Physico-chemical Properties of Domestic Black Tea and Sri-Lanka′s Teas (국산 홍차 및 스리랑카 홍차의 이화학적 성상)

  • To obtain basic data for the development of domestic tea manufacture, the physico-chemical properties were analyzed. The content of crude fiber in domestic black tea was abundant of 50%, as compared with those in Sri-Lanka's black tea, while the contents of tanin and caffeine were lower than those of Sri-Lanka's Products. The quantities of mineral in Sri-Lanka's products were determined as 300ppm P, 15,000ppm K, 1,400ppm Mg, 4,000ppm Ca, 22ppm Cu, 21ppm Cr and 45ppm Zn. These contents were higher than those of domestic products. Al content was 4,100ppm in domestic products. Pb and Cd were not detected in two kinds of black tea products. In Sri-Lanka's black tea, 8 kinds of organic acids were identified and the major organic acids were shikimic, citric and quinic acid, while 6 kinds of organic acids were identified in domestic products and were quinic and gallic acid, as the major organic acids. The content of sucrose was higher than that of Sri-Lanka's product and theaflavin, thearubigin and theobromine were abundant, as compared with those in domestic products.

Aureobasidium pullulans Ferment of Black Tea for Anti-oxidation, Whitening and Anti-wrinkle Effects (홍차 흑효모 발효물의 항산화, 항주름 및 미백효과)

  • In this study, anti-oxidant, whitening and anti-aging effects were investigated the possibility of fermented black tea yeast as a functional cosmetic material. The results of Aureobasidium pullulans (A. pullulans) ferment of black tea (AFBT) were compared with black tea (BT) and A. pullulans ferment (AF). The antioxidant activity of the AFBT product showed DPPH radical scavenging ability higher than that of AF. In the intracellular ROS experiments induced by hydrogen peroxide, the AFBT showed significant decreased activity. In addition, AFBT showed tyrosinase inhibitory activity and inhibited the formation of melanin using Melan-a and B16F10 cells. Through suppression of MMP-1 expression, the AFBT showed higher anti-wrinkle activity than BT and AF. From the results of this study, it was confirmed that AFBT showed antioxidant activity and was developed as a functional cosmetic material based on whitening and anti-wrinkle efficacies.

Catechins, Theaflavins and Methylxanthins Contents of Commercial Teas (시판 차류의 Catechins, Theaflavins 및 Methylxanthins 함량에 관한 연구)

  • CThis study used HPLC to analyze the contents of 7 kinds of catechins, 4 kinds of theaflavins, and 2 kinds of methylxanthines in the following 6 kinds of commercial Korean tea: 2 green, 2 black, 1 jasmine and loolong. The following ranges in the 13 tea components of the 6 samples by ethanol extract were evaluated in mg/g: (-)-epigallocatechin, 0(black tea and jasmine tea) to 14.19(green tea); (-)-catechin 0; (+)-epicatechin, 0.62(bran rice-green tea) to 2.91(black tea); (-)-epigallocatechin gallate, 4.59(black tea) to 43.96(jasmine tea); (-)-gallocatechin gallate, 0.58(black tea) to 5.80(jasmine tea); (-)-epicatechin gallate, 5.63(bran rice-ueen tea) to 48.06(jasmine tea): (-)-catechin gallate, 0.26(black tea): theaflavif 0 to 3.66(black tea): theaflavin-3-gallate, 0 to 6.94(black tea): theaflavin-3'-gallate, 0 to 4.01(black tea); theaflavin-3,3-digallte, 0 to 10.25(black tea); caffeine, 4.60(bran rice-peen tea) to 26.44(black tea); and theobromine, 0.10(bran rice-green tea) to 1.81(jasmine tea). The contents of all components were lower by water extract than by ethanol extract. Therefore, total catechin (100.55, 45.88 mg/g) and theobromine (1.81, 0.86 mg/g) contents in jasmine tea, and theaflavin content (24.88, 1.36 mg/g) in black tea by ethanol and water extract were the highest. Caffeine content was the highest in black tea(96.48 mg/g) for the ethanol extract, and in jasmine tea (12.38 mg/g) for the water extract.

