Oxidative Stability of Tallow Heated by Different Frying Conditions (튀김조건에 따른 가열 우지의 산화안정성)

  • The oxidative stability of tallow heated was studied by different frying condition (temperature 130, 150, and 180$^{\circ}C$;heating time, each 10hours per day, total 240hrs). Changes of physicochemical parameters such as acid value, peroxide value, iodine value, dielectric constant, content of polar components and polymer, refractive index, smoke point, viscosity and color changes in tallow heated were also measured. Acid value, dielectric constant, refractive index, viscosity, and content of polar component and polymer increased as the tallow was heated longer, whereas iodine value and smoke point decreased and peroxide value was increased and decreased repeatedly. These parameters changed to a greater extent as the heating temperature went up. The color became darkened with the increase of red and yellow values during heating. The decree of coloration was proportional to heating temperature.

  • 현재에는 과거와 달리 표면상 비춰지는 외모의 중요성이 강조되어 치아 교정을 해서 미적 욕구를 충족시키려는 사람들이 증가하고 있다. 특히나 치아를 교정할 때 사용되는 치아교정용 브라켓은 부착되는 위치가 치아 앞면이기 때문에 미관상의 중요성은 치아교정장치 중 가장 크다. 이러한 이유 때문에 미적인 부분을 고려하여 치아색과 유사한 브라켓이 개발되었는데, 이 브라켓은 레진 브라켓이다. 이는 치아 교정에 도움을 주면서 심미성이 우수한 장점이 있지만 음식을 섭취할 때 음식의 색소에 의해 브라켓의 색 변화가 일어난다는 단점이 있다. 본 연구에서는 사람들이 자주 섭취하는 음식이나 음료에 치아교정용 브라켓을 착색시켜 색이 변하는 정도의 차이를 컬러센서를 이용해 측정하였다. 이렇게 측정된 브라켓의 RGB 값은 객관적이고 정량적인 값을 나타낼 수 있다. 이는 브라켓의 변색 뿐만 아니라 치아 미백 치료에도 적용되어 사용될 수 있을 것이다.

Efficacy and Evaluation of Tooth Stain with Various pH Beverages Following Whitening Dentifrice (미백치약 사용에 따른 효과와 다양한 pH 음료의 재착색 평가)

  • The purpose of this study was to evaluate the tooth brightening of whitening dentifrice and to determine the tooth stain level over 20 days depending on beverages that have various pH values after using whitening dentifrice. Thirty teeth were randomly divided into two groups. Group 1 was provided with a whitening dentifrice for 3 minutes and group 2 was treated with a control dentifrice for 3 minutes thrice a day for four weeks. All teeth were photographed using a digital imaging system under a stereomicroscope (magnification, ${\times}10$). After four weeks, the ten teeth were immersed in the tea solution, another of ten teeth were immersed in the orange juice and the other of the teeth were immersed in the coffee solution. Three solutions were renewed each day for the appropriate groups. Stain development was monitored under a stereomicroscope daily over 20 days period by immersion of teeth in a tea, juice, coffee solution at room temperature ($25^{\circ}C$) in individual container. Whitening dentifrice gave a statistically higher value of overall color change as compared to control dentifrice after 21 days (p<0.05). Stain level of whiten tooth immersed in orange juice was the grestest overall color change, but there was not statistically significant difference (p>0.05). On the other hand, stain level of whiten tooth immersed in coffee and green tea showed a statistically significant difference after 15 days and 5 days, respectively (p<0.05). Tooth immersed in green tea was higher negative value than control dentifrice. The tooth using whitening dentifrice was shown to be effectively whiter color than control dentifrice. However, stain level by orange juice, coffee and green tea has a strong staining effect.

Expression of Genes Affecting Skin Coloration and Sugar Accumulation in 'Hongro' Apple Fruits at Ripening Stages in High Temperatures (고온에 의한 변색단계별 '홍로' 사과의 착색 및 당 축적 관련 유전자 발현 분석)

  • High temperature is one of the important environmental factors limiting cultivation of apple (Malus domestica Borkh). The expression of genes related with anthocyanin synthesis and sugar accumulation in response to high temperature was studied in the 'Hongro' apple fruits at different developmental stages in different temperature conditions through real-time PCR. Expression of ${\hat{a}}$-amylase (BMY) and polygalacturonase (PG) genes related with sugar synthesis was higher in late ripening stages than in initial ripening stages. Expression of four genes such as phenylalanine ammonia-lyase (PAL), chalcone synthase (CHS), flavanone 3-hydroxylase (F3H), and malate dehydrogenase (MDH), which were related with fruit skin coloration, increased gradually in apple fruits of the middle and late ripening stages. Interestingly, the expressions of all genes were highly inhibited expressed at $30-35^{\circ}C$ compared to $25^{\circ}C$ in all ripening stages. In the further work, investigation of expression levels of various genes could be conducted in the level of transcriptomics in fruits at the middle ripening stages to get meaningful information of ripening metabolism in apple in high temperatures.

