Utilization of Near Infrared Spectroscopy for Analysis of Proximate Composition and Starch in Alaska Pollack Surimi (명태 수리미의 일반성분 및 전분의 분석을 위한 근적외선 분광분석법의 이용)

  • Near infrared spectroscopy (NIR), is recently applied to analysis of food, and it gives non-destructive and highly reproducible results. The objectives of this study were to assay protein, lipid and starch content in Alaska pollack surimi and to investigate application in seafood. NIR spectra showed the absorbance signal at 1,510 nm, 2,050 nm, 2,170 nm and 2,180 nm for protein, and signal were increased with protein content. Standard error of equation (SEE) was 0,296 and standard error of prediction (SEP) was 0.327. In analysis of lipid in Alaska pollack surimi by NIR, near infrared spectra of lyophilized Alaska pollack surimi were scanned and the signals of absorbance from C-H functional groups in lipid were identified at 1,730 nm, 1,740 nm and 2,300 nm and these signals were risen as Increasing lipid contents of Alaska pollack surimi as samely protein. SEE and SEP were 0.319, 0,353, respectively. In starch analysis using NIR the signals of starch distinctly changed at wavelength of 1,450 nm and 1,950 nm. Collected values of SEE and SEP were 0.304 and 0.318, respectively and the range of errors was $0.0186\~0.6470$ in starch contents.

Studies on Wax Esters in Marine Animals(1) -Lipid Composition of Mullet Roe Oil- (수산동물(水産動物)의 Wax Ester에 관(關)한 연구(연구) (1) -숭어난유(卵油)의 지질조성(脂質組成)에 관(關)하여-)

  • The total amount of lipid content in the mullet roe is 20.5%, and iodine value and unsaponifiable matters content are 118 and 38.7%, respectively. The lipid composition of the muscle, roe and liver of the mullet, Mugil cephalus, shows differences. Triglyceride, wax esters, and free fatty acids are mainly contained in the lipids of the muscle, roe and liver, respectively. The mullet roe lipids are mainly composed of 59.1% of wax esters with a trace of sterol esters, 26.9% of polar lipids with pigments, 9.0% of triglyceride plus a trace of free fatty alcohols and fatty acids, and 3.0% of sterol contaminated with a trace of fatty alcohols. The major fatty acids of wax esters are C16 : 0, 47.5%, C18 : 1, 23.0%, C16 : 3, 6.5%, C20 : 5, 4.0%, those of triglyceride are C16 : 1, 25.1%, C18: 1, 16.7%, C16 : 0, 16.3%, C22 : 1, 7.9%, C18 : 0, 5.5%, C22 : 6, 4.4%, and those of polar lipids are C16 : 0, 35.0%, C18 : 1, 24.7%, C16 : 1, 6.1%, C20 : 5, 5.3%, C22 : 6, 4.2%. The major alcohols of wax esters are 51.0% of cetyl alcohol, 18.2% of palmitoleyl alcohol, and 10.7% of oleyl alcohol, and considerable amounts of odd-numbered alcohols such as C15 : 0, C15 : 1, C17 : 0, C17 : 1 and C19 : 1 are also found.

Optimum Dietary Protein and Lipid Levels on Growth in Parrot Fish (Oplegnathus fasciatus) (돌둠사료의 적정 단백질 및 지질 함량)

  • A feeding trial was conducted to investigate optimum dietary protein and lipid levels in diets for parrot fish (Oplegnathus fasciatus). Three groups of 25 fish averaging 7.0g were fed each of the experimental diets containing 30, 40, 50 or 60% crude protein (CP) with 8 or 16% crude lipid level ($4{\times}2$factorial desing) for 8 weeks. Weight gain and feed efficiency increased significantly (P<0.05) with dietary protein level up to 50% CP when diets contained 16% lipid level, and increased with dietary protein level up 60% CP when diets contained 8% lipid level (P<0.05). The broken-like model showed that an optimum dietary protein level was 46% when the diet contained 16% dietary lipid. Fish fed diets containing 16% lipid level showed significantly (P<0.05) higher weight gain, feed efficiency and protein efficiency ratio than did fish fed diets containing 8% lipid level when diets contained 40 or 50% dietary protein (P<0.05).

Changes of Lipids in Chestnut during Storage (밤의 저장중 지방질 조성의 변화)

