Bibliographical Study on Microorganisms of Nuruk(Until 1945) (누룩 미생물의 문헌적 고찰 (1945년 이전을 중심으로))

  • 누룩은 생소맥을 조분쇄하여 물로 혼합시켜 자연적으로 공지중의 여러 종류의 미생물을 배양시켜 만들었다. 그러므로 누룩에서는 많은 종류의 사상균, 호모와 세균이 증식하였다. 누룩의 당화력은 원료 생소맥의 당화력과 대부분의 사상균의 당화력과 알붕의 세균성 당화력에 기인하여, 발효력은 누룩효모와 극소수의 사상균애 의하여 이루어지고 있다. 1945년 이전까지 누룩으로부터 12속 59종의 사상균이, 8속 29종의 효모와 4속 16종의 세균이 분리 되었다. 누룩사상균은 Aspergillus 속이 주종을 이루었고 Rhizopus속, Absidia속, Nucor속의 순으로 분포하고 있었고, Aspergillus속과 Rhizopus속은 중요한 누룩 당화균으로 작용하였다. 누룩의 대표적 효모는 Saccharomyces cerevisiae 이며 , 이균이 알코올 발효에 가장 큰 역할을 담당하며, Saccharomyces cerevisiae도 전통 민속주의 탁주와 약주의 발효역에 깊이관여한다고 사료된다. 누룩 중에 증식하는 세균은 양조학상 특별한 역할을 담당하지않지만 Bacillus 속 과 젖산세균이 많이 분리되었으며, 젖산세균은 담금초기에 pH의 안정화에 기여할 수 있다고 추측할 수 있다.

A Literature Review Regarding a Myeon-related Ingredients, Recipes and Characteristics in Korean Books published from the 1400's to the 1800's (1400-1800년대 문헌연구를 통한 전통 면식(麵食)의 재료와 조리법 및 특성 고찰)

  • The study aims to perform a literature review regarding Korean traditional myeon (noodles)-related ingredients and recipes. A total of 45 myeon recipe data out of 9 books, documented in Korea from the 1400's to the 1800's was analyzed by ingredients and contents. As a result, it turned out that Korean traditional noodles were made with various ingredients including petals, vegetables and meat in addition to grain flour, and that they existed in various types in addition to long and thin noodles. As for main noodle-making ingredients, glutinous millet, buckwheat, mug beans, elms, beans, wheat and millets were used in diverse ways, and as for noodles soups, fermented soy bean sauces (Korean Jang), broth, omija and seeds (sesame, perilla) were used. In particular, noodles, soups and garnish materials were selectively combined and harmonized to advance noodle foods. In conclusion, traditional Koran noodles were precious foods considered to be healthy foods aimed to pray for longevity, and such diversified food ingredients as noodles, soup and garnish have been harmonized to advance recipes. Healthfulness and characteristics of traditional noodles are expected to contribute to exploring noodle-based Korean food culture contents and developing food industries.

A Study on the Food Cure in Eumsunjungyo Singnyojaebyeong (『음선정요(飮膳正要)·식료제병(食療諸病)』의 식치(食治)에 관한 연구(硏究))

  • Objectives : This study examined the food cures in Eumsunjungyo Singnyojaebyeong. The diseases described in Singnyojaebyeong still occur frequently in modern times. This study also investigated the recipe of food cures for applying to the modern time treatment. Methods : I categorized the major symptoms of the sixty-one food therapies in Singnyojaebyeong, and sorted the main ingredients of each symptoms, and organized the efficacies of food sources based on third book of Eumsunjungyo. Results : Singnyojaebyeong, which organized the treatment methods curing diseases with foods, provided information about the foods that are good for twenty diseases, such as Heoro, Shinheo, Pung, Yotong, Heoyak, Biwui Heoyak, Seupbi, Sujong, Sogal, Sobyeonbultong, Gakgi, and Chijil. The food therapy methods were used to cure diseases using the food sources suitable for each major symptom. Conclusions : The food therapies in Eumsunjungyo Singnyojaebyeong proves that people in all regions have used food to cure diseases from old times. And to cure diseases, people have used the characteristics, tastes, and cooking forms of food ingredients for a long time. Thus, this study can be a reference for creating another food therapy.

3D 패턴 유리기판을 사용한 비정질 실리콘 박막 태양전지의 효율 향상 연구

  • 광포획 기술을 통하여 빛의 흡수 증가시키는 것은 고효율 비정질 실리콘 박막 태양전지 제작에 있어 매우 중요하다. 비정질 실리콘 박막 태양전지에서 일반적으로 사용되는 광포획 기술은 전면 투명전극 및 후면 반사막 표면에 패턴을 형성하는 것이며, 이때의 패턴은 불규칙하게 형성된다. 이러한 불규칙한 패턴 대신 주기적인 패턴을 형성하면 보다 효과적인 광포획 효과를 얻을 수 있다. 본 연구에서는 주기적인 패턴 형성된 유리 기판 위에 비정질 실리콘 박막 태양전지를 제작하여 태양전지의 광학적 특성 및 변환효율 변화를 살펴보았다. 먼저, 패턴이 형성된 유리 기판에 대한 광추적 전산모사를 통하여 광학적 특성 변화를 살펴보았으며, 실험을 통하여 태양전지를 제작하고 광학적 특성 및 변환효율을 측정하였다. 광추적 전산모사 결과와 실험을 통하여 얻은 결과를 비교 분석하여 유리 기판의 반사방지 및 광포획 효과를 알아보았으며, 박막형 비정질 실리콘 태양전지의 변환 효율에 대한 긍정적인 영향을 확인 할 수 있었다. 박막형 비정질 실리콘 태양전지 제작에는 PECVD가 사용되었으며, 태양전지의 광학적 특성 및 변환효율 측정에는 UV-VIS 분광기, 적분구, solar simulator 등이 사용되었다.

