Determination of Seed Protein and Oil Concentration in Kiddny Bean by Near Infrared Spectroscopic Analysis (근적외 분광분석법을 이용한 강낭콩 종실단백질 및 지방의 비파괴 분석)

  • Near infrared spectroscopy (NIRS) is a rapid and accurate analytical method for determining the composition of agricultural products and feeds. An important merit of the NIRS analytical system is consistent predictions across instruments. However, proper calibration is the most important factor for a NIRS analytical system. Forty samples were obtained from Kyonggi-do Agricultural Research and Extension Services, and used to develop calibrations for crude protein content and crude oil content. Calibrations equations were developed using multiple linear regression (MLR). Accuracy and precision of NIRS predictions were adequate for quality measurement for the two constituents in kidney bean seed. In calibration sample sets (N=30), multiple correlation coefficient between NIR and lab measurements is 0.90 for seed, 0.97 for powder in seed protein concentration and 0.40 for seed and 0.92 for powder in seed oil concentration, respectively. It is concluded that NIRS method is suitable for the determination of seed composition in whole kidney bean.

A Study on Fat Content in Commercial Retort Foods - Crude Fat, Saturated Fatty Acid and Trans Fatty Acid - (시판 레토르트식품의 지방함량 조사 - 조지방, 포화지방, 트랜스지방산 중심으로 -)

  • The aim of this study was to provide nutrition information to consumers by analyzing crude fat, saturated and trans fatty acids in commercial retort foods (n=70). The following sauce products of curries (n=21) and black-bean-sauces (n=16), other sauces (n=17) and instant cooking foods (n=16) were collected. Crude fat contents were quantified with the Rose-Gottlieb method using acid digestion. While saturated and trans fatty acids were examined by gas chromatography with a flame ionization detector (FID). Crude fat, saturated and trans fatty acid content ranges were $0.47{\pm}0.42{\sim}12.80{\pm}0.07g/100g$, $0.24{\pm}0.02{\sim}17.41{\pm}0.41g/100g$, $0.00{\pm}0.00{\sim}0.46{\pm}0.05g/100g$, respectively. Maximum recovery of analysis values was crude fat (119.7%), saturated fat (119%) and trans fatty acid (90%) compared the actual amounts based on the reference value indicated on the nutrition label. The analyzed samples were found to be compliant with nutrition label standard, because the contents of crude fat, saturated fatty acid, trans fatty acid were less than 120% of the reference value indicated on the nutrition label in retort foods. Therefore, the nutrition information on retort foods available to consumers was found to be trustworthy.

Estimates of Genetic Parameter for Carcass Traits and Chemical Composition Analysis in Hanwoo (한우 도체형질 및 도체 일반성분 유전모수 추정)

  • The objective of this study is to check the applicability of the improved trait through the nutritional value of loin and the estimation of genetic parameter through the chemical composition analysis(moisture, crude fat, crude protein, crude ash) for Hanwoo carcass traits and loin. The data of 1kg of loin sampled and analyzed for 2,033 Hanwoo progeny test(steers) from $47^{th}$ to $57^{th}$ were used as the disclosure material used in this study. The study resulted that the heritability for carcass weight, eye muscle area, back fat thickness and marbling score which are Hanwoo carcass traits was estimated to be 0.37, 0.51, 0.44 and 0.57, respectively and the heritability for moisture, crude fat, crude protein and crude ash which are the chemical composition analysis to be 0.62, 0.64, 0.58 and 0.12, respectively. And the genetic correlation estimate between carcass weight and crude fat was 0.35, and marbling score with moisture, crude fat, crude protein and crude ash was -0.966, 0.964, -0.924 and -0.664, respectively. The genetic correlation between moisture and crude fat, crude protein was analyzed to be -0.998, 0.969 and a high genetic correlation was shown in crude fat and crude protein, -0.979. As the chemical composition analysis value showed high heritability in moisture, crude fat and crude protein, improved traits are considered to be available.

