Physicochemical and Organoleptic Properties of Starch Isolated from Gamma-Irradiated Acorn (감마선 조사 도토리로부터 분리한 전분의 이화학적 및 관능적 특성)

  • Physicochemical and organoleptic properties were investigated in starch extracted from acorn gamma-irradiated for insect control. Hunter's color L, a, and b values were unchanged upon irradiation at 0.25 to 10 kGy. Scanning electron microscopic observation revealed no changes with gamma irradiation at 1 kGy, that is effective for disinifestation, whereas 10 kGy resulted in some clefts on the starch surface. X-ray diffraction analysis showed patterns of both amorphous and crystalline regions were not different among the treatment groups. Water-binding property, swelling power, solubility, and gelatinization patterns of starch were influenced by irradiation dose, but 1 kGy dose was not detrimental to the physicochemical properties. Textural parameters of acorn gel were relatively stable, but significant reductions were found in hardness, adhesiveness, and chewiness in samples irradiated at 3 kGy or higher. Rrsults revealed that irradiation at 1 kGy or lower could be applied for insect control without causing apparent changes in physicochemical and organoleptic properties of acorn starch.

Monitoring on Extraction Conditions for Physicochemical Qualities of Ethanol Extract from Garlic (마늘 에탄올 추출물의 이화학적 특성에 대한 추출조건의 모니터링)

  • This study was carried out to find the optimal conditions for the extraction of the effective ingredients based on central composite by monitoring the extraction characteristics of each ingredient with a response surface methodology. The optimal condition for the effective component alliin was extract temperature of $60.86^{\circ}C$, extract time of 3.77 hr, and ethanol concentration of 50.68%, and that for allicin was $65.11^{\circ}C$, 2.79 hr, and 13.62%, respectively, with the maximum extraction of 16.72 mg%. The maximum value of extracted total phenolics was 16.72 mg%, the optimal condition for electron donating ability was $93.35^{\circ}C$, 3.22 hr and 10.38%. The optimal conditions for pH 1.2 and 3.0 nitrite-scavenging ability was extract temperature of $79.77^{\circ}C$ and $76.46^{\circ}C$, extract time of 3.22 hr and 3.31 hr, and the ethanol concentration of 10.38% and 1.12%, respectively. With this optimal condition, the obtained maximum values for nitrite-scavenging activities at pH 1.2 and 3.0 were 94.85% and 63.22%, respectively.

  • 인버터 DC 저항용접의 적용성 증대 : 인버터 DC 저항용접 공법이 SPOT, PROJECTON, SEAM, BUTT 등의 공정에 다양하게 적용되어 저항용접 현장에서 고효율, 친환경적 용접 환경을 만드는데 일조 하고 있다. 특히 자동차의 경량화, 충돌내성 증대, 진동 및 내구성 증대, 공간활용 극대화, 새로운 Design 개념 적용 등의 산업전반에 걸쳐 나타나는 신 Trends로 고 장력 철재의 적용 범위가 확대되고 HSS(High Strength Steel), EHSS(Extra High Strength Steel), UHSS (Ultra High strength Steel ; Hot - Formed Steel )등 다양한 철판의 SPOT 저항용접이 필요하게 되었다. 기존의 AC 단상용접의 전력 특성 상 통전 중 무 통전 시간 과 높은 PEAK 전력, 단상 대 전력 소모로 인한 전력 DROP 등의 문제로 인하여 신소재의 용접 시 매우 많은 Spatter가 발생하고, 높은 용접품질의 확보가 어려워 지므로 이를 대체하기 위한 공법으로 MFDC ( 인버터 DC 저항용접공법 )이 적용되고 있다. 인버터 DC 저항용접의 적응제어 : MFDC라는 높은 효율의 용접 전력원이 확보 됨에도 불구하고 용접현장에서는 원 자재, 도금 등의 품질 산포, 프레스 물의 가공산포, 공기압 산포, 전극 과열 및 마모 등의 요인에 의하여 저항용접 산포가 발생하고 있다. 이는 인위적인 조작이 어렵고 불규칙적이며, 어디서나 산재하고 있는 문제이다. 이를 용접전력 제어 법으로 개선하여 일정한 용접성을 확보하기 위한 노력이 적응제어 기법이다. 정 전류, 정 전력 제어는 정량 제어로 용접 물을 비롯한 용접부의 변화와는 관계없이 설정된 일정량의 전력을 공급하기만 하는데 반하여 적응제어는 적절한 용접 작업 시의 용접 물의 상태, 전극의 가압, 표면 상태 등에 따른 변화 페턴을 기억하고 이후 진행되는 용접에 대하여 정상 페턴과의 차이를 감지 이를 보상하므로 고품질의 용접성을 보장하는 제어기법이다. 따라서 다양한 용접 산포 유발 요인에 의해 용접부의 변화가 발생한다 하여도 그 변화를 감지 하고 적절한 용접전력을 공급한다면 고품질의 용접성을 확보하는데 유용한 공법이 될 수 있다. 인버터 DC 저항용접의 SPC 관리 : SPOT 용접 시 획득할 수 있는 다양한 파라메터에 대하여 모니터링 하고 이 자료를 data 화 하여 품질 관리에 응용하게 되면 양산라인에서 반복적으로 발생되는 문제점을 확인 할 수 있고 이를 통계적 방법으로 추적 개선해 나간다면 용접 불량 감소 및 생산성 향상에 도움이 되며 작업자의 공정 능력 향상 및 기업의 기술축적에도 높은 기여를 할 수 있을 것이다. 용접 적응제어와 다양한 파라메터 모니터링이 한 system에서 이루어 질 때 높은 용접성 확보와 불량률 감소, 원가절감, 생산성 향상 등의 효과가 극대화 될 것이다.

