외식·조리전공 대학생들의 사찰음식에 대한 인식 및 대중화 방안에 관한 연구 (Recognition and Propagation for Temple Food among University Students with Food-related Majors)

  • Objectives: This study was conducted to investigate the perspective and popularization of temple food among university students with food related majors, and to provide basic data for the popularization and the fostering of professional lecture in temple food. Methods: A self-administered questionnaire was applied to 453 university students at six universities with food related majors. The questionnaire was designed to examine interest, recognition, consumption, popularization and curriculum of temple food. Results: The study population consisted of 19.2% men, and 80.8% women, and the most common response to desired career after graduation was food related employment (53.9%). Overall, 49.0% replied that they had an interest in temple food, which was relatively low. 59.9% of respondents who had been known throw TV, Internet, newspaper, and magazines about temple food were showed the highest results. Additionally, as for the perception of temple food, 'Prevention of lifestyle related disease' was the highest score (4.10). Overall, 64.9% of the subjects had not tried temple food, and 84.7% of these responded that this was because they had not encountered temple food. Among subjects who had tried temple food, most had encountered it at a temple (73.0%), and 78.0% replied that the taste of temple food was suitable. The intention to try temple food was 73.3%, and 64.8% of respondents said there was a necessity to establishment curriculum regarding temple food. Finally, interest, popularization, and intention to try temple food were significantly positively corelated. Conclusions: The results showed high interest in temple food and willingness to participate in education regarding temple food, as well as awareness of the need for popularization. Therefore, it is necessary to increase intake opportunities to raise interest in temple foods. This can be accomplished utilizing publicity materials, as well as by offering opportunities for temple food education through curriculum.

조리전공 남자대학생의 점심식사 소요시간과 비만지표, 식습관의 관련성에 관한 연구 (A Study on the Relationship between Time Spent on Lunch and Degree of Obesity, Eating Habits in Culinary College Male Students)

  • This study was to investigate the relationship between time spent on lunch and degree of obesity, eating habits in culinary college male students. This survey was conducted using questionnaires for 106 male students in a Hongseung-located culinary college. Over 16 minutes of time spent on lunch group had significantly lower body weights, obesity degrees and body mass index (BMI) and tended to have lower body fat % than the other groups. It suggests that shorter time spent on lunch is related with lower body weight, obesity degree and BMI. Those who ate the meal prepared by mother had longer time spent on lunch. The shorter times spent on lunch group recognized their body shape was lean, the longer time spent on lunch group recognized the overweight or obesity significantly. The shorter time spent on lunch group tended to eat the cooked rice in the gug and recognized that they were not healthy. Those who had diseases in the past tended to have shorter time spent on lunch. The more they chewed cooked rice and then longer time spent on lunch they had, they recognized their eating speed was not significantly speedy. The shorter time spent on lunch they had, the fewer fruits and salty foods they ate significantly. This study suggests that more chewing time. slower eating speed and longer time spent on eatmg lunch is very related with lowering weight, BMI, body fat % and obesity degrees, so male college students should be educated to have correct eating habits.

Lactobacillus casei KCTC 3109에 의한 감국 추출물의 항산화능의 변화 (Changes in antioxidant activity of Chrysanthemum indicum L. extract by Lactobacillus casei KCTC 3109)

  • 유산균에 의한 감국 추출물(CIL)의 항산화능의 변화를 알아보기 위해 64%, 80% ethanol 로 추출한 농도별 CIL를 발효시켜 total phenolic contents (TPC), flavonoid, 2,2-diphenyl-1-picrylhydrazyl (DPPH), reducing power (RP), linoleic acid 자동산화 저해활성의 변화를 확인해 보았다. TPC의 경우 3109, 3237에서 증가하였으며, flavonoid에서는 모든 균주에서 감소를 나타냈다. DPPH 측정에서는 64% CIL 발효 후 3074, 3109에서 증가하였으며, 80% CIL 발효에서는 모든 균주가 증가를 나타냈다. RP측정에서는 64%, 80% CIL에서 모든 균주에서 증가를 보였으며, linoleic acid 자동산화 저해활성에서는 모든 균주에서 감소를 나타냈다. 특히 3109 항산화능을 평가하는 DPPH와 RP 측정에서 다른 균주에 비해 전반적으로 높게 측정이 되었다. 결과적으로 4종의 유산균 중에서 3109가 발효과정을 통해서 CIL의 항산화 효능을 효과적으로 증대하는 것을 확인할 수 있었다.