  • Bakery food items distributed in Chung-cheong province Daejeon, Cheonan, and Cheongju) were studied to determine their contents of total crude fat and trans fatty acids (TFA). After fat extraction by the Folch method, methylation was carried out to analyze the fatty acid compositions by GC, using a SP-2560 column and flame ionization detector. The total fat contents of the foods were in the approximate range of 2$\sim$34%. The total fat contents of the items were as follows: whipping cream cake : 0.03$\sim$1.31 (g/100 g food), pastries = 0.21$\sim$2.64 (g/100 g food), cream puff = 0.09$\sim$0.43 (g/100 g food), croquette = 0.22$\sim$1.99 (g/100 g food), and glutinous rice doughnut = 0.03$\sim$0.38 (g/100 g food).

  • 최근 매실나무를 기주로 한 겨우살이의 인공재배에 성공함에 따라, 식품 소재로 이용하기 위해 일반성분을 분석하였다. 경기도 남양주시에서 매실나무를 기주로 한 인공재배 겨우살이를 채취하여 동결건조한 후 수분, 조단백질, 조지방, 회분, 탄수화물, 베타카로틴, 비타민 B1, 비타민 B2, 비타민 B3, 비타민C, Ca, Fe, K, Na 그리고 P의 함량을 분석하였다. 조단백질, 조지방, 회분, 베타카로틴, Ca, Fe, K, Na 그리고 P은 AOAC 방법을 이용하여 분석하였고, 탄수화물은 탄수화물(%) = 100 - (조단백질% + 조지방% + 회분% + 수분%) 계산식을 활용하여 산출하였다. 수분, 비타민 B1, 비타민 B2, 비타민 B3, 비타민 C는 식품공전에 제시된 방법에 따라 분석하였다. 동결건조한 매실나무겨우살이의 일반성분은 탄수화물 58.90%, 단백질 22.36%, 회분 11.11%, 지방 5.37%, 수분 2.26% 순으로 함유하였다. 비타민의 함량은 비타민 C 4.78mg/100g, 나이아신 1.87mg/100g, 비타민 A 1.42mg/100g, 비타민 B2 0.73mg/100g 그리고 비타민 B1 0.30 mg/100g의 순서로 많이 함유하였다. 무기질은 K 3141.54mg/100g, Ca 977.77mg/100g, P 309.91 mg/100g, Na 20.13mg/100g 그리고 Fe 8,24mg/100g의 순서로 많이 함유하였다.

  • 지방자치단체의 계약업무에 기초가 되는 지방계약법 시행령이 지난 11월 24일 공포되어 시행에 들어갔다. 이번 지방계약법 개정은 지난 해 12월 30일 개정된 국가계약법 시행령 제68조와 동일하게 제77조를 신설하여 '하자책임 구분이 용이하고 공정관리에 지장이 없는 공사에 대하여 기계설비공사와 같은 '설계서가 별도로 작성되는 공사로 명시함으로써 공공공사의 분리발주 활성화를 유도하는 내용을 담고 있다. 이로써 지방계약법에도 분리발주 허용 대상을 구체화 하고 발주기관의 장이 공사의 예산편성과 기본설계 등 사업의 계획단계부터 분리발주의 가능 여부 검토 조항이 명문화 됨으로써 지자체 분리발주가 더욱 활성화 될 것으로 예상된다. 이에 앞서 대한설비건설협회는 분리발주 법제화를 정부, 국회, 제18대 대선후보 등에 지속적으로 건의한 결과 박근혜 정부가 공공공사의 분리발주 법제화가 포함된 40대 중점 국정과제를 확정하고 공공공사의 분리발주 허용 대상과 활성화 조문이 포함된 국가계약법 시행령 제68조를 지난해 12월 30일 개정, 시행에 들어간 바 있다.

On the Chemical Analysis of Amino Acid of Yellow Corvenia (참조기의 아미노산 분리정량)

  • The contents of total amino acid and free amino acid in the protein of yellow corvenia were analysed quantitively by HPLC. The results were as follow; The contents of free amino acid of yellow corvenia flesh and yellow covenia roe were 323.0mg/100g and 932.5mg/100g, respectively. The contents of total amino acids of yellow corvenia flesh and yellow covenia roe were 33,2620.0mg/100g and 64,861.0mg/100g, respectively. The contents of essential amino acid of yellow corvenia flesh and yellow corvenia roe were 12,196.0mg/100g and 13,143.0mg/100g, respectively.

