Effect of Dehairing Methods and Sex on Pork Quality and Cold Storage Stability (탈모방법과 성별이 돈육질 및 냉장저장성에 미치는 영향)

  • The aims of this work were to compare the effects of dehairing methods and sex on pork quality and cold storage stability. For this study, one half of40 pigs were dehaired by scalding in the same abattoir, and the other half by dehiding. Each treatment consisted of one half gilts and one half castrated male pigs. Meat quality traits were measured at 24 hr after slaughter, and thiobarbituric acid (TBA), metmyoglobin contents and total plate counts (TPC) were evaluated at 1, 7, 14 and 21 days of cold storage. The carcass weight and backfat thickness of pigs dehaired by scalding were significantly higher than those dehided (p<0.05). Compared to scalded carcasses, dehided carcasses had a lower longissimus dorsi muscle temperature (p<0.05). Furthermore, dehided carcasses had significantly lower drip loss than scalded carcasses (p<0.05). However, meat color parameters were not affected by the dehairing method. During cold storage, TBA values of scalded carcasses were slightly higher initially, whereas the dehided carcasses had higher TBA values at 21 days (p<0.05). The total plate counts (TPC) associated with scalding and dehiding treatment were not significantly different at any point during cold storage. The TPC exponentially increased in both scalded and dehided carcasses from 7 to 14 days of cold storage.

Changes in Antioxidative Activity and Total Polyphenols of Crude and Defatted Grape Seed Extract by Extraction Condition and Storage (포도종자의 처리별 추출조건 및 저장에 따른 항산화활성 및 총페놀함량의 변화)

  • This study was conducted to determine the yield, free radical scavengering effect and total phenol contents of various solvent fractions on the crude and defatted grape seed extract during storage. The optimal condition for the extraction yield, free radical scavengering effect and total phenol contents was $90\%$ ethanol for 6 hour at $70^{\circ}C$. The extraction yield for crude and defatted grape seed at optimal condition was $8.9\%\;and\;9.16\%$, respectively. Also, the strongest free radical scavengering effect with $41.52\;{\mu}g/mL$ was observed in $95\%$ ethanol of defatted grape seed extracted for 6 hour at $70^{\circ}C$. Similar result was observed in total phenol contents of defatted grape seed. The ethyl acetate fraction obtained from ethanol extract of defatted grape seed showed the strongest RC50($12.35\;{\mu}g/mL$) compared to other organic fractions. Free radical scavengering effect of crude and defatted grape seed extracts treated with alkali condition(pH 10) was reduced compared to that of acidic condition(pH 2) during storage far 1 month at $50^{\circ}C$. Overall, more stronger free radical scavengering effect and higher total phenol contents in defatted grape seed extracts was observed than that of crude grape seed.

Effect of Blanching on Protein Composition and Texture in Geoduck Muscle during Frozen Storage (코끼리 조개육이 동결저장중 단백질 조성 및 Texture변화에 미치는 Blanching의 영향)

  • Effects of blanching on protein composition and texture in geoduck muscle during frozen storage at $-20^{\circ}C$ were investigated. In frozen muscle, sarcoplasmic protein and myofibrillar protein were decreased, while alkali-soluble protein increased rapidly. During the storage of the blanched muscle(at $95^{\circ}C$ for 2 min.), sarcoplasmic and myofibrilla protein showed slow decreases. The muscle blanched for 2 min(BM) showed the best texture among the samples treated with various blanching times(at $95^{\circ}C$ for 1, 2, 3, and mins). In comparing the textures of BM with raw muscle, hardness of BM was similar raw muscle, and elasticity and stress relaxation of BM revealed lower levels than those of raw muscle, but break elongation and toughness were higher. In the changes of texture of raw muscle and BM during the frozen storage, as the storage time lengthened, hardness and toughness of both muscles were stronger, and both stress relaxations showed greatly decreases during initial storage(7 days), and break elongation level of raw muscle showed rapid increases in 100 days but there were no changes in that of BM, Elasticity of raw muscle gradually reduced during storage while that of BM increased.

