A Program Development and Evaluation to Prevent Musculoskeletal Disorders among Kitchen Workers in General Hospitals: An action research (종합병원내 조리실 종사자들의 근골격계질환 예방을 위한 프로그램 개발과 평가: 실행연구)

  • This study is a participatory action research conducted to develop a program to prevent musculoskeletal disorders among kitchen workers in a general hospital. This study was conducted from March to December 2018 with 15 kitchen workers, 3 nutritionists, 2 nurses, and 1 physical therapist working at C general hospital located in G city. Based on the conceptual model of participatory practice research, quantitative and qualitative data were collected and analyzed comprehensively. As a result of developing a program for preventing musculoskeletal disorders and applying it 13 times, the satisfaction level was high in the composition, operation time, and expertise of the program, and it was found that they wanted to operate the program continuously in the future. Therefore, based on the results of this study, it is necessary to develop and apply a musculoskeletal disease prevention program that considers the characteristics of the work department and work targeting other workers through participatory action research.

A Case Study on The Application of Team-Based Learning by Culinary Major University Students to Culinary Skills Subjects (조리실무과목에 대한 조리전공 대학생의 팀기반학습(TBL) 적용사례 연구)

  • This study analyzed subjective cognitive types of culinary majors by applying TBL of cooking practice subjects, and applied Q methodology to multifaceted analysis of subjective cognitive types of learners. For the analysis of the study, interviews were conducted for college students majoring in cooking, and the survey was conducted in the order of constructing the Q population, selecting P-samples, classifying Q, interpreting the results, conclusions, and discussion. A total of four types were derived from the type analysis, and each was named according to its specificity as follows. Type 1 (N = 8): Cooperative Learning Effect Types, Type 2 (N = 8): Problem Solving Ability Effect Types, Type 3 (N = 6): Self Directed Learning Effect Type, Type 4 (N = 6): Individual Practice Preference Type analyzed for each unique feature type. It is expected that through the results of the study, it is expected to provide important implications that can help in the study of similar teaching methods in the future by fostering talents who can increase the needs of the industry and social stress.

Microbiological Quality Assessment of Kimbap According to Preparation and Cooking Condition and Identification of Critical Control Points in the Processes (김밥 조리조건에 따른 미생물 품질 평가와 중요관리점의 관찰)

  • This study was performed to assess the microbiological quality of kimbap (rice balls rolled in laver) prepared in two conditions (normal condition or clean, sanitized condition) and to support a practical application to identify critical control points (CCPs) in the preparation and cooking processes of kimbap. Kimbap, raw materials of kimbap, utensils (knives, cutting board, and kimbal which is made of bamboo), and hands of food handlers were examined microbiologically. Airborne microbes in the kitchens were also evaluated. Escherichia coli, Salmonella and Staphylococcus aureus were not detected in all samples. The aerobic bacteria and coliform bacteria levels of all samples in clean, sanitized condition were much lower than those in normal condition. More aerobic bacteria and coliform bacteria were counted in unheated raw materials of kimbap than in heated raw materials. In both conditions, the levels of airborne microbes of the kitchens were satisfactory. The aerobic bacteria and coliform bacteria of kimbap prepared in clean, sanitized condition were one hundredth levels of those of kimbap prepared in normal condition. However, fecal coliforms were detected even in the kimbap prepared in clean, sanitized condition. The results indicate that microbiological contamination of kimbap may be mainly originated from the contaminated unheated raw materials, utensils, and hands of food handlers, and also possible cross-contamination during preparation. The CCPs for kimbap preparation and cooking were handling of unheated raw materials, cleaning and sanitizing utensils, and hand washing of food handlers.

