Implementation of HACCP Model for Steamed Rice with Squid Served from Elementary School with Joint-Lunch Management System (공동관리 초등학교의 안전한 오징어덮밥 생산을 위한 HACCP적용)

  • The purpose of this study was to implement HACCP system to foodservice of W and D elementary schools with joint-lunch management system in Kyungsan area. Steamed rice with squid was selected and Control Action, Monitoring Procedure and Control measure were identified based on HACCP flowchart to produce safe and healthy food. It was suggested that frozen squid must be thawed under the cold running city water and kept temperature below 1$0^{\circ}C$ and receiving/thawing procedure has to be done within 30 min. Raw vegetables must be washed under three-tube wash stand and whole prepreparation procedures should be done in 20 minutes. Clean and sanitize all the equipment and utensils before and after handling squid. Knives and cutting boards for vegetable and squid should be classified. Sauce for steamed rice with squid should be heated about 21 minutes to reach the temperature of 94$^{\circ}C$ before serving and internal temperature of food must be kept above 84.4$^{\circ}C$ during serving. The ideal temperature of kitchen should be remained 15∼18$^{\circ}C$. The underground water has to be excluded to minimize the risk of contamination in the foodservice facility and the prepreparation place must be separated with cooking place. Also, Personal hygiene Practice should be check in each stage. Further, additional research needs to be conducted to determine models for HACCP implementation for different menu.

A Comparison of the Perceptions of Children and Their Mothers of the Effects of School Lunch Programs on Children's Dietary Behaviors (학교급식이 초등학생의 식행동에 미친 영향에 대한 아동과 어머니의 인식 비교)

  • This study compared the perceptions of children and their mothers of the effects of school lunch programs on the children's dietary behaviors in elementary schools. Questionnaires were answered by 425 elementary school students and their 412 mothers in the Busan area. The results indicated: The school lunch program had positive effects on children's dietary behaviors such as understanding healthy meals, correcting unbalanced diets, snack intake, attitude toward the meal, table manners, and table hygiene. However, there were still some negative habits in the home related to snack time, reading books or watching television during mealtime, eating foods before seniors have started. The gender of the children and whether the mothers worked or not produced no significant differences (in most cases). Still mothers more positively perceived the effect of school lunch programs on their children's dietary behaviors than did the children themselves. Thus, the school lunch program had positive effects for a balanced diet and making good eating habits. And, therefore, teachers-as well as the dieticians- should actively regard the school lunch program as an educational activity which can produce positive effects for a balanced diet, and make every endeavor to strengthen their relationship with the home.

A Study on the Unbalanced Diet of Junior and Senior Students (일부(一部) 중고등학생(中高等學生)의 편식(偏食) 실태상황(實態狀況)에 관(關)한 조사연구(調査硏究))

  • Through the questionaire inquiry from April 1st to 10th, 1974 with 393 students in Woonho, Saekwang junior and senior highschool and Daisung, Ilshin girls' junior and senior highschool in Chungju, Choong Cheong Buk Do, I surveyed the general circumstances of students and their unbalanced diet on total 199 foods and causes of the unbalanced diet and regard the 21 boys and 29 girls who don't like to eat more than 30 foods from the given 47 protein-foods which are needed by students who are now in the stage of growth. This study is concerned with their circumstances and the causes of their ill habit of eating. 1) As to their distribution of age, 14 and 18 year old boys were six (28.5%), 11 and 13 year old girls were eleven (38.1%). In the survey on their height, 6 boys (28.5) were from 146 cm to 150 cm and 11 girls (38.1%) were from 146 cm to 150 cm. On the weight, 7 boys were from 36 kg to 40 kg(33.7%), 10 girls were from 36 kg to 40 kg (34.0%). We can see that ill habiters of eating were more weaker than other students from this data. 2) In the survey of educational level of their housewive it was found that number of graduates of the primary school is thirty (60.0%). So we can derive the fact that they don't make any variety in their daily table for their family. 3) As to their living standard, 19 boys (90.4%) and 27 girls (93.3%) belong to the middle class, low and high class were a little. This indicates the general living standard if Korea, because in common sence we regard the riches are the more ill habiters of eating. 4) 8 boys (36.8%) and 8 girls (26.8%) were the first children in their homes. This indicates the fact that housewive happen to make the first child as the ill habiter of eating because their lack of experience to give various food for their children. As to the survey on their infant nutriments, 41 students (80.2%) were fed by mother's milk. 5) Upon the causes of the unbalanced diet on a certain food, 34 boys (82.7%) and 45 girls (64.6%) were because of appearing to that food, 10 boys (40.8%) and 18 girls (61.5%) were because of the characteristic fragrance, 11 boys (52.4%) and 17 girls (58.1%) were because they have never eated that food till now, 34 boys (19.3%) and 5 girls (17.0%) were because of the bad appearance of the food. So housewive should study various ways of cooking daily meals at home and try to give their children who are in the stage of growth to be able to eat wider kinds of foods for the improvement of health.

