진공포장이 배아미와 현미의 저장성에 미치는 영향

  • 쌀에 함유된 지방질은 가공 처리 중 쉽게 가수분해나 산화를 일으켜 이취 또는 불쾌한 맛을 생성하여 밥의 품질을 저하시키는 원인이 된다. 산화를 억제시키기 위해서는 공기와의 접촉을 차단시키는 것이 중요하다. 이러한 목적의 일환으로 본 연구에서는 쌀의 저장기간을 연장시키기 위하여 배아미와 현미를 진공포장한 후 실온에서 보관하면서 14주 동안 2주마다 과산화물가와 산가를 분석하여 산패도를 측정하였다. 비포장 현미와 배아미의 과산화물가는 처음 4주동안은 모두 6∼9 meq/kg정도로 차이가 없었지만, 현미의 경우에는 6주후에는 배아미보다 산패가 빨리 진행되어 휘발성 물질의 생성에 따라 이취미가 나기 시작하였다. 진공포장한 현미와 배아미는 지방질 함량의 차이 때문에 초기에는 과산화물가 0.3 meq/kg정도의 차이가 있었고, 저장과정 중에는 과산화물가의 차이가 거의 없었다. 산가(유리지방산)의 양도 비포장한 배아미와 현미의 경우에는 저장기간중 0.5 mg/g정도의 차이가 있었지만, 진공포장을 한 경우에는 8주 동안에는 큰 차이가 나지 않았으며, 10주후 부터는 0.6 mg/g정도의 차이를 나타냈다. 본 실험으로 배아미와 현미를 진공포장할 경우 비포장하였을 때보다 산패가 억제되어 10주 정도의 저장기간이 연장됨을 확인할 수 있었다.

Effect of Brown Rice Flour on Muffin Quality (현미분말 첨가에 의한 머핀의 품질 증진 효과)

  • The purpose of this study was to examine the qualities of muffins with 20, 40, and 60% brown rice flour (BRF). The muffins containing 20, 40, and 60% BRF were lower than control muffins (made with regular flour) in weight, height, pH, and moisture content. No significant differences were observed between BRF muffins in weight and moisture content; however, height and pH decreased with increasing amounts of BRF added (p<0.05). The moisture content of control muffins decreased after storage at $30^{\circ}C$ and was not significantly different than BRF muffins (p>0.05). The hardness and resilience in the controls were higher than BRF muffins, but increasing the amount of BRF added in muffins increased both hardness and resilience (p<0.05). The cohesiveness and springiness in the controls were higher than in BRF muffins and decreased with increasing the amount of BRF added to muffins (p<0.05). The gumminess and chewiness in muffins with BRF were higher than controls and were increased when the amount of BRF added in muffins was increased (p<0.05). However, the adhesiveness of the samples was not significantly different (p>0.05). In sensory evaluation, the external color in muffins with 20% BRF and the internal color in controls were the highest (p<0.05). The taste, aroma, texture, and overall acceptability were the highest in muffins with 60% BRF (p<0.05). The antioxidant activities, DPPH radical scavenging, and superoxide dismutase-like activity of muffins were increased with increasing the amount of BRF added to muffins (p<0.05).

Physiochemical Properties of Germinated Brown Rice (발아현미의 이화학적 특성)

  • This study evaluated the physicochemical properties of brown rice (BR) and germinated brown rice (GBR) in Korea. The protein content of BR was significantly higher than that of GBR. The amylose content of BR and GBR ranged from 17.42 to 18.48% and from 17.50 to 19.69%, respectively. The GBR contained higher ${\gamma}$-aminobutyric acid (GABA) content than that of BR. In an RVA examination, pasting temperatures of BR and GBR were $67.97{\sim}68.03^{\circ}C$. Texture analysis test showed that GBR Yeonghojinmi had the lowest hardness and highest stickiness. In conclusion, this study showed that compared to BR, GBR has a much softer texture, improved eating quality and increased GABA content.

Texture, Pasting and Thermal Properties of Lodged Rice (도복된 쌀의 텍스처, 호화 및 열적 특성)

  • This study was conducted to determine and compare hardness, thermal properties (by DSC), pasting properties (by RVA) and texture of brown rice and white rice, either lodged or non-lodged, with respect to lodging time. The hardness and the thermal properties of lodged brown rice and white rice decreased with lodging time, while those of nonlodged brown and white rice increased. In addition, the rice kernel hardness and the thermal properties had high correlation coefficients. The pasting properties, with the exception of setback, and the textural properties of lodged brown and white rice decreased with lodging time, while those of non-lodged brown and white rice increased.

