 0.1g caramel powder, 3.0$m\ell$ fermented vinegar, 0.05g garlic powder, 0.1g black pepper powder, and 0.2g licorice powder in 100.0$m\ell$ water, boiling for 5min and filtrating with cheesecloth. From the result of sensory evaluation, the imitation sauce was at least equal to three kinds of soy sauce in product quality.

Evaluation of Relationship between Radiation Dose and Image Quality according to Source to Image Receptor Distance in Rib Series Radiography (늑골 방사선검사 시 X선관 초점-영상수신체간 거리에 따른 환자선량과 화질의 연관성 평가)

  • The purpose of this study was to compare and analyze the patient dose according to the distance between the X-ray tube focus and the image receptor, and to propose a new method for quantitatively evaluating the image quality. Using this quantitative evaluation method, the optimal distance for increasing x-ray image quality with low radiation dose was estimated between source and image receptor in Rib series radiography. Phantom images were obtained by changing the distance between focus and image receptor (100 cm and 180 cm). The patient radiation dose was estimated using entrance surface dose and dose area product. In order to evaluate image quality objectively, a non - reference image evaluation method was employed with paper and salt noise and Gaussian filter. As a result of this study, when the SID was changed from 100 cm to 180 cm, the entrance surface dose decreased by 4 ~ 5 times and the dose area product decreased by 3 times. In addition, there is no significant difference in image quality between of SID 180 cm and SID 100 cm. In conclusion, it was demonstrated that performing the rib series radiography at SID 180 cm is an optimal method to reduce the exposure dose and improve the image quality.

Studies on the Volatile Flavor Components of Spices in Curry (향신료의 휘발성 향미성분에 관한 연구)

  • The volatile components of nutmeg, cumin, cardamon, turmeric, coriander, clove, allspice, cassia, fennel, celery seed and black pepper, having a characteristic spicy aroma and being used as an ingradient of curry powder, were investigated. After steam distillation followed by extraction with diethyl ether: n-pentane(2:1, v/v) mixture, the volatile components were identified by capillary GC and GC/MS. As a result, following major compounds were identified. ${\alpha}-pinene(11.06%)$, ${\beta}-pinene(11.17%)$ and myristicin(19.98%) in nutmeg, cuminaldehyde(37.68%) in cumin, ${\alpha}-terpineol(47.33%)$ and 1, 8-cineol(20.56%) in cardamon, linalool(61.72%) in coriander, eugenol(63.63%) and eugenol acetate(20.59%) in clove, eugenol(80.12%) and methyl eugenol(10.85%) in allspice, cinnamaldehyde(82.29%) in cassia, anethole(79.92%) in fennel.

Effects of Luteolin on Fetal Bovine Serum-induced Events in Cultured Rat Vascular Smooth Muscle Cells (소태아혈청으로 유도된 흰쥐 혈관평활근세포의 luteolin 효과)

  • Cell cycle activation and progression in vascular proliferative disease represent potent therapeutic targets. Luteolin, which occurs as glycosylated forms in celery, green pepper, perilla leaf, and camomile tea, has demonstrated antimutagenic, antitumorigenic, antioxidant, and antiinflammatory properties. In this study, we investigated the effect of luteolin on the proliferation of primary cultured rat aortic vascular smooth muscle cells induced by 5% fetal bovine serum. Luteolin at concentrations of 5, 20, and $50{\mu}M$ significantly inhibited this proliferation by 29.6, 50.8, and 83.1%, respectively. The incorporation of $[^3H]$-thymidine into DNA was also inhibited by 25.8, 57.6, and 81.0%, respectively. Flow cytometry analysis of DNA content revealed that FBS-inducible cell cycle progression was blocked by luteolin. Luteolin showed no cytotoxicity in VSMCs in this experimental condition according to WST-1 assays. Luteolin may represent a potential anti-proliferative agent for treatment of angioplasty restenosis and atherosclerosis.

  • Asphalt binder characteristics in asphalt mixture are changed due to aging. However. depending upon aggregate and binder used, asphalt mixture dose not show the same level of stiffness and brittleness under the same ageing level. The factors affecting Physical Properties change of the asphalt binder within aged asphalt concrete are not well known and there is limited study which is dealing with this topic This study dealt with evaluation of physical properties of asphalt binder recovered from the mixtures after short-term and long-term aging. Two asphalts. two aggregates. two gradations and four polymers were used to make 32 mixture combinations. The mixtures were prepared and aged artificially in a forced draft oven. The measured physical properties included absolute viscosity, kinematic viscosity and penetration. Statistical analyses were carried out to find out the factor(s) having a significant effect on change of physical property of asphalt binder due to asphalt mixture aging. The results of study shown that aggregate, gradation and polymer had a significant effect on change of physical properties of asphalt binder.

Development of Mixed Seasoning Products for Fish Dishes using Korean Chili Peppers(Capsicum annuum L.) (고추를 이용한 생선용 복합 분말 조미료 개발 및 평가)

  • The objective of this study was to develop mixed seasoning products with Korean chili peppers(Capsicum annuum L.) and examine their characteristics based on a sensory evaluation. One-hundred chili pepper-related products were collected from American local favorites and analyzed for composition. Four different seasonings were prepared for the value-added seasoning products, and their sensory characteristics were measured. The Korean fish chili seasoning product showed higher overall acceptability, compared to local American seasoning(McCormick). The completed Korean chili seasoning products contained red pepper(20%), various herbs(31.7%), salt(11.5%), mushroom(8.6%), garlic(8.5%), curry, paprika(5.7%), and citron(2.8%). These results suggest the possibility of substituting mixed seasonings from foreign countries into Korean dishes.

