Study on the Quality of Apple Dressing Sauce Added with Pine Mushroom(Tricholoma matsutake Sing) and Chitosan (송이버섯과 키토산을 첨가한 사과 드레싱 소스의 품질에 관한 연구)

  • The purpose of this research was to develop the apple dressing sauce added pine mushroom (Tricholoma matsutake Sing.) and chitosan which has excellent functionality and scent. An apple dressing sauce with pine added to it was manufactured and tested for sensuality and also for quality changes during storage. The sensory test of the sauces added pine mushroom, the apple dressing sauce added pine mushroom and the apple dressing added pine mushroom and chitosan scored high points. The chromaticity of the apple dressing sauce with pine mushroom compared to the pine didn't show much difference in the L, a, b values and also in the sauces added pine and chitosan, the apple dressing showed less change. At $4^{\circ}C$ and 25, the viscosity of the sauces with pine mushroom showed a small increase in all samples as the storage duration went on. At $4^{\circ}C$, a continuous decrease of the pH was seen in all of the apple dressing sauce added with pine mushroom on storages and from 30 days the pH seemed to start increasing slightly. During storage, the titratable acidity in all samples of the apple dressing with pine mushroom at $4^{\circ}C$ and $25^{\cird}C$ seemed to some what increase as the term went on but there was no significant differences to the acidity. At $4^{\circ}C$, the total viable cells in the apple dressing with pine mushroom showed $1.7{\times}10^{2}CFU/g$ which was the lowest in the beginning of storage period but as the storage period grew longer the total viable cells increased in all of the samples.

Comparative Analysis of Cold Tolerance and Overwintering Site of Two Flower Thrips, Frankliniella occidentalis and F. intonsa (꽃노랑총채벌레와 대만총채벌레의 내한성과 월동처 비교 연구)

  • Two dominant thrips in hot pepper (Capsicum annuum) cultivating in greenhouses are Frankliniella occidentalis and F. intonsa in Korea. This study investigated their overwintering physiology. These two thrips were freeze-susceptible and suppressed the body freezing temperature by lowering supercooling point (SCP) down to -15~-27℃. However, these SCPs varied among species and developmental stages. SCPs of F. occidentalis were -25.7±0.5℃ for adults, -17.2±0.3℃ for pupae, and -15.0±0.4℃ for larvae. SCPs of F. intonsa were -24.0±1.0℃ for adults, -27.0±0.5℃ for pupae, -17.2±0.8℃ for larvae. Cold injuries of both species occurred at low temperature treatments above SCPs. Thrips mortality increased as the treatment temperature decreased and its exposure period increased. F. occidentalis exhibited higher cold tolerance than F. intonsa. In both species, adults were more cold-tolerant than larvae. Two thrips species exhibited a rapid cold hardening because a pre-exposure to 0℃ for 2 h significantly enhanced the cold tolerance to a lethal cold temperature treatment at -10℃ for 2 h. In addition, a sequential exposure of the thrips to decreasing temperatures made them to be acclimated to low temperatures. To investigate the overwintering sites of the two species, winter monitoring of the thrips was performed at the greenhouses. During winter season (November~February), adults of the two species were not captured in outside of the greenhouses. However, F. occidentalis adults were captured to the traps and observed in weeds within the greenhouses. F. occidentalis adults were also emerged from soil samples obtained from the greenhouses during the winter season. F. intonsa adults did not come out from the soil samples at November and December, but emerged from the soil samples obtained after January. To determine the adult emergence due to diapause development, two thrips species were reared under different photoperiods. Adult development occurred in all photoperiod treatments in F. occidentalis, but did not in F. intonsa especially under short periods. Tomato spotted wilt virus, which is transmitted by these two species, was detected in the weeds infested by the thrips during the winter season. These results suggest that F. occidentalis develops on weeds in the greenhouses while F. intonsa undergoes a diapause in the soil during winter.

Increasing Accuracy of Classifying Useful Reviews by Removing Neutral Terms (중립도 기반 선택적 단어 제거를 통한 유용 리뷰 분류 정확도 향상 방안)

