A Study on the Investigation of Sanitary Knowledge and Practice Level of School Foodservice Employees in Jeonju (전주지역 학교급식 조리종사자의 위생지식 및 위생관리 수행에 관한 연구)

  • This study was to investigate the sanitary knowledge and its practice level of school foodservice employees in Jeonju area. A total of 508 questionnaires were usable; resulting in 79.0$\%$ response rate. Statistics data analysis was completed using the SPSS 10.0 program. The results of this study were summarized as follow : About 62$\%$ of school foodservice employees were 41 $\∼$50 years old and 84$\%$ of them had a irregular job and they had a sanitation training at least once a month. The school foodservice employees had more knowledge about 'personal hygiene' than that about 'equipment and facilities sanitation', 'foodborn disease and food microorganism' Their hygiene practice level were high for 'equipment and facilities sanitation' (4.90$\pm$0.25) and were lesser in the order from 'foodborn disease and food microorganism'(4.86$\pm$0.30), 'personal sanitation'(4.79$\pm$0.34) and the least for food processing hygiene (4.70$\pm$0.37). As a result of relationship between knowledge and hygiene practice level, knowledge of school foodservice employees was not influenced on tile hygiene practice level during their working.

Assessment of Sanitary Management Practices of School Foodservice Operations in Seoul (서울지역 학교급식 위생관리 실태평가)

  • Sanitary management practices were assessed to insure the safety of school foodservice, to prevent the outbreak of foodborne illness, and to improve the quality of school foodservice. To accomplish these objectives, a survey was conducted and analyzed on elementary and high school foodservice operations located in Seoul area. A Questionnaire from based on HACCP standards was developed and used for self-reported evaluation of the school foodservice managers on their sanitary management practices. The results were analysed by examining their activities and identifying weaknesses in those activities. The questionnaire was composed of three sectors with all 53 questions; 33 questions for time-temperature management, 5 for personal hygiene and 15 for equipment/facility sanitation. Five-point-scale was used on the questionnaire answers. Among the schools responded,253 (98.4% of the total) were elementary schools and 19 (1.6%) were high schools. Among the three sectors, personal hygiene performance was mostly well conducted by marking average 4.06$\pm$0.57. Equipment/facility sanitation came next by marking average 3.84$\pm$0.53. Time-temperature marked average 3.45$\pm$0.46. “Storage after cooking (2.03$\pm$0.94)”was identified as the least managed activities because the school foodservice operations were not equipped well with hot holding and/or cold holding. “Separate use of sink per usage (3.03$\pm$1.10)” and “proper location of hand washing facility (3.07$\pm$1.13))” were identified as the least practiced activities in equipment/facility sanitation sector. To enhance these practices, proper number of sinks and hand washing facilities should be equipped first within the kitchen area.

Importance and Performance of High School Foodservice Hygiene in Busan (부산지역 일부 고등학생의 급식 위생 중요도 수행도 평가)

  • The objective of this study was to explore hygiene issues by analyzing the importance and performance of personal and school hygiene in school foodservices. Questionnaires were administered to 634 students (10 high schools) in the Busan area. Exactly 29% of respondents had received hygiene education. The average score of importance of students' personal foodservice hygiene was 3.81/5.00, and the performance score was 3.48/5.00. The same scores for school foodservice hygiene were 4.37/5.00 and 3.67/5.00, respectively. Regarding importance and performance of personal foodservice hygiene, students who had received hygiene education showed significantly (P<0.01) higher scores than those without prior education. In terms of importance of school foodservice hygiene, students who had received hygiene education showed significantly higher scores for environment hygiene (P<0.05) and equipment hygiene (P<0.05). Additionally, among grid analysis in personal foodservice hygiene, the areas of high importance and low performance included 'washing hands before the meal', 'using a designated cup for the water purifier', and 'keeping clean around the leftover container'. As for school foodservice hygiene, the same area was 'cleanliness of tray'. These findings suggest that hygiene education needs to be extended to more students, and for school foodservice hygiene, a cleaner environment should be created using equipment hygiene management, including emphasis on ensuring cleanliness of tray.