Effect of Partial Replacement of Rice Flour with Black or Brown Rice Flour on Textural Properties and Retrogradation of Julpyun (흑미 및 현미의 부분적인 대체가 절편의 물성과 노화에 미치는 영향)

  • This study was attempted to investigate the effect of partial replacement of rice flour with black or brown rice flour on texture properties and retrogradation of Julpyun(Korean rice cake). In sensory evaluation, the Julpyuns replaced black or brown rice flour 20% had high score in color, flavor and overall acceptability not including mouthfeel. As the result of the measurement with texture analyzer, hardness, gumminess and chewiness of Julpyuns tended to decrease in proportion to the amount of black and brown rice flour in the formula. These resets implied that the degree of retrogradation of black and brown rice Julpyuns might be low. Julpyuns replaced with black rice were a little lower than those of brown rice in the hardness. In the retrogradation speed by Avrami,s equation, the rate constants of Julpyun replaced black and brown rice flour was lower than that of milled rice, restating in delay in firming.

Preparation and Quality Characteristics of Korean Wheat Noddles Made of Brown Glutinous Rice Flour With and Without Aroma (현미찹쌀가루와 향현미찹쌀가루를 첨가한 우리밀국수의 제조 및 품질특성)

  • In order to manufacture the high-quality products as well as to promote their consumption, dry noodles were prepared with Korean wheat flour and brown glutinous rice flour with and without aroma and quality characteristics of dry noodles were investigated. The average particle size distributions of aromatic brown glutinous rice flour and brown glutinous rice flour ranged from 12.38 to $15.59\;{\mu}m$, which was different from that of control. As a result of farinograph study, water absorption of dough increased and decreased with increasing amounts of brown glutinous rice flour with and without aroma, respectively. Stability, developing time and elasticity of dough showed a decreasing tendency. When compared with the control, aromatic brown glutinous rice samples produced noodles with a greater degree of lightness and a less intensity of yellowing. Replacement of up to 20% of Korean wheat flour by aromatic brown glutinous rice flour and brown glutinous rice flour in noodle had similar cooked properties such as weight gain, volume and water absorption as compared with the control. From the result of sensory evaluation, composite flours(addition up to 30% aromatic brown glutinous rice flour and up to 20% brown glutinous rice flour) and control were rated with a relatively high quality score for appearance, taste and overall eating quality.

Effects of Fermentation Method and Brown Rice Content on Quality Characteristics of Brown Rice Vinegar (발효 현미식초의 발효방법 및 원료함량에 따른 품질변화)

  • To evaluate the quality of brown rice vinegar made by traditional fermentation in terms of Zymotechnic data and material content, vinegars prepared using a traditional leavening agent and yeast were compared. Amino acid, total nitrogen, free sugar, organic acid, and mineral levels were assessed, with vinegars made with initial brown rice contents of 12.36% (w/v). Vinegar made using Nuruk as fermenting agent (traditional fermentation, TF), with a brown rice content of 20% (w/v), and vinegar prepared using yeast for fermentation (control fermentation, CF), with a brown rice content of 12% (w/v) were compared. TF vinegar had a total nitrogen content about 2.0.4.6-fold that of CF vinegar. Total nitrogen in TF vinegar was 350.460 mg/100g, and in CF vinegar the level was 100.140 mg/100g. TF vinegar had more minerals, free sugars, and amino acids compared with CF vinegar. When free sugar was assessed, TF vinegar had a glucose level of 3.45 g/100g, double that of CF vinegar. Amino acid levels were five-fold higher in TF vinegar then in CF vinegar. When brown rice content was 36% (w/v), the amino acid level was $6088.22\;{\mu}g/mL$ in TF vinegar and $1194.05\;{\mu}g/mL$ in CF vinegar.

