Physico-chemical and Sensory Characteristics of Chungkukjang Powder Added Hamburger Patty (청국장 분말 첨가 패티의 이화학적 및 관능적 특성)

  • This study was performed to evaluate the quality characteristics of the hamburger patty to which Chungkukjang powder (CJP; 0, 2, 4, and 6%) had been added. The contents of moisture, crude protein and crude ash in the control group(0%) were significantly(p<0.01) lower than that of the CJP patties, but crude lipid content in the control group was significantly (p<0.01) higher than that of the treated group. The values of L(brightness) and b(yellowness) of the control group were lower than that of the CJP patties, but a-value(redness) of the control group exhibited the highest score. The texture of the control group was significantly(p<0.05) harder than that of the CJP patties. Among the mean scores of sensory characteristics of samples, the patty with 2% CJP powder showed the highest sensory score, and also, had significantly(p<0.05) higher chewiness than the control group. In preference, the control group showed a higher score than the treated group, but this difference was not statistically significant. The patty with 2% CJP had significantly (p<0.01) higher consumer sensory score in texture than that of markets. The results showed that the CJP patties could contribute toward complementing the nutrients of hamburgers on sale. Furthermore, the results of this study can contribute toward improving the nutritional and functional well-being of products.

A Study for the Mechanical and Sensory Characteristics of Mushrooms by various Cooking Methods (조리방법에 따른 버섯의 기계적ㆍ관능적 특성에 관한 연구)

  • In order to investigate the mechanical and sensory characteristics of dried Lentinus edodes, raw Lentinus edodes, Pleurotus ostreatus and Agaricus bisporus by various cooking methods, texture measurements and sensory evaluation were performed. And the results were summarised as follows. Hardness, cohesiveness, springiness, gumminess and chewiness of those mushrooms, except the cohesiveness and springiness of Pleurotus ostreatus head, showed significant differences depending on the cooking methods. Microwave heating of mushrooms, in general, give high values in mechanical characteristics measurements. As a results of sensory evaluation, salt water blanching turned out to be the most preferred cooking method among blanching, steaming, microwave heating. The mushroom dishes were preferred by the panel in the order of Jungol, Hoi, Fritter, Saute and Jun.

Effects of Binding Materials on Sensory and Cooking Properties of Soondae (결착제에 따른 순대의 제조 및 조리 특성에 관한 연구)

  • The standard cooking method of Soondae, a famous traditional sausage type food in Korea, was proposed and the applicability of porcine plasma and egg white as the substitute of the porcine blood was investigated for the improvement of off-flavor, rancidity, and acceptability of Soondae. Sensory evaluation suggested Soondae prepared with 15% porcine blood most preferred. The cooking yields, water absorption capacity and hardness of plasma and egg white added Soondae were decreased compared with those of original porcine blood Soondae. The overall results of sensory evaluation suggested the possibility of using porcine plasma or egg white as a substitute for the porcine blood in Soondae.

The Effects of Soy Protein Isolate on Quality and Acceptability of Soy Protein Isolate Substituted Beef Patties and Ice Cream (분리대두단백(分離大豆蛋白)의 Beef Patties와 아이스크림에 대(對)한 이용효과)

  • In our previous report (Korean J. Food Sci. and Technol., 9, 123, 1977) we have studied the functional properties of soy protein isolates prepared from defatted soybean meal. For the practical application of the data described, beef patties substituted with SPI, and imitatied ice cream were prepared and sensory evaluations were carried out. The sensory analyses indicated that the beef patties substituted with gelated SPI to 30% have no detectable difference to the control at the significant level of 0.01. The imitation of ice cream whose milk-solid-not-fat was substituted with soy protein isolates showed the same texture as the control. Flavor of ice cream, however, has significant difference to the control due to beany-off flavor. Therefore removal of beany-off flavor is required for the substitution in ice cream.

Quality Characteristics of Extruded Formulated Products Prepared from Blends of Rice Flour, Corn Flour and Fish Muscle by Single-Screw Extrusion (쌀가루와 옥수수가루의 비율을 달리하여 제조한 생선스낵의 품질특성)

  • This research was conducted to study the characteristics of the extruded products prepared from blends containing fixed amounts of frozen pollack (20%) and defatted soy flour (5%) and varying amounts of rice and corn flour using laboratory-scale single-screw extruder. Extrusion conditions were set at 27% feed moisture, $160^{\circ}C$ process temperature and 170 rpm screw speed. Results showed that there was almost no difference in proximate compositions among all extruded products. The product made from 100% rice flour had the highest expansion ratio, the lowest bulk density and the lowest shear force (P<0.05). Also, this product was the highest in L value and had the highest preference in sensory evaluation. Consequently, the addition of frozen pollack and defatted soy flour to rice flour could make desirable expanded extruded products. This study will form the basis for future development of rice snacks containing frozen pollack.

