Quality Characteristics of Sponge Cake with Erythritol (에리스리톨을 첨가한 저열량 스펀지케이크의 품질특성)

  • This study was performed to evaluate the quality characteristics of sponge cakes in which erythritol were added in order to supply less calories. The sponge cakes were prepared with erythritol as replacement for sucrose with different ratios from 0 to 50%. The specific gravities of the batter with erythritol were higher than those of plain control batter and increased by substitution ratio. The cake volumes were also decreased by the replacement of sugar to erythritol. The addition of erythritol decreased moisture contents of the products. The crude ash and crude protein contents of the cakes were decreased by the substitution ratios. In texture analysis, hardness, gumminess, and brittleness of sponge cake were increased as increasing erythritol were added, while springiness was decreased. Cohesiveness showed no significant differences among the substitution ratios. In the sensory evaluations, the cakes with erythritol revealed high overall eating quality, especially the cakes with 30% erythritol were preferred for taste, odor, texture, and overall acceptability. The results show that the ingredients in sponge cakes were the most recommendable with the substitution ratio of 30% erythritol.

Effects of Roasted Soybean Flour on Textural Properties of Rice Cookies (볶은 콩가루의 첨가가 쌀 쿠키의 조직감에 미치는 영향)

  • Changes in the textural properties of rice cookies as a result of using roasted soybean flour (RSF) as an additive were investigated in this study. RSF was replaced as 3, 6, 9, 12, 15 and 20% of 100 g of rice flour. The addition of RSF increased the hardness of dough and cookies as measured by texture analyzer (TA), whereas moisture content of dough and cookies decreased upon addition of RSF. Further, the addition of RSF led to an increase in the L value of dough and cookies, but to a decrease in the a and b values. In addition, the bulk density of cookies decreased upon addition of RSF, whereas bulk density of dough also declined when compared to control. The spreadability of cookies was found to be lower in comparison to control. The values of ${\Delta}bulk$ densities (BD) and ${\Delta}hardness$ of cookies also increased upon addition of RSF. From the point of view of sensory evaluation, addition of 9% RSF to rice cookies showed the highest score in terms of overall acceptability and softness. A 12% RSF addition to rice cookies led to the highest score in sandiness. As a result, we conclude that the crispy texture of the rice cookie can be improved by adding RSF.

Effects of Emulsifiers on Physical Properties of Rice Cookies (유화제의 첨가가 쌀 쿠키의 물성에 미치는 영향)

  • The effects of emulsifiers as additives on the physical properties of rice cookies were investigated in this study. The amounts of emulsifiers added were 3, 6, and 9% based on 100 g of rice flour. Peak viscosity of rice flour added with diacetyl tartaric ester of monoglyceride (DATEM) showed smaller decreases compared to addition of sodium stearoyl lactylate (SSL) or sucrose ester (SE). Hardness of dough as measured by TA increased upon addition of SSL, SE, and DATEM, whereas hardness of cookies increased upon addition of SSL and SE. In contrast, addition of DATEM did not increase hardness of cookies. Density of dough and cookies increased upon addition of SSL and SE, whereas density decreased upon addition of DATEM and spreadability showed the lowest values. From these results, it was confirmed that use of emulsifiers in cookies can control cookie texture. Compared to SSL and SE, DATEM increases hardness of dough and decreases densities of dough and cookies, making it effective in softening the texture of rice cookies.

Quality Characteristics of Loaf Bread Added with Takju Powder (탁주 분말을 첨가한 식빵의 품질 특성)

  • Characteristics of dough added with up to 4.0% takju powder and resultant bread were studied. Doughs added with takju power spray-dried after fermentation with starter (SDWS) and takju power spray-dried after fermentation without starter (SDOS) showed higher pH decreases than those added with takju power freeze-dried after fermentation with starter (FDWS) and takju power freeze-dried after fermentation without starter (FDOS) even after 1st fermentation. After 1st fermentation, volume of dough added with 1-4% SDWS was high, with 1% SDWS showing highest value of 23.6 mL. Volume of bread added with SDOS showed highest value. At 1-2% SDWS and SDOS addition, doughs showed highest specific volume values, which decreased at higher than 3% addition, while specific volume increased with increasing FDWS and FDOW contents. L values of SDOS- and FDOS-added doughs decreased gradually with increasing SDOS and FDOS contents compared to SDWS and FDWS addition. In loaf bread added with takju powder less than 2%, loaf bread added with spray-dried takju powder had higher appearance, color, texture, taste, and overall acceptability values compared to those added with freeze-dried takju. Although not significantly, loaf bread added with 1% SDWS showed slightly higher values in appearance, color, yeastiness, texture, taste, and overall acceptability, and showed higher flour odor acceptability than non-added loaf bread. These results indicate addition of takju powder improves flavor of bread.