  • With a view of improving the quality of sardine sausage, the processing conditions of sardine sausage used raw sardine as materials and the effects of adding soybean protein and smoke flavor on the quality of product were investigated. Optimal amounts of additives in processing sardine sausage were 1.5% of salt, 1.5% of sugar, 0.2% of monosodium glutamate, 0.2% of white pepper, 0.2% of garlic powder, 0.2% of nutmeg, 0.4% of beef extract, 0.05% of food color solution(10% mixture solution of Red 40 and Yellow 5) and 0.1~0.2% of smoke flavor(Smok-EZ, Alpha Foods Co., Ltd.) based on washed sardine meat. The results showed that the benificial effects of adding corn starch(5%), ${\alpha}$-starch(2%), soybean protein(3%) to the washed sardine meat were exhibited in the improvement of texture and acceptability.

  • To determine the effects of condiments upon Proteinase Activity, condiments such as welsh onion, garlic, ginger, black pepper, red pepper, mi-won (glutamic acid natrium), sugar, mustard and horse-radish were ground by a homogenizer, and each of them was dosed by 0%, 1%, 5% and 10% into Pancreatin Solution of 0.2% for storage at the temperature of 15 degrees Cels. The Enzyme Solution thus obtained then was measured at a certain interval of time by the Fuld Gross Method, and the following results were obtained. 1) The condiments that kept Proteinase Action of Pancreatin checked below 75% were mustard, horse-radish, red pepper and welsh onion. The centrol power of welsh onion, in particular, became stronger as storage time became longer. 2) The condiments that kept Proteinase Action of Pancreatin checked below 50% were sugar, black pepper and ginger. 3) Mi-won and garlic showed a strong checking powor over Proteinase Action at an early stage of storage, but as time passed, their control power gradually diminished to naught. In short, it may be concluded that ail of the condiments used in this experiment demonstrated their checking power over Proteinase Action.

  • Condiments such as welsh onion, garlic, ginger, black pepper, red pepper, japanese pepper, mustard, horse radish, monosodium glutamate and sugar were ground by a homogenizer, and 0%, 1%, 5%, and 10% of each of the ground condiments were put into 0.2% ${\alpha}-amylase$ solution for storage at the temperature of $15^{\circ}C$. ${\alpha}-amylase$ activity then was measured by the Wohlgemuth method at 48-hour interval, and the following results were obtained. 1) Among the condiments, black pepper and sugar checked the ${\alpha}-amylase$ activity most, about 80% in comparison with control. 2) Welsh onion, garlic, mustard, and ginger checked the ${\alpha}-amylase$ activity, about 50% in comparison with control, irrespective of the time stored. 3) The low concentration of red pepper, horse radish, japanese pepper and mono-sodium glutamate checked the ${\alpha}-amylase$ activity about 50%, while the high one did below 75% in comparison with control. To conclude: all the condiments used in the experiment checked ${\alpha}-amylase$ activity.

Control of Diatrype stigma Occurred on the Bed-log of Shiitake Using Wood Vinegar, Plant Extracts and Fungicides (목초액, 식물추출물 및 살균제를 이용한 표고골목해균인 주홍꼬리버섯 방제)

  • Attempts were made to control Diatrype stigma occurred on the bed-log of Shiitake using wood vinegar, Pinus koraiensis extract, Piper nigrum extract, and fungicides. Mycelial growth of D. stigma was inhibited completely at 35,000 ppm and no ascospore germinated at 25,000 ppm wood vinegar. Inhibition rates of Pinus koraiensis extract (200 ppm), and Piper nigrum extract (1,000 ppm) to ascospore germination were 98.9% and 95.9%, respectively. In fungicide selection, minimum inhibitory concentration (MIC) of benomyl, carbendazim, and thiabendazole ranged $0{\sim}0.4\;{\mu}g\;a.i/m{\ell}$. Difenoconazole at $0.08\;{\mu}g\;a.i/m{\ell}$ inhibited 98.9% of ascospore germination. Inhibition efficacy of fungicides was not highly variable among the low-, middle-, and high-temperature type strains of shiitake. Benomyl, carbendazim, thiabendazole and thiophanate-methyl could not suppress the mycelial growth of Shiitake. Tebuconazole at $0.4\;{\mu}g\;a.i/m{\ell}$ suppressed 80% of the mycelial growth and it was the highest inhibition rate among the fungicides. In field trials, wood vinegar, Pinus koraiensis extract, Piper nigrum extract, and fungicides were sprayed on the bed-logs before or after D. stigma produced pycnidia. Wood vinegar at 150,000 ppm concentration, showed control effect of 72.7% in the treatment before pycnidiospore formation. On the other hand, 70,000 ppm wood vinegar and 1,000 ppm of thiophanate-methyl showed control effects of 58.1% and 52.3% in the treatment after pycnidiospore formation.