  • Customer product reviews have become one of the important factors for purchase decision makings. Customers believe that reviews written by others who have already had an experience with the product offer more reliable information than that provided by sellers. However, there are too many products and reviews, the advantage of e-commerce can be overwhelmed by increasing search costs. Reading all of the reviews to find out the pros and cons of a certain product can be exhausting. To help users find the most useful information about products without much difficulty, e-commerce companies try to provide various ways for customers to write and rate product reviews. To assist potential customers, online stores have devised various ways to provide useful customer reviews. Different methods have been developed to classify and recommend useful reviews to customers, primarily using feedback provided by customers about the helpfulness of reviews. Most shopping websites provide customer reviews and offer the following information: the average preference of a product, the number of customers who have participated in preference voting, and preference distribution. Most information on the helpfulness of product reviews is collected through a voting system. Amazon.com asks customers whether a review on a certain product is helpful, and it places the most helpful favorable and the most helpful critical review at the top of the list of product reviews. Some companies also predict the usefulness of a review based on certain attributes including length, author(s), and the words used, publishing only reviews that are likely to be useful. Text mining approaches have been used for classifying useful reviews in advance. To apply a text mining approach based on all reviews for a product, we need to build a term-document matrix. We have to extract all words from reviews and build a matrix with the number of occurrences of a term in a review. Since there are many reviews, the size of term-document matrix is so large. It caused difficulties to apply text mining algorithms with the large term-document matrix. Thus, researchers need to delete some terms in terms of sparsity since sparse words have little effects on classifications or predictions. The purpose of this study is to suggest a better way of building term-document matrix by deleting useless terms for review classification. In this study, we propose neutrality index to select words to be deleted. Many words still appear in both classifications - useful and not useful - and these words have little or negative effects on classification performances. Thus, we defined these words as neutral terms and deleted neutral terms which are appeared in both classifications similarly. After deleting sparse words, we selected words to be deleted in terms of neutrality. We tested our approach with Amazon.com's review data from five different product categories: Cellphones & Accessories, Movies & TV program, Automotive, CDs & Vinyl, Clothing, Shoes & Jewelry. We used reviews which got greater than four votes by users and 60% of the ratio of useful votes among total votes is the threshold to classify useful and not-useful reviews. We randomly selected 1,500 useful reviews and 1,500 not-useful reviews for each product category. And then we applied Information Gain and Support Vector Machine algorithms to classify the reviews and compared the classification performances in terms of precision, recall, and F-measure. Though the performances vary according to product categories and data sets, deleting terms with sparsity and neutrality showed the best performances in terms of F-measure for the two classification algorithms. However, deleting terms with sparsity only showed the best performances in terms of Recall for Information Gain and using all terms showed the best performances in terms of precision for SVM. Thus, it needs to be careful for selecting term deleting methods and classification algorithms based on data sets.

Liming Effect on Cadmium Immobilization and Phytoavailability in Paddy Soil Affected by Mining Activity (중금속 오염 논토양에서 카드뮴의 부동화와 식물이용성에 대한 석회 시용 효과)

  • BACKGROUND: Many studies associated with cadmium (Cd) immobilization using lime fertilizer have been conducted for several decades. However, these studies did not suggest exact mechanism of Cd immobilization using lime fertilizer and evaluated effect of lime fertilizer on Cd phytoavailability in rice paddy soil under field condition. METHODS AND RESULTS: This study was conducted to determine exact mechanism of Cd immobilization using lime fertilizer and evaluate liming effect on Cd uptake of rice in contaminated paddy soil. $Ca(OH)_2$ was mixed with Cd contaminated arable soil at rates corresponding to 0, 1,000, 2,000, 4,000, and 8,000 mg/kg. The limed soil was moistened to paddy soil condition, and incubated at $25^{\circ}C$ for 4 weeks. $NH_4OAc$ extractable Cd concentration in soil decreased significantly with increasing $Ca(OH)_2$ rate, since $Ca(OH)_2$ markedly increased net negative charge of soil by pH increase, and decreased bioavailable Cd fractions (F1; exchangeable + acidic and reducible Cd fraction). Calculated solubility diagram indicated that Cd solubility was controlled by soil-Cd. $NH_4OAc$ extractable Cd and F1 concentration were negatively related to soil pH and negative charge. $Ca(OH)_2$ was applied at rates 0, 2, 4, and 8 Mg/ha and then cultivated rice in the paddy soil under field condition. Cadmium concentrations in grain, straw, and root of rice plant decreased significantly with increasing application rate of $Ca(OH)_2$. CONCLUSION(S): Alleviation of Cd phytoavailability with $Ca(OH)_2$ can be attributed primarily to Cd immobilization due to the increase in soil pH and negative charge rather than precipitation of $Cd(OH)_2$ or $CdCO_3$, and therefore, $Ca(OH)_2$ is effective for reducing Cd phytoavailability of rice in paddy soil.

