Quality stability of anchovy-based powder for instant soup packed in tea bag (탈산소제에 의한 Tea bag 포장한 멸치 복합 분말의 저장 안정성)

  • The anchovy-based powder for instant soup packed in twenty tea bag were repacked with (Product B) or without oxygen absorber (Product A) in laminated film bag $(PVDC/OPP,\;thickness:\;100.5\;{\mu}m,\;size:22{\times}18cm)$, and then stored at ambient temperature $(25{\pm}3^{\circ}C)$. Moisture, crude protein and crude lipid contents in anchovy-based powder for instant soup were 12.1%, 54.7% and 2.9%, respectively. Moisture content showed little changes during storage in both product (A) and (B). pH and saturated fatty acid such as 20 : 5 and 22 : 6 decreased, while volatile basic nitrogen content, carbonyl value, thiobarbituric acid value, monoenoic fatty acid such as 16 : 0, brown pigment formation and Hunter values increased during storage of product (A). But, these values showed a little change during storage of product (B). It is concluded that anchovy-based powder for instant soup can be handily and safely used during storage of 150 days.

  • In the first quarter of 2004, there were about 1 billion 348 million mobile phone users worldwide with a penetration rate of only 29%. Korea ranks among the highest in the use of mobile communication, having over 36 million mobile phone subscribers with a mobile phone penetration rate of 75% as of May 2004. Since the introduction of wireless Internet service in May 1999, the number of subscribers rose to 34.5 million with 95.3% of the total mobile phone subscribers using wireless Internet services in May 2004, largely due to continued investments by telecommunication service providers, improvement of mobile handsets (color and digital camera phones) and implementation of policies on mobile number portability. In the Korean wireless Internet market, there are many user complaints since the service providers are competing with each other through TV commercial sales and phone discounts rather than improving their call quality, services and billing systems. therefore there is a growing need to improve the billing systems through means such as the implementation of reasonable payment plans according to consumer use, development of a wireless Internet billing system that can predict the number of users and establishment of pricing standards for controlled data (head, tail, etc...) as well as menu information by testing the texts. multimedia, video and other types of content provided by the three major mobile communication companies. The purpose of this study is to promote wireless Internet services and protect user rights by proposing a reasonable way to improve the billing systems for wireless Internet services after conducting a comparative analysis of file size and billing data of each of the service providers through a verification test on a packet billing system for wireless Internet services.

Flavor Compounds in Commercial Toha-jeot (시판 토하젓의 향기성분)

  • Toha-jeot, a traditional salt-fermented seafood in Korea, was purchased on the market in order to analyze the flavor compounds. Volatile flavor compounds in unfermented and fermented Toha-jeot were compared by vacuum simultaneous steam distillation-solvent extraction/gas chromatography/mass spectrometry. A total of 104 volatile flavor compounds were detected in both samples. Of these, 66 were positively identified, composed of aldehydes(14), ketones(8), alcohols(30), terpenes(20), sulfur-containing compounds(10), aromatic compounds (6), esters(12) and miscellaneous compounds(8). Levels of several other compounds such as aldehydes, terpenes, sulfur-containing compounds and esters decreased with fermentation time, whereas alcohols, ketone and aromatic compounds increased. Particularly, levels of alcohols in fermented Toha-jeot was 21 times higher than those of unfermented one. Major volatile flavor compounds in both samples were composed of terpenes, sulfur-containing compounds, esters and ethanol.