  • Chemical changes of major tea constituents by tea manufacture were examined by the quantitative masurements of tannin, caffeine, free sugars and total amino acid. The sample used in this experiments was fresh green and black tea leaves, green tea prepared by classical panning process and black tea prepared by commercial process. The results obtained are as follows: Compared with fresh tea leaves, tannin was increased 2% in green tea and decreased 56.5% in black tea by tea manufacture. Caffeine was increased 25.9% in green tea and decreased 3.1% in black tea. Total free sugars were decreased 78.2% and 76.7% in green tea and black tea, respectively. Total amino acids were decreased 26.1% and 18.8% in green tea and black tea, respectively.

Antioxidant and Synergist Effect of Extract Isolated from Commercial Green, Oolong and Black Tea (시판 녹차, 홍차, 오룡차의 항산화 및 상승효과)

  • The antioxidative effect of tea extracts from green tea, oolong tea and black tea was investigated. The extraction yields of crude catechin were green tea 5.4%, oolong tea 3.5%, and black tea 2.5%. Green tea, oolong tea and black tea of crude catechin showed antioxident activity at concentrations of 200ppm, and the oolong tea showed highest antioxidant effect. The browning intensities(at 420 nm) of green, oolong and black tea were 0.140, 0.582 and 0.915, respectively and green tea showed highest hydrogen donating ability(HDA) and than followed by oolong or black tea. Also, when the crude catechin(100 ppm) was used in combination with ${\alpha}$-tocopherol(50 ppm) and ascorbyl palmitate(50 ppm), the crude cathechin showed very strong synergistic effect, comparable to that of crude catechin(200 ppm).

In vitro antioxidant activity of black tea (Camellia sinensis L.) residue extract (홍차박 추출물의 in vitro 항산화 활성)

  • A black tea (Camellia sinensis L.) residue extract (BTRE) was prepared by 30% ethanol extraction to evaluate its in vitro antioxidant activity. The yield and polyphenol content of BTRE were $22.4{\pm}1.18%$ and $23.2{\pm}1.02{\mu}g$ gallic acid equivalents/mg-extract, respectively. Antioxidant activity of BTRE proportionally increased as BTRE concentration increased. $IC_{50}$ values of BTRE for cation radical, free radical and nitrite scavenging were 141.8, 108.1, and $397.2{\mu}g/mL$, respectively. Also $IC_{50}$ value of BTRE for ferric reducing anti-oxidant power was $97.8{\mu}g/mL$. BTRE effectively inhibited linoleic acid peroxidation. These results imply that BTRE possessed potent antioxidant activity, thus being utilized as a physiologically active material.

Antioxidant and nitric oxide inhibition effect of domestic and foreign fermented black tea extracts (국내외 홍차 추출물의 항산화 효과 및 Nitric Oxide 생성 저해 효과)

  • This study investigated the antioxidant and nitric oxide (NO) inhibition effects of three domestic and seven foreign fermented black tea 70% ethanol extracts. Bosung showed the highest total polyphenol and tannin contents. Jeju showed the highest total flavonoid contents. The theanine content was higher in Hadong (651.50 mg%) than in foreign fermented black tea. At 25 ㎍/mL, the domestic fermented black tea extract showed the highest DPPH and ABTS racial-scavenging activities, reducing power assays. Domestic fermented black tea showed higher NO inhibitor activity than foreign black tea at 50 ㎍/mL. Bosung black tea extract showed an increase in SOD-1 level (1.39-fold) compared to the LPS-only group. Bosung and Jeju decreased the GST protein by 1.52- and 1.46-folds, respectively, compared to the LPS-only group. Thus our results suggest that domestic fermented black tea (Bosung, Jeju, and Hadong) are effective antioxidants in RAW 264.7 cells.

