Estimation of Environmental Effect and Genetic Parameters for The Carcass Traits in Hanwoo (Korean Cattle) (한우 도체형질의 환경효과 및 유전모수의 추정)

  • This study aims to estimate the genetic parameters for carcass traits on Hanwoo of breeding farmhouses using Animal Products Grading Service’s data of 428,812 cattle from 101 slaughterhouses nationwide from 2000 to 2005. Using carcass traits of carcass weight, eye muscle area, backfat thickness, marbling score, meat color and fat color that greatly influence Hanwoo's grade, the effects of carcass year, carcass season, sex and carcass region were estimated. Based upon carcass traits of carcass weight, eye muscle area, backfat thickness, marbling score and meat color that greatly influence Hanwoo’s grade, the heritabilities and genetic parameters were estimated of 17,578 Hanwoo slaughtered in 2005 with existing herdbook, where EM-REML algorithm was used in estimating genetic parameters. The mean and standard deviation of each carcass trait are 321.42±53.62kg, 76.25±10.43cm2, 9.96± 4.14mm, 3.75±2.00, 4.83±0.48 and 2.99±0.40, for carcass weight, eye muscle area, backfat thickness, marbling score, meat color and fat color, respectively. As a result of analysis on the effects of carcass year, the carcass weight, backfat thickness and meat color came out highest as 359.40±0.181, 9.82±0.017 and 4.90±0.002, respectively in 2004. As a result of analysis on the effects of carcass season, the carcass weight and eye muscle area came out highest as 345.88±0.144 and 79.57±0.033 respectively in spring, and the backfat thickness was highest as 8.78±0.013 in winter, and the meat color and fat color slightly came out higher as 4.88±0.002 and 2.96±0.001 in fall, while the marbling score was highest as 3.29±0.006 in summer. The results of the analysis on the effects of sex indicated that the backfat thickness and fat color were highest as 10.53±0.010 and 3.07±0.001 in cow, the carcass weight came out highest in Hanwoo steer as 368.03±0.068kg, the eye muscle area were highest as 82.96±0.042 in bull, and the marbling score was highest as 4.19±0.007 in steer, and the meat color was highest as 4.89±0.001 in cow.   • This study was accomplished to enhance brand value for hanwoo and to develop strategy for brand positioning that move customer's heart. This study in order to achieve the research was carried out as follows: First, the cluster analysis based on demographic characteristics for consumer on the basis of three types segmentation on market was conducted. Market A was consisted of a well-educated, high-income and young bracket. Market B was consisted of a well-educated, high-income and middle-aged bracket. Market C was consisted of a low-income and middle-aged class. Second, consumer's positioning map was analyzed based on perceiving data which are products' functional, emotional, and self-expressive benefits about consumer's feeling beef products. This study was analyzed each relative brand advantage and structure of competition on segmented market by conjoining each brands positioning map and feature vectors map. By the result of the analysis, each brand's positioning strategy was devised. As a result of the study, the hoengseong hanwoo is competitive about all kinds of market. We chooses that hoengseong hanwoo's target is A market, because that brand is evaluated as a high-ranked quality by high-class image of luxury price, quality, brand image. For management improvement sake, this brand(the hoengseong hanwoo) is needed to effort for promoting consumer's awareness about safety and reliability.

Studies on Feed Formulation to Reduce Methane Emission and Optimal Rearing Density for Environmental-Friendly Hanwoo Production (친환경 한우 생산을 위한 메탄 저감용 사료 배합 및 적정 사육밀도에 관한 연구)