Effect of Singeing Time on Physico-Chemical Characteristics of Duck Meat (오리육의 화염 처리 수준에 따른 이화학적 특성)

  • Singeing has always been equated with meat color alteration through lipid oxidation and microbial population. Singeing method has always been employed far removing duck feathers, however, the effect of singeing on storage characteristic of duck meat has not been investigated extensively. The study was therefore, designed to Investigate the effect of singeing on duck meat during storage extensively. For the purpose, study was categorized into three groups namely A, B, and C, representing 0, 50 and 70 seconds of singeing time. Singeing was performed on 100 birds in each group, however, only 20 singed birds from each treatment groups were further selected to analyse them subsequently during storage. Analysis revealed that with 70 seconds singeing time drip loss was significantly (p<0.05) higher at $6mgf/cm^2$ compared to 50 seconds of singeing. With 70 seconds treatment breast meat apparently appeared black, where as with 50 seconds treatment no change was observed. Breast showed low redness with more duration of treatment compared to less treatment duration. Yellowness increased, springiness declined and no change was observed in cohesiveness and chewiness with high treatment time. There was increase in the TBARS and VBN, freshness did not change for first 5 days, however, K values started to increase later on indicated decline in freshness. Conclusively, it was inferred from the study that 50 seconds singeing does not make much alternation in the quantitative traits and at the same time maintains the microbial level under permissible limit.

Comparison of Carcass and Meat Quality Characteristics between Korean Native Black Pigs and Commercial Crossbred Pigs (재래흑돼지와 개량종 돼지의 도체 및 육질 특성 비교)

  • This study was intended to provide basic information which might be useful in increasing added values to the pork from Korean native black pigs (KNP), through comparative evaluation on carcass characteristics and meat qualities between KNP and four exotic breed groups including Duroc (DD), Landrace (LL), Yorkshire (YY), and LYD-cross (1/4LL 1/4YY, 1/2DD), and the results were summarized as follows. Live weight carcass weight, dressed meat weight, skin weight, fat weight and bone weight of KNP were significantly (p<0.05) lower than those of DD, LL, YY and LYD-cross. Carcass yield and dressed meat yield were also significantly (p<0.05) lower in KNP than other 4 groups, however, total fat, skin, bone, kidney and kidney fat in percentage were significantly (p<0.05) higher for KNP than others. Dressed meat yield was highest for YY, followed by LYD-cross and KNP. Weight of belly was 6.12, 9.43, and 9.52 kg for KNP, YY and LYD-cross, respectively. Percent belly of KNP was $11.11\%$ while other groups ranged from 11.5 to $12.2\%$ Shear force value was not different among the treatments. KNP had significantly (p<0.05) lower water holding capacity (WHC), and cooking loss, but significantly (p<0.05) higher in juiciness comparatively. KNP had significantly (p<0.05) higher $a^{*}$ value while DD had significantly (p<0.05) lower than other breeds.