Systemic Analysis on Hygiene of Food Catering in Korea (2005-2014) (Systemic analysis 방법을 활용한 국내 학교급식 위생의 주요 영향 인자 분석 연구(2005-2014))

  • A systemic review on the factors affecting food catering hygiene was conducted to provide information for risk management of food catering in Korea. In total 47 keywords relating to food catering and food hygiene were searched for published journals in the DBpia for the last decade (2005-2014). As a result, 1,178 published papers were searched and 142 articles were collected by the expert review. To find the major factors affecting food catering and microbial safety, an analysis based on organization and stakeholder were conducted. School catering (64 papers) was a major target rather than industry (5 pagers) or hospitals (3 papers) in the selected articles. The factors affecting school catering were "system/facility/equipment (15 papers)", "hygiene education (12 papers)", "production/delivery company (6 papers)", food materials (4 papers)" and "any combination of the above factors (9 papers)". The major problems are follow. 1) The problems of "system/facility/equipment" were improper space division/separation, lack of mass cooking utensil, lack of hygiene control equipment, difficulty in temperature and humidity control, and lack of cooperation in the HACCP team (dietitian's position), poor hygienic classroom in the case of class dining (students'), hard workload/intensity of labor, poor condition of cook's safety (cook's) and lack of parents' monitoring activity (parents'). 2) The problem of "hygiene education' were related to formal and perfunctory hygiene education, lack of HACCP education, lack of compliance of hygiene practice (cook's), lack of personal hygiene education and little effect of education (students'). 3) The problems of "production/delivery company" were related to hygiene of delivery truck and temperature control, hygiene of employee in the supplying company and control of non-accredited HACCP company. 4) The area of "food materials" cited were distrust of safety regarding to raw materials, fresh cut produces, and pre-treated food materials. 5) In addition, job stability/the salary can affect the occupational satisfaction and job commitment. And job stress can affect the performance and the hygiene practice. It is necessary for the government to allocate budget for facility and equipment, conduct field survey, improve hygiene training program and inspection, prepare certification system, improve working condition of employees, and introducing hygiene and layout consulting by experts. The results from this study can be used to prepare education programs and develop technology for improving food catering hygiene and providing information.

Evaluation of Perception for Foodservice Hygiene by Middle School Students in Busan (부산지역 일부 중학생의 학교급식 위생에 대한 인식 평가)

  • The purpose of this study was to evaluate the importance and performance of middle school foodservice hygiene in Busan. In this study, questionnaires were administered to 1,000 students consisting of 100 students in 10 middle schools in Busan in December, 2013. The students assessed importance and performance of personal hygiene as 3.81 and 3.60 on a scale of 5.00, respectively. Males gave higher scores to importance and performance of personal hygienic than females. First grade students gave significantly higher scores than 2nd and 3rd grade students to importance and performance of personal hygienic. The mean scores of importance of foodservice hygiene were 4.47 for food hygiene, 4.25 for equipment hygiene, 4.23 for employee hygiene, and 4.19 for environment hygiene. For importance of foodservice hygiene, females gave significantly (P<0.001) higher scores than males. However, male gave significantly higher scores than females for performance of foodservice hygiene. The importance and performance grid showed important factors for personal and foodservice hygiene. 'Hand washing before eating the meal' for personal hygiene and 'cleanliness of tray' for foodservice hygiene showed the highest importance and lowest performance scores. Foodservice hygiene can be improved through customized education of students regarding meal service and food hygiene, equipment hygiene, and environment hygiene.