Effect of Feeding Periods of Dietary Rhus verniciflua Stokes on the Quality Characteristics of Hanwoo Beef during Refrigerated Storage (옻나무 급여기간이 한우육의 냉장저장 중 품질특성에 미치는 영향)

  • This study was carried out to investigate the effect of feeding periods of dietary Rhus verniciflua Stokes (RVS) on the quality characteristics of Hanwoo beef during refrigerated storage. Hanwoo steers were fed a 4% RVS-contained diet for 0 (control), 3, 4, 5, or 6 mon prior to slaughter (28 mon of age). The M. semitendino년 from carcasses were stored at $3{\pm}0.2^{\circ}C$ for 7 d. The crude fat content was lower in the 4 and 5 mon groups than in the other groups (p<0.05), however the crude protein content and water-holding capacity (WHC) were higher in the 4 and 5 mon groups than in the other groups (p<0.05). The monounsaturated fatty acid (MUFA) content was higher in the 3, 4, and 5 mon groups than in the other groups (p<0.05). During storage. the TBARS content was reduced in the RVS groups, and the MetMb content showed slower accumulation in the 3, 4, and 5 mon groups than in the other groups. With regard to meat color, the 3, 4, and 5 mon groups had higher L, a, and C values than the other groups until 7 d, and in particular, the a value at 7 d was the highest in the 4 mon group (p<0.05). Consequently, the beef from 4% RVS-fed Hanwoo for 4-5 mon was effective at improving the WHC, MUFA content, and color stability relative to the other beef.

Preservative Effect of Garlic Stalk or Pork Cooked in Soy Sauce by the Addition of Botanical Antimicrobial Agent-Citrus and Red Ginseng Mixture (식물성 천연 항균복합소재 처리에 의한 마늘종 및 돈육장조림의 저장 효과)

  • The mixture of botanical antimicrobial agent-citurs product and ginseng extract mixture(BAACG) was applied to garlic stalk or pork cooked in soysauce to extend their selflife. BAACG showed a remarkable antimicrobial activity against a wide spectrum of food-borne infection microorganisms and thermal and pH stability. In comparison with scanning electron microscopic photos of microbial cells not-treated and treated with BAACG the physiological cytomembrane function of BAACG-treated microorganisms was destroyed and the dead cell numbers was increased. The quality of garlic stalk or pork cooked in soysauce was controlled by the addition of BAACG in their raw materials. BAACG-treated garlic stalk or pork cookeries showed considerably to decrease the numbers of total cell count and expressed no odor and no sticky state appeared in the control. BAACG was expected to be a preservative agent which could be applied to raw or processed food stuffs in the view of food safety.

Effects of Fermentation Pine Needle Extract on the Quality of Plain Bread (솔잎 발효액이 식빵의 품질에 미치는 영향)

  • In efforts to use pine needle extract as a substitute for sugar, fermented pine needle extract syrup was added to the wheat flour nea in the manufacture of white bread The extract was added to levels of 8.3%, 11% and 18% of total weight based on the Brix degree of the dough The cohesion of each dough was checked, and the physical properties and storage stabilities of the baked breads were analyzed during storage at mom temperature. Analysis of the cohesion of each dough by farinogram showed that dough with pine needle extract was better than dough with sugar, in terms of both stability and durability of mixing. The pH of dough with syrup was steady during storage at pH 5.4 5.8, which is favorable for yeast activity. The dough with syrup also showed low firmness and good extensibility, both of which would favorably affect gas retention on fermentation. Increases in syrup addition resulted in higher product volumes. Bread with syrup was slow to increase in hardness during storage, suggesting that higher syrup concentrations inhibited development of staleness. The addition of syrup also inhibited the growth of aerobic bacteria and mold on the bread surface. The addition of syn did not cause any negative effect. The use of pine none extract syrup may thus contribute to improvements the physical properties, the storage stability, and the hygienic quality of bread.