Quality Characteristics of Cookies Prepared with Varied levels of Shredded Garlics (다양한 수준의 마늘 첨가 쿠키의 품질 특성 연구)

  • The purpose of this study was to provide the basic information on the cookies made with garlic and to investigate quality characteristics of them using chemical and sensory evaluation of cookies. Cookie samples were prepared with shredded garlic at varied levels of 0, 3, 6 and 9%. The pH of the dough significantly decreased by the addition of garlic. Dough density of control showed significantly lower values than those of 3% added sample groups. Spreadability of control had significantly higher values than the other samples. Texture measurement showed that the addition of garlic had no significant effect on cookie texture. Sensory evaluation resulted that the properties of crack, garlic aroma, garlic taste and brittleness of cookies tended to increase as the addition levels of garlic were increased. The cookies with 3% and 6% garlic had similar or significantly higher acceptance scores in all of the properties examined than those of control.

Physico-chemical Characteristics of Starch Extracted from the Root of Pteridium spp. according to Extraction Method (고사리 뿌리 전분의 추출방법에 따른 이화학적 특성)

  • 고사리(Ferns)는 고사리 속(Pteridium spp.)에 속하는 양치식물의 총칭으로서 우리나라에는 22과 70속 272종이 분포되어 있는 것으로 보고되었다. 고사리의 어린 순에는 가식부 100 g 당 칼슘 15.0mg, 칼륨 185.0mg 등이 함유되어 있으며 골다공증, 심혈관질환 등에 효과가 있고 식이섬유로 인해 변비 예방에도 유용한 것으로 알려져 있다. 고사리 뿌리에서 추출한 전분은 중국 및 일본 등지에서 면류나 제과용으로 이용되고 있어 고사리 재배의 부가가치를 향상시킬 수 있는 방안으로 기대되고 있다. 본 연구에서는 고사리 뿌리는 가정용믹서기로 분쇄하는 방법과 고무망치를 사용해 파쇄한 방법에서 식품첨가제로 이용되고 있는 sodium metabisulfite 등 3종의 산화방지제를 사용하여 추출한 전분의 이화학적 특성을 조사하였다. 고사리 전분의 추출 수율은 분쇄하는 방법에서 높은 경향이었고 추출용액 중에서는 sodium metabisulfite 4% 용액에서 분쇄 처리 9.5%와 파쇄 처리 8.3%로 가장 높은 수율을 보였고, ascorbic acid 침지에서는 5.1%와 5.5%로 낮은 수율을 나타냈다. 추출한 전분의 색도값에서는 파쇄하는 처리에서 L 값이 높아지고 a와 b 값은 낮아지는 경향이었고 sodium metabisulfite 4% 용액 침지에서 분쇄와 파쇄 두 방법에서 가장 높은 명도값을 보였다. 고사리 전분의 추출방법별 Ca 함량은 분쇄 처리에 파쇄 처리에서 높아지는 양상을 보였고 파쇄 후 ascorbic acid 4% 용액에서 추출하는 처리에서 0.23%로 가장 높았으며, Mg 함량도 분쇄 처리에 비해 파쇄 처리에서 경미하게 높은 양상을 보였다. 유효태 Fe 함량 또한 파쇄처리에서 높은 경향을 보였고 추출 용액중에서는 ascorbic acid 4% 용액이 0.12%의 높은 함량을 보였다. 고사리 전분의 추출방법별 호화특성에서 최고 점도는 증류수, ascorbic acid 및 sodium carbonate 추출에서는 파쇄하는 방법에서 높아지는 경향이었지만 sodium metabisulfite 추출에서는 감소하는 경향을 보였다. 강하점도는 모든 추출용액에서 분쇄 처리에 비해 파쇄 처리에서 현저하게 증가하는 양상을 보였고 치반점도는 sodium metabisulfite와 ascorbic acid 추출은 파쇄처리에서 83.9 RVU와 53.0RVU로 낮아지는 경향을 보인 반면 sodium carbonate와 증류수 추출에서는 증가하는 양상을 나타냈다. 호화시간은 분쇄 처리가 파쇄 처리에 비해 약간 늘어나는 경향이었고 추출용액 간에는 큰 차이가 없었으며 호화온도는 분쇄처리가 파쇄 처리에 비해 높아지는 결과를 나타냈으며 파쇄한 고사리 뿌리를 증류수를 이용해 추출한 전분에서 가장 낮은 $69.7^{\circ}C$의 호화온도를 보였다.

