Identifying Differentiating Attributes of Local Coffee Shops in Daegu (대구 커피전문점의 시장 경쟁력 요인 도출 - 지역 자생 커피프랜차이즈 성공 요인을 중심으로 -)

  • Domestic coffee franchise market in South Korea has been rapidly growing along with developing the global coffee franchises as well as entering domestic franchise companies into the beverage market. Competitions in the markets are getting more accelerated and local franchises and owner-operated coffee shops are losing their market shares gradually as a result. Local franchises and owner-operated coffee shops in Daegu, however, are notable in that they are maintaining the competitiveness in the markets. This is a unique phenomenon, which deserves to be analyzed to identify the successful attributes as a case study. Important Performance Analysis (IPA) method has been employed for analyzing and its gap(i.e., difference between importance and performance) analysis shows that the price and quantity of coffee are the most important differentiating attributes of local and owner-operated coffee franchises in Daegu.

  • 최근 저가 시장에 신규로 진입하는 브랜드들이 급격히 증가하면서 메가엠지씨커피, 빽다방, 컴포즈커피, 더벤티, 커피에반하다, 요거프레소 등 중견 커피 프랜차이즈 경쟁도 치열해 지고 있다. 최근 중견 커피 프랜차이즈 시장 변화가 입지요인에 미치는 영향을 AHP기법 적용하여 우선순위를 도출하였고, 이를 5년 전 결과와 비교하였다. 입지요인 중 과거의 연구에서 높은 중요도를 보였던 '경쟁업체의 수'는 본 연구에서 중요도가 낮아진 것으로 나타났으며, 상대적으로 중요도가 낮았던 '경쟁업체와의 경쟁력'은 상위를 차지하는 결과를 보였다. 본 연구를 통하여 중견 커피 프랜차이즈의 주요 입지요인을 도출하여, 과거의 입지요인과 비교하여 그 원인을 파악하고 향후 커피 프랜차이즈의 발전방안에 대해 고려하고자 한다.

  • 국내 커피산업에 있어서 2020년 기준으로 개인 커피전문점 점포수는 7만 5520곳으로 전체 커피전문점 점포수의 90%를 차지하였으나, 국내 3대 대형 커피프랜차이즈(스타벅스, 투썸플레이스, 이디야)의 매출액 비중은 60%으로 대형 커피프랜차이즈의 매출비중이 매우 높다[1]. 개인 커피전문점의 경우 대형프랜차이즈에 비해 자본력과 브랜드 파워 부족으로 어려움을 겪고 있는데, 본 연구에서는 마이클포터의 Five-Forces Model을 커피산업에 적용하여 한국 커피산업 외부환경을 분석하고, VRIO 분석을 통해 개인 커피전문점 내부자원을 분석하여 개인 커피전문점의 발전을 위한 경영전략을 도출하고자 한다.

The Analysis of Structural Relation among Culture Marketing, Brand Image, Customer Satisfaction and Intention to Revisit in Coffee Franchises (프랜차이즈 커피전문점의 문화마케팅과 브랜드 이미지와 고객 만족 및 재방문 의도 간의 구조적 관계 분석)

  • Franchise coffee shops have continued to attempt to differentiate themselves using cultural arts to engage with changes in consumer awareness and lifestyle. This empirical study was conducted to analyze structural relations between cultural marketing and brand image, customer satisfaction, and intention to revisit for franchised coffee shops. 322 customers at S Coffee Shop (a franchised coffee shop in Daegu) were surveyed, and collected data were subjected to frequency, descriptive, reliability, correlation, and covariance structural analysis using SPSS software. We found that culture marketing significantly improved brand image and customer satisfaction, and thus, significantly influenced intention to revisit. The study shows culture marketing activities improve brand image and increase customer satisfaction and the likelihood of revisiting.

  • Currently, the service industry share in domestic industry is increasing. Especially the size and marketability of the food service industry, which satisfies with basic human desire, is growing significantly. In this food industry, the coffee industry is recognized as a different area from the traditional food industry. The age of instant coffee at low price has gone. Today, more and more customers want to drink more delicious coffee and coffee that is good to their bodies. Especially as individualism has been rambling, more and more people enjoy individualism and want their personal space. This is why coffee speciality stores have been universalized. Also, as coffee speciality stores have been generalized, their own service quality is necessary and they should satisfy and affirm their loyalty to the customers in line with the enhancement of service quality. The purpose of this research is understanding of the impact of coffee specialty shop's service quality on affective commitment and repurchase intentions. The results of an empirical study in this research are as follows: First, compassion among the execution factors of coffee specialty shop's quality has a positive effect on both of affective commitment. But typicality and reactivity don't. Second, affective commitment have a positive effect on repurchase intentions. With a base of the above research result, we should comprehend that another service quality factor exists compared to other dining-out industry and establish marketing strategies in order to contribute to enhance repurchase intentions for the customers.

