Use of Microwave Range and Oven, and Change on Dietary Type (전자렌지, 오븐의 이용과 식생활의 변화)

  • The possession of microwave range, oven and oven-microwave range has been greatly increased with 88 Seoul Olympic Game as a momentum, and the possession rate was by 68%. The respondent answered the function of microwave range to be more necessary than that of oven, and the two household commodities have been mostly used to reheat and heat simply prepared frozen foods. The 35% among total respondent wished to cook the prepared frozen foods like pizza, but the 87% prefered to cook bakery. The frequencies of the use of oven were 35%, 35% for cooking premix and raw materials, and 20%, 20% for cooking half-prepared and prepared foods, respectively. The respondent of 39% was interested in premix foods as a future preference for food forms, and the respondent with interest in half-prepared food was 30%, but the preference for raw materials and prepared foods showed a trend to be decreased. The respondent of 60ft had eaten out six times week, and 50% had eaten instant and fast foods 1~3 times week. As the results of this survey, most of consumers prefer to more convenient foods. Therefore, it is expected that the function of oven and microwave range would be widely useful if various foods are improved with regards to convenience for use and preference.

Determination of ${\alpha}-lactalbumin$ in Heated Milks by HPLC (HPLC에 의한 열처리된 우유중 ${\alpha}-lactalbumin$의 정량)

  • The ${\alpha}-lactalbumin({\alpha}-la)$ concentration in raw and laboratory-heated milks by HPLC was 1.20 mg/ml (unheated), 1.17 mg/ml ($63^{\circ}C$, 30min), 1.13 mg/ml ($72^{\circ}C$, 15sec) and 0 mg/ml ($100^{\circ}C$, 10min), respectively. Whereas, ${\alpha}-lactalbumin$ concentration ranges of commercial milks were $1.00{\sim}1.02\;mg/ml$ (pasteurized), $0.23{\sim}0.68\;mg/ml$ (UHT-pasteurized) and $0.77{\sim}0.89\;mg/ml$ (UHT-sterilized), respectively. It was supposed that the ${\alpha}-lactalbumin$ content of sterilized milk will be lower than that of UHT milk, but the opposite occurred. This discrepancy would be caused by the different heating system in the milk plants, where indirect UHT-treatment had more heat intensity than direct UHT-processing. The HPLC determination of ${\alpha}-lactalbumin$ may be an indicator to evaluate correctly and rapidly heated milks.

Development of Analysis Method for Cholesterol in Infant Formula by Direct Saponification (직접 검화법을 이용한 조제분유의 콜레스테롤 분석법 개발)

  • An improved cholesterol analysis method was developed for powdered infant formula by gas chromatographic separation after liquid-liquid extraction and partition. In the official Korea Food Standard method for cholesterol analysis, the water phase and solvent phase were not well separated in the case of emulsified foods such as powdered infant formulas and baby foods. For the rapid and simple sample preparation method, an optimized direct saponification condition was established for heating temperature, heating time, and KOH concentration. From the results, the optimum conditions were as follows: heating temperature $90^{\circ}C$, heating time 60 min, and 16 M KOH 10 mL for a 2 g infant formula sample; improved separation condition for gas chromatography was as follows: the initial oven condition was $250^{\circ}C$ for 25 min, the oven temperature was increased to $290^{\circ}C$ by $10^{\circ}C$/min ratio, and finally the oven temperature remained at $290^{\circ}C$for 9 min. The developed method could be implemented for the study of cholesterol, providing the advantages of reduced inspection time and cost in emulsified foods such as infant formula.

MOLTEN CORIUM DISPERSION DURING HYPOTHETICAL HIGH-PRESSURE ACCIDENTS IN A NUCLEAR POWER PLANT (원자로 노심 용융물의 고압분출 및 비산 현상에 대한 수치해석적 연구)

  • During a hypothetical high-pressure accident in a nuclear power plant (NPP), molten corium can be ejected through a breach of a reactor pressure vessel (RPV) and dispersed by a following jet of a high-pressure steam in the RPV. The dispersed corium is fragmented into smaller droplets in a reactor cavity of the NPP by the steam jet and released into other compartments of the NPP by a overpressure in the cavity. The fragments of the corium transfer thermal energy to the ambient air in the containment or interact chemically with steam and generate hydrogen which may be burnt in the containment. The thermal loads from the ejected molten corium on the containment which is called direct containment heating (DCH) can threaten the integrity of the containment. DCH in a NPP containment is related to many physical phenomena such as multi-phase hydrodynamics, thermodynamics and chemical process. In the evaluation of the DCH load, the melt dispersion rates depending on the RPV pressure are the most important parameter. Mostly, DCH was evaluated by using lumped-analysis codes with some correlations obtained from experiments for the dispersion rates. In this study, MC3D code was used to evaluate the dispersion rates in the APR1400 NPP during the high-pressure accidents. MC3D is a two-phase analysis code based on Eulerian four-fields for melt jet, melt droplets, gas and water. The dispersion rates of the corium melt depending on the RPV pressure were obtained from the MC3D analyses and the values specific to the APR1400 cavity geometry were compared to a currently available correlation.