Association between compliance with dietary guidelines and Alzheimer's disease in Korean elderly (한국 노인의 식생활 지침 실천도와 알츠하이머형 치매의 관련성)

  • Purpose: Confronting the growing burden of dementia requires understanding the causes and predictors of dementia in order to develop preventive strategies. In Korea a large proportion (71%) of dementia is Alzheimer's disease, and the risk factors have not yet been elucidated. Dietary factors may be possible risk factors, however research on the relationship between Alzheimer's disease and dietary behaviors has been insufficient. The purpose of this study was to investigate the association between compliance with the "Dietary Guidelines for Elderly (The Ministry of Health and Welfare, 2011)" and Alzheimer's disease among Korean elderly. Methods: Elderly persons who visited a University hospital or a dementia center of Seoul and agreed to participate in the examinations were selected. Among 277 subjects, 89 Alzheimer patients were selected with diagnosis and 118 subjects were assigned to the control group. Diagnosis of Alzheimer's disease was based on Alzheimer's disease criteria of Diagnostic and Statistical manual of Mental Disorders, 4th edition (DSM-IV) and criteria of National Institute of Neurological and Communicative Disorders and Stroke-Alzheimer's Disease and related Disorders Association (NINCDS-ADRDA). Information on the general characteristics, health related behaviors and compliance with the dietary guidelines for Korean elderly was collected by face to face interview using a structured questionnaire. Anthropometric variables were measured during the survey. Results: Total compliance score of dietary guidelines was significantly lower in the Alzheimer's disease group than in the control group (p = 0.0001). The odds ratio of Alzheimer's disease was significantly decreased in the group with the highest dietary guideline compliance score (OR = 0.47, 95 % CI = 0.18~1.09) compared to the group with the lowest compliance score. Conclusion: The results indicate that increasing compliance with the dietary guidelines could be an effective strategy to decrease the risk of Alzheimer's disease among Korean elderly.

A Study on Meal Management and Nutrient Intake of the Elderly (노인의 식생활 및 영양섭취상태에 관한 연구)

  • This study was conducted to assess meal management and nutrient intake of 357 elderlies in Ulsan. 114 male and 243 female elderlies over 65 year old were recruited from July 5 to August 13, 1995. Questionnaires for general characteristics of the subjects(such as family size, living cost, pocket money and health condition) and for meal management were used. The levels of depression and anxiety were measured by CED-S and Spielbuger's STAI-S, respectively In addition, nutrient intakes were conducted by convenience methods. Nutrient intake of male and female showed the average daily intake of energy, Protein, vitamin A, vitamin $B_2, $ and vitamin C were lower than Korean recommended dietary allowances(RDA). But other nutrient intake were higher than RDA except that calcium intake of female was lower. Most nutrient intakes were positively correlated with family size, living cost, pocket money and health condition. Depression and anxiety scores were also negatively correlated with most of nutrient intakes. The pattern of meal management could predict nutrient intakes as expected : regularity and pleansantness of eating were positively correlated with nutrient intakes, whereas unbalanced meal and eating lonely were negatively correlated with them.

The Study on the Relationship Between the Unbalanced diets of Protein-rich Food and General Circumstances, Growth, School Performance & Character among Elementary School Children of Masan (마산시내 일부 국민학교 아동의 단백질 급원식품에 대한 편식과 가정환경, 학력 및 인성과의 관계 연구)

  • In this study, 419 students of the 6th grade in three schools in Masan were surveyed. The students having less than 24 items among 48 protein-rich foods easily obtained were considered as unbalanced-diet students. Their general circumstances, character, status of growth and development and school performance were compared with those of balanced-diet students. The results were following. 1. The actual condition of unbalanced diets of protein-rich food 1) Female showed high degree of unbalanced diet in meat food while male in shell-food. Both sexes liked processed food stuffs such as ham, sausage and boiled fish paste but not salted. Both of them disliked beans. 2) The reason for unbalanced diet, they answered, was bad taste and smell of some foods. The reason, their mothers amswered, was they fed their children some particualr foods. 3) The attitudes of the mothers against unbalanced diets were coaxing their children to eat some foods for they are good for health or forcing their children to eat some foods. The most effective method on the children was coaxing and the next was changing cuisines. 2. The general circumstances of the students. 1) 168 students (male: 85, female:83) among 419 students who were studied were unbalanced-diet students and the extent of unbalanced diet was similar in both sexes. 2) The rate of unbalanced-diet students was higher among the students who were the first child in the family, had a small family or were fed milk or mixed milk. 3) The school career of unbalanced-diet student's mothers was higher and the rate of unbalanced-diet students was higher among the students who have rich families or career mothers. 3. The status of physical condition 1) The height and weight of unbalanced-diet students were lower than those of the standard of Korean children. The status of balanced-diet students were better than that of the standard. 4. Degree of school performance 1) The school records of unbalanced-diet students was 81.4 points in average, which was 1.3 points lower than the average of city students and that of balanced-diet students was 2.8 points higher than average. There was a significant gap between the two groups. 5. The relation between unbalanced diet and character 1) Compared balanced-diet students, unbalanced-diet students showed high degree of nervousness and coldheartedness and low degree of self-reliance and self-possession. There was a significant gap between the two groups and it showed that unbalanced diets affected the formation of character.