  • Model Predictive Control(MPC) system uses the current input which minimizes the difference between the desired output and the estimated output in the receding horizon scheme. In many cases (for example, system with constraints or nonlinear system), however, it is not easy to find the optimal solution to the above problem. In this paper, we show that real number coding genetic algorithm can be used to solve the optimal problem for MPC effectively. Also, we show by simulation that the real coding algorithm is mote natural and advantageous than the digital coding one.

  • It was proved that Hen is an algebraic ,elation of degree [n(l+1]/2] for an (n, 1)-combine. which consists of n LFSRs and l memory bits. For the summation generator with $2^k$ LFSRs which uses k memory bits, we show that there is a non-trivial relation of degree at most $2^k$ using k+1 consecutive outputs. In general, for the summation generator with n LFSRs, we can construct a non-trivial algebraic relation of degree at most 2$^{{2^{[${log}_2$}n]}}$ using [${log}_2$+1 consecutive outputs.

  • The period of a recent streamcipher proposal Edon80 is analyzed. The designers of Edon80 had projected a period of $2^{103}$ Even though this could indeed be the average keystream Period, we show that for a randomly chosen key-IV pair, there exists a non-dismissible probability that the produced keystream will be of relatively short period. More explicitly, a keystream of period. $2^{55}$ may appear with probability $2^{-71}$, and one can show the existence of at least one key-lV pair producing a period $2^{11}$ keystream.

Study on the Korean Food Selection Practices by Importance and Satisfaction among Korean Students Attending International Schools (외국인학교 한국 학생의 한식선택 시 중요도 및 만족도 조사)

  • The purpose of this study is to understand the characteristics and improvements of Korean foods by using the ISA (Importance Satisfaction Analysis) targeting Korean students in international schools in the Seoul Metropolitan area. It also analyzes the difference in the importance and satisfaction of Korean foods, and to provide basic data for developing various healthy diets which are suitable for target students. Target groups are 7 to 12 graders which consist of 62 male students and 42 female students, and most of them had lived in the United States with duration of staying abroad from 1 year to less than 3 years and duration of attending schools from 1 year to less than 2 years. Most of their family structures are the nuclear family, and most of their fathers work in management positions and mothers are mostly full-time housewives. The most favored and consumed food is fruits and the least favored is seaweeds. Perceptions regarding Korean foods are mainly positive and more female students than male students consider Korean foods as well-being foods. The important factor for choosing Korean food is the flavor, and the highest satisfaction lies in the cleanliness of food and tableware, and food temperatures appear to be less important than other factors regarding both importance and satisfaction aspects. The flavor turns out to be the most influential when consuming Korean foods, and information on Korean foods is mostly acquired from advices of those around and through words-of-mouth, and many comments point out that the levels of sanitation should be improved. The result of ISA regarding determinant factors in choosing Korean foods by Korean students in international schools shows that efforts for aggressive improvements should be made in areas for 'the amount of food', 'the price of food', and 'the curiosity on food'.

Effects of Mixing Condition and Filtration Velocity on Turbidity Removal in a Contact Roughing Filter (접촉여과방식 거친여과지에서 혼화조건과 여과속도가 고탁도 제거에 미치는 영향)

  • Slow sand filtrations have been widely used for water treatment in small communities, however their capacity is often limited by high turbidity in the raw water. For this reason, several pre-treatment facilities were required for a slow sand filter. Turbidity removal from the highly turbid raw water was investigated in roughing filters as a pre-treatment process. The roughing filters followed by rapid mixing tank were operated in the form of a contact filtration. In several jar tests, the predetermined optimum aluminium sulfate (alum) doses for turbid water of 30 and 120NTU were 30 and 50mg/L, respectively. At the optimum alum dose, physically optimum parameters including G value of $220sec^{-1}$ and rapid mixing time of 3 minutes were applied to the contact filtration system. Without addition of alum, the filtrate turbidity from the roughing filters, packed respectively with different media such as sand, porous diatomite ball and gravel, was in the range of 5~30NTU at filtration velocities of 30 and 50m/day. However, the application of a contact filtration to roughing filters showed stably lower filtrate turbidity below 1.0NTU at filtration velocity of 30 m/day. Although the filtration velocity increased to 50m/day, filtrate turbidity was still below 1.0NTU in both single and double layer roughing filters. At influent turbidity of 120NTU, the filtrate turbidity was over 5 NTU in the triple layer roughing filter, which shortened the filter run time. The flocs larger than $10{\mu}m$, formed in the rapid mixing tank, were almost captured through the roughing filter bed, while the almost flocs smaller than $10{\mu}m$ remained in filtrate.

  • A method based on high-performance liquid chromatography (HPLC) with ultraviolet detection has been developed to quantify coenzyme Q10 (CoQ10) in raw materials and dietary supplements. Single-laboratory validation has been performed on the method to determine linearity, selectivity, accuracy, limits of quantification (LOQ) and repeatability for CoQ10. An excellent linearity (r=0.999) was observed for CoQ10 in the concentration range $15.625{\sim}500\;{\mu}g/ml$ in dietary supplement. Observed recovery of CoQ10 was found to be between 98.33 and 99.38%. LOQ was found to be $250\;{\mu}g/ml$ Repeatability precision for CoQ10 was between 0.15 and 0.21% relative standard deviation (RSD). Further, limited studies showed that some adulterants and degraded material could be satisfactorily separated from CoQ10 and identified.