Effect of Water Extracts of Ganoderma lucidum, Camellia sinensis and Lycii fructus on the Lipid Stability of Walnut (영지, 녹차 및 구기자 물 추출물이 호도 지방질의 안전성에 미치는 영향)

  • The lipid stability of walnut added with water extracts of Ganoderma lucidum, Camellia sinensis ana Lycii fructus was studied. The results are as follows:1. when the extracts were added to walnut, the lipid stability was improved. The antioxidative activities of water extract of Camellia sinensis and Lycii fructus were considerably higher than that of Ganoderma lucidum. The antioxidative activity was decreased in the rank order Lycii fructus>Camellia sinensis>Ganoderma lucidum. 2. This clearly suggests that water extract of Lycii fructus at 4$^{\circ}C$ Bx level can be used as an alternative natural antioxidant for the lipid stability of walnut.

Inhibition of Vibrio vulnificus in Oysters using Organic Acids (유기산을 이용한 생굴의 Vibrio vulnificus 억제)

  • The number of Vivrio vulnificus strain 29307 was assessed for oysters treated with acetic, lactic, citric, and alginic acids during storage at 15$^{\circ}C$. When oysters were dipped with 0.5% acetic, 0.5% lactic, or 0.5% citric acids for 3 min, V. vulnificus was not detected after 4 days of storage. V. vulnificus in the treatment of 3% alginic acid (AL) containing 2% acetic acid (AA) was not detected after 2 days of storage, while it was isolated in the controls for 4 days of storage. Based on these results, the combination of AL and AA was more effective for preventing the growth of V. vulnificus in oysters than the treatments of the acid alone.

  • 최근에 IPTV(Internet Protocol TV) 셋톱박스의 보조기억장치의 성능과 저전력을 위한 연구가 많이 수행 되고 있다. IPTV를 위한 셋톱박스의 구성품인 하드디스크는 멀티미디어 데이터를 저장하고 저장된 데이터를 재생한다. 하지만 하드디스크는 기계적인 특성으로 인하여 전력 소모 문제 및 성능 저하 문제 등이 있다. 본 논문에서는 IPTV 환경에서 하드디스크와 플래시 메모리를 혼합한 하이브리드 저장 시스템을 구성 하여 멀티미디어 데이터의 n-프레임을 플래시 메모리로 선반입 하는 새로운 방법을 제안한다. 이 방법을 통해 하드디스크의 대기시간을 줄이고 전력 사용을 최적화 할 수 있다. 실험을 통해 제안한 방법이 기존 방법과 비교하여 20.69%의 평균응답시간을 개선하고 전력소모를 28.14% 감소시킴을 확인 하였다.

Antimicrobial Activity of Pectin hydrolysate and its Preservative Effect (펙틴분해물의 항균특성과 식품보존효과)

  • Pectin hydrolysate prepared from citrus pectin by enzymatic hydrolysis has antimicrobial activity. The antimicrobial activity was increased by its hydrolyzing rate and it was rapidly increased after 70% hydrolysis of the pectin. The antibacterial activity of pectin hydrolysate against Escherichia coli ATCC 11229 was the strongest at pH 4.9~5.5, but it diminished slightly at neutral pH values. The antibacterial activity of pectin hydrolysate was stronger than those of against molds and yeasts. The growth of bacteria submitted to this test except lactics was completely inhibited for 48 hrs at $35^{\circ}C$ by adding 2.0~3.0% pectin hydrolysate. While the growth of Lactococcus lactis ATCC 19435 and Lactobacillus bulgaricus and Penicillium funiculosum ATCC 11797 were reached about 60~70% compared with those of the controls in the same condition. But there was no significant effect on the growth of the yeasts. The antibacterial effect of pectin hydrolysate was significantly stimulated by addition of glycine, ethanol, sodium ascorbate, sodium chloride and sodium acetate. The shelf life of Kimchi containing 1.0% pectin hydrolysate was prolonged above 15 days at $4^{\circ}C$ than that of its control. In case of whitish bean jam viable cell counts were inhibited about 2 log cycles by 10 days at $25^{\circ}C$. According to these results, author can sincerely suggest that pectin hydrolysate will be used as a natural food preservative for inhibition of common bacterial growth without inhibition of lactics and yeasts.
