Effects of Brewers Grain, Soybean Curd and Rice Straw as an Ingredient of TMR on Growth Performance, Serum Parameters and Carcass Characteristics of Hanwoo Steers (섬유질 배합사료 원료로서 맥주박, 비지박 및 볏짚이 한우 거세우의 사양성적, 혈액성상 및 도체특성에 미치는 영향)

  • This study was conducted to investigate the dietary effect of total mixed rations (TMR) containing brewers grain, soybean curd and rice straw, respectively, on growth performance and carcass characteristics of Hanwoo steers. Twenty four Hanwoo steers (average body weight 168 kg) in 6 months age were randomly allocated to 4 experimental groups, which contained 6 animals per group during 22-months feeding trial. The treatment was composed of the group fed concentrate and rice straw separately (T1), the group fed TMR containing brewers grain (T2), the group fed TMR containing soybean curd (T3) and the group fed TMR containing rice straw (T4). Body weight (BW) was not different among treatment groups during the growing and middle fattening period. However, it was significantly greater in T4 group than in T2 group on the final BW (p<0.05). Average daily gain was significantly greater in TMR groups compared to T1 group on the growing and late fattening (p<0.05). However, it was not different in total average. Dry matter intake tended to be increased in TMR groups. The feed conversion ratio was significantly lower in T4 group compare to T2 group (p<0.05). According to the yield traits, carcass weight of T1, T2, T3 and T4 were 389.0, 368.4, 387.5 and 384.3 kg, respectively. The back fat thickness, rib-eye area, and yield index were not different among the groups. Meat color, fat color, texture and maturity were not significantly different among groups. However, marbling score and appearance rate of meat quality grade of over $1^+$ were greater in T2 and T3 groups compare to other groups. Therefore, these results indicated that TMR with brewers grain and soybean curd may be ameliorated the growth performance and carcass characteristics of Hanwoo steers.

  • 경남 김해시 생림면 생철리 맑은 물과 공기의 친환경속의 조차환 농장은 1980년부터 한우 사육을 시작하여 벌써 30여년이 되었다. 처음에는 실패를 거듭하면서 어려움을 겪기도 하였고, 브루셀라가 농장을 강타하여 암소의 사육기반을 잃고 난 후 안정적으로 사육이 가능한 거세우 비육은 전환하여 현재는 거세비육에 전념하고 있다. 한편, 1994년부터 축산물등급제에 관심을 가지면서 육질부문에 심혈을 기울인 결과 오늘의 성공을 거두었다.

  • This study was conducted to investigate the relationship between the socio-demographic factors and the Korean consumers palatability evaluation grades with Hanwoo sensory evaluation data from 2006 to 2008 by National Institute of Animal Science. The dichotomy logistic regression model and the multinomial logistic regression model are fitted with the independent variables such as the consumer living location, age, gender occupation, monthly income, beef cut and the the palatability grade as the categorical dependent variable and tenderness, 리avor and juiciness as the continuous dependent variable. Stepwise variable selection procedure is incorporated to find the final model and odds ratios are calculated to nd the associations between categories.

Crude Protein Requirements for Maintenance of Hanwoo Steers by Protein Balance Trial (단백질 균형시험에 의한 한우 거세우의 유지 조단백질 요구량)

  • This experiment was conducted to determine crude protein requirements for maintenance (CPm) of growing Hanwoo steers. Eighteen Hanwoo steers (173.7kg) were allocated randomly to diets with three levels of crude protein in the concentrate by replacing ground corn with corn gluten meal: 0% (LCP), 7.2% (MCP) and 14.2% (HCP), respectively. Hanwoo steers in each treatment were fed diets containing rice straw (20%) and concentrates (80%). CP intake was 5.5, 7.8 and 10.7g/BW0.75 for LCP, MCP and HCP, respectively. Protein balance was -0.05, 2.36 and 4.07g/BW0.75 for LCP, MCP and HCP, respectively. Intercept of the regression equation between CP intake and retained CP indicated that CPm was 5.56g/BW0.75. The estimate of CPm adopted by Korean Feeding Standard (2002) was almost 20% higher than that adopted by Japanese Feeding Standard for Beef Cattle (2000); this would need to be verified with more feeding trial data set including protein requirements for growth.

Effect of Maturity Scores and Number of Extractions on the Chemical Properties of Water Extract from Hanwoo Shank Bones (한우 성숙도와 추출횟수가 사골용출액의 화학적 특성에 미치는 영향)

  • This study was conducted to investigate the effect of maturity scores [2 (bull), 2 (steer), 3-9 (cow)] and the number of extractions (up to 4 times) on the chemical properties of water extract from Hanwoo shank bones (arm, fore shank, round and hind shank). The turbidity, meat color (CIE L value), collagen, protein, caloric and chondroitin sulfate contents of samples were observed. The turbidity and lightness were higher for water extract of Hanwoo shank bones with a maturity score of 2 (bull and steer) than maturity scores of 3-9 (cow) (p<0.05). The turbidity and lightness of water extract from shank bones of all Hanwoo maturity scores significantly increased with the 1st and 2nd extractions, but significantly decreased with 3rd and 4th extractions (p<0.05). The collagen and protein contents were highest for water extract from Hanwoo shank bones of maturity score 2 (bull and steer) (p<0.05). The caloric and chondroitin sulfate contents were higher for water extract from Hanwoo shank bones of maturity score 2 (bull and steer) than maturity scores of 3-9 (cow) (p<0.05). As the number of extractions increased, the chondroitin sulfate content significantly decreased (p<0.05). Based on these results, differences correlating with maturity scores were found only with collagen and protein contents. Therefore, further studies should be considered to address whether different maturity scores affect the price of shank bones in the meat industry.