Physiochemical Properties of Dual-Modified (Hydroxypropylated and Cross-linked) Rice Starches (하이드록시프로필화 후 가교화시킨 복합변성 쌀 전분의 이화학적 특성)

  • Physicochemical properties of hydroxypropylated and cross-linked (HPCL) rice starch were investigated. Dual modification of rice starch was carried out by hydroxypropylation using propylene oxide (2, 6, and 12%) and then crosslinking using phosphorus oxychloride (0.005% and 0.02%). Swelling power of dual-modified rice starch increased at lower temperature (60$^{\circ}C$) than that of native rice starch (70$^{\circ}C$). HPCL rice starch showed slightly lower solubility (1.6-6.1%) than native rice starch (2.2-13.8%). Solubility and swelling power tended to gradually increase with increasing phosphorus oxychloride contents. RVA pasting temperature (66.2-70.8$^{\circ}C$) and peak viscosity (160.6- 171.1 RVU) of HPCL rice starch were lower than that of those of native starch (71.3$^{\circ}C$, 190.4 RVU) and decreased with increasing propylene oxide concentration. DSC thermal transitions of HPCL rice starches shifted to lower temperature and show less amylopectin melting enthalpy (11.8-9.8 J/g) than that of native rice starch (11.9 J/g). Overall, physicohemical properties of HPCL rice starches were highly dependent on hydroxypropylation rather than crosslinking.

  • Physicohemical properties of dual-modified rice starches, cross-linked (with $POCl_{3}$) and hydroxypropylated (with propylene oxide) rice starches, were studied. Rice starch was cross-linked using $POCl_{3}$ (0.005%, 0.02% (v/w)) at 45$^{\circ}C$ for 2 hr and then hydroxypropylated using propylene oxide (2%, 6%, 12% (v/w)) at 45$^{\circ}C$ for 24 hr, respectively. Swelling power, solubility, thermal properties (DSC) and pasting properties (RVA) of cross-linked and hydroxypropylated (CLHP) rice starches were determined. Swelling power of CLHP rice starch increased at relatively lower temperature than native rice starch. Solubility of CLHP rice starch was lower than that of native rice starch. Peak viscosity of CLHP rice starch was lower than that of native starch while holding strength and final viscosity were increased with modification. Breakdown value was lower and setback value was higher than native rice starch. DSC thermal transitions of CLHP rice starch shifted toward lower temperature. Amylopectin-melting enthalpy of CLHP rice starch decreased, whereas it was not affected by the amount of $POCl_{3}$.

Quality Characteristics of Muffin Added with Red Yeast Rice and white rice (홍국 첨가량에 따른 머핀의 품질특성)

  • The objective of this study was to examinate the differences of general component, chromaticity, pH, weight, loss on baking, specific volume bulk, diameter of upper side and height, mechanical texture, DPPH radical, ABTS radical, Total amount of phenol, Monacolin-K content, sensory test on Muffin using no Red Yeast Rice and different levels (2%, 4%, 6%, 8%, 10%) of Red Yeast Rice. pH was decreased as the amount of added Red Yeast Rice increased(control 8.35, RM2% 7.93, RM4% 7.86, RM6% 7.69, RM8% 7.49, RM10% 7.30). Weight and loss on baking were showed not too different depending the amount of added Red Yeast Rice, and the baking loss were at very low point. Adhesion, cohesiveness, elasticity, viscosity, and chewiness showed no attentive differences on mechanical texture analysis. As the level of Red Yeast Rice increased, DPPH radical, ABTS radical, and Total phenol content decreased. Monacolin K were at higher point as the level of Red Yeast Rice increased. The sensory test showed Taste, Texture, and Overall acceptability gained the highest point when using 4% of Red Yeast Rice. On the sensory test, 4% of Red Yeast Rice was considered to be the best level based on Flavor and Color. The results of these tests show 4% of Red Yeast Rice is most preferred and considered to be most suited with flour and rice flour.

Effect of commercial wheat flour addition on retrogradation-retardation of rice cake (garaetteok) (시판 밀가루를 첨가한 가래떡의 노화 지연효과)

  • The purpose of this study was to investigate the retardation effect of commercial wheat flours on starch retrogradation using a model system, the rice cake (garaetteok). Rice cakes were prepared with four different commercial wheat flours in various concentrations (0.1-0.7%). The rice cakes were vacuum-packed and stored for 4 days at room temperature. The rice cakes containing > 0.3% wheat flour were not able to maintain their original appearance due to enzymatic decomposition, whereas the rice cakes containing 0.1% wheat flour did not reveal any retrogradation-retardation effect. Garaetteok containing 0.2% wheat flour maintained its shape well and showed considerably lower hardness than that of the control, thereby demonstrating a retrogradation-retardation effect. The commercial wheat flours clearly showed the retardation effect on starch retrogradation, and thus, it is important to use a proper amount. On the other hand, the retrogradation-retardation effect of the different wheat flours was not significantly altered possibly due to the same origin of wheat grain.