Application of cold plasma treatment as a method to improve the physical properties of defatted mustard meal-based edible films (탈지 겨자씨 소재 가식성 필름의 물리적 특성 향상을 위한 콜드 플라즈마의 적용)

  • This study investigated the effects of cold plasma (CP) treatment on the properties of biopolymer films prepared with defatted mustard meal (DMM films). CP treatments using N2, O2, He, Ar, and dry air did not affect the tensile properties, water vapor permeability, color, and morphology of DMM films, whereas the treatments using He and Ar improved their printability. The tensile strength (TS) of O2- or air-CP-treated DMM films and the elastic modulus (EM) of O2-, He-, Ar-, or air-CP-treated films were lower than those of the untreated films. An increase in the power of Ar-CP treatment resulted in an increase in EM. The optimum treatment power and time for minimizing yellowness changes by Ar-CP treatment were 420 W and 40 min, respectively. The results demonstrated the potential application of CP treatment to improve the film properties of DMM films and possibly other agricultural by-product-based biopolymer films, making the films more applicable to food packaging.

Visual Classification of Wood Knots Using k-Nearest Neighbor and Convolutional Neural Network (k-Nearest Neighbor와 Convolutional Neural Network에 의한 제재목 표면 옹이 종류의 화상 분류)

  • Various wood defects occur during tree growing or wood processing. Thus, to use wood practically, it is necessary to objectively assess their quality based on the usage requirement by accurately classifying their defects. However, manual visual grading and species classification may result in differences due to subjective decisions; therefore, computer-vision-based image analysis is required for the objective evaluation of wood quality and the speeding up of wood production. In this study, the SIFT+k-NN and CNN models were used to implement a model that automatically classifies knots and analyze its accuracy. Toward this end, a total of 1,172 knot images in various shapes from five domestic conifers were used for learning and validation. For the SIFT+k-NN model, SIFT technology was used to extract properties from the knot images and k-NN was used for the classification, resulting in the classification with an accuracy of up to 60.53% when k-index was 17. The CNN model comprised 8 convolution layers and 3 hidden layers, and its maximum accuracy was 88.09% after 1205 epoch, which was higher than that of the SIFT+k-NN model. Moreover, if there is a large difference in the number of images by knot types, the SIFT+k-NN tended to show a learning biased toward the knot type with a higher number of images, whereas the CNN model did not show a drastic bias regardless of the difference in the number of images. Therefore, the CNN model showed better performance in knot classification. It is determined that the wood knot classification by the CNN model will show a sufficient accuracy in its practical applicability.

Fabrication of a sterling silver ring with folding process (폴딩 기법을 이용한 스털링실버 링 제조 공정)

  • A novel folding process is proposed using a repeated cold-die forging and annealing to form a sterling silver ring. Sterling silver plate was cut into a doughnut shape, and lattices with 0.43-mm line-width were imprinted on it. The sample was folded by forging using dies with slopes of $45^{\circ}$, $60^{\circ}$, and $75^{\circ}$ and annealing. For comparison, samples were also fabricated without annealing. Strain was identified by measuring the length of lattices. Vernier calipers, a Vickers hardness tester, an optical microscope, and a UV-VIS colorimeter were used to determine the size, hardness, microstructure, and body color. Without annealing, cracks occurred. However, successful deformation was possible when annealing was used. The results of macro strain measurements show that the outer diameter and width decreased, while the inner diameter and thickness increased after the final process. The maximum strain was increased 0.128 toward the parallel direction. The Vickers hardness decreased after annealing and increased after the folding process. The microstructure results showed that the grain size increased after annealing but decreased after folding. The color difference based on the Lab index was under 10 for all processes. Eventually, a doughnut-shaped silver plate was successfully deformed into a ring shape by the folding process.

  • The scientific, economical and industrial values of the Moon have been increased, as massive ice-water and rare resource were founded from the lunar exploration missions. Korea and other major space agencies in the world are competitively developing the ISRU (In Situ Resource Utilization) technology to secure future lunar resource as well as to construct the lunar base. To prepare for the lunar construction, it is essential to develop the rover based construction spatial information technology to provide a decision-making aided information during the lunar construction process. Thus, this research presented the construction spatial information technology based upon rover's camera system. Specifically, the conceptual design of rover based camera system was designed for acquisition of a rover's navigation image, and lunar terrain and construction images around the rover. The reference architecture of the rover operation system was designed for computation of the lunar construction spatial information. Also, rover's localization and terrain reconstruction methods were introduced considering the characteristics of lunar surface environments. It is necessary to test and validate the conceptual design of the construction spatial information technology. Thus, in the future study, the developed rover and rover operation system will be applied to the lunar terrestrial analogue site for further improvements.