Isolation and Identification of Oceanisphaera sp. JJM57 from Marine Red Algae Laurencia sp. (Ceramiales: Rhodomelaceae) (해양 홍조류 Laurencia sp. (Ceramiales: Rhodomelaceae)에서 분리한 Oceanisphaera sp. JJM57의 분리 및 동정)

  • A taxonomic study was carried out to assess the phylogenetic characteristics of isolate JJM57 from marine red algae Laurencia sp. collected from intertidal zone in Jeju Island, South Korea. Comparative analysis of 16S rRNA gene sequence shows that this isolate belongs to the genus Oceanisphaera. It shows 98.02% and 97.7% sequence similarity with Oceanisphera litoralis DSM $15406^T$ and Oceanisphera donghaensis KCTC $12522^T$, respectively. Strain JJM57 is a Gram-negative, aerobic, moderately halophilic bacterium able to grow in different NaCl concentration ranges from 0.5 to 8.0% and at varying temperatures from 4 to $37^{\circ}C$. Sharing some of the physiological and biochemical properties with O. litoralis and O. donghaensis, JJM57 strain differs in the utilization of ethanol, proline, and alanine. The G+C contents of the strain JJM57 is 61.94 mol% and it is rich in $C_{16:1}$ ${\omega}7c$ and/or iso-$C_{15:0}$ 2-OH, $C_{16:0}$, and $C_{18:1}$ ${\omega}7c$ fatty acids. The DNA-DNA relatedness data separates the strain JJM57 from other species such as O. litoralis and O. donghaensis. On the basis of these polyphasic evidences, present study proposed that strain JJM57 (=KCTC 22371 =AM983543 =CCUG 60764) represents a novel bacterial species of Oceanisphaera.

Different Clinical Courses of Henoch-Schönlein Purpura in Children, Adolescents and Adults (Henoch-Schönlein Purpura에서 연령에 따른 임상 양상 및 예후에 관한 고찰)

  • Purpose : $Henoch-Sch{\ddot{o}}nlein$ purpura(HSP) is the most common and benign systemic vasculitis in children. Few reports have focused on worse outcomes of HSP in adults. The age of onset is suggested as a main risk factor. We assessed the characteristics of adolescent-onset HSP. Methods : We retrospectively analyzed 205 cases presented from Aug. 1993 to Oct. 2003. Patients were classified as children(<10 years of age), adolescents(10-20 years of age), and adults(>20 years of age). Results : The mean age was $5.7{\pm}1.8years$ in 149 children, $13.5{\pm}2.4years$ in 38 adolescents, and $44.9{\pm}14.5years$ in 18 adults. The male to female ratio was 1.2 : 1 in children and adolescents, and 2 : 1 in adults. Previous upper respiratory infections were found in 53.4 percent of children, 32.4 percent of adolescents, and 33.3 percent of adults. Positivity of stool occult blood was more frequent in adults(50.5 percent) than in children(23.0 percent)(P<0.05). Renal involvement was found in 46 cases (30.9 percent) of children, 23 cases(60.5 percent) of adolescents, and 15 cases(83.3 percent) of adults. Recurrences occurred in 23 cases(15.4 percent) of children, nine cases(23.7 percent) of adolescents, and three cases(16.7 percent) of adults. Among the cases with renal involvement, 97.8 percent of children and 87.0 percent of adolescents improved to normal or asymptomatic urinary abnormalities. 60.0 percent of adults persisted with severe nephropathy and 13.3 percent progressed to renal insufficiency. Conclusion : Although the outcome of adolescent HSP was as good as children, the clinical manifestations were similar to those of adults. Adolescents had the highest rate of recurrences. Thus long term observations may be needed in adolescent onset HSP.

Antioxidant activities of ethanol extracts of Aster scaber grown in wild and culture field (야생 및 재배 참취 에탄올 추출물의 항산화성)

  • The purpose of this study was to evaluate the functionality of ethanol extract of Aster scaber by analyzing anti-oxidant components and anti-oxidant activities, which was grown in wild and culture field. The yields of Aster scaber ethanol extracts were high after blanching treatment. The polyphenol content of dried Aster scaber grown in wild was 35.59 mg/g, which was higher than that of Aster scaber grown in culture field. The electron donating ability in all Aster scaber extracts were increased with increase in extract concentration, and the electron donating ability was the highest in extracts of the dried Aster scaber after blanching. The SOD-like activity of Aster scaber was the highest in its extract grown in wild field. In addition, the SOD-like activities of extracts of the dired Aster scaber after blanching were highest among the extracts of cultivated Aster scaber. The nitrite scavenging ability of extracts was increased at pH 1.2, and those was the highest in wild fresh Aster scaber. The inhibition effects on xanthine oxidase and tyrosinase were increased with increase in extract concentration, and the inhibition effects of extracts of Aster scaber in wild field were higher than those grown in culture field. Therefore, the consumption of Aster scaber would provide beneficiary effects due to its antioxidant activities and prevention of aging. The development of various processed food using Aster scaber will promote the consumption and its values.

