  • The purpose of study was to examine the factors influencing fast food consumption in Korean adolescents. The analysis was conducted using cross sectional study data from the 16th Korea Youth Risk Behavior Web-based Survey in 2020. A total 54,948 middle and high school students participated in this study. The subjects in the analysis were 28,353 males and 26,595 females, 28,961 middle school and 25,987 high school students. In total, 56.6% Korean adolescents consumed fast food once or twice weekly and 25.4% consumed fast food more than three times weekly. Logistic regression analysis revealed that fast food consumption was significantly associated with dietary behavior such as lower breakfast intake (OR: 0.930, 95%CI: 0.891~0.970, p<0.001), higher soda drinks consumption (OR: 2.563, 95%CI: 2.452~2.678, p<0.001), and higher sweet drinks consumption (OR: 1.898, 95%CI: 1.818~1.982, p<0.001). For psychological and health behavior factors, fast food consumption was also significantly associated with higher perceived stress (OR: 1.239, 95%CI: 1.163-1.321, p<0.001), higher smoking (OR: 1.300, 95%CI: 1.164~1.453, p<0.001), higher drinking (OR: 1.193, 95%CI: 1.112~1.280, p<0.001), higher depression experience, higher loneliness experience, and lower subjective health, In conclusion, fast food consumption in Korean adolescents was associated with undesirable dietary habits and psychological and health behavior, suggesting that appropriate education programs are necessary to reduce such behavior.

  • Purpose: This study examined the factors related to skipping breakfast in high school girls. Methods: A survey of a total of 581 high school girls residing in Incheon was conducted. The subjects were classified into 2 groups according to the breakfast frequency: "breakfast skipping" group (eating breakfast ≤ 2 times/week, n = 250) and "breakfast eating" group (eating breakfast ≥ 3 times/week, n = 331). This study compared the general characteristics, lifestyles, interest in weight control and beauty care, food habits, the reasons and symptoms of skipping breakfast, as well as the attitude toward breakfast between the 2 groups. Results: The mean age of the subjects was 16.5 years old. Approximately, 33.9%, 33.6%, and 32.5% of the subjects were in first grade, second grade, and third grade, respectively, with no significant difference between the 2 groups. The breakfast skipping group showed a high interest in weight control, and beauty care than the breakfast eating group. The breakfast skipping group consumed more afternoon snacks and late-night snacks, and ate dinner irregularly. Although the breakfast skipping group experienced the negative effects of skipping breakfast, they showed low recognition for the importance or role of breakfast. The most common reason for skipping breakfast was lack of time, which appears to be related to the late wake-up time and the time spent on make-up or beauty-care. Conclusion: Skipping breakfast by high school girls was related to a high interest in beauty care, irregular meals and low attitude toward the importance of breakfast for health and nutrition. Therefore, it is necessary to conduct nutrition education to change the perceptions and attitudes of female adolescents regarding the importance of breakfast by recognizing that breakfast can affect not only balanced nutrition and health, but also healthy physical beauty.

  • Purpose: This study examined the relationship among the use of food-related content (FRC), dietary behaviors, and dietary self-efficacy to demonstrate the need for nutrition education to help adolescents build healthy eating habits and provide evidence for developing nutrition education programs for adolescents. Methods: Three hundred and eighty-one high school students in Seoul and Gyeonggi areas participated in the study. The subjects were divided into three groups (low, medium, and high) according to the level of use of the FRC, and their general characteristics, dietary behaviors, and dietary self-efficacy were analyzed. Correlation analysis was performed between FRC usage, dietary behaviors, and dietary self-efficacy, and the mediating effects of dietary self-efficacy on the relationship between the level of the use of FRC and dietary behaviors were estimated. Results: A higher level of FRC usage was associated with an increased daily cost of eating out and snacking, but no difference was observed in the BMI range. The subjects in a group with a high level of FRC usage ate convenience store or instant foods instead of homemade meals (p = 0.033), had a late-night meal or snack (p = 0.024), and turned to emotional eating under stress (p < 0.001) more than those in the low level group. In addition, the high level group checked the nutrition facts label more carefully when purchasing processed foods (p = 0.016) and exercised at least 30 minutes daily, not considering physical education classes (p = 0.057). The higher level of FRC use, the lower the dietary self-efficacy, whereby the subscales 'environmental stimulus control efficacy' and 'affective factor control efficacy' showed complete mediating effects. Conclusion: Given that FRC has been increased recently, adolescents are in need of support to help them control and enhance their dietary self-efficacy as well as develop healthy dietary behaviors through proper nutrition education programs.