Investigation on the Conservation Status of the 50-year-old "Yu Kil-Chun Archives" and an Effective and Practical Method of Preserving and Sharing Contents (출간 50년된 '유길준 전서(兪吉濬全書)'의 보존상태조사와 효과적인 자료보존과 공유방법)

  • For the preservation and efficient content sharing of 5 volumes (2,866 pages) of Yu Kil-Chun's book published in 1971, which provides an important collection of data for the study of modern Korean history during the late 19th century (enlightenment period of Joseon dynasty). The books were purchased and its preservation status investigated and documented electronically by scanning for permanent preservation of content and to determine the condition of preservation at the time of documentation. The degree of deterioration and damage, such as discoloration, hardening, breakage, and damage in these 50 years old modern printed books was quantified through image analysis and made attempts to visualize the damaged areas. It was observed that the degree of deterioration and damage depended on the material and the surface condition of the paper used, the degree of exposure to light, and the storage environment. The comparison of the preservation status at the time of the photographing (or scanning) and judgment as to whether or not the image under investigation was artificially modified was accomplished by comparing the electronically documented images of Seoyugyeonmun (西遊見聞) in Volume 1 of Yu Kil-Chun's works with images provided on other websites. Practical problems encountered while considering the effective preservation of electronically documented data and publicly sharing it, in the course of this study, with other academic researchers around the world were also summarized.

Development of Sustainable Packaging Materials Using Coffee Silverskin and Spent Coffee Grounds: A Comprehensive Review (커피 은피와 커피찌꺼기를 활용한 지속가능한 포장소재 개발을 위한 연구동향)

  • As awareness of environmental issues continues to grow, there is an escalating demand for recycling and repurposing byproducts of agricultural and food production processes and their conversion to high-value products. Coffee is the most widely consumed beverage globally; during coffee beverage processing and consumption, byproducts such as coffee silverskin (CS), spent coffee grounds (SCGs), and oil are generated. Despite containing beneficial materials such as cellulose, hemicellulose, lignin, lipids, and bioactive substances, these byproducts are typically discarded in landfills or incinerated. The utilization of CS, SCGs, and oil in the development of packaging materials holds significant potentials toward the realization of a sustainable society. To this end, considerable research efforts have been dedicated to the development of high-value materials derived from coffee byproducts, including functional fillers, polymer composites, and biodegradable polymers. Notably, CS and SCGs have been employed as functional fillers in polymer composites. Additionally, lipids extracted from SCGs have been used as plasticizers for polymers and cultured with microorganisms to produce biodegradable polymers. This review focuses on the research and development of polymer/CS and polymer/SCG composites as well as cellulose extraction and utilization from CS and SCGs and its applications, oil extraction from SCGs, and cultivation with microorganisms using extracted oil for polyhydroxyalkanoates(PHA) production.

Microbiological Evaluation of Foods and Kitchen Environments in Childcare Center and Kindergarten Foodservice Operations (보육시설과 유치원 급식의 식품 및 환경 미생물의 오염도 평가)

  • Whereas the numbers of childcare centers and kindergartens are increasing rapidly, systematic management to control the food safety of foodservice operation is not yet well established. Samples from 12 centers in Seoul and Gyeonggi Province were collected to assess the microbiological quality of 32 raw materials, 24 cooked foods, 76 food-contact surfaces (knives, cutting boards, dish towels and gloves), 17 employees' hands and 12 air-borne bacteria. The microbiological analyses were performed for aerobic plate counts (APC), Enterobacteriaceae, E. coli and 7 pathogens (B. cereus, C. jejuni, C. perfringens, L. monocytogenes, Salmonella spp., S. aureus, and V. parahaemolyticus). Among raw materials, E. coli ($1.39{\sim}2.08\;\log\;CFU/g$) were detected in 4 out of 6 meats and 7.46 log CFU/g of APC in tofu. High enterobacteriaceae levels of 4.23, 5.14 and 4.19 log CFU/g were found in cucumber salad, steamed spinach with seasonings and steamed bean sprout with seasonings, respectively. No pathogens were found in all samples except for C. perfringens detected from raw spinach and raw lotus root. Only APC and enterobacteriaceae were found in food-contact surfaces. Two of the 23 knives and three of the 24 kitchen boards showed over 500 CFU/$100\;cm^2$ of APC; also, APC levels (5.03 to 5.44 log CFU/g) were detected in 4 of the 12 dish towels. Only one glove showed Enterobacteriaceae (2.44 log CFU/glove) contamination. Enterobacteriaceae were found in 2 employees' hands ($2.37{\sim}4.44\;\log\;CFU$/hand) among the 16 employees. The contamination levels of air-borne bacteria were shown unacceptable in two (2.25 and 2.30 log CFU/petri-film/15 min) out of the 12 kitchen areas. These results suggest that the microbiological hazards in some foods and environments are not well controlled and thus a guideline should be provided to ensure the food safety in childcare center and kindergarten foodservice operations.