외식조리식품관련 전공 대학생들의 전통음식 우수요인에 관한 인식조사 (A Survey of the Perception of the Superior Factors to of Korean Traditional Foods by College Students with Food Related Majors)

  • This study was conducted to examine the superior factors and the perception of Korean traditional foods by college students studying in food related industries. The subject group consisted of 65.0% of the students majoring in food service & culinary arts, 12.9% of the students majoring in food & nutrition, and 7.3% of the students majoring in baking & pastry. The nutritional value was evaluated as the top superior factor of Korean traditional foods by the study subjects. In addition, 92.4% of reported that they had eaten Korean traditional foods in the past, 76.8% of whom responded that the reason for having Korean traditional foods was its time-honored tradition. 'Cooking for oneself' was considered to be the most popular way (78.2%) of obtaining Korean traditional foods, while the traditional market (58.6%) was the most popular place to purchase the foods. 'Not having enough time' (47.2%) was the primary reason for not having Korean traditional foods, although 72.9% of the subjects reported that they wanted to learn about Korean foods. 'Standardization of taste, nutritional value, and recipes' was found to be the most important factor (41.3%) required to increase the consumption of Korean traditional foods. Additionally, 56.1% of the subjects responded that they feel there is a need for modernization of the cuisine to meet the taste of the general public. However, 61.4% of the subjects responded that the succession of traditional dietary culture was the primary reason for developing traditional cuisine, which indicates that there is a bright future for Korean traditional foods.

밀키트(Meal Kit) 제품의 사용자 경험 디자인 연구 (A Study on Meal Kit User Experience Design)

  • 본 연구는 밀키트(Meal Kit) 제품 정보의 사용자 경험 디자인 연구로서 구매자에게 필요한 제품 정보와 사용 편의성을 위한 필요사항을 도출하고 개선방안을 제안하는 데 목적이 있다. 밀키트 제품을 구매할 때 영양 섭취에 관한 정보 표기와 패키지 디자인, 환경에 관한 문제를 국내 밀키트 브랜드 피코크와 프레시지 2종을 비교 분석하였다. 연구방법으로는 1차로 문헌 연구와 선행연구를 통해 밀키트 제품 구매 요인 7가지 요소를 도출하여 설문 조사를 진행하였고, 2차로 30대 1인 가구 남녀 4명씩, 총 8명을 대상으로 심층 인터뷰를 진행하였다. 연구 결과, 구매자에게 만족을 주는 요인으로는 조리 과정, 음식, 맛/영양, 패키지, 편리성, 가격, 정보 순으로 나타났으며, 과대포장 또한 문제점으로 드러났다. 이를 통해 밀키트 제품의 개선사항 도출과 발전 방안을 제시할 수 있었다. 본 연구가 향후 1인 가구의 식생활개선과 밀키트 제품 개발에 도움을 줄 것으로 기대한다.

잠재창업자의 직업 성격 유형이 창업 의지에 미치는 영향 - 외식.조리 전공 대학 재학생을 대상으로 - (Influence of Career Aptitudes of Potential Businessmen on Their Determination to Start Business - Focused on the College Students of Food-service & Culinary Art Departments -)

  • 창업에서 외식산업이 차지하는 비중이 커지고 있음에도 불구하고 아직도 잠재창업자에 대한 연구는 일반창업자와 같이 연구되어지며 연구 자체도 미미한 실정이다. 본 연구는 먼저, Holland(1997)의 직업 성격에 의거하여 현실적(realistic), 탐구적(investigative), 예술적(artistic), 사회적(social), 설득적(enterprising), 관습적(conventional)으로 분류한다. 이러한 분류에 따른 성격 유형 중 창업 의지에 어느 성격 유형이 어느 정도 영향을 미치는지를 로지스틱 회귀분석을 통하여 분석하였다. 직업 성격 유형 중 창업 의지가 가장 높은 유형부터 나열하면, 설득적 유형>현실적 유형>사회적 유형>예술적 유형>탐구적 유형>관습적 유형의 순으로 나타났다. 이는 Holland의 직업 성격분류와 대부분 일치하는 결과로 나타났다. Holland의 직업 성격 분류에 의하면, 설득적 유형의 직업으로는 기업가, 정치가, 관리자 등을 들고 있고, 본 연구에서도 창업 의지가 가장 높게 나타난 유형이 설득적 유형이었다. 이는, 창업 교육에 직업 성격을 도입하여 연구할 수 있는 이론적 근거를 제공한 것이라고 하겠다. 본 연구에서는 직업 성격 유형과 창업 의지를 관련변수로 하였다. 다른 연구 변수, 즉 창업 교육과 관련한 연구, 창업성공 결정요인 등과 관련하여 연구할 필요가 있겠다. 특히, 성격 유형에 따른 각각의 성격 유형에 적합한 창업 교육내용에 대한 연구가 이루어질 필요가 있다. 즉, 설득적 유형의 경우는 어떠한 준비점이 필요한지, 관습적 유형의 경우는 어떠한 준비점이 필요한지에 대한 세부적인 연구가 필요하겠다.

