Retrogradaion of Rice Flour Gels with Different Storage Temperature (저장온도에 따른 쌀가루 겔의 노화)

  • Effects of storage temperature on the retrogradation of 50% nonwaxy rice flour gels stored at $20^{\circ}C,\;4^{\circ}C\;and\;-18^{\circ}C$ for 6 days were investigated by ${\alpha}-amylase-iodine$ method, differential scanning calorimetry(DSC) and x-ray diffractometry. The retrogradation of gels increased with increasing storage time and the initial retrogradation rate was higher. The degree of retrogradation gels stored at different temperature increased as following order, $-18^{\circ}C>20^{\circ}C>4^{\circ}C$. The enthalpy of retrograded rice flour by DSC showed similar as the degree of retrogradation by ${\alpha}-amylase-iodine$ method, but the differences between storage temperatures were clear in using ${\alpha}-amylase-iodine$ method. X-ray diffraction patterns of gels stored at $4^{\circ}C\;and\;20^{\circ}C$ showed small peaks at $2{\theta}=17^{\circ}\;and\;20^{\circ}$, but the difference was not detected.

Effects of Water Soaking and Gamma Irradiation on Storage Quality of Chestnuts (수침 및 감마선 처리가 밤의 저장특성에 미치는 영향)

  • The effects of water soaking and gamma irradiation on the storage quality of chestnuts (Castanea crenata) were investigated. Chestnuts weirs soaked in water for 48 hrs at room temperature, irradiated at 0, 0.15, 0.25 and 0.35 kGy of $\^$60/Co gamma ray, and then stored at 0$\^{C}$ and 95$\pm$2% RH for 9 months. Spouting was observed at the end of storage only in chestnuts that were soaked and irradiated at below 0.25 kGy. Rotting was found from the early stage of storage in all pre-treatment conditions, but the rotting rate of soaked chestnuts was higher twice than unsoaked ones after 9 months of storage. Weight loss was lower in soaked than unseated samples regardless of irradiation dose. Loss of flesh firmness was appreciably retarded as irradiation dose increased. Total sugar content decreased slowly in irradiated samples at the later periods of storage. Gamma irradiation resulted in the decrease of vitamin C content immediately after treatment, but retarded its loss rate during storage. Soluble tannin content was not affected by gamma irradiation at scout inhibition doses.

Effect of Gamma Irradiation on Microbial Growth, Electron Donating Ability, and Lipid Oxidation of Marinated Beef Rib (Galbi) with Different Packaging Methods (포장방법에 따른 양념갈비의 저장 중 총균수, 전자공여능 및 지방산화의 감마선 조사효과)

  • The effect of irradiation and packaging methods (vacuum vs aerobic) on microbial growth, electron donating ability, and lipid oxidation in marinated beef rib (Galbi) was investigated. The total aerobic bacteria in Gazlbi reduced significantly with the increase of irradiation dose, and the effect was more significant in the Galbi with vacuum packaging, The pH showed a decreasing trend during storage and this change was more significant in the Galbi with aerobic packaging. Electron donating ability of Galbi was reduced by irradiation in aerobic packaging but no difference was found in vacuum packaging except 7 days. The 2-thiobarbituric acid reactive substances (TBARS) value of Galbi increased by irradiation in aerobic packaging during storage time, but that of vacuum packaging was maintained an initial value. Results indicated that irradiation coupled with vacuum packaging may enhance the microbial safety of Korean traditional meat products, Galbi, with minimum quality changes during storage.

저장기간에 따른 지방산 조성이 다른 콩가루의 품질 변이

  • 식생활이 풍요로워진 우리나라는 국민의 포화지방산 섭취량이 빠르게 증가하고 있는데 섭취량을 줄일 필요성이 있다. 최근 우리나라의 콩가루, 두유 시장규모는 건강과 국산 열풍으로 2016년부터 연평균 13%씩 성장 중이며 국산콩 사용량이 두부 다음으로 많다. 콩은 풍부한 단백질과 더불어 건강에 좋은 불포화 지방산함량이 높다. 하지만 높은 불포화지방산 함량은 저장성을 떨어뜨리는 역할을 한다. 본 연구에서는 불포화지방산함량이 상이한 3가지 콩을 3종류의 포장재에 밀봉 포장하여 상온과 저온에서 3개월간 저장실험을 하였다. 저장안정성 평가는 유지를 추출하여 산가측정을 하고 가스크로마토그래피(GC)를 이용하여 지방산함량 변화를 확인하였다. 산가는 저장기 간에 따라서 매달 산가가 유의적으로 증가하는 경향을 보였으며, 저장 온도에 따라 초기, 상온, 저온모두 각각 유의적인 차이를 보였다. 콩 종류에 따라서도 유의적인 차이를 보였는데 포장재에 따라서는 차이를 보이지 않았다. 저장기간에 따라 콩가루의 지방산 변화는 대찬콩은 저온에서 올레산이 감소하는 경향을 보였고, 호심콩은 상온, 저온 처리구 모두에서 올레산과 리놀레닉산이 감소하는 경향을 보였으며, 49-3-1-8 콩은 상온, 저온 처리구 모두에서 올레산, 리놀레산, 리놀레닉산이 감소하는 경향을 보였지만 호심 상온처리구에서 리놀레닉산이 감소한 것을 제외하고는 유의미한 결과값을 얻지 못하였다. 저장 3개월차에 산가는 상온, 저온 처리구 모두에서 호심콩가루가 가장 낮게 나왔는데 이것은 이중결합이 하나라 비교적 안정성이 높은 올레산함량(~80%) 때문으로 보인다. 반면에 49-3-1-8 콩은 이중결합 3개로 가장 산화되기 쉬운 리놀렌산 함량이 비교적 많아 가장 산가가 높게 나왔다. 결과적으로 올레인산 함량이 높은 호심 콩 가루가 가장 저장안정성이 좋을 것으로 보인다.