Quality Characteristics of Pork-rib Sauce in Family Restaurants (패밀리 레스토랑에서 판매되는 폭립 소스의 품질 특성)

  • This study investigates quality improvement of pork-rib that is sold as a popular menu item in a family restaurant. It attempts to search the relation between pork-rib sauce and pork-rib through the sensory evaluation, physicochemistry properties and physical properties of pork-rib sauce. As a result, sensory preference of pork-rib and its sauce in TGIF restaurants was highest. The color of the pork-rib sauce was darker, and high salinity and low sweetness were preferred. As for viscosity, concentrations which are not thick were preferred. Also, sauce offered with pork-rib was closely related to pork-rib, so pork-rib menu in a family restaurant would be much preferred if the kinds of sauce become diversified.

Quality Characteristics of Health Concerned Funtional Cookies using Crude Ingredients (거친재료를 첨가한 건강기능성 쿠키의 품질 특성 연구)

  • Pysicochemical and sensory characteristics of health concerned funtional cookies using various levels of crude ingredients of resistant starch were investigated in this study. The 10% substituted group had significantly higher pH values compared to those of control. Spread factor of control group had significantly the largest value and the 30% substituted group had the lowest values(p<0.05). Results of sensory characteristics showed significantly higher hardness, crispness and yellowness with 20% substituted sample group at p<0.05. Acceptance test of cookies with 10% substituted sample groups showed higher savory taste, texture, and overall acceptability and they did not show significant differences with the 20% substituted groups.

Characteristics Quality of Yellow Layer Cakes with Added Buckwheat Flour (메밀가루를 첨가한 옐로우 레이어 케이크의 품질특성)

  • The quality characteristics of yellow layer cakes produced by different methods of buckwheat powder addition (0, 10, 20, 30, 40) were investigated. The specific gravity of the dough increased as the amount of buckwheat powder added increased. Regarding the color of the crumb of cake, the L value and b value(yellowness) were lower as the amount of buckwheat powder added increased, but the a value(redness) increased. The cake volume tended to decrease as the amount of buckwheat powder added increased. The cake symmetry index and uniformity index were not significantly different from those of the control group, but the baking loss rate was slightly lower when buckwheat powder was added. The hardness was significantly higher than that of the control as the amount of buckwheat powder added increased. A sensory test showed that the taste had a high score when 20% buckwheat powder was added, and texture and overall acceptance were not significantly different from the control group until 20% buckwheat powder was added. Therefore, when a part of wheat flour is replaced with buckwheat powder to produce a yellow layer cake, it is possible to produce a product with improved cake quality and symbolic characteristics when a buckwheat powder 20% level is added.

Assessment of Availability of Korean Computerized Neurobehavioral Test in Patients with Brain Injury (뇌손상 환자에서 컴퓨터 신경행동검사의 유용성 평가)

  • This study was conducted to evaluate the correlation between the Korean version of Mini Mental State Examination (MMSE-K) and the Korean Computerized Neurobehavioral Test (KCNT) and the usefulness of KCNT for discriminating the patients with suspected dementia from normal persons in patients with a brain injury. The results of each items of KCNT had passed the test for normality. T test for group comparison and bivariate correlation analysis for correlation between two tests were used. There were no significant differences in characteristics of two groups. The differences in results of eight tests of KCNT between two groups were statistically significant (p<.05) and the Pearson correlation coefficients (r) between two tests were statistically significant (p<.05) : simple reaction time (-.580), choice reaction time (-.341), color word vigilance (-.661), digit classification (-.703), 2-digit addition (-.582), 3-digit addition (-.610), symbol digit substitution (-.642), and digit span (.807). These results suggested that simple reaction time and 2-digit addition were useful in discriminating the patients with suspected dementia from normal persons because the Pearson correlation coefficients of the two items of KCNT showed anticlastic association between two groups. And each items of KCNT may use in follow up cognitive function for patients in two groups.

Effect of Surfactants on the Characteristics of Cooked Rice During Storage (계면활성제가 저장 중의 밥의 특성에 미치는 영향)

  • The effects of three surfactants (SSL, Dimodan, and SE1670) on the properties of cooked nonwaxy and waxy rice during storage were investigated by sensory evaluation, instrumental test, and measurement of retrogradation degree. The results of sensory evaluation revealed that the overall quality of cooked rice was affected by textural characteristics. The addition of surfactant decreased the roughness and hardness of cooked rice, however, increased the stickiness and moistness during the storage in the order of SE, SSL, and Dimodan. In instron test, the hardness of surfactant-added cooked rice was significant lower than that of control. The addition of surfactant decreased the degree of retrogradation both in cooked nonwaxy and waxy rices.