  • We developed a time-resolved magneto-optical Kerr effect microscope system to investigate ultrafast magnetization dynamics. Based on the pump-probe method, 0.1-ps time resolution was achieved by use of a fs Ti:Sapphire laser. The magnetization dynamics was then measured on Pt/Co/Pt thin films with various Co thicknesses. All the samples exhibited ultrafast demagnetization within a few ps by direct heating of pump laser. Some thicker samples showed precessional motion of magnetization, from which the Gilbert damping constant was determined based on the Landau-Lifshitz-Gilbert equation.

Empirical evaluation of the heating performance by a heat pump system with surplus heat from a greenhouse (온실 태양잉여열을 이용한 히트펌프시스템의 난방 성능평가에 관한 실증 연구)

  • This study evaluated the heating performance of a hybrid heat pump system. The system was installed in a $100-m^2$ greenhouse to utilize surplus solar energy. A hybrid heat pump system was installed at Jocheon-ri, Jeju Island, for an empirical evaluation of the performance. The system consists of a heat storage tank and plate heat exchangers for several heat exchanges between the greenhouse and heat pump or storage tank. The system uses R410a as the working fluid and is controlled automatically by a defined set temperature of the greenhouse. This system incorporates two kinds of heat sources: outdoor air and a storage tank that collects heat from the topside of the greenhouse. The results showed that the heating capacity was 19.9 kW in the outdoor air source mode and 21.4 kW with direct heating from hot water in the thermal storage tank. These results are very similar to those of a previous study.

강지진동 분석의 최적화를 위한 고려요소

  • 한반도에 있어서의 지진의 영향을 분석하기 위해서는 강지진동 연구가 필수적이다. 강지진동 자료가 부족한 한반도의 특성상 모사를 통해 연구하고 있다. 강지진동 분석을 하기 위해서는 되도록 노이즈가 포함되어 있지 않은 지진파자료를 선택하여 그 지진자료의 스펙트럼 분석을 통해 감쇠상수 k, Q 등을 구한다. 이러한 감쇠상수 값을 통해 한반도의 진동 특성을 이해할 수 있다. 그러나 감쇠상수를 구하는 과정에서 감쇠상수 분석에 사용된 지진자료에 노이즈가 더해졌을 경우, 어떤 형태로 스펙트럼 영역에 영향을 미치고, 감쇠상수에는 어떤 영향을 미치는 지를 연구하여 노이즈효과를 제거할 수 있는 최적화된 분석에 관한 연구가 선행되어야 한다고 본다. 따라서 이번 연구에서는 강지진동 모사프로그램을 가지고 노이즈효과를 적용하면서 감쇠상수에 노이즈가 어떤 영향을 미치는 지에 대한 수치 해석적 연구를 실시하였다. 합성지진파에 이 합성지진파와 전혀 다른 주파수 형태를 보이는 노이즈를 강도를 달리하면서 합성해 본 결과, 노이즈효과를 고려할 수 있는 몇 가지 요소가 있음을 알 수 있었다. 감쇠상수 k값을 강지진동 모사프로그램으로부터 값을 달리하며 합성해 본 결과 노이즈효과를 보이는 것을 알 수 있었으며, 감쇠상수 k를 선형회귀를 통해 $k_{s}$$k_{q}$를 구할 때의 적용 주파수 범위를 변화시켰을 때도 일정한 양상의 노이즈 효과를 보였다. 또 지진자료와 노이즈를 중첩시킨 지진파 시계열 자료의 정부분만을 감쇠상수 k를 구하는 선형회귀에 이용했을 경우에도 노이즈 효과를 보였다. 또한 계산되어 나온 감쇠상수 값으로부터 특정지역의 지반운동의 특성을 이해할 수 있는 스펙트럼 가속도, 최대 가속도, 및 최대속도 값에 따른 감쇠식을 구하였다. 이것을 한반도와 같은 판 내부 환경인 ENA 값과 비교하였으며 기존의 연구와도 비교하였다.심으로부터 지오이드까지의 거리, 지오이드로부터 지표까지의 거리를 정의해주었으며, 각 격자점의 수직구조를 정의하기 위해 깊이에 따른 각 매질의 밀도, P파의 속도, S파의 속도, P파에 대한 Q값, S파에 대한 Q값을 정의 해주었다. S파의 속도를 구하기 위해서 지구 내부 물질을 포아송 매질이라는 가정 하에, 관계식을 $Vp{\;}={\;}SQRT(3){\;}{\times}{\;}Vs$ 이용하였다. 획득한 모델치들을 이용해 동해와 동해 인근 지역에 대한 초기모델을 구축하였다. 약 1 × 10/sup 6/ e/sup -//sec·n㎡ 의 전자선량에 해당되며 이를 기준으로 각각의 illumination angle에 대한 임계전자선량을 평가할 수 있었다. 실질적으로 Cibbsite와 같은 무기수화물의 직접가열실험 시 전자빔 조사에 의해 야기되는 상전이 영향을 배제하고 실험을 수행하려면 illumination angle 0.2mrad (Dose rate : 8000 e/sup -//sec·n㎡)이하로 관찰하고 기록되어야 함을 본 자료로부터 알 수 있었다.운동횟수에 의한 영향으로써 운동시간을 1일 6시간으로 설정하여, 운동횟수를 결정하기 위하여 오전, 오후에 각 3시간씩 운동시키는 방법과 오전부터 6시간동안 운동시키는 두 방법을 이용하여 품질을 비교하였다. 각 조건에 따라 운동시킨 참돔의 수분함량을 나타낸 것으로, 2회(오전 3시간, 오후 3시간)에 나누어서 운동시키기 위한 육의 수분함량은 73.37±2.02%를 나타냈으며, 1회(6시간 운동)운동시키기 위한 육은 71.74±1.66%을 나타내었다. 각각의 운동조건에서 양식된 참돔은 사육초기에는 큰 변화가 없었으나, 사육 5일 이후에는 수분함량이 증가하여 15일에는 76.40±0.14, 75.62±0.98%의 수분함량을 2회와 1회 운동시킨 참돔의 육에서 각각 나타났다. 운동횟수에 따른 지