Assessment of the Child Care Centers' Foodservice Facility and Development of the Kitchen Facility Model based on the General Sanitation Standards and Guidelines (영유아 보육시설의 조리실 시설 현황 조사 및 조리실 시설 설계 기준안 개발)

  • The purposes of this study were to assess the child care centers' foodservice facility, and to develop the kitchen facility model based on the general sanitation standards and guidelines in order to provide basic information for a plan review to build or renovate child care centers' foodservice facility. The scopes of the study include : 1) field assessment of the foodservice management practices and facilities in 8 public child care centers, and 2 private child care centers which they are subsidized from the government as public child care centers, 2) development of child care centers' kitchen facility model based on the General Sanitation Standards and Guidelines. The results of this study can be summarized as follows : 1. Field Assessment of the Child Care Centers' Foodservice Facility Average number of children in child care centers was 78.0$\pm$24.20, the average space of kitchen was 15.13$\pm$4.25($m^2$). Especially, the average space of kitchen was 18.49$\pm$4.35($m^2$) with enrollment capacity of 90~120 children in child care centers. The inventory level of most foods was relatively low except rice and kimchi. Kitchen facilities and equipments were similar to those of home kitchen and did not meet the standards of institutional practice. Therefore, the director in child care centers should recognize the importance of the sanitation management and pay more attention to the renovation of foodservice facilities as well as sanitation management practices. 2. Development of the Kitchen Facility Model based on the General Sanitation Standards and Guidelines The kitchen facility plan model with enrollment capacity of 100 children was developed based on the results of field assessment and literature review. Suggested kitchen space was 34.16$m^2$(6,100mm×5,600mm). This space was bigger than the results of field survey or precedent study, considered appropriate to implement the general sanitation standards. The main feature of the developed kitchen facility plan and model was product flow in one direction from the arrival of the raw material to the finished product in order to prevent cross contamination and to improve working efficiency.

Implementation of HACCP Model for Steamed Rice with Squid Served from Elementary School with Joint-Lunch Management System (공동관리 초등학교의 안전한 오징어덮밥 생산을 위한 HACCP적용)

  • The purpose of this study was to implement HACCP system to foodservice of W and D elementary schools with joint-lunch management system in Kyungsan area. Steamed rice with squid was selected and Control Action, Monitoring Procedure and Control measure were identified based on HACCP flowchart to produce safe and healthy food. It was suggested that frozen squid must be thawed under the cold running city water and kept temperature below 1$0^{\circ}C$ and receiving/thawing procedure has to be done within 30 min. Raw vegetables must be washed under three-tube wash stand and whole prepreparation procedures should be done in 20 minutes. Clean and sanitize all the equipment and utensils before and after handling squid. Knives and cutting boards for vegetable and squid should be classified. Sauce for steamed rice with squid should be heated about 21 minutes to reach the temperature of 94$^{\circ}C$ before serving and internal temperature of food must be kept above 84.4$^{\circ}C$ during serving. The ideal temperature of kitchen should be remained 15∼18$^{\circ}C$. The underground water has to be excluded to minimize the risk of contamination in the foodservice facility and the prepreparation place must be separated with cooking place. Also, Personal hygiene Practice should be check in each stage. Further, additional research needs to be conducted to determine models for HACCP implementation for different menu.

A Case Study on the Spatial Configuration and Allocation of Catering Facilities of Newly-Built Elementary Schools in Sejong City (세종시 신설초등학교의 조리장 공간구성과 면적에 관한 사례 연구)

  • This study consists of five case studies of the catering facilities of newly-built elementary schools' in Sejong City, regarding the spatial configuration and allocation. The analysis indicated that the space allocated in the cooking area in the five schools compared to the standard was as follows: School A; 99.2%, B; 91.1%, C; 81.4%, D; 110.8%, E; 88.1%. Accordingly, the cooking area was close to, or slightly above the standard; nevertheless, other areas in the facilities were not allocated sufficient space and were not appropriately planned. Among the other findings, the receiving areas of three schools were not even planned, and the receiving works were carried out in the pre-preparation area. Considering the flow of the dish-washing process, the width of the room should be at least 3.6 meters with a passage width of 1.6 meters, and easy access to the cooking and dining areas must be equipped. An interview with all five supervisors showed that most complaints focused on the cooking and dishwashing areas, whereas there were none in the storage and workers' area. The result highlights the importance of the cooking and dishwashing areas as the main functions in catering facilities, and future planning strategies should consider this aspect.