대전지역 학교급식 영양사의 위생 및 HACCP 직무관련 수행도 평가

  • 교육인적자원부에서는 학교급식의 안전성 확보를 위하여 1999년에 특별정책 연구를 실시하여 학교급식 HACCP 일반모델을 개발 보급하고 2001년부터는 규모가 큰 학교에서 조리실이 설치된 모든 급식학교로 점진적으로 적용을 확대하였다. 그럼에도 불구하고 학교급식에서 식중독 사고는 증가 추세에 있으므로 학교급식에서의 HACCP 시스템을 재진단하고 수행도가 낮은 중점관리점의 문제점을 짚어내는 것이 필요하다. 따라서 본 연구에서는 대전지역의 초, 중, 고등학교 영양사 153명을 대상으로 위생관리 직무 수행도와 HACCP의 일부 CCP (중점관리점)수행도, HACCP에 대한 인지도, 급식시설현황 등에 대하여 조사하고 변인간의 관련성을 분석하였다. 조사 대상자는 초등학교 영양사 56.5%, 중학교 영양사 25.5%, 고등학교 영양사 17.6%이었으며 4년제 대학 졸업자가 51.0%로 가장 많았고 연령은 30-34세가 36.6%, 35-40세가 21.6%로 30대가 대부분이었다. 근무경력은 평균 5.8년이었으며 영양사 1인당 담당하는 평균 학생수는 1,163명, 조리종사원 1인당 배식 아동수는 평균 124명이었다. 배식방법은 교실배식이 56.2%, 식당배식 34.6%, 교실과 식당의 혼합형태가 9.2%로 교실배식이 차지하는 비율이 많았고 직영급식이 90.2%로 대부분을 차지하였다. 위생관리 영역의 수행도는 개인위생관리 부문이 가장 높았고 기기설비 위생관리, 저장관리, 교차오염관리, 시간관리, 온도관리 순으로 나타났으며, 특히 온도관리 수행도는 낮은 것으로 나타났다. 식당배식을 실시하는 학교의 온도관리 수행도가 다른 그룹에 비해 높았고 직영급식의 시간관리수행도가 위탁급식 보다 높았다. 영양사의 연령과 근무경력이 증가할수록 모든 위생관리영역에서 수행도가 높아지는 경향을 보였다. CCP별 수행정도 평가에서는 ‘운반 및 배식과정(CCP7)’이 가장 높은 수행도를 나타냈고 그 다음으로는 ‘검수’, ‘식품취급 및 조리과정’, ‘식품접촉 표면 세척 및 소독과정’, ‘식단의 구성’, ‘생채소 및 과일의 소독’, ‘잠재적으로 위험한 식단의 관리’ 순으로 나타났다. ‘운반 및 배식과정의 수행도’는 식당배식이 유의적으로 높은 점수를 보였고 CCP8(식품접촉표면의 세척 및 소독)를 제외한 모든 영역에서 직영급식이 위탁급식에 비해 높은 유의성을 나타내었다. 또한 근무경력과 연령이 많을수록 모든 CCP영역에서 높은 수행도를 보였다. CCP1과 CCP2의 수행도가 낮은 주된 이유로 ‘CCP1과 CCP2의 관리기준이 이해하기 어렵다’이었다. 학교 급식관리 영양사의 HACCP시스템에 대한 지식 및 이해 정도를 조사한 결과 HACCP 인지도 점수의 평균은 총 100점 만점에 전체 평균 점수는 74.9점이었다 CCP별 점수분포는 CCP7의 인지도 점수가 가장 높았고 CCP6, CCP1, CCP5, CCP3, CCP8, CCP2의 순으로 절차 낮아졌다. 정규직의 HACCP인지도 점수가 위탁직 보다 높았으며 근무경력에서도 경력이 3년 미만인 경우가 가장 낮고 8년 이상인 경우가 가장 높은 점수를 보였다. 급식시설면은 보온보냉시설을 갖춘 학교가 온도관리 부문에서 갖추지 않은 학교보다 높은 수행도를 나타냈고, 전처리실과 손 소독기가 있는 학교는 교차오염관리 부문에서 높은 수행도를 보였다.