An Experimental Study on the Effectiveness of Microwave Hyperthermia Combined with Radiation on the Small and Large Intestine in rats (흰쥐의 장조직에 X-선 조사와 마이크로파 온열요법의 효과에 관한 실험적 연구)

  • The synergistic effect of combining radiation therapy and hyperthermia kills significantly more cells than using either modality alone. The reason for enhanced cell killing from the combined treatment is that the two modalities are complementary. For histopathological exmination, 102 rats were divided into 4 groups as hyperthermia, radiation, hyperthermia combined with radiation and normal control groups. The effect of prior irradiation (6-15 Gy of X-ray) on the response of small and large bowel of rats to $40^{\circ}C-44^{\circ}C$ (for 30 minutes) microwave (2450 MHz) hyperthermia was investigated. The musculature of the small and large intestine remained intact and the circumference of the histological sections were not significantly altered by the heated at $43^{\circ}C$ for 30 minutes. Thermal enhancement ratios of normal tissue is 1.0 Thermal enhancement ratio was not increased in combination therapy by evaluation of histopathologic changes in small and large intestine.

The effect of citric acid and enzyme inactivation treatment on C3G stability and antioxidant capacity of mulberry fruit jam (구연산 및 효소 불활성화 처리가 오디잼의 C3G 안정성과 항산화능에 미치는 영향)

  • We have developed processing methods improved cyanidin-3-glucoside(C3G) stability in mulberry fruit's jam. In the processing of mulberry jam, 3 minutes blanching using microwave inhibited the C3G destruction by maintaining the antioxidant capacity and inactivation of enzymes related to pigment's stability. Also citric acid increased C3G stability in the mulberry fruit's jam. As the adding sugar, sucrose was considered the more desirable sugar than oligosaccharide or xylitol. It showed high C3G content and antioxidant capacity compared to the two treatment groups. In conclusion, when processing mulberry fruit's jam, the addition of citric acid and the enzyme's inactivation treatment were considered effective treatment for the C3G stability and antioxidant ability.

Effect of Heat Treatment in Dried Lavers and Modified Processing (마른김에 대한 열처리 효과와 제조 공정 개선 시험)

  • To establish a food safety of dried layer, heat treatment effect on the bacterial density of dried layers was investigated. And a modified process developing experiment for dried layer products using closing type drying oven was carried out. tittle bacterial density difference on the dried layer products were found before and after heat treatment at $90^{\circ}C$ for 6 hrs called Hwaip treatment having been used for long term storage. Direct or indirect heat treatment of dried lavers using gas burner and frying pan reduced about 1 to 3 log cycle of viable cell count from $10^8\;CFU/g\;to\;10^5\;CFU/g$. Heat treatment by direct surface contact type cooking machine being used in the market place for cooked dried layer products could reduce the viable cell count on the layer product from $2.2{\times}10^5{\~}5.2{\times}10^7\;CFU/g\;to\;7.0{\times}10^2{\~}5.0{\times}10^5\;CFU/g$, Ultraviolet irradiation (20 W, 30 cm) to one or both side of the dried laver products reduced the viable cell count from $2.2{\times}10^6\;CFU/g\;to\;8.0{\times}10^5\;CFU/g\;and\;2.0{\times}10^5\;CFU/g$, respectively. The viable cell count of the dried layer products produced by modified process using a closing type dryer was about $10^3\;CFU/g$ and lower 3 log cycle than that in the products collected in market place and made by open type dryer.