Lipid Composition and Differences in Crude Fat Contents in Wheat Flour and Dry Noodles according to Determination Methods (밀가루 및 건면의 지방질 조성과 측정 방법에 따른 조지방 함량 차이)

  • Five types of determination methods including the Soxhlet method as well as 3 kinds of extraction solvents, were used for the determination of accurate crude fat contents in wheat flour and 5 kinds of dry noodles. According to the results, crude fat contents were 0.09~1.37% in the wheat flour and 0.07~1.36% in the dry noodle samples. This variation resulted from the types of lipids in the wheat flour and various kinds of dry noodles. Nutrition facts labels showing crude fat contents in the 5 kinds of domestic dry noodle samples indicated levels of 0~1.5%. Lipid composition and content were determined in order to investigate these differences. The results indicated free lipid at 1.02% and bound lipids at 0.21% in the wheat flour, and free lipids at 0.95~1.01% and bound lipid at 0.21~0.25% in the wheat flour. Polar and nonpolar lipid contents were also measured in all samples. Neutral lipid, glycolipid and phospholipid contents in the free lipid were 58.5%, 33.6%, and 8.6% in the wheat flour, and 49.2~58.2%, 33.3~41.6%, and 8.5~9.3% in the dry noodle samples, respectively. For bound lipids, amounts were 16.7%, 33.5%, and 49.5% in the wheat flour, and 13.2~15.3%, 35.6~45.7%, and 41.6~49.4% in the dry noodle samples, respectively. Based on these results, an acid hydrolysis methods should be used to determine accurate crude fat contents in wheat flour and dry noodles.

Comparison of Fatty Acid Composition by Fat Extraction Method: Different Parts of Chicken by Cooking Method (조지방 추출 방법에 따른 지방산 조성 비교 및 조리방법을 달리한 닭고기 부위별 지방산 함량 분석)

  • Different fat extraction methods such as the Rose-Gottlieb, Folch, and hydrolytic methods were compared in terms of their fatty acid contents of milk powder. Contents of total saturated fatty acids by the Rose-Gottlieb, Folch, and hydrolytic methods were 8.578, 8.302, and 8.711 g/100 g milk powder while contents of total unsaturated fatty acids by the Rose-Gottlieb, Folch, and hydrolytic methods were 11.513, 11.143, and 11.669 g/100 g milk powder, respectively. These results suggest that the hydrolytic method has a similar fatty acid composition as the well-known Rose-Gottlieb method. In uncooked chicken, total fatty acid contents of breast, gamb, and wing were 6.302, 8.313, and 11.346 g/100 g, respectively. Among different cooking methods, frying increased content of total trans fatty acids up to 0.034 (breast), 0.112 (gamb), and 0.123 g/100 g (wing).

A Study on Local Publication in the Early $Chos\u{o}n$ Dynasty (조선조 전기 지방간본의 연구)

  • The purpose of this these is aiming at making an investigation on the existing local publications which were including woodblock catalogs in the early Choson Dynasty and analysing the bibliographical matters. The overall findings of this study can be summarized as follows : First of all, publications contained in the woodblock catalogs are composed of 1292 titles. With the exclusion of 278 titles duplicated in Yongnamch' aekp'an-gi(221 titles) and Tong-gyongjapki(57 titles), there are one thousand fourteen titles in the woodblock catalogs in Kosach' waryo(989 titles) and Yongnamch' aekp'an-gi (25 titles). Secondly, publications which are included in woodblock catalog and being handed down to the present are composed of 160 titles. Excepting 43 titles which are duplicated in the woodblock catalogs containing Yongnamch' aekp'an-gi(33 titles) and Tong-gyongjapki(10 titles), there exist 117 titles. Thirdly, looking at the publications handed down to the present on the basis of location, 10 titles were published in five areas in Kangwon-do, 45 titles in 17 regions in Kyonsang-do, 33 titles in 10 areas in Cholla-do, 4 titles in 4 different areas in Chungchong-do two different areas in Pyongan-do, 1 titles in one area in Hamgyong-do, the other titles in three regions in Hwanghae-do.
