This study was conducted to investigate the flower organ removal effect on Atractylodes macrocephala Koidz which was introduced from China. The results were summarized as follows; The plant height of Flower Organ Cutting(F.O.N.C.) treatment short by 1.7∼2.5 cm compared to Flower Organ Non-Cutting(F.O.N.C.) treatment. But number of stem and stem diameter of F.0.C treatment were similar to that of F.O.N.C. treatment. The fresh weight of above-ground part of F.O.N.C. treatment was decreased 48∼60% compare to F.O.C. treatments. The later was period of F.O.C., the higher was fresh weight of above-ground part. The growth of underground part was more F.O.C. at July 15 and Aug. 20 treatments than F.O.N.D treatment. The dry rhizome yield of F.O.C. at July 15 treatment was increased 40% compare to F.O.N.D treatment. Essential oil content of F.O.C. at July 15 treatment was increased 12% compare to F.O.N.D treatment.
This study was conducted to know the effect of cultivation area with different sea levels on essential oil content and its composition and content of major active compounds in Valerian fauriei var. dasycarpa HARA and Valerian officinalis L. The total contents of essential oil were not different according to the locality in both valerian, however, its compositions were varied. The major components in V. fauriei were detected bornyl acetate and sesquiterpene alcohol in three cultivation areas. The major compounds were borneol, borney acetate, ${\beta}\;-sesquiohellandrene$ in V. officinalis other. Among the valepotrate components known as major pharaceutically active components in Europe and Nepal valerian, valtrate was detected in a small amount in V. fauriei, but its quantity was not changed according to the cultivation area.

The essential oils from whole plant, flower, seed, stem and leaves of domestic chamomile were extracted by simultaneous distillation-extraction and analyzed by GC/ MSD/IRD and retention index matching. The experimental results revealed the presence of over 31 volatile components. Major components were chamazulene, bisabolol, bisabolol oxide A, B. The contents of these major components which possess the pharmacological effects were found to be flower(75.1%), seed(76.6%), stem and leaves(10.09%), whole plant (48.9%), respectively, in domestic chamoile oil, whereas found to be flower(49.2%) in foreign chamomile oil. These results suggest that the usefulness of domestic chamomile is promising because of high contents of these four major components which posses pharmacological effects.
The essential oils of Thymus quinquecostatus Celakov. and T. magnus Nakai, respectively, were isolated by using a modified Likens-Nickerson type steam distillation and extraction apparatus and analyzed by gas chromatography and gas chromatography-mass spectrometry. The oil content of T. quinquecostatus was 1.94%, and that of T. magnus was 1.91% in mixed leaves and stems and 0.68% in flowers. Among 38 components identified in either mixed leaves and stems or flowers the major components in essential oil isolated from T. quinquecostatus were thymol(39.8%), ${\gamma}-terpinene(10.0%)$${\rho}cymene(9.2%)$ and camphor(5.9%) while those from mixed leaves and stems of T. magnus were thymoI(54.7%), ${\gamma}-terpinene(15.8%)$, ${\rho}cymene(6.7%)$ and carvacroI(3.2%). The contents of ${\alpha}-pinene$, camphene, camphor, bornyl acetate and ${\alpha}-terpinene+borneol$ were higher in T. quinquecostatus than in T. maglnus but ${\gamma}-terpinene$ and thymol were higher in T. magnus than in T. quinquecostatus. Comparing leaves and stems with flowers in T. magnus, peak area percentage(%) of ${\gamma}-terpinene$, ${\alpha}-terpinene$ were higher in mixed leaves and stems than in flowers, whereas ${\rho}cymene$ was predominantly higher in flowers than in leaves and stems.
Along with the increased necessity for an efficient utilization of Korean wild edible plants growing in fields and mountains, attempts were made to investigate the patterns of flavor changes accompanied hy various conditions of dispersion medium. The effect of various pH values and concentration of sucrose or NaCl of dispersion medium on volatile flavor patterns was investigated to evaluate the applicability of flavor components extracted from Capsella bursa-pastoris for food industry. Essential oils from this wild plant were isolated by simultaneous steam distillation-extraction (SDE) method using diethyl ether as solvent. Concentrated samples were analyzed s chromatography (GC) and combined gas chromatography-mass spectrometry (GC-MS). Most volatile flavor components of Capsella bursa-pastoris showed good recovery when steam distilled at pH 7 by SDE method. Increasing concentration of sucrose and 15% by NaCl, resulted in greater numbers of identified flavor components from Capsella bursa-pastoris.

