A Study on the Actual State of Use and Necessity for Korean Traditional Pyebaeck Foods in Daegu Area (한국 전통 폐백음식의 이용실태와 필요성에 관한 연구(I)-대구지역을 중심으로-)

  • This study was conducted to investigate the actual state of use and necessity of Korean traditional Pyebaeck foods using questionnaire. The subjects of this study consisted of 621 housewives in Daegu area. The results were summarized as follows: The most often used foods of Pyebaeck refreshments included alcoholic drinks(80.0%), Bamgoim(73.8%), Daechugoim(73.4%). The refreshments were most often purchased from caterers(39.6%), and mainly used for marriages of their brothers and sisters(33.3%). The standard number of foods prepared was 7 to 10(42.2%). The most used container for Pyebaeck refreshments is bamboo basket(30.6%). 62.0% of the respondents needed Pyebaeck refreshments and the reason for refreshment preparation was mainly “because it is a Korean tradition”(82.3%) and the reason why most respondents do not think the Pyebaeck refreshments are necessary was “it's troublesome and complicated”(41.1%). The refreshments most frequently included were alcoholic drinks(63.7%) and Daechugoim(47.0%). Most of the respondents(84.9%) said that the Pyebaeck refreshments should be improved and 48.0% said the improvement method should consider the traditional tastes, flavors and arrangements fit to modem sense. Although following the traditions of Pyebaeck refreshments itself is difficult, the concept of Pyebaeck refreshments can develop into a modern concept with new meaning if we improve and adjust it in a way fit to modem lifestyles.

A study on the structural relationship between image, attachment, long-term orientation and behavioral intention as a tourism product of local traditional food (지역전통음식의 관광상품으로서 이미지, 애착이 장기지향성 및 행동의도간 구조적 관계)

  • This study presented the analysis results and implications by identifying the structural relationship between the image of food tourism products, the long-term orientation of attachment, and the behavioral intention. The convenience sampling method of the non-probability sampling method was used, and the survey was conducted non-face-to-face due to COVID-19. This study was conducted for customers who live in Jeollabuk-do and Jeollanam-do and have experienced local traditional food. As for the survey method, the main researcher's acquaintances and related experts were consulted and utilized to select the survey subjects, and the survey was conducted by sending/returning them by mail or e-mail. Statistical processing was analyzed using SPSS 25.0 and AMOS 25.0 statistical packages. As a result of the verification, the relationship between the image and attachment of food tourism, the relationship between the long-term orientation in the attachment of traditional food, and the behavioral intention in the attachment of traditional food are significant. A significant positive (+) relationship was formed in the relationship of hypothesis setting according to the research purpose of the relationship.

A Survey on Practices and Attitude toward Wedding Food among Housewives in Busan and Kyungnam Area (부산.경남지역 주부들의 혼례음식 관행과 태도에 관한 조사)

  • This study is to describe practices of and attitude toward traditional wedding food and the attitude of housewives toward the traditional wedding food in Busan metropolitan and Kyungnam province area. Data were analyzed from the convenient sample of 525 housewives collected from September 20 to September 28, 2001. As for the necessity of traditional wedding food, the most popular food was ebagee food, pebaek food, yedan food in order. Of the various kinds of traditional wedding food, table setting for parent-in-law was chosen as the most popular one. Sociodemographic characteristics such as education level and age were statistically associated with perception of traditional wedding food being necessary as a ritual thing. The respondents preferred rice cakes as wedding food to fishes, fruits, traditional sweets and skewered slices of seasoned meats. More than half of the respondents think current practices of wedding food is prodigal and has to be done in thrifty manner. As a ritual practices of wedding food were to be readjusted to the change of social custom depending on the degree of modernization. More than half (52.1%) of the housewives expected traditional wedding food should fade away. A conclusion was that it is necessary to develop modernized wedding food reflecting traditional wedding customs with economic costs.

A Study on the Recognition of Traditional Wedding Food among Women in Busan Area (부산지역 거주 여성의 전통혼례음식 인지도에 관한 연구)

  • The purpose of this study was to identify the recognition of traditional wedding food among the women living in Busan. It also investigated the differences of the recognition caused by demographic characteristics among them, which provides the data for a desirable wedding culture. A total of 270 samples for the study were collected from November 10 till 21 in 2007. For the analysis of the data, we used SPSS 14.0 to carry out the analysis of frequency and variance. The findings could be summarized as follows: the older one had more awareness of traditional wedding food. Especially the housewife had relatively more knowledge about Shinhyung-eumsik than any other occupation. The majority of respondents answered that Phaebak-eumsik is positively necessary for the wedding ceremony and simplification of wedding food is needed.

Elementary school children's perceptions of traditional Korean foods, based on the health belief model (건강신념모델에 기초한 초등학생의 우리 전통 식생활에 대한 인식 조사)

  • This study investigated the eating habits of elementary school children and their perceptions related to traditional Korean foods, based on the health belief model. The subjects were fifth grade elementary school children (274 boys and 274 girls) in eight Korean cities. The results were as follows: The children ate almost three meals per day and were grateful for their meals. However, they irregularly consumed meals and snacks. They tended to eat heartily and did not eat foods that they had not yet eaten. Their meals were based on rice and they have eaten kimchi and vegetables at almost every meal. However, they had undesirable habits in eating other foods, such as fruits, fish, soybeans, and sweet foods. They did not sensitively or seriously perceive their eating habits in relation to their health. They perceived that it was very good for their nutrition, health, and tastes to eat traditional Korean foods, and they had pride in traditional Korean foods and eating style. Although they expressed some difficulty regarding availability and preparation of traditional Korean foods, they hardly felt difficulty in eating them. They had high dietary self-efficacy with regard to eating these foods, except for two items of self-regulation. Their eating habits showed positive correlation with dietary self-efficacy, perceived susceptibility, and perceived benefit. In conclusion, eating habits of elementary school children in relation to traditional Korean foods are not desirable, but not serious. They did not sensitively or seriously perceive their eating habits in relation to their health. However, they perceived that it was very good for their nutrition and health to eat traditional Korean foods, did not have a high level of difficulty in eating them, and had high dietary self-efficacy with regard to eating them. Therefore, we suggest that children should be exposed to various traditional Korean foods, along with education about them, in order to enhance their concern and motivation to eat them.

A Comparative Study on the Effects of Location Factors on Sales by Restaurant Type (입지요인이 음식업 업종별 매출액에 미치는 영향 비교연구)

  • The purpose of this paper is to analyze the effects of location factors on sales by restaurant type in the six districts of Seoul (Jongno-gu, Jung-gu, Yeongdeungpo-gu, Gangnam-gu, Seocho-gu, and Songpa-gu). Ordinary least squares (OLS) regression model is selected for four restaurant types whose spatial autocorrelation is not identified, spatial lag model (SLM) is only selected for seafood restaurant, and spatial error model (SEM) is selected for nine other restaurant types. The floating population and the workers of surrounding businesses have generally positive effects on the sales of restaurants. The floating population elasticity of the sales of restaurants are found to be in the descending order of Oriental food, pub, Western food, and traditional food restaurant, and the elasticity of the workers of surrounding businesses are in the descending order of bakery, Oriental food, and Western food restaurant. The spatial multiplier effects are in the descending order of Oriental food, pub, and Western food restaurant. There is a statistically significant sales gap between roast meat, pub, and bakery in Gangnam-gu and those in five other districts. The results of this research can help in starting a restaurant in that they can provide information on the suitability of location by restaurant type.