  • This study was conducted to analyze the mixing ratio of raw feed materials for the methane mitigation and also to identify the minimum rearing density for improving the productivity of beef calves as eco-friendly fodder. Raw materials used in this study for the formulation of feed for methane reduction were crushed corn and alfalfa along with other 21 species. In addition, to investigate the appropriate rearing density, 12 Hanwoo calves with average weight of 150 kg was selected and experiment was conducted for four months. Methane gas emission (Bo) is about 3-4 times less in TMR 4 compared to TMR 1, 2 and 3. Feed price calculated for TMR 4 ration was also affordable. In addition, all TMRs showed a normal ruminal pH. Disappearance rate was observed to be lower in TMR 4 as compared to TMR 1, 2 and 3, but methane production decreased by 24 to 37%. The result showed improved total body weight, average daily gain and feed conversion ratio in rearing low-density ($18m^2/head$), and general treatment ($9m^2/head$) compared to overcrowding treatment ($6m^2/head$). In addition, blood components (total protein, glucose, AST, ALT and GGT factors) involved in health and disease treatments and health-related nutrition metabolism are lower in the low-density and general treatment compared to the high density treatment. Postural development (development of body size) i.e., weight, height and width significantly increased in the low and general density treatment compared to high density treatment. Especially excellent improvement was observed in low-density treatment than the general treatment. Moisture content, colonic bacteria and coccidium are higher in low and high density treatments than in the general treatment. The adequacy for beef rearing density is considered to be more desirable in an area more than $6m^2/head$. In conclusion, present study suggests that possibility of methane reduction through adjusting mixed feed ration. Also, rearing density is also an important factor in the growth and development of beef calves.

Effect of Parity of Hanwoo Cow on Physico-Chemical, Sensory and Nutritional Characteristics of Sullungtang (한우 암소의 산차가 설렁탕의 이화학적, 관능적 및 영양적 특성에 미치는 영향)

  • This study was performed to provide scientific information for consumers and to increase the quality and consumption of Sullungtang prepared with bone from Hanwoo. The physico-chemical, sensory, nutritional properties of Sullungtang by different parity were investigated. The extracting extents of blood were significantly higher for heifer among Hanwoo cows with different parity(none, the second or the fourth) and for back bones among different bone portions (round, hind shank, arm, fore shank or back bone) (p〈0.05). For Sullungtang extracted from bones of heifer was higher in collagen contents than those extracted from cows with the second or the fourth parity. Sullungtang extracted from bones of heifer and cows with the second parity had significantly higher contents of condroitin and viscosity than those of cows with the fourth parity, however there was no significant difference between heifer and cows with the second parity. In color, L values were significantly high, and a and b values were significantly low for Sullungtang extracted from bones of heifer when compared to those extracted from the other cows with the second parity. The contents of total nitrogen, sodium, or calcium were higher for Sullungtang extracted from heifer than those from the cows with the second or the fourth parity. In amino acid compositions, the percentages of glycine were highest and proline and glutamic acid were followed fro all Sullungtang samples from Hanwoo. The results showed that the overall quality of Sullungtang significantly decreased as the parity increased for Hanwoo cows. The Sullungtang extracted from bones of heifer had the best sensory scores as well as nutritional quality when compared to those extracted from the cows with parity. Therefore, the labeling and price for cow bones should be differently evaluated by their parity and age in marketing system.

The Estimation of the Demand Function of Korean Beef and Imported Beef Cuts - Focusing in Consumers in the Metropolitan Area - (한우와 수입산 쇠고기의 부위별 수요함수 추정 - 수도권 소비자를 중심으로 -)

  • This paper estimated the demand function of the cuts of Korean beef and imported beef by using the consumer panel and retail price data from the Korean Agro-Fisheries & Food Trade Corporation, and the weather data from the Korea Meteorological Administration with an log-log model and AIDS model. The results show that the preference for cuts of beef used for cooked soup, steamed dish, Changjorim are more elastic than cuts used for roasting when there is a change in price and income in the estimation of demand function of Korean beef. On the other hand, consumers respond sensitively with the demand of roasting part compared to steamed dish, Changjorim, soup when there is change in price and income in the estimation of demand function of imported beef. The results indicate that there is substitutional relationship between Korean beef and imported beef, because Korean beef cuts used for roasting can substitute for imported roasting part and the same relationship applies to steamed dish, soup, Changjorim. In addition, family number, family member, husband job, purchasing place, means of transportation, purchasing time, weather are statistically significant.