This study was focused on the comparison of the variations in the yield and chemical composition of Chamaecyparis obtusa leaf oil obtained under different pressure conditions of the supercritical carbon dioxide extraction (SCE), and by hydro-distillation. SCE was carried out varying the pressure in the range of 100~400 bar at $40^{\circ}C$. The chemical composition of C. obtusa leaf oils was determined by gas chromatography-mass spectroscopy (GC-MS) analysis. The maximum yield of 4.4% (relative to the initial mass of oven dry mass) was obtained in the extraction under 300 bar pressure, which was higher than that of the hydro-distillation method (1.9%). The contents of sesquiterpenes in the extracts obtained by the SCE were higher than those of the essential oils of C. obtusa by the hydro-distillation. The sesquiterpenes in the SCE extracts made up approximately 39%~46% of the total, followed by monoterpenes, diterpene, and lignan. The contents of each constituent in the supercritical carbon dioxide extracts were varied on the extraction pressure. Therefore, these results showed that the extraction condition of SCE had significant effect on the yield of C. obtusa oils and its chemical composition.
To investigate the characteristics of growth and oil production of peppermint cells during a batch culture, cells derived from peppermint callus was cultivated in an air bubble reactor. During the batch culture, effects of inoculum size, abiotic stress, yeast elicitor, and two stage culture on the cell growth, the productivity of oleolesin, and the formation of flavor components were determined and also the sugar concentrations and kinetics of cell growth were analyzed. Among the various sizes of inoculum, the culture with 2.0% packed cell volume inoculum showed the optimum condition for cell growth in the proposed bioreactor, and the cell yield and essential oil production reached to 5.7g/1 and 0.109g/1, respectively. When the abiotic stress of daily 8hr dark and $10^{\circ}C$ cold treatments were given to the culture cell growth decreased but essential oil production increased to 0.546g/l. In a modified Lin-Staba medium in which 100mg/l yeast extract as an elicitor was added to the culture, the cell growth and oil production increased, and menthol content was 22.5% of oil. In the two stage culture, in which the basic culture conditions of 27$^{\circ}C$, light, and without elicitor were employed during the first six days followed by the second stage with daily 8hr treatment of cold and dark condition, and also with yeast extract as an elicitor, cell growth decreased after eight days, essential oil production was not increased, and menthol was not detected. Dry cell yield was 0.38g dry cell/g sugar and specific growth rate was 0.25 day-1. The major terpenoid in the oil was not the menthol but pulegone and piperitone, precursors of menthol were accumulated. However, when yeast elicitor was added, menthol was produced to the level of 22.5% which was the highest value in the peppermint cell culture reported so far.

The present study was conducted to investigate the effects of components obtained from Zanthoxylum schinifolium and Zanthoxylum piperitum on rancidity and quality of Kwamegi (semi-dried Pacific saury, Coloabis saira). Ethanol extract (ZS) of Zanthoxylum schinifolium leaves or the essential oil (ZP) obtained from pericarp of Zanthoxylum piperitum in 1 or 20% ethanol solution was sprayed to the Pacific saury before Kwamegi preparation at its final concentrations of 0.125~2 ppm in the Kwamegi. The prepared Kwamegi was vacuum packed with multi-layered film (polyethylene/polyamide/EVOH/polyethylene, thickness 80 μm) and kept at -20${^{\circ}C}$ until use. After opening the package Kwamegi was stored at 4${^{\circ}C}$ for 1, 3 and 7 days during which rancidity tests and sensory evaluation were carried out. Acid, peroxide, and thiobarbituric acid (TBA) values increased with storage time but reduced significantly by the addition of ZS at the concentrations of ≥G0.125 ppm and ZP≥F0.25 ppm. The effects of ZS and ZP were dose-dependent and more pronounced as storage time prolonged. The ZS and ZP also reduced dimethyamine and trimethyamine (TMA) contents which were increased with time, while they prevented the decrease of trimethyamine oxide. The ZS at the concentration of ≥G0.25 ppm and the ZP at >0.5 ppm were needed to maintain TMA less than 4.5 mg/100 g for 3 day storage at 4${^{\circ}C}$. Sensory evaluation of the Kwamegi exhibited a slightly higher preference with the ZS and ZP treated ones at the level of 0.25~0.5 ppm. It is concluded that very low amounts of ZS and ZP are effective in suppression of rancidity of Kwamegi and could be utilized for its quality management.

The contents of malic acid and citric acid in Schizandra nigra was 38,691 and 3,330 ppm/dry weight 100g. The contents of total phenolic compounds in Schizandra nigra was 1.560%. The predominating phenolic acid was cinnamic acid, gentisic acid, coumalic acid, chlorogenic acid and ferulic acid. Contents of crude lipids in Schizandra nigra was 160.5mg/g. Most of fatty acid in lipids was oleic acid, linoleic acid and linolenic acid as a unsaturated fatty acid, and palmitic acid as a saturated fatty acid. In case of essential oils, The predominating components in Schizandra nigra was caryophyllene, calarene, cubebene, acoradiene and $\beta$-himachalene.