Statistical Evaluation of the Physico-Chemical Characteristics Affecting the Palatability of Black Tea (홍차(紅茶) 기호도(嗜好度)와 관련된 이화학적(理化學的) 특성(特性)에 대(對)한 통계적(統計的) 분석(分析))

  • Physico-chemical and sensory characteristics of 28 black tea samples prepared by oaring the mixing ratio of 1 kind of Korean and 9 kinds of foreign black tea were determined, and their relationship was statistically analysed. Korean black tea was found to be lower in bulk density, caffeine, theobromine, crude protein, theaflavin, thearubigin and soluble solids, and higher in Hunter L- and b- value, neutral detergent fiber, calcium and ratio of oxidized matter as compared with foreign black tea. The palatability for 8 kinds of foreign black tea was generally increased by mixing with Korean black tea. The number of black tea whose palatability were higher than that of Korean black tea was 12, which was mostly mixed black tea. Theaflavin. Hunter a-value, soluble solids of the tea infusion, and potassium of the manufactured tea were the major guiding characteristics as a result of stepwise multiple regression analysis, and about 67% of the total variations in the palatability of black tea could be explained by the regression equation formulated by the preceding 4 characteristics.

Effects of Tea Fungus/Kombucha Beverage on Lipid Metabolism and Protein Level in Diabetic Female Rats (발효홍차 음료가 당뇨 암쥐의 지질대사 및 단백질농도에 미치는 영향)

  • We investigated the effect of tea fungus/kombucha beverage(TF) on the body weights, the blood glucose levels, lipid and protein concentrations, and enzyme activities in diabetic female rats. Sprague-Dawley rats were fed drinking water supplemented with 20% or 40% TF groups, respectively for 7 weeks. The female rats (mean weight 155.5$\pm$9.3 g) were assigned to one control and three diabetic groups. Diabetic groups were divided into diabetic control (TF free water), 20% or 40% TFD groups (20% or 40% TF in water) according to the levels of TF supplementation. Diabetes was experimentally induced by intraperitonially administration of streptozotocin in citrate buffer(pH 4.3) after 2 weeks feeding of four experimental water. Animals were sacrificed at the 5 weeks of diabetic state. The diabetic groups showed significantly decrease of body weight(6.8-7.5 g) compared with the control group(48.3 g). The hepatic, kidney and pancreatic weights of 20% or 40% TFD groups were not significantly different with D-control group. The fasting serum glucose level were higher in all diabetic groups than that of the control group. The concentrations of serum triglyceride in 40% TFD group and serum LDL-cholesterol in 20% TFD group were significantly decreased compared with the D-control group. The concentrations of serum total cholesterol and HDL-cholesterol, HDL-cholesterol/total cholesterol ratio, and atherogenic index in 20% or 40% TFD groups were similar to those in D-control group. The concentrations of hepatic triglyceride in 20% or 40% TFD groups were significantly decreased compared with the D-control group, but the concentrations of hepatic cholesterol and phospholipid were similar to all diabetic groups. The concentrations of serum and hepatic total protein, serum albumin, and the activities of GOT, GPT and LDH in the serum were the same levels of all diabetic groups.

A Study on the Antithiamin Effects of Korean Teas (한국산 다류(茶類)의 항(抗)지아민 영향에 관한 연구)

  • The antithiamin activity(ATA) and tannin content were determined for 10 kinds of herbal teas popular in Korea, also on the urinary thiamin excretion and growth rate of rats provided with certain of these teas replacing water. The results are summarized as follows: 1) The tea bag and IT-A had higher ATA (mg thiamin destroyed/g tea), while GT-A and Omiza-tea had lower activity. Different brands of the teas refulted in extremelw different ATA ana tannin content. 2) The body meight gain in the feeding groups of GT-B and GE-B were a little lower than that of the feeding groups of water, LT and IT-A, but these differences were not significant. 3) The food consumption, the food efficiency and the drink consumption of all groups for the total feeding term were not significant. 4) The thiamin excretion was higher in the LT, GT-B groups but lower in the If-A group -when compared to the water group, none of these results were significant.