Effects of Supplemented PROSOL® as an Emulsifier on Growth Performance and Carcass Characteristics in Hanwoo Steers of Final Fattening Period (수용성 지방유화제 첨가가 비육후기 한우거세우의 발육과 도체성적에 미치는 영향)

  • Fifty four Hanwoo steers in final fattening period were assigned to 3 groups control, top dressed $PROSOL^{(R)}$ as an emulsifier (TP) and DSP group (experimental diet made to down spec of nutrients with $PROSOL^{(R)}$, which is sodium stearoyl-2-lactylate), based on the body weight (647.96${\pm}$41.31 kg) and months of age (27.3${\pm}$0.8 mo), and the experiment was conducted to establish the reasonable fattening method of Hanwoo steers for 91 days. Average daily body gains during trial were 0.94, 0.84 and 0.98 kg in control, TP and DSP, respectively (P=0.011). DDMI/ADG of TP group tend to lightly improving compared to control and DSP group (P=0.692). There was no effect of supplementation of the $PROSOL^{(R)}$ in concentrates on growth rate, feed efficiency and shrinkage in Hanwoo steers during the short final fattening period. MQI from TP and DSP was not different based on the rib-eye area and carcass weight in carcass than that from control. Back fat thickness tended to be thicker than control (P>0.05). Marbling score, texture and maturity for TP and DSP was abundantly to increase compared to control (P<0.003). There was significantly increment in supplemented $PROSOL^{(R)}$ (P<0.0001). The meat quality grade of control, TP and DSP were 2.94, 3.78 and 4.50, respectively. Related to this result, the auction price (carcass/kg) were gained significantly (P<0.003) from control (17,560), TP (18,586) and DSP (19,266 won) so which the monetary return was the highest in DSP and the differences was recognized between TP and DSP. Percentage over 1st grade appeared in control, TP and DSP were 55.4, 88.9 and 100.0%, respectively. These results supported the hypothesis that supplementation of emulsifier improve the marbling score and the carcass quality grade by increased digestibilities of the feed fat in Hanwoo steers in fattening period.

Studies on the Embryo Transfer of In Vitro Matured/ In Vitro Fertilized Embryo in Hanwoo (한우 체외성숙.체외수정란의 수정란이식에 관한 연구)

  • These studies were carried out to improve the reproductive efficiency through embryos transfer of Hanwoo IVM/IVF embryos. Following routine IVM/IVF procedure, oocytes and zygotes were cultured far 40 to 44 h in CRlaa medium with BSA. Then 2 to 8-cell embryos were removed the cumulus cell and were cultured in CRlaa medium containing 10% fatal bovine serum and 2.5 mM taurine in 5% $O_2$ and 5% $CO_2$ at 38.5$^{\circ}C$. The fresh embryos of the morulae and blastocysts cultured for 6 to 9 days in vitro or the frozen-thawed embryos were transferred into recipients. The pregnancy rates of the blastocyst produced for 6, 7, 8, and 9 days in vitro culture were 59.4, 68.2, 66.0 and 100%, respectively. In the developmental stage, pregnacy rates of early blastocysts (61.1%), blastocysts(64.7%) and expanded blastocysts(69.5%) were higher than that of morulae stage(20.0%). The pregnancy rates according to the corpus luteum grades of A, B and C in recipients were 73.6, 62.9 and 50.0%, respectively. Effects of donor-recipients synchrony of after day 2, 1 and 0, before day 1 and 2 on the pregnancy rates were 35.7, 65.5, 72.6, 67.9 and 60.0%, respectively. Pregnancy rates of the body condition score of recipients $\leq$2(71.3%) were higher than those of $\geq$3.0 score(40.0%). The pregnancy rates according to the parity of recipients when embryo was transferred to cow(70.6%) was higher than in heifer(59.1%). The pregnancy rates according to hormone treatment before embryo transfer were 69.9% in hCG + GnRH administration group and 63.0% in control group. Fresh and frozen-thawed embryos on the pregnancy rates were 70.6 and 36.4%, respectively. Pregnancy rates in single and AI+single was 90.0% and 64.8%. Pregnancy rates in twin induction was better than in single. These results indicate that pregnancy rates after transfer were affected on the embryo ages, donor-recipient synchrony, body condition score of recipients, corpus luteum status, parity and hormone treatment to recipients.