  • Studies were carried out to investigate the changes of lipids in chestnut (Castanea crenata Sieb. et Zucc) during storage at $20^{\circ}C$ for 9 weeks and $1^{\circ}C$ for 15 weeks. Lipid composition of fresh chestnuts were 43.4% of nonpolar lipid (NPL), 26.5% of glycolipid (GL) and 30.1% of phospholipid (PL) in total lipid (TL). Nonpolar lipid was composed of triglyceride (TG), 1,2-diglyceride (1,2-DG), 1,3-diglyceride (1,3-DG), sterolester (SE), sterol (S) and free fatty acid (FFA). Main constituents of glycolipid were digalactosyldiglyceride (DGDG), monogalactosyldiglyceride (MGDG), sterylglycoside (SG), and acylsteryglycoside (ASG). Main constituents of phospholipid were phosphatidylcholine (PC), phosphatidylethanolamine (PE) and phosphatidylinositol (PI). The content of nonpolar lipid was decreased after 5 weeks of storage, and glycolipid content was increased during 7 weeks and then decreased. Phospholipid was the most increased lipid during storage at $20^{\circ}C$ and $1^{\circ}C$. The contents of TG, SE, S, DGDG and MGDG were increased during storage at $20^{\circ}C$ and $1^{\circ}C$. The major fatty acids were linoleic acid, oleic acid, palmitic acid and linolenic acid in TL, NPL, GL, PL, TG, DG, ASG, PC and PE. The content of palmitic acid was relatively higher in the PL. Linoleic acid among them was increased during storage at $20^{\circ}C$ and $1^{\circ}C$, while oleic acid was decreased.

  • Microalgae are a promising alternative feedstock for biodiesel production because their growth rates and oil contents are higher than those of conventional energy crops. Microalgal lipid is mainly triacylglyceride that can be converted to biodiesel as fatty acid methyl esters through trans-esterification. In this paper, the influence of several important lipid inducing factors such as nutrient limitation and changes in salinity and metallic components in microalgae and their potential strategies to be used for biodiesel production are reviewed. Depending upon strains/species that we use, microalgae react to stresses by producing different amount of triacylglyceride and/or by altering their fatty acids composition. Although the most widely applied method is the nitrogen starvation, other potential factors, including nutrient surplus conditions and changes in salinity, pH, temperature and metal concentrations, should be considered to increase biodiesel productivity.

Effects of Gamma Irradiation on Lipid Components, Antioxidative Enzyme Activities and ${\alpha}-Tocopherol$ in Beef (감마선 조사가 우육의 지질성분과 항산화 효소 활성도 및 ${\alpha}-Tocopherol$에 미치는 영향)

  • Effects of gamma irradiation on lipid components, antioxidative enzyme activities and ${\alpha}-tocopherol$ in beef (M. Semitendinosus and Longissimus dorsi) were investigated. The lipid components (total cholesterol, LDL-cholesterol, HDL-cholesterol, triglyceride and phospholipid) and the antioxidative enzyme activities (glutathione sulfur transferase, catalase and total superoxide dismutase) were not significantly changed by gamma irradiation up to 10 kGy (p>0.05). However, the contents of ${\alpha}-tocopherol$ in Longissimus dorsi significantly decreased with irradiation dose (P<0.05).

Changes of Food Components and Lipid Peroxides in Rainbow Trout with Growth (무지개송어의 성숙에 따른 식품성분 및 지질과산화물의 변화)

  • The present study was carried out to compare the difference of proximate composition and lipid peroxides in juvenile(80~120g) and adult(670~690g) rainbow trout(Oncorhynchus mykiss). There was a marked increase in lipid content with growth. The fatty acids of juvenile rainbow trout was composed of saturates, monoenes and polyenes of 30.18%, 37.81% and 25.09%, respectively. Adult rainbowtrout showed higher content in monoenes and lower content in polyenes. The composition of amino acid was similar. In both groups, glutamic acid, aspaitic acid, histidine were abundant. The lipid peroxides, malondialdehydes and lipofuscin, were not increased significantly with growth.

  • An aphid predator, Chrysopa pallens Ramber, was reared on the artificial diets containing chicken egg yolk, yeast hydrolysate, brewer's yeast or Vanderzant's vitamin mixture, sucrose andlor bee honey, casein hydrolysate, and cholesterol. On these diets, 20.0 to 70.0% of the 1st instar larvae developed to apparently normal adults depending on diets used. The adults fed on one of these diets which was the most effective laid 230 fertile eggs for her 36 days of adult life span. The nonlipid part of the aphid, Myzus persicae Sulzer was thought to be nutritionally more important than the lipid part for the development of the green lacewing.

  • As reported previously, it was found that glucomannan, contains a potent cholesterol-lowering material. This study was designed to characterize this material further. Both the water sluble and the alcohol soluble extracts of glucomannan were prepared, and each of these extracts were capable of reducing serum and liver cholestrol levels of rats: This finding indicates that a potent cholesterol-lowering material contained in glucomannan is an organic compound with hydrophilic groups.

  • Components of neutral lipids and amino acids of Hirneola auricula-Judae and Gyrophora esculenta grown in Korea were compared by using a Thinchrography (latroscan TH-10) and an amino acid auto analyzer(Technicon PNC-1 type), respectively. Cholesterol ester and tripalmitin were the major components among the triglycerides in both of the samples. From the total amino acids which are closely related with the nutritional valuation, aspartic acid was in the richest amount and then came with glutamic acid, serine, alanine and valine in Hirneola auricula-Judae and Gyrophora esculents contained large quantity of glutamic acid.
