  • In order to develop a potent antidandruffy agent from medicinal plants, various extracts of medicinal plants and herbs were prepared and investigated its antifungal activity against Malassezia furfur. Among 85 kinds of the secondary screened medicinal plants and herbs, water extract of Chrysanthemum zawadskii had the highest antifungal activity against dandruffy-producing Malassezia furfur. The antifungal compound was also maximally extracted when the powder of Chrysanthemum zawadskii was treated with water at $50^{\circ}C$ for 6 hours. The antifungal compound from Chrysanthemum zawadskii was partially purified by silica gel column chromatography and the partial purified compound was soluble at $70^{\circ}C$ for 20 min and pH $3.0{\sim}9.0$.

  • The antimicrobial activity of PHB/chitosan films and the quality of white bread packaged with the films were investigated. Chitosan film showed the highest antimicrobial activity and PHB(L) film also showed high antimicrobial activity against Fusarium solani KCTC 6636 and Penicillium citreonigrum KCTC 6927. White bread packaged with chitosan film had good moisture retention. $L^*\;and\;b^*$ of white bread increased but $a^*$ did little change during storage regardless of the film kind. The TBA values of white bread packaged with chitosan or PHB(L) film slowly increased during storage. The springiness of white bread packaged with PHB(M), PHB(L) and chitosan film was high. The colony forming units of microorganisms for white bread packaged with chitosan film were low during storage. Therefore, PHB(M), PHB(L) and chitosan films were superior to PHB(H) and PHB films as package material for white bread.

  • Ethanol extracts of amur cork, elm root, plantain and dandelion which are edible and can be mass produced at farm were examined their inhibitory activity against food spoilage microorganisms at their concentrations and the extracts were fractionated by some solvents with checking effective fractionate. Above $500{\sim}2000\;ppm$ of the extracts inhibited completely the test microorganisms with a few exception. One thousand ppm of amur cork exract inhibited B. cereus completely. L. mesenteroides by 500 ppm of amur cork and 2000 ppm of elm root and plantain showed a pretty good inhibition. The extracts which showed good inhibition to the test microorganisms were fractionated with chroloform, ethylacetate, butanol and water in order and the fractionates of butanol and chroloform showed comparetively higher inhibition than others generally. Inhibition rate of each fractionate were as follows ; B. cereus was inhibited completely at 500 ppm of chroloform fraction, and 1000 ppm of ethyl acetate and butanol and L. mesenteroides was 500 ppm of butanol fraction. P. fluorescens was inhibited partly by 500 ppm of butanol and ethyl acetate fraction.

혈액배양은 Bact/Alert 3D (North Carolina, Durham, USA)를 이용하여 성인에서는 Bact/Alert S(Aerobic)(Biomerieux Brazil S.A)와 Bact/Alert SN(Anaerobic)(Biomerieux Brazil S.A) 배지를 사용하였고, 소아에서는 Bact/Alert PF (Biomerieux Brazil S.A)배지를 사용하여 5일간 배양하였고, 항균제 감수성 검사는 자동화 동정 및 감수성 장비인 VITEK (BioMerieux vitek. Hazelwood. Missori. USA)을 이용하였다.

  • To introduce the antibacterial activity, ACF(activated carbon fiber) was impregnated by nano-sized Ag, Mn, and phosphoric acid. It was observed by the SEM analysis that Ag, Mn and phosphoric acid were properly impregnated at the ACF. The impregnated ACF showed lower adsorption performance than the pure ACF. It is found that ACFs impregnated by nano-sized Ag or phosphoric acid have a good antibacterial activity against bacillus cereus and salmonella entaritidis. but in the case of ACF impregnated with Mn, it have not any antibacterial effect on the bacillus cereus and salmonella entaritidis.

  • In order to help the preservation of the cherry tomato and unshiu orange, antimicrobial paper incorporating grapefruit seed extract and zeolite was applied to the package. Cherry tomato and unshiu orange were packed in a box (38x25x20 cm) attached with antimicrobial paper and then stored respectively at $5^{\circ}C$. During the storage, weight loss, pH total acidity, soluble solid content microbial load and decay ratio were measured as quality indices. pH increase in cherry tomato was observed until 20 days, and decreased with litle difference between the packaging treatments thereafter pH and total acidity decrease in unshiu orange were shown till 30 days, and abrupt change was revealed by 40 days. This was due to physiological disorders. The microbial loads of total aerobic bacteria, and yeast/mold count were suppressed during storage by the box packaging incorporated with antimicrobial agents, which also contributed to reducing the decayed cherry tomato and unshiu orange. Antimicrobial paper was useful fur the reduction of microbial load in cherry tomato and unshiu orange pear without other quality deterioration.

  • We investigated an antibacterial substance produced by Bacillus subtilis HS 25. Antibacterial activity was relatively heat-stable, with no effect caused by heating at $100^{\circ}C$ for 10 min, but a gradual decrease in activity after 15 min at $100^{\circ}C$. The antibacterial substance was more stable at pH 7.42-12 than at pH 4.5-5.0. There was strong antibacterial activity against E. coli and P. mirabilis at pH 12. The minimum inhibition concentration (MIC) of the substance was 5 mg/mL for E. coli 7.5 mg/mL for P. mirabilis and S. aureus and 15 mg/mL for S. enteritidis, K. pneunoniae, and V. parahaemolyticus. When the substance was added to cultures of E. coli, S. enteritidis, and P. mirabilis, the bacterial surfaces became irregular and deeply changed. The substance produced from B. subtilis HS 25 was not degraded by Papain but was degraded by a protease from Aspergillus orzae, pancreatin, and pepsin.