An Analysis of the Efficiency and Determinants of Coffee Franchises that Use DEA (DEA를 이용한 커피 프랜차이즈의 효율성 및 결정요인 분석)

  • This study aims to utilize DEA, analyze the efficiency of Korean coffee franchises, look into the factors that affect efficiency, and improve the efficiency of Korean coffee franchises. The main results of this study are as follows. First, according to CCR model standards, there are a total of 9 efficient coffee franchises and according to BCC model standards, there are a total of 12 efficient coffee franchises. A total of three of the inefficient DMUs were found to have a value of 1 for BCC, while the other 25 were found to be inefficient for both technology and scale. Second, of 28 franchises, 11 were analyzed to be decreasing return to scale and through future increased investments of optimum levels, business performance can be improved and efficiency can be enhanced. Analysis showed that 9 franchises appeared as CRS and it is most ideal to maintain the yield of future output elements at current levels and the work efficiency of 8 franchises in increasing returns to scale states expands as production scales increase according to specialization and role division and yield can relatively improve a lot. Third, the analysis of factors affecting the efficiency of franchises through the Tobit regression analysis showed that the number of franchises and operating periods had a positive (+) effect on efficiency. Based on this study, the efficiency of coffee franchises should be analyzed to establish strategies to maximize efficiency.   • This study attempts to measure the performance of franchise brands using the Enterprise Contract Management(ECM) and Franchise Contract Management Leverage(FCML). The data were collected from 14 chicken franchise brands and 16 coffee franchise brands. This research suggests some implications as follows. Chicken franchise brands are confronted with the slow growth, but coffee franchise brands still have the potential growth. According to FCML, as well, it shows that chicken franchise brands should focus on qualitative performance through franchise store management to achieve sustainability, and coffee franchise brands need the managerial strategies to maximize franchisees' sales profit, which leads increasing franchisor's business performance ultimately.

A Study on Determinants of Franchised Coffee Shop Rents (프랜차이즈 커피점의 상가임대료 결정요인에 관한 연구)

  • The study has analyzed the determinants of retail rents for the franchised coffee shop with the Multi-Regression analysis in Seoul. Central place, agglomeration, and demand-externality theories provide the basis for empirical models. The data used in this study consisted of 2,000 retail units in Seoul. As the results, the results show that coffee shop of retail sales per $3.3m^2$ and characteristic of retail trade-areas, and characteristic of coffee shop affects on the coffee shop's rents per $3.3m^2$. Coffee Shop's sales are the major determinant of coffee shop's rents. Also, coffee shop's goodwill per $3.3m^2$ and rental bond per $3.3m^2$ are positively correlated with a coffee shop's rents. Additionally, number of wholesale company and manufacturers in the retail trade-areas influences coffee shop's rent per $3.3m^2$. In summary, the study shows that coffee shop's brand identity, location and retail mix in the retail trade areas affects a coffee shop's rent per $3.3m^2$.

카페 비즈니스의 브랜드 충성도 연구

  • 본 연구에서는 카페 비즈니스에서 중요한 서비스 품질의 여러 요인 중 카페의 사회문화성이 새로운 커피 비즈니스의 주요 특성으로 대두됨을 인식하여 이를 통해 카페의 이미지와 브랜드 충성도의 향상방안을 모색해보고자 함에 본 연구의 목적이다. 커피 전문점 중 전문브랜드와, 지역브랜드, 개인카페를 중심으로 설문을 통해 이를 분석한 결과, 카페 서비스품질 중 사회문화성은 전국 프랜차이즈는 브랜드 충성도를 도리어 낮추는 결과를 주지만 개인카페는 브랜드 충성도를 높이는 요인으로 작용하는 차별된 효과가 나타나 개인카페나 지역프랜차이즈의 카페 비즈니스에서는 전문성이 기반이 되어야만 브랜드 충성도를 향상시킬 수 있으며, 개인카페는 지역 프랜차이즈보다는 더욱 덜 복잡한 서비스 전략이 필요한 것으로 나타났다. 또한 개인카페의 특수한 사항들이 사회문화성을 통한 브랜드 이미지를 향상시키고 이를 통해 브랜드 충성도를 높이는 것을 알 수 있다. 결과적으로 전국 프랜차이즈는 서비스 품질 중 접근성과 확신성을 통해 브랜드 이미지와 브랜드 충성도가 높아지는 전략이 우선적으로 대두되며, 그 외의 서비스 품질들은 충분히 현재의 상태로도 매우 만족스러운 결과인 것으로 나타났다. 반면, 지역 프랜차이즈의 경우는 서비스 품질 중 확신성이 강화되고, 서비스 전문성과 접근성을 통해서 더욱 브랜드 이미지와 브랜드 충성도를 향상시킬 수 있는 전략이 마련되어야 전국 프랜차이즈화 될 수 있는 고객의 인지력을 향상할 수 있는 전략이 모색된다. 반면, 지역기반의 개인카페들은 전국단위의 프랜차이즈보다 전국단위의 프랜차이즈로 나아가기 위해서는 지역기반의 지역프랜차이즈 카페들보다도 전문성 강화가 중요하며, 사회문화성을 강조하는 서비스 전략을 통해 고객들로 하여금 브랜드 충성도를 높이도록 전략화 방안이 필요하다.

  • This study was to investigate the impact of environment characteristics on perceived value and visit intention in franchise coffee shops. And, the study was to examine the mediating role of perceived value in the relationship between environment characteristics and visit intention. The data were collected from 212 coffee shop users and analyzed with SPSS and AMOS.. The findings are as follows. First, price, service, and atmosphere have a significant effect on the defined hedonic value but menu does not. Second, price and service have a significant effect on utilitarian value but menu and atmosphere do not. Finally, both hedonic value and utilitarian value have a significant effect on visit intention.