  • 조미료란 식품을 조리, 가공, 섭취할 때 맛을 증진시키거나 강화시킬 목적으로 사용되는 물질을 일컫는다. 발효, 종합 및 천연계 조미료의 국내외 시장동향에 대해 살펴보고, 조미료의 향후 발전방향과 중점 연구 분야, 관련업계의 연구개발 동향에 대한 고찰을 토대로 조미료 분야의 고부가가치 산업으로의 육성방안에 대해 알아보았다. 미원, 아이미 등으로 대표되는 발효조미료의 내수시장은 성숙기를 거쳐 소폭 감소세를 보이는 쇠퇴기에 접어들고 있다. 이는 소비자의 MSG에 대한 기피현상이 주 원인으로 판단된다. 전반적으로 품질 차별화 없이 가격 경쟁이 심화되고 있는 실정이다. 국내 종합조미료 시장은 1975년 국내에 처음으로 CJ에서 다시다 제품을 출시한 후 대상에서 1982년 맛나, 1988년 감치미를 출시하면서 30여 년간 지속적으로 성장해 왔다. 현재 시장규모는 2천억원에 이르고 있으며 최근 들어서는 성장세가 완만해지고 있고 가정용은 거의 정체되어 있다. 일본 조미료 시장은 발효조미료, 종합조미료 그리고 다양한 조미식품의 소재로 활용되는 천연조미료로 구분할 수 있다. 발효조미료 시장은 국내와 비슷한 상황으로 전체적인 물량변화는 약간 감소하는 경향이며 생산기지의 해외이전 현상이 뚜렷하다. 종합조미료 시장은 한국과 유사한 풍미조미료 외에도 보다 전문화되고 다양한 형태의 조미료가 시판되고 있으며, 전통적인 풍미조미료는 정체현상을 보이고 건강지향, 전용화 조미료가 호조를 보이고 있다. 일본과 한국의 조미료 발전 단계는 조금 차이를 보이고 있다. 현재 한국은 종합조미료 시대에서 용도별 조미료 시대로 넘어가는 단계에 있는 반면, 일본은 이미 메뉴 전용 조미료시대에 접어들었고, 건강, 기능성을 강조하는 시대로 나아가고 있다. 이들 변화는 건강에 대한 소비자의 관심과 그로 인한 보다 천연에 가까운 조미소재에 대한 수요, 동시에 맛에 대한 충족까지 요구하는 시대적 변화에 따른 필연적 결과로 보인다. 미래의 조미료는 천연계 소재의 사용량이 증가할 것이고, 소비자의 건강, 안전 추구심리에 부흥하여 안전성과 기능성을 부여하는 소재에 관심이 집중될 것으로 보인다. 더불어 전반적인 생활수준 향상에 따라 제품의 고급화와 전용화도 진행될 것으로 보인다. 향후 조미료시장을 주도할 각 현상에 대해 좀더 자세히 알아보고 학계 및 업체의 최근 연구동향과 제품개발 현황에 대해 고찰해 보았다. 기술연구 동향을 보면, 나노 기술에 의한 조미신소재연구, 초미분쇄기술, 미세 캡슐화 기술, 생물공학 기술이 활용된 발효 및 효소분해에 의한 펩타이드계 조미소재 개발 등이 활발하게 진행되고 있다. 선진업체 연구 및 제품개발 동향은 아지노모트/교와의 ''코쿠미''계 조미소재 연구개발, 일연푸드/동해물산의 천연 엑기스계 조미소재 연구개발, 보조주(주)의 주류 조미료 개발 위주로 살펴보았다. 조미료 시장의 발전 과정과 선진 업체들의 연구, 개발동향을 종합해 보면 첫째는 천연 건강지향에 부응하는 차별화된 소재 및 기능성 소재 개발이고 둘째는 맛과 편리함의 추구에 대응하는 메뉴 전용화 추세이다. 이를 위한 기술적 연구도 기능성 소재(히스티딘 함유 디펩타이드)개발, 나노기술, 미세캡슐화 기술 등을 통하여 다양하게 진행되고 있다. 조미료 산업을 첨단 고부가가치 산업으로 육성하기 위해서는 R&D 투자확대와 효율성을 제고하는 것이 필수적이다. 각 기업단위에서는 장기적 차원에서 첨단식품 기반기술에 대한 연구를 수행하거나, 전문 중소기업, 벤처를 육성하는데 지원해야 한다. 그러나 현실은 당장의 수익과 회사간 경쟁으로 인해 장기적 투자, 사회적 인프라 육성 등에는 관심을 쏟지 않고 있다. 조미료를 비롯한 식품에 관련된 기술들이 다양한 기초연구와 응용기술, 개발연구 등의 총합인 경우가 많기 때문에 이들 상이한 연구 분야간의 연계를 강화하고 개발된 기술의 이전, 확산체계를 구축할 필요가 있다. 이를 위해 기업간 수평적 네트워크 외에도 국가기관이 참여하는 연구 자원의 효율적 집행 기관이 필요하리라 본다.