Study on the Quality and Process of Jujube Fruit Jungkwa (대추정과의 제조방법과 품질에 관한 연구)

  • This study was developed a multi-step process of functional jungkwa preparation from jujube fruits to prepare a new processed food, and investigated on the quality of jujube jungkwa. The weight of jujube fruits notably increased during the second processing, compared with jungkwa prepared from dried jujube fruits using an osmosis drying treatment. The weight of jungkwa produced in the second processing step was less than those in the first step. The Hunter values (L, a, b) of dried jujube fruits after the first processing were less than those of control jujube fruits. The L value did not change after the second processing of jujube jungkwa, but the a and b values were markedly decreased. However, the Hunter values did not change during the third processing step. The moisture content of dried jujube fruit, and dried fruit treated by supplementary drying (DDJF) was 37.74 and 35.93%, respectively, and that of dried fruit treated by osmosis drying was 40.42%. The moisture content of dried jujube fruit after the second processing decreased by 2-10%, and by 4-10% after the third processing. The reabsorption ratio of jujube jungkwa after the second processing was 16.93%, and that of jungkwa produced from osmosis-dried fruit 24.81%. The strength and hardness of dried jujube fruit treated with supplementary drying (DDJF) were higher, at 3 and 2, respectively, compared to the values of dried jujube fruit. The rheology of jujube fruit and jungkwa did not change during the second processing. The color, glossiness, acceptability of appearance, flavor, and overall acceptability of dried jujube fruit treated by osmosis drying as the second processing step were somewhat higher than those of fruit processed by other methods. The scores for appearance, flavor, chewiness, after taste, and overall acceptability of dried fruits treated with supplementary drying as the third processing step were somewhat greater than those of fruit prepared by other means. Accordingly, we have developed a process for preparation of jungkwa from dried jujube fruit treated by supplementary drying and osmosis drying as the second and third processing steps.

cDNA Cloning and Stage-Dependant Expression of Arylphorin Gene from Chinese Oak Silkworm, Antheraea pernyi (작잠(Antheraea pernyi) 아릴포린(Arylphorin) 유전자의 cDNA 클로닝 및 아릴포린 유전자의 발육시기 의존성 발현양상)

  • The cDNA cloning and developmental profiles of the mRNA for A. pernyi arylphorin was determined. The complete A. pernyi arylphorin cDNA sequence comprised 2,234 bp (without the poly $A^+$ tail), including an open reading frame of 2,112 bp beginning with a methionine ATG at bp34. The A. pernyi arylphorin contained 704 amino acids which are highly enriched in aromatic amino acids, phenylalanine and tyrosine. The calculated molecular mass of the A. pernyi arylphorin from the ORF was 83,439 Da. The deduced amino acid sequence of A. pernyi arylphorin showed 78, 71, 62 and 64% identity with those of H. cecropia, M. sexta $\alpha$ subunit, M. sexta $\beta$ subunit and B. mori storage protein. In Northern blot analysis, the A. pernyi arylphorin mRNA only in the fat body of the 5th instar larvae was responsible for gene expression of the protein, and the synthetic activity of the mRNA was detected strongly in the early larvae, but not in the middle or late-stage larvae. In addition, a very weak signal in mRNA activity was detected in pupal stages, but this was considered to be inactive mRNA after reviewing the results of the labeling experiment of this protein.

Effects of Pretreatment and Drying Methods on Quality and Antioxidant Activities of Dried Jujube (Zizyphus jujuba) Fruit (전처리 조건 및 건조방법에 따른 건조대추의 품질특성 및 항산화 활성)

  • This study was performed to determine the effects of pretreatment (NT: non-treatment, BTS: boiling treatment with 3% sodium chloride, DTG: dipping treatment in glycerol) and drying methods (sun drying, hot air drying, and cold air drying) on the physicochemical properties and antioxidant activities of dried jujube (Zizyphus jujuba Mill.) fruits. Our results show that moisture content is lower (P<0.05) with DTG, and that moisture content is lower with hot air drying compared to other drying methods. The bulk density was highest with BTS. The soluble solids content was highest with DTG. Additionally, the soluble solids content were highest in the following order: hot air drying> cold air drying> sun drying. The titratable acidity of hot air drying was highest of all the drying methods. The titratable acidity was higher with NT and DTG, and the brix and acid ratio of sun drying was higher than other drying methods. Among the drying methods, BTS showed the best browning-retarding effect, whereas boiling treatment affected quality and color. The total polyphenol content from hot air drying and NT or DTG treatment was relatively higher than the content from BTS. The flavonoid content was highest with BTS, and all dried jujube showed relatively high antioxidant activities. The sensory evaluation results indicated that the organoleptic scores for overall preference were higher in the NT and DTG treatment groups. These results suggest that pretreatment and drying methods affect the quality of dried jujube fruit, and show that glycerol treatment with hot air drying can be applied to the production of high quality dried jujube.