  • The Purpose of this study was to investigate the eating habits, nutrition and dietary fiber intakes of middle school students from urban areas, Jinju city and rural areas, Hadong and Namhae Gun in Gyeongnam province. Data were collected by using a survey questionnaire. The result of this study are as follows: In the respects of eating habits, the eating habits of girl students ware worse than those of boy students Regardless of region and subjects, the intakes of energy, calcium, iron, riboflavin, dietary fiber were poor. In all the regions the intakes of dietary fiber was far less than $20\~25g$ of daily intakes level. Mental education should also be emphasized to form teenagers' self-identity and the sense of value. Also, the nutritionists of each school should try to focus on the composition of group meals containing fish, vegetables, Kimchi and boiled rice and cereals, not satisfying with the group meals centered on hygiene. Health and nutrition depends on the food people take, teenagers' health is the basis of their future health. The continuous study about teenagers' eating habits and dietary fiber needs to be emphasized.

A Preference Analysis of Vegetable Group Foods in Primary School Students and their Mothers (초등학생과 초등학생 어머니의 채소류 식품군 식품의 기호도 조사)

  • The purpose of this study was to investigate the primary school students' and their mothers' vegetables preferences. Total of 360 students and their 360 mothers in Seoul and Gumi-si were participated in survey during July, 2011, and data of 253 students and their 253 mothers(70.3%) were analyzed by SPSS ver 12.0. The preference scores of mothers were higher than those of students in all kinds of vegetables examined, except bean sprout and laver. The preference scores of lower grader(2, 3 grade) were higher than higher graders(5, 6 grade), and those of female student were higher than male students. The preference accordance degree of students and their mothers were highest in seaweeds group, and lowest in root stalk vegetables. The onion, welsh onion, water dropwart, mustard kimchi were showed specially low student-mother preference accordance. Among the 50 vegetables investigated, all mother had chance to eat was 31 vegetables, and all students had chance to eat was 10 vegetables. The 3 kinds of seaweeds such as seastaghorn, ceylon moss and seaweed fusiforme were the foods that more than half of student had no experience to taste. Environmental variables, such as having the sibling, whether or not mother had job, the type of breakfast foods, and food and frequency of eating-out, all had no significant influences on vegetables preferences.

The Survey of Children's and Their Parent's Satisfaction for School Lunch Program in Elementary (초등학교급식 운영에 대한 학생과 학부모의 만족도 조사연구)

  • The satisfaction of elementary school children and their parents with the school lunch program by foodservice system was assessed by questionnaire. The subjects Participated in this survey were 1,136 students, first-6th grade elementary school children and 1,140 parents in Seongnam area. The result was as follows: the satisfaction score for school lunch program by foodservice system was rated as 'high'. Students' and parents' satisfaction score were 3.63 point and 3.62 point (5-point Likert rating scale), respectively. Difference of satisfaction score by grades was that high grade students were significantly lower than low grade students' (P<0.001). Five grade students' score was 3.23 point and 2 grade students' score was 4.04 point. Children's favorite food types were meat, dessert, cooked rice and fried food. The least preferred food types were green and seasoned vegetable, kimchi, soup and fish. Students felt shortage of favorite foods and a lot of dislike foods. Parents answered that thorough sanitary management (22.5%) and use of good quality foodstuffs (11.5%) were the most important factors in improvement of the school lunch program.

A Study on the Collaboration Types of Knowledge Creation in Korean Government-supported Research Institutes of S&T: Focusing on Openness and Diversity (과학기술계 출연연구기관의 지식창출 협력유형 분석에 관한 연구: 개방성과 다양성 중심으로)

  • We classified collaboration types of Government-supported Research Institutes (GRIs) in Korea to make a creation knowledge with the openness and the diversity. The openness is described to collaboration dependence and leading intensity, and the diversity is expressed to collaboration diversity and collaboration concentration. We suggest four taxonomy models explained in terms of the openness and the diversity with country level and institute level. This study uses 39,507 papers in SCOUPS DB that include author(s) affiliated to 26 GRIs. It concludes that many GRIs is classified to the type of multilateral collaboration follower in institute level and to the type of global network player in country level from the perspective of openness. In the aspect of diversity, many GRIs is concentrated to the collaboration type of picky eater or monophagous in institute level and to the multinatioal asymmetry type or non-multinational asymmetry type in country level. It is necessary for GRIs to lead collaboration and to transfer inhouse R&D institutes with high performance to be competitive institutes which make high quality knowledge.
