복분자 열매의 화학성분 및 휘발성 향기성분

  • 최근 복분자(산딸기)의 효능을 이용한 일반식품 및 기능성 식품 등의 제품 개발이 활발히 추진되고 있다. 따라서 본 연구에서는 식품차원의 연구분야 일환으로서 먼저 복분자의 일반성분, 유리당, 유리아미노산, 무기성분 및 향기성분 등을 보고한 후 앞으로 생리 활성 연구 분야에 초점을 두고 연구를 진행할 하여 학문적 자료 및 산업에 응용할시 기초자료로 활용하고자 한다. 복분자의 수분은 5.39%, 총당은 17.3%, 환원당은 8.6%, 조단백질 10.6%, 조회분은 4.5%, 조지방은1.7%, 조섬유는 3.9%이고, 유리당 함량은 sucrose 1.52%, fructose 3.98%, glucose 1.24%이고, 유기산 함량은 citric acid 10.2%, oxalic acid 6.29%로 가장 많이 함유하고 있었고, 그 다음은 malic acid 1.94%였다. 총 아미노산은 7914.1mg%이고, 필수아미노산 함량은 2622.5mg%로 나타났다. 복분자에 가장 많이 함유되어 있는 아미노산은 aspartic acid 1260.3%, 그 다음은 glutamic acid 1054.3% 순으로 함유하고 있었다. 무기성분 K가 387mg으로 가장 많이 함유되어 있었고, 복분자에서 총 52종의 성분이 화인되었는데 확인된 성분들은 관능기별로 분류하면 amylalcohol를 포함한 alcohol류 11종, valeric acid를 포함한 acid류 13종, hexanal를 포함한 carbonyl류 20종, 2-heptanone를 포함한 hydrocabon류 5종 그리고 methyl palmitate를 포함한 ester류가 3종 이었다. 관능기별로 확인된 성분들의 총 peak area%를 살펴보면 alcohol류 11.56%, acid류 38.87%, hydrocarbon류 2.89%, ester류 0.80%, 총 70.32%가 확인되었다. Alcohol류에서 linalool가 3.78%, acid류에서는 caproic acid류가 14.40%, carbonyl류에서 2-hydroxy-4-methoxyacetophenone이 2.99%, hydrocabon류에서는 aromadendrene가1.59% 그리고 ester류에서는 methyl palmitate가 0.43%으로 가장 많이 함유하고 있었다.

Comparison on the Appropriateness of Glutinous Rice for Making Rice-cake (미과제조용(米菓製造用) 나미(糯米)의 적성(適性)에 관(關)하여)

  • The physicochemical properties of Korean glutinous rice was compared with those of foreign one in order to investigate their appropriateness as raw materials for making rice-cake. The results are summarized as follows: 1) It was found that the Korean ed more crude protein and less total sugar than the foreign one. Therefore, the Korean variety appears to have a higher value of protein. 2) The Korean glutinous rice appeared more plentiful in crude fat and crude fibre content than those of the foreign one. Judging from this fact, it was found out that the Korean glutinous rice had a lower rate of husking and cleaning. 3) The purity of grain in Japanese glutinous rice was highest with 90.2% and the Kyungki glutinous rice was lowest with 47.4%. 4) While showing a low viscosity, the Honam glutinous rice, strange enough, also showed a low dextrinizing temperature.

Physicochemical Properties of Mucilage from Domestic Molokhia (Corchorus olitorius) (몰로키아(Corchorus olitorius) 잎에서 추출한 mucilage의 이화학적 특성)

  • Proximate composition, phenolic compounds, and amino acid composition of molokhia (Corchorus olitorius) and molecular weight distribution of its mucilage were determined. Concentrations of dietary fibers and protein were 37.4 and 24.4% of the total dry weight, respectively. Mucilage was obtained by extracting dry molokhia leaves with hot water, followed by the addition of 55% ethanol. Although about 50% of the mucilage was lost during the extration, it was still rich in polyphenol compounds. In mucilage, proteins were composed of glutamic acid, glycine, alanin, and aspartic acid, and molecular weight of most polysaccarides ranged from $40,000{\sim}500,000$ daltons based on gel filtration chromatography.

Effect of Citrus junos Peel on the Quality and Antioxidant Activity of Traditional Rice Wine, Jinyangju (유자 과피를 첨가하여 제조한 진양주의 품질 및 항산화 특성 변화)

  • The quality and antioxidant activity properties of Jinyangju, Korean traditional rice wine made with different additions of Citrus junos peel (0, 10, 20, 30, and 40%) were investigated. The pH and the total sugar content of the Jinyangju decreased, whereas the total acidity and alcohol content increased with greater additions of Citrus junos peel. The color L-value increased and the color a- and b-values decreased with increasing amounts of Citrus junos peel. The DPPH (1,1-diphenyl-2-picryl-hydrazyl) free radical scavenging activity increased with the addition of Citrus junos peel. The highest overall acceptability values in the sensory test for color, flavor, taste, and overall favorite were 4.2, 4.9, 5.6, 5.0, and 3.9, respectively, with the addition of 20% Citrus junos peel.