Changes in the Covering of Pupil and the Visual Acuity by the Illuminance when Wearing Circle Soft Contact Lens (써클 소프트콘택트렌즈 착용 시 조도에 따른 동공의 가려짐과 시력 변화)

  • Purpose: The degree of the pupil covered with tinted region of circle soft contact lens was determined according to the illuminant conditions in everyday life and the change of visual acuity by its covering was further investigated. Methods: The circle contact lens having the non-tinted area of 6.2 mm in the center of the lens was applied on 82 eyes in their 20s and their minimum separable visual acuity and minimum legible visual acuity were determined under the luminances of 50 and 370 lux. Results: The covering of pupil was not found when wearing circle contact lens under 370 lux, however, some pupil covering ranged from 0.40 to 1.70 mm was observed in all subjects under 50 lux. The minimum separable visual acuity and minimum legible visual acuity were significantly decreased by the wearing of circle contact lens under 50 lux and the correlation between the larger pupil size of subjects and more decrease of visual acuity was observed. Furthermore, the decrease of minimum separable visual acuity was larger than the case of minimum legible visual acuity indicating that minimum separable visual acuity was largely affected by the covering of pupil. Conclusions: The consideration is necessary for the lens wearers and the manufacturers since the wearing circle contact lens in low-light indoor or nighttime activities may affect directly visual acuity.

Photosynthesis, Shoot Growth and Fruit Quality in 'Fuji'/M.9 Mature Apple Trees in Response to Prohexadione-calcium Treatments (Prohexadione-calcium 처리에 따른 성목기 '후지'/M.9 사과나무의 광합성, 신초생장 및 과실품질)

  • This study was conducted to elucidate the influence of prohexadione-calcium (Pro-Ca) application on shoot growth and fruit quality in 'Fuji'/M.9 mature apple trees. Pro-Ca was applied at concentrations ranging from 100 to $400mg{\cdot}L^{-1}$ one time at petal fall (PF; 5-10 cm terminal shoot growth) to the whole canopy of the tree, or at 100, 125, $150mg{\cdot}L^{-1}$ concentrations two times, at PF and then 4-8 weeks after PF. Pro-Ca treatment generally reduced mean shoot growth, with its effect being proportional to the application rate. Pro-Ca at $400mg{\cdot}L^{-1}$ significantly reduced the shoot growth by 15-22% compared to the control, while its effect was not significantly different from Pro-Ca $200mg{\cdot}L^{-1}$. Pro-Ca treatments induced higher occurrence of secondary growth compared to the control. Pro-Ca treatment increased the photosynthetic rate by 5-10% relative to the control, and also increased soluble solid concentration and fruit red color. However, fruit weight was significantly reduced by $400mg{\cdot}L^{-1}$ Pro-Ca, which was attributable to the greater secondary growth caused Pro-Ca $400mg{\cdot}L^{-1}$ treatment compared to the control and Pro-Ca $200mg{\cdot}L^{-1}$ treatment.

Effect of Dietary Supplementation of Astaxanthin and Capxanthin on the Pigmentation of Egg Yolk (Astaxanthin과 Capxanthin의 급여가 난황의 착색에 미치는 효과)

  • A total of 96 ISA Brown layers, 63-wk-old, were used in a 12-day feeding trial to measure the effect of dietary astaxanthin and capxanthin on their accumulation in egg yolk. The hens were fed diets containing astaxanthin from the yeast, Phaffia rhodozyma, at 22.5 mg/kg feed, or synthetic compound at 45 mg/kg feed, and capxanthin from paprika extract at 45 mg/kg feed. The levels of yolk astaxanthin from the two pigments were saturated at $9^{th}$ day of feeding. Capxanthin was not accumulated in egg yolk but its derivatives were slightly present after $6{\sim}9$ days of feeding. The level of astaxanthin accumulated in egg yolk was proportional to the level of dietary astaxanthin. Except the color of egg yolk, other quality factors of eggs were not significantly different among the treatments.

  • 간이 측정기에 대한 연구는 실내공기 오염의 연구에서 인체가 작업장에서 실내 대기오염물에 노출이 되는 정도를 평가하기 위하여 개발되었다. 처음에는 주로 포름알데히드나 이산화질소를 측정하기 위하여 개발되었으나, 최근에는 오존을 측정하는 방법으로도 개발되고 있다. 오존을 측정하는 간이 측정기의 개발을 위해서는 오존과 선택적으로 그리고 정량적으로 반응하여 오존을 포획하는 시약을 선정하는 작업과 이때 사용된 포집용 filter 선정의 작업이 중요하다. 또한 오존 포획 담체의 분석 방법도 중요한데, 간이 측정기를 통하여 경제성을 높이고 별다른 후처리 작업 없이 현장에서 바로 색도 변화로 오존을 분석할 수 있는 방법이 추천되는 추세이다.   • To utilize the ascidian tunic as a natural pigment and dietary sources for rainbow trout (Oncorhynchus mykiss), juvenile were fed on experimental diets containing enzymatic hydrolysates of ascidian tunic treated with three commercial mined enzymes (ultrazyme, cellulase, viscozyme) for 12 weeks. From the results of feeding experiment, similar growth rate was checked in the enzymatic hydrolysis group compared with control, and those were a higher than of ascidian tunic powder group. The total acetone extractable pigment in muscle of the enzymatic hydrolysates group was lower than that of the ascidian extracts group and carophyll pink group until 8 weeks, but the level of those pigment of the enzymatic hydrolysates was similar to the ascidian extracts and carophyll pink group after 12 weeks. The lipid content was increased with the pigment concentration in the all experimental group. But the ascidian tunic pigment did not influence on the composition of the fatty acids in the muscle and liver. From the consideration of results for pigmentation, the enzymatic hydrolysates of ascidian tunic were suitable for both a natural pigment and dietary protein and carbohydrates sources as a substitute synthetic pigment for aquaculture use.