A Study on the Removal Efficiency of Harmful Pollutants in the Cooking Chamber (조리실내의 유해오염물질 제거율에 관한 연구)

  • The purpose of this study is to reduce the contaminants (total volatile organic compounds (TVOCs), fine particle, odor and total airborne bacteria) during cooking process in cooking chamber, and to decrease the health damage in indoor space that has bad work environment. In order to solve the shortcomings of existing air purifiers and remove all kinds of pollutants effectively, this study focused on the development of indoor air purifiers which are made of bar type. Bio-ceramics filter which combines activated carbon and loess. The air cleaners developed with 4 measuring items including TVOCs, particulate matter, complex odor and total airborne bacteria were measured comparing their pre-service test to their post-service test after a period of time. The measured results showed higher removal efficiency of 91.02% as the concentration of TVOCs was reduced from $2,500{\mu}g/m^3$ to $223{\mu}g/m^3$. Second, the particulate matter removal ratio was 97.51% efficient with average concentration of $26.68{\mu}g/m^3$. Third, the odor showed 95.20% reduction as air dilution ratio averaged out at 144. Last, total airborne bacteria was eliminated by over 94% showing the changeable concentration from $787{\sim}814CFU/m^3$ to $47{\sim}40CFU/m^3$. In addition, the removal rate of harmful pollutants is excellent, and it is expected that the environment of the existing poor cooking room will be greatly improved by using the developed air purifier in combination with the ventilation device and the stove hood.

A Survey on the Sanitary Condition of Kitchens in School Food-service Programs (일부 학교급식소 조리실의 위생관리에 관한 조사연구)

  • A survey including an inspection was conducted to assess the sanitary condition of kitchens in the school food-service programs and to prepare background data for improving the safety of school meals. The survey was carried out over a two-month period (September-October, 2001). A self-administered questionnaire recommended by the Korea Ministry of Education & Human Resources Development (MOEHRD) was offered to a random sample of dieticians of twenty-five elementary schools in one region of Korea about food, sanitation, and safety inspection of their kitchens. Air temperature, relative humidity, and airborne microbes in the kitchens were monitored during preparation, cooking, and service. The inspection results showed their sanitary rendition met the level B of the recommendation of the Korea MOEHRD. The range of air temperature of the kitchens was 21.4~22.4$^{\circ}C$. and the range of relative humidity was 62.4~69.6%. The microbiological evaluation of kitchen samples indicated aerobic plate count levels from 22..5 to 26.5 CFU/15 minutes. Although the results of inspection show that the levels of sanitary condition of kitchens in the schools were good, they are not satisfactory for safe food-servile because the temperature and humidity levels are high. This study indicates that the school kitchens should be monitored and strict inspection is necessary. The legal standards for school food-service should include standards for kitchen air temperature, relative humidity, and airborne microbes.

Present State of Institute Composition and Reform Measures of Nursing Homes (노인요양시설의 시설구성 현황과 개선방안)

  • This research is intended to provide basal material on institute composition of nursing homes that will be built in the near future. According to the result, five of the passages are central type, one of them is extensive type, and the other is group type. Secondly, in living space bedroom area is widest, and both sizes of bedroom system and floor heating system are the same. Thirdly, the sizes of clinic room and physical therapy room are similarly widest in medical space, and people use physical therapy room most frequently. Fourth, dining room and kitchen area are widest in public space, and it is hard to move to program room. Fifth, office area is widest in superintendent space, and it is located near lobby on the first floor. Sixth, the dimension per individual doesn't reach the standard of bedroom size per individual. Seventh, in each space, the rate of whole dimension of living space is highest.