  • Chemical compositions and physiological activities of Platycodon grandiflorum roots grown for 4 and 24 years were investigated. Chemical compositions of P. grandiflorum roots grown for 24 years were moisture 82.7%, crude protein 1.6%, crude lipid 2.1% crude ash 0.7%. total sugar 6.0% total dietary fiber 2.3% crude saponin 3.4mg% and ascorbic acid 3.0 mg%. Contents of each components in 24 years old roots were higher than that in 4 years old roots and the most abundant mineral was potassium being 879.9mg/kg. Physiological activities of solvent extract from P. grandiflorum roots grown for 4 and 24 years were high in order of ethanol methanol and water extract. The electron-donating abilities and nitrite-scavenging effect of solvent extract of 24 years were high in order of ethanol methanol and water extract. The electron-donating abilities and nitrite-scavenging effect of solvent extract of 24 years old roots were higher than those of 4 years of old roots in the range of 10~40% respectively.

Chemical Components of Chestnut Flower(Castanea crenata) (밤꽃의 화학성분)

  • To obtain fundamental data from chestnut flower, chemical properties were investigated. The results are as follows. The contents of total sugar, reducing sugar, crude protein, crude fat and ash in prebloomed chestnut flower were 10.44, 4.91, 8.80, 1.42 and 0.87%, in the postbloomed were 11, 75, 7.04, 7.71, 2.26 and 0.66%, respectively. The browning degree of the extracts from the prebloomed sample was higher than that of the postbloomed. The contents of flavonoids and nonflavonoids in the prebloomed sample were 7.05 and 0.52%, in the postbloomed were 2.08% and 0.22%, respectively. The contents of free sugars such as sucrose, fructose and glucose in the prebloomed sample were 2.90, 0.72 and 0.71%, in the postbloomed were 2.65, 2.10 and 2.20%, respectively. The major amino acids in the prebloomed sample were threonine, proline and cystine and its contents were 28.96, 12.49 and 11.43%. But aspartic are glutamic acid were major amino acids in the postbloomed and its contents were 16.19 and 11.90%, respectively.

Thus, meta-analysis is a statistical integration method that delivers an opportunity to overview the entire result of integrating and analyzing many quantitative research results. Today, regardless of gender and age is increasing interest in whether you can lead a younger and healthier life. With this change of life which has been developed with a variety of functional health food. Aronia melanocarpa called black chokeberry is a fruit of berry plants belonging to the Rosaceae originally growing in the North America region. In the studies for factors related to quality characteristics and antioxidant activities as the extracts of Aronia in this study, which it is only targeted factors as total sugar, acidity, polyphenol, anthocyanin, antioxidant. Thus, we present the theoretical and practical implications of these results.

  • This study was conducted to manufacture new product containing high soluble polysaccharide from Hericium erinaceus extract. The new products were prepared for powder, granulate and tablet form by spray drying process. The high soluble powder form was mixed with sub-ingredients and then granulated form by granulator and molded as tablet form by a press molder respectively. Moisture content of products was following order; spray dried powder > granule > tablet Total sugar content of produce was observed to 19.14% in spray dried powder, 37.58% in granulate and 35.76% in tablet. The hue angle of products was $85.5^{\circ}$ in spray dried powder, $95.37^{\circ}$ in granulate and $94.67^{\circ}$ in tablet. The absorption capacity was higher in powder, but the product type did not affect the color.

Changes of Physiological Functionalities during the Fermentation of Medicinal Herbs Doenjang (약용 식물 첨가 된장의 숙성 중 생리기능성의 변화)

  • In order to develop new functional doenjang, two types of medicinal herb doenjang were prepared with several medicinal herbs, bamboo salts and meju and then changes of its physiological functionalities were investigated during 6 months of fermentation. Antihypertensive angiotensin converting enzyme(ACE) inhibitory activities of medicinal herb doenjangs were decreased to 39.0∼5l.7% from 61.7∼72.5% after 6 months of fermentation. Fibrinolytic activity and electron donating ability of medicinal herb doenjangs were showed 10.4∼11.3 U and 96.3∼99.1% after 6 months of fermentation, respectively. SOD-like activity of medicinal herb doenjangs were also showed approximate 10% and tyrosinase inhibitory activity of 20$^{\circ}C$ -water extracts of medicinal herb doenjang(I) was increased up to 97.6% from 12.9% after 6 months of fermentation. Crude protein content and total sugar content of medicinal herb doenjangs were approximate 14% and 33%, respectively, which were higher than those of traditional doenjang.

Bioethanol Production using Endogenous Triticale Enzyme (라이밀 자체 효소를 이용한 바이오에탄올 생산)

  • The objectives of this study were to develope the economical process for bioethanol production from domestic triticale and investigate optimal fermentation conditions such as temperature, time, and enzyme concentration used to pre-treatment process. Triticale mash, containing 148 g of total sugar per 1 L of mash, was fermented with Saccharomyces cerevisiae CHY1011 at $33^{\circ}C$. Fermentation of mash supplemented with enzyme was completed within 48-60 hours, and the ethanol yield was 410.9 L/tonne of dry base. On the other hand, fermentation of mash without enzyme addition was completed within 36-48 hours, but the ethanol yield was 342.2 L/tonne of dry base. For optimal bioethanol production from triticale, viscosity reduction enzyme was added in the pre-treatment process, and the fermentation rate of triticale was 92.0-94.2%. In addition, the results showed that bioethanol production of triticale by low-temperature pre-treatment would provide higher ethanol production efficiency and lower operating costs.