Estimation of Resonable Market Month of Age for Hanwoo Steer (한우 거세우의 적정 출하월령 추정)

  • This aim of this study was to estimate the most reasonable slaughter month for Hanwoo steers according to carcass traits. Carcass trait data on Hanwoo steers (17,249 head) were collected from October 2008 to September 2011. To measure the regression coefficients, Hanwoo steers were divided into two groups according to slaughter age: early (25 to 31 months) and late (32 to 38 months) groups. Regression coefficients of carcass traits according to slaughter age were significantly different (p<0.001) with the exception of PPKG (estimated auction price per 1 kg of carcass weight) in the early slaughter age group and MAR (marbling score, p<0.05) and PPKG (p<0.05) in the late slaughter age group. To obtain a positive gross margin, Hanwoo should be slaughtered at around 28 months of age.

Evaluation on Ruminant Feed Value of Cage Broiler Excreta Processed by a Deepstacking Method (퇴적발효한 케이지 육계생분의 반추동물 사료적 가치 평가)

  • This on­farm study was conducted to evaluate the effect of feeding deepstacked broiler excreta­saw dust­rice hulls(DBSR) pellets on feed intake, production and economy of growing Hanwoo steers and Holstein bulls. Formulated mix and rice straw were replaced at 16% and 48% levels for growing Hanwoo steers(6 wk of feeding period) and at 4% and 18% levels for Holstein bulls(12 wk) with DBSR pellets. Control and treated diets were formulated to be isoenergetic and DBSR pellets were fed ad libitum. Palatability of DBSR pellets turned out to be favorable. Compared with the control group, feeding DBSR pellets did not affect body weight gain, average daily gain and feed efficiency(P>0.05). Feed cost per gain was reduced by 18.5% for Hanwoo steers and 3.5% for Holstein bulls. Feeding DBSR pellets to Holstein bulls did not affect carcass weight and grades of meat yield and quality. These results indicate that deepstacked cage broiler excreta mixture may be effectively used as a feed ingredient for growing ruminants.

Effect of Feed Type on Feed Efficiency and Carcass Characteristics of Hanwoo Steers (사료의 형태가 한우 거세우의 사료효율 및 도체성적에 미치는 영향)

  • Ninety five Hanwoo steers averaging 226kg of body weight were used to investigate the effect of dietary type on feed efficiency, carcass characteristics and economical analysis in Hanwoo feeding over 22 months. Treatments were composed of commercial formula feed (formula feed), TMR and Fermented-TMR (F-TMR). Intakes of dry matter and TDN were greater in the F-TMR than the other treatments during each growing and fattening phase (p<0.05). Although daily body gain of the F-TMR was lowest during the growing phase, but was 48% greater than those of other treatment during the finishing phase (p<0.05). Feed efficiency of the F-TMR was maintained constantly during whole growing and fattening phases. Carcass weight and rib-eye area of the F-TMR were greatest (p<0.05) among treatments. However, meat yield index and the rate of grade A in meat yield were highest in the formula feed having the thinnest back fat. Marbling score was hugely (p<0.05) increased when steers fed F-TMR, and therateofgrade 1+andoverinmeatqualitywas96%intheF-TMR. Although feed cost in the F-TMR was increased by 40% compare to the formula feed, but net income was increased by 29% due to improvement of meat quality and body gain.

Genotypes of Lysophospholipase I (LYPLA1) Gene Associate with Carcass Traits of the Jeju Crossbred Cattle (Hanwoo × Jeju Black cattle) and Hanwoo Populations (제주도산 한우와 제주흑한우 집단의 도체형질에 대한 Lysophospholipase I (LYPLA1) 유전자형의 효과)

  • Genotypes of the nucleotide substitution g.23655332G>C of SNP marker rs385360448 at Lysophospholipase I (LYPLA1) gene intron 7, were tested for their effect on the carcass traits of Hanwoo and Jeju Crossbred cattle ($F_1$ progeny produced between Hanwoo ${\times}$ Jeju Black cattle) populations on Jeju Island. In the Hanwoo steer population, the meats containing LYPLA1 rs385360448 G/- genotypes showed significantly higher marbling scores and greater texture indices, compared to those of rs385360448 C/C homozygous animals (p<0.05). However, the LYPLA1 genotypes were not associated with the levels of carcass weight, backfat thickness, eye muscle area (EMA), meat color, and fat color (p>0.05). On the other hand, in the JCC steer population, the LYPLA1 G/- harboring meats showed significantly greater EMA levels, compared to those of C/C homozygotes (p<0.05). The results of the present study indicate that the LYPLA1 genotypes could alter the levels of intramuscular fat deposition, texture index, and eye muscle area via phospholipid metabolism in the Longissimus dorsi muscle of the cattle. These findings suggested that LYPLA1 genotypes may effect molecular genetic markers in the improvement of carcass traits of Hanwoo and Jeju Black industrial cattle populations on Jeju Island.