식품알레르기 유경험 미취학아동 양육자의 지식 및 식사관리에 대한 연구 (Knowledge and management of food allergy by parents of preschool children who experience food allergies)

  • 본 연구는 식품알레르기 경험이 있는 미취학아동의 양육자를 대상으로 양육자가 식품알레르기 관리를 위해 필요한 교육이 무엇인지 파악하고자 하였다. 양육자 400명을 대상으로 2022년 7월 온라인 업체를 통해 설문조사를 진행하였으며, 모든 데이터는 SPSS 통계 (ver. 25)를 사용하여 분석되었다. 미취학아동의 식품알레르기 경험에도 불구하고 양육자의 식품알레르기 지식수준은 낮았다. 특히 '원인식품' (74.2%)과 '식품반응' (65.2%) 관련된 문항의 오답률이 높았다. 또한, 식품알레르기 지식수준을 '상', '중', '하'로 구분하여 평가한 결과 미취학아동의 연령에 따라 아동의 나이가 어릴수록 지식수준이 유의하게 높았다 (p < 0.05). 양육자의 식품알레르기 관리여부를 4가지 문항으로 측정한 결과, '식재료 및 조리기기 분리사용' (50.5%), '식품알레르기 유발표시 확인' (34.0%) 관리율이 낮았다. 식품알레기 진단여부에 따라 식재료 및 조리기기를 분리사용 관리에 유의적인 차이가 있었으며, 의사진단을 받은 미취학아동의 양육자 중 59.4%가 분리사용 관리를 하고 있었다 (p < 0.01). 또한, 식품알레르기 지식이 높아질수록 관리의 총점이 높아졌다 (r = 0.137, p < 0.01). 본 연구결과를 바탕으로 살펴볼 때 지식수준이 낮거나, 자녀가 만 4세 이상, 자가진단을 하는 양육자의 경우 식품알레르기 관리율이 낮았다. 따라서 해당 양육자의 지식수준을 높일 수 있는 '유발식품제한', '식품알레르기 유발표시 확인', '식재료 및 조리기기 분리사용' 하는 방법 등 맞춤 교육이 필요하다고 사료된다.

레스토랑 이용 고객의 과시적 소비성향이 브랜드 태도 및 구매의도에 미치는 영향 - 조리, 외식관련 전공 대학생들을 대상으로 - (Effects of Conspicuous Consumption of Restaurant Customers on Brand Attitude and Purchase Intention - Focusing on University Students Majoring in Cooking and Food Service Industry -)

  • The purpose of this study was to determine the relationship between conspicuous consumption tendency, brand attitudes, and purchase intentions of college students regarding eating out by limiting conspicuous consumption tendency among several psychological variables to acquire a more precise and concrete influence factor on consumption behavior to eat out. First, as for sensing other people, pursuing individuality and brand orientation among conspicuous consumption tendency of restaurant costumers had significant effects on brand attitudes, whereas the influence of status symbols and pursuing trend factor on brand attitudes was not verified. Second, as for sensing other people, pursing individuality, pursuing trends, and brand orientation factor among conspicuous consumption tendency had significant effects on purchasing intention. Otherwise, the significant effect relationship between status symbols factor and purchasing intentions was not confirmed. Third, as purchase intentions increased, brand attitudes of consumers increased according to existing research. Thus, this study suggests a more departmentalized marketing strategy method to create profits and enhance competitiveness of food service enterprises, and academic implications suggest fundamental data of relevant studies on conspicuous consumption tendency and purchasing behavior of consumers to eat out.

대전지역 조리 전공과 비전공 대학생의 거리 음식 구매 실태에 관한 연구 (A Study of the Street-food Purchasing Behavior of Culinary Major and Non-major University Students in the Daejeon Area)

  • The principal objective of this study was to determine the street-food needs of culinary major and non-major university students. University students in Daejeon were assessed by surveys conducted between November 20, 2007 and November 25, 2007. The results of the surveys were as follows; 1. The reason for street-food usage: mainly snacks(37.4%). 2. Primary factor considered when choosing street-food: taste of the food(48.52%). 3. The frequency of street-food purchase: 2 times/month(52.4%) 4. The mean cost for the one-time purchase of street-food: $1,000{\sim}2,000$ won(62.4%). The Importance-Performance Analysis(IPA) used for obtaining information from the culinary major and non-major university students suggested that the attributes of street-food with fair to poor performance but high importance were as follows: sanitary quality in chicken skewers, soondae, ddeokbokki and fried foods and price and nutrition for hamburgers.

충남지역 학교급식 조리종사원의 직무 실태와 직무 이해도, 수행도 및 직무만족도 - 학교 형태 및 직위에 따른 비교 분석을 중심으로 - (Working Condition, Job Understanding, Job Performance and Job Satisfaction of School Foodservice Employees in Chungnam Area - Focusing on Comparative Analysis Based on School Type and Status -)

  • The objective of this study was to investigate job understanding, performance, and job satisfaction of 150 school foodservice employees in Chungnam area from April 23, 2018 to May 18, 2018. The score of the relationship with colleagues was in the order of elementary school, middle school, and high school (p<0.05). Job understanding was ranked as follows: middle school, elementary school, and high school (p<0.05). Questionnaires on performance of food ingredients and working process management had 4.8 points for the cook and 4.6 points for the cooking staff (p<0.05). Based on the subjects' position, the hygienic safety management performance was higher in cooks than in cooking staff (p<0.05). Job satisfaction showed higher points in elementary school and middle school subjects in all items as compared to subjects of high school (p<0.05). Cooks showed more job satisfaction compared to cooking staff (p<0.05). There was a significant positive correlation (r=.253, p<0.01) between job satisfaction and job performance. Job understanding showed a significant positive correlation with job performance. Job satisfaction had a positive correlation with performance for hygienic safety management (r=.275, p<0.01).