Consumer's Demand and Willingness to Pay for Horse Meat (말고기에 대한 소비자 수요와 지불의사)

  • This study aims at estimating the consumer's demand and willingness to pay(WTP) for horse meat in Korea. Three econometric models are employed to examine the multiple layers of the demand, including the current demand, the potential demand and latent demand. Findings indicate a substantial demand for horse meat. Dichotomous choice contingent valuation method is used to elicit the WTP. We assess the mean WTP for horse meat using a double-bounded logistic model. As a result, consumers are willing to pay at 67.8 percent of the beef prices of the third quality grade to purchase horse meat. And, for the factors that influence on WTP, only sex, age and recognition of horse meat are statistically significant.

The effect of bovine dermatophytosis on auction price in Hanwoo calves (소피부사상균이 한우 송아지 경매가격에 미치는 영향)

  • This study examined the dermatophytes of calves aged between 6 and 12 months in the Hanwoo calf auction market. Moreover, the research analyzed how dermatophytosis affected the auction price of Hanwoo calves based on their sex and age. The incidence rate of dermatophytosis was found to be 85 cases out of 1,955 calves (4.3%). The major location of dermatophytosis lesions were in the head region. Specifically, the highest prevalence was observed in the forehead (42.4%), followed by the eyes (30.1%), and the ears (18.8%). The auction prices of Hanwoo calves were observed that the average price for normal calves was 2,936,428 won, while calves with dermatophytosis were sold at 2,767,059 won. Comparing auction prices according to gender and age, it was observed that male calves and calves aged between 8 and 12 months had significantly lower auction prices compared to normal calves. The results provided valuable insights into the current situation of dermatophytosis in Hanwoo calves. Moreover, analyzing the impact of dermatophytosis on the auction prices of these calves, it has generated essential data that can serve as a foundation for implementing and enhancing ongoing management and prevention measures for dermatophytosis in cattle.

Effects of Level of CP and TDN in the Concentrate Supplement on Growth Performances and Carcass Characteristics in Hanwoo Steers during Final Fattening Period (한우거세우 비육후기 배합사료의 적정 조단백질 및 에너지함량 규명에 관한 연구)

  • Seventy two Hanwoo steers in final fattening period ($585.87{\pm}41.02kg$) were randomly assigned to 3 groups, LPLT (relatively low protein and low energy; CP 12%, TDN 73%), LPHT (relatively low protein and high energy; CP 12%, TDN 75%) and HPHT (relatively high protein and high energy; CP 14%, TDN 75%) in concentrate feed for 163 days in order to investigate the effects on growth performance, carcass characteristics, and longissimus dorsi muscle's chemical compositions. Rice straw was also fed as a roughage. Because ADGs were higher in LPLT and HPHT than LPHT, feed efficiencies were improved in LPLT and HPHT group (P<0.05). Feeding concentrates with different CP and TDN levels had affected to improve back fat thickness and rib eye area in HPHT group but had no effect on carcass weight and meat yield index. Carcass weight for LPLT, LPHT and HPHT were $420.75{\pm}30.56$, $417.05{\pm}32.03$ and $418.32{\pm}32.03kg$, respectively. Meat quality grade was improved in HPHT (P<0.001), because the marbling score was highest in HPHT group. Auction prices (carcass/kg) of LPLT, LPHT and HPHT group were 17,904 won, 18,094 won and 18,899 won, respectively. The percentage of animals over grade 1 appeared in LPLT, LPHT and HPHT were 79.2, 72.7 and 90.8%, respectively. The results of chemical analysis of longissimus dorsi muscle showed no difference between groups but crude fat composition tended to be higher in HPHT group (P=0.088) than the other groups. Stearic acid contents in the muscle was significantly increased in HPHT group than LPLT group (P<0.05). Myristoleic acid and oleic acid composition in HPHT group was higher than LPLT and LPHT group. These results supported the hypothesis that supplementation of higher levels of crude protein and energy in concentrates to Hanwoo steers' during final fattening period improved the growth performance and the carcass quality grade.