Isolation and Physiological Characteristics of Microorganisms Producing Extracellular Enzymes from Korean Traditional Soybean Sauce and Soybean Paste (전통 장류에서 세포외효소 분비능이 우수한 미생물의 분리 및 생리활성 특성)

  • We isolated microorganisms presenting high enzymatic activities for amylase, cellulase, protease, lipase or fibrinolysis from Korean traditional soybean sauce and paste. Then, the physiological properties and 16S rRNA sequences of isolated microorganisms were analyzed. All of the isolated 13 strains possessing high extra cellular enzyme activities have higher amylase and cellulase activities than Bacillus subtilis KACC 10114. All the selected strains have protease activities except for D2-14. Except D8-8 and K4-1, other strains have lipase activity. D2-7, D8-8 and K4-1 strains have higher fibrinolytic activities than others, while D8-2 strain has no activity. Most of the selected strains showed antibacterial activity even in gram positive and gram negative bacteria and yeast. Gene sequence analysis of 16S rRNA from isolated strains revealed that all the selected strains were member of Bacillus species.

Physicochemical Properties and Sensory Score of Hanwoo Beef Loin after Feeding with Mugwort (인진쑥 급여가 한우육의 이화학적·관능적 특성에 미치는 영향)

  • TMR (total mixed ration) feed was developed by adding mugwort (Artemisia capillaris Thunb.) and was fed to Hanwoo cattle. We investigated the effects of feeding mugwort on the physicochemical properties and sensory scores of the Hanwoo beef, as well as the feasibility of producing beef with high quality and function. Samples included Hanwoo loin fed with fattening cattle TMR feed with (treatment) or without mugwort (control). The content of total catechin in Hanwoo loin fed with the treatment and control was 0.516 and 0.307 mg/kg, respectively, while the content of epicatechin was 0.116 and 0.087 mg/kg, respectively, both of which were significant increase from feeding TMR with mugwort (p<0.05). There was no significant difference between the control and treatment in terms of $b^*$ value, VBN content, EDA, total bacterial numbers, freezing loss, thawing loss, cooking loss, hardness, cohesiveness, gumminess, chewiness, shear force, or sensory score of boiled meat. $L^*$, $a^*$ and pH value for the treatment were significantly higher than the control (p<0.05). TBARS and springiness for the control were significantly higher than the treatment (p<0.05). The aroma of the raw meat and the taste, tenderness, juiciness, and palatability of the roasted meat for the treatment were significantly superior to the control (p<0.05). These results suggest that giving feed containing mugwort inhibits lipid oxidation, increases water holding capacity, and improve sensory scores.

Effect of Roasting Conditions on the Antioxidant Activities of Tartary Buckwheat (볶음 공정에 따른 타타리 메밀의 항산화 활성 측정)

  • The effects of roasting temperature and time on the antioxidant activities of tartary buckwheat were investigated. Compared to raw seeds (2.05 mg TAE/g), seeds roasted at $175^{\circ}C$ for 5 min showed significantly higher total polyphenol content (p<0.05), while those roasted at $250^{\circ}C$ for 10 min showed significantly lower total polyphenol content (2.77 and 2.56 mg TAE/g, respectively). The electron-donating abilities of tartary buckwheat seeds increased with an increase in the roasting time at lower temperatures (p<0.05). However, seeds roasted at a higher temperatures ($250^{\circ}C$) for 10 min showed significantly lower electron-donating abilities (p<0.05). Seeds roasted at $175^{\circ}C$ showed adequate L values, regardless of the roasting time. In contrast, seeds roasted for 10 min at $250^{\circ}C$, showed markedly lower L values. Our results suggest that the roasting temperature and time must be controlled to produce high-quality tartary buckwheat products.

Quality Characteristics of Pound Cake with Addition of Cashew Nuts (캐슈를 첨가한 파운드케이크의 품질특성)

  • In this study, the effect of added cashew nuts on the quality characteristics of pound cake were investigated. The weight and volume of the cake increased with the addition of cashew nuts concentration, whereas the dough yield and baking loss decreased. Furthermore, the hardness, penetration and, degree of retrogradation significantly decreased during storage with the addition of cashew nuts. As the cashew concentration was increased, the lightness and redness values of the crumb decreased and the yellowness values increased. In terms of sensory evaluation, when compared to the control group, the cashew nuts pound cake was superior in taste, flavor, chewiness and overall acceptability.