Evaluation of Foodservice Hygiene in Middle School Students by Meal Service Area in Busan (배식장소에 따른 부산지역 일부 중학생의 급식위생 평가)

  • The purpose of this study was to evaluate foodservice hygiene in middle school students by analyzing the importance and performance of school foodservice by meal service area in Busan. Questionnaires were administered to 826 students in 10 middle schools (five schools for classroom service, five schools for dining room service). The average importance and performance scores were 4.11/5.00 and 3.38/5.00 for classroom service and 4.34/5.00 and 3.89/5.00 for dining room service. Dining room service had significantly (P<0.001) higher average scores importance and performance of food hygiene, environment hygiene, equipment hygiene, and employee hygiene than those of classroom service. The gap average score of dining room service was significantly (P<0.001) lower than those of classroom service. In the importance-performance analysis, 'cleanliness of tray' showed high importance and low performance for classroom service and dining room service. Areas of low importance and low performance were 'tray drying', 'cleanliness of employee' clothes', 'wearing sanitary gown, cap', 'wearing sanitary mask', and 'wearing sanitary gloves' for the classroom service, whereas 'tray drying', 'comfortable atmosphere in diningroom', 'well ventilated', 'no odor of the food in classroom', and 'cleanliness around rubbish bins' were relevant for dining room service. These findings suggest that employee hygiene management should be intensively managed for classroom service, and equipment hygiene management must be improved for classroom service and dining room service, especially cleanliness of tray. Meal service places should be changed to the dining room with support the government and private sector.

A Survey on the Sanitary Management in Food Service Institutions (집단급식소의 위생관리에 대한 실태 조사)

  • A survey on sanitary management at 98 food service institutions located in Jeollabuk-Do were conducted. Food service institutions included 13 hospitals, 38 schools, 40 enterprises, and 7 others. The sterilization in boiling water was used for disinfection of tableware, spoon and chopsticks, and dish towel. Cooking kit, refrigerator, chopping board, and knife were sterilized with disinfectant. Frequency of sanitary training program on employees was 56.1% for 1 time/month, 12.2% for 2-3 times/month, and 11.3% for 1 time/week. Preparing ratio of defrosting, warehouse and rest room, and washing and sterilization diary were 73.8, 60.5, and 54.5%, respectively. However, checking ratio of environments (9.5%), personal sanitation (10.8%), and sanitary training program diary(8.4%) were low. Major obstacle factors on the introduction of Hazard analysis critical control point (HACCP) system into food service institutions were lack of equipment and facilities (54.1%) and lack of understanding and data on HACCP system (17.3%). Therefore, in order to reduce the outbreak of food-borne diseases increasing frequency, we estimated that the introduction of sanitary management system and the conversion of dietician' perception on sanitary managements in food service institutions were needed.

Analysis of Microbiological Hazards to Determine S. aureus Contamination Levels at School Foodservice Operations in Gyeonggi Province (경기지역 학교급식에서의 S. aureus 오염도 파악을 위한 미생물 위해분석)

  • This study performed microbiological hazards analysis in raw food materials, cooking processes, kitchen staff, utensils, and the environment in order to obtain contamination levels of S. aureus in school foodservice operations. S. aureus was not detected in cooked foods offered by the foodservice operations; however, it was found in raw food materials prior to cooking. In the case of vegetables, S. aureus was detected in washed mung bean sprouts, parboiled mung bean sprouts, and bellflower roots both before and after disinfection, at levels of 2.2, 1.0, 1.0, and 1.0 log CFU/g, respectively. For processed foods, S. aureus was detected in one sample of packaged bean curd as well as in mung bean jelly cake at the level of 1.5 log CFU/g. For meat products, S. aureus was detected in beef brisket and chicken at levels of 2.3 and 1.3 log CFU/g, respectively. To determine microbiological hazard data for the hands and gloves of cooking personnel, the staff members were divided into two groups: a group presenting Enterobacteriaceae or coliforms, and another group presenting neither Enterobacteriaceae nor coliforms. The results showed that S. aureus was detected on the hands of staff in each group at levels of 2.0 and 2.1 log CFU/hand, respectively, and at 1.8 and 0.0 log CFU/hand on the gloves of staff in each group, respectively. Among kitchen utensils, as an environmental factor in school foodservice operations, S. aureus was detected on meat knives, mixing bowls, and dish cloths at levels exceeding 1.0 log CFU/hand.