Development of polyurethrane roller for huller (현미기용 합성우레탄롤러 개발)

  • 마모가 잘 되는 현미기 고무롤러의 단점을 보완하여 작업의 효율화를 위해 내마모성이 높은 재질인 합성우레탄으로 현미기용 롤러를 개발하여 시험하였다. 가. 경도별 합성우레탄의 마모량을 테이버식으로 측정한 결과 경도80$^{\circ}$, 85$^{\circ}$에서 각각 68, 72mg으로 낮게 나타났으나 현미기롤러 재질로 적용하기 위해서는 탈부 요인시험이 요구되었다. 나. 합성우레탄롤러의 적정경도 구명요인시험을 실시한 결과 탈부율 및 동할률이 경도 80$^{\circ}$이상에서 기존의 고무롤러에 비해 동등하거나 우수한 것으로 나타났다. 다. 현장 적용 성능시험결과 고무롤러의 경우 벼 가공량이 300톤/조 이었고, 합성우레탄롤러 경도 85$^{\circ}$의 경우 1,083톤/조로 내구성이 3.6배 큰 것으로 나타났다. 라, 고무롤러의 동할율 증가량은 0.43%인데 비해 합성우레탄롤러는 경도 85$^{\circ}$에서 0.29%로 나타나 현미품위가 향상되었다. 마, 위 결과를 종합하여볼 때 합성우레탄 현미기롤러의 경도는 85$^{\circ}$ 가장 적합한 것으로 나타났다.

Functional Components and Radical Scavenging Activity of Germinated Brown Rice according to Variety (품종별 발아현미의 기능성분 및 라디칼 소거 활성)

  • This study investigated the changes in chemical components, antioxidant compounds, and activity before (BG) and after germinated (AG) brown rice in order to promote the availability of these beneficial factors. The GABA content of BG and AG brown rice were 0.07~6.61 and 11.13~49.72 mg/100 g, respectively. The ${\alpha}$-amylase activity of AG brown rice was 1.77~70.25 unit/g fold higher than it was in BG brown rice. Total polyphenol and flavonoid contents, which are known to be related to antioxidation, were higher in BG brown rice than in AG brown rice. The total polyphenol contents of BG and AG brown rice were 10.52~36.38 and 11.38~26.33 mg/100 g, and the total flavonoid contents were 3.55~13.39 and 3.52~9.78 mg/100 g, respectively. Also, DPPH radical scavenging activity was 57.64~251.34 and 50.49~213.35 mg TE/100 g, respectively. ABTS radical scavenging activity and total tannin content showed a similar trend to DPPH radical scavenging activity. We expect that this data will be useful in the manufacturing of food products.

The Impact of Cooking on the Antioxidative and Antigenotoxic Effects of Rice (호화과정이 백미, 현미, 발아현미의 항산화 및 항유전 독성 활성에 미치는 영향)

  • Rice is widely grown in Asia and is one of the major dietary staples in the world. Also, rice contains antioxidants which can prevent from oxidative stress related diseases, including cancer, atherosclerosis, and diabetes. Because the rice is consumed cooked, the effect of the cooking process on the antioxidative and antigenotoxic properties of rice is lacking. The aim of this study was to determine the effects of cooking on the antioxidant and antigenotoxic effects of white rice (WR), brown rice (BR), and germinated brown rice (GBR). The antioxidant activities were measured for total phenolic content (TPC), DPPH radical scavenging activity (DPPH RSA), total antioxidant capacity (TRAP), and oxygen radical absorbance capacity (ORAC). The highest TPC was found in uncooked BR (18.4 mg gallic acid equivalent/100 g). After cooking, the TPC of WR significantly increased, while the TPC of BR and GBR were reduced by 47.7% and 36.7%, respectively. The $IC_{50}$ for DPPH RSA was not significantly different in uncooked rice, while the DPPH RSA of WR and GBR decreased after cooking and the DPPH RSA of BR significantly increased. TRAP values in BR and GBR increased after cooking, while the value of WR decreased. The ORAC values of uncooked WR, BR, and GBR were 5.3, 4.3, and $3.9{\mu}M$ trolox equivalent at the concentration of $50{\mu}g/mL$. After cooking, the ORAC value of BR remained unchanged, while the value of GBR increased and the value of WR decreased. The antigenotoxic activities of WR, BR, and GBR were determined by measuring the inhibitory effects of $H_2O_2$-induced DNA damage on human leukocytes using the comet assay. The results showed that all rice tested showed a significant antigenotoxic effect against oxidative stress, except for the cooked white rice. Overall, our results indicate the addition of brown rice and/or germinated brown rice to cooked white rice is a good option for improving the benefits of rice.