  • This study was conducted to determine the content of inorganic metals in soft drinks distributed locally in markets.6 trace metals (Fe, Ca, Zn, Na, Mg, and K) were detected in 16 kinds of drinks,80 samples. The average concentration of inorganic metals in vegetable drinks was relatively higher than that of mixed drinks or carbonated drinks. The concentration of calcium, which is advisable inorganic metals for the growth of skeleton and the prevention of osteoporosis, hypertension, was very high and needed to be careful for the consumer who is suffer with lithiasis. Although carbonated drinks are very popular with the children and adolescence owing to the unbalance of the intake of Ca and P, habitual drinking could cause obstruction in skeletal growth and metabolism of Fe, Cu, and Zn. So, it is suggested that more practical study is needed fur the intake of inorganic metals.

  • The effects of pectin on obesity was studied using 3T3-L1 pre-adipocytes and rats fed 20% high fat diets. The concentration of leptin released from 3T3-L1 adipocytes in the presence of pectin was significantly decreased by 85% compared to that of the control (p<0.05), however, glycerol concentration was not changed. These data indicate that pectin seems to inhibit lipids accumulation in the adipocytes rather than enhance the lipolytic activity. Forty Sprague Dawley rats were fed 20% high fat diet for 8 weeks to induce obesity and then divided equally into four groups. Experimental groups were normal diet group (ND), high fat diet group (HFD), HDF with 10% pectin group (HFP10), and HDF with 20% pectin group (HFP20). Diet for the each group was prepared to be iso-caloric following AIN-76 guideline. After obesity was induced, rats were placed on an restricted diet for 9 weeks. The body weight of HFD increased 50% (p<0.05) compared to the ND, while it was decreased by 12% and 16% for HFP10 and HFP20, respectively (p<0.05). The relative amount of visceral fats for HFDl0 and HFD20 were decreased by 45% and 59% compared to that of HDF (130%), respectively (p<0.05). Pectin seems to have a greater effect on reducing visceral fats accumulation than weight reduction. Significantly increased level of triglyceride, total cholesterol or LDL-cholesterol in the plasma of HFD was returned to the normal or even below the normal by pectin diet, while the level of HDL-cholesterol increased. Lipid lowering effect was also observed in the liver and heart. These effects of pectin were dosedependent. In conclusion, the beneficial effect of pectin on the obesity was observed from cell culture experiment and animal study in terms of inhibiting the accumulation of lipids in the adipocytes.

  • This study aimed to investigate awareness of processed foods and chronic disease in high school students (male 94 and female 85) in the Yongin area. Awareness of chronic disease caused by excessive intake of processed foods was 83.0% and 91.8% in male and female students, and the most harmful processed food was instant noodles (34.1%). The most fearful chronic disease was cancer (25.5%) and obesity (25.5%) in males, whereas female answered obesity (34.1%). Awareness of synthetic preservatives was the most negative answer among food additives, and the most useful information was harmfulness of food additives. Percentages of correct answers towards cardiovascular disease-causing food components, including lipids, saturated fat, cholesterol, and trans fat, and dietary fiber for prevention of obesity were 57.0% and 54.2%, respectively. The percentage of correct answers towards developing hypertension by excessive intake of sodium was very low at 24.6%. Consequently, high school students generally showed a negative attitude towards processed foods without accurate information related to prevention or food components causing chronic disease, especially sodium. Thus, an appropriate program and persistent nutrition education are required for healthy food choices to prevent chronic disease among processed foods.

  • The purpose of this study was to investigate perception of snack purchasing behaviors and labeling of foods and nutrition of the middle school students. The survey was conducted from 424 students who are boys and girls of middle school in Naju. Data were analyzed by a SPSS program. According to the survey, snack purchase place had a significant difference between gender(p<.05), and all of the boys and girls responded at a high rate that it's convenience store. Snack eating frequency had a significant difference between boys and girls(p<.05). Boys responded that they ate 1~2 times per a week the most, and girls responded that they ate 1~2 times per a month the most. As for snack purchasing behaviors, depending on gender, that of boys was 2.76 in average and that of girls was 2.87, lower than middle. The reason why students didn't check up food labeling, depending on gender and all of the boys and girls responded 'Expiration date' was first confirmed. As for the understanding of food expression, depending on snack expenses, the reason why food expression contents were hard showed a significant difference, depending on snack expenses(p<.05). As for the understanding of food expression, depending on snack purchase attitude, the students showed a significant difference, depending on snack purchase attitude(p<.001), and the lower the snack purchase attitude was, the less the students checked up snack expression. The reason why students checked up nutrition labeling a significant difference, depending on gender, snack expense and snack purchase attitude(p<.001). 'Weight management' was the highest. The recognition in the necessity of nutrition expression(p<.001) and the necessity of food/ nutrition education and publicity(p<.01) showed significant difference.