  • In this paper, we design and implement a query processor of real-time main memory database systems, which reflect the characteristics of main memory database systems and satisfy timing constraints. The proposed query processor manages real-time data that has timing constraint by exploiting meta database. It supports CLI in order to make application programs. It also supports extended CLI and stored CLI. The former can be expressed the Information on real-time transaction. The latter is designed to support frequently processed transaction. The proposed query processor is implemented as query processor of real-time database management systems. We Present performance evaluation results that illustrate ratio of transaction, which satisfy deadline are increased by the query processing ability of system and the efficient management of real-time data.

  • To launch rocket on launch pad, propellants and gases are charged into the rocket by remote control system. Using pneumatic pressure-reducing regulators, kinds of gases with various pressure levels are supplied into launch pad. As most of operations for launching the vehicle are remotely controled in the launch control room, pressure pulsations due to rapidly gas supply at the upstream of regulators can make the required operating pressure range missed and cause damage to the regulators. In this paper, the optimum design methods of pressure regulators of pressure-reducing system on launch pad using high-pressure gases were investigated to solve the aforementioned problems and for stable gas supply to launch pad.

  • In this paper, an attempt has been made to design the controller applicable for H.264 level3 encoder of baseline profile on full hardware basis. The designed controller module first stores the images supplied from CMOS Image Sensor(CIS) at main memory, and then reads or stores the image data in macroblock unit according to encoder operation. The timing cycle of the DMA controller required to process a macroblock is 478 cycles. In order to verify the our design, reference-C encoder, which is compatible to JM 9.4, is developed and the designed controller is verified by using the test vector generated from the reference C code. The number of cycle in the designed DMA controller is reduced by 40% compared with the cycle of using Xilinx MIG.

  • 본 논문은 단일 디지털 제어기를 이용하여 독립형 태양광 발진 시스템에 사용되는 태양전지에서 발생한 전력을 수집하고 필요에 따라 에너지 저장 장치에 전력을 저장하는 Boost 컨버터가 최대전력점에서 동작하도록 제어하면서, 이 전압을 부하에 필요한 전압 값으로 변환하는 Buck 컨버터를 동시에 제어하는 방법을 제안한다. 제안된 독립형 태양광 발전 시스템의 구성은 에너지를 발생하는 태양전지, 최대전력 점을 추종(MPPT)하도록 하는 Boost 컨버터, 부하에 적합한 준위의 전압을 공급하는 Buck 컨버터가 직렬로 연결되어 있다. 제안된 방법은 디지털 제어기의 제어변수 값들을 바꿈으로써 전체시스템의 출력특성을 쉽게 제어할 수 있어, 사용되는 태양전지 어레이의 종류와 환경조건 변화에 따라 쉽게 제어변수 값들을 조정할 수 있다. 또한 하나의 디지털 제어기로 최대전력점 제어부 및 Buck과 Boost 컨버터의 피드백 제어부를 구성하여 시스템의 구조가 간단해지기 때문에 소형 및 경량화를 이룰 수 있다.

Effect of Clove (Eugenia caryophyllata Thumb) on the Survival of Listeria monocytogenes and Salmonella typhimurium during Cold Storage (저온저장중 Clove(Eugenia caryophyllata Thumb)가 Listeria monocytogenes와 Salmonella typhimurium의 생존에 미치는 영향)

  • The antibacterial activity of low concentrations of clove (Eugenia caryophyllata Thumb) in culture broth against Listeria monocytogenes and Salmonella typhimurium was tested at 35, 5, and -20$^{\circ}C$. Tryptic soy broth (TSB) containing 0∼0.5% (w/v) of clove was inoculated with 10$\^$5/∼10$\^$7/ cell/ml of L. monocytogenes and S. typhimurium and incubated at each temperature. The growth of L. monocytogenes occured only after a prolonged lag period at 0.1% clove at 35$^{\circ}C$, while viabilities of the cells decreased by 1.4 and 3.3 log cycles at 0.3 and 0.5% clove, respectively. Growth of S. typhimurium occured at the presence of 0∼0.5% clove after a longer lag period with increasing concentration of clove at 35$^{\circ}C$. During refrigerated storage at 5$^{\circ}C$, the growth of L. monocytogenes occured after 6 days of lag period at 0.1% clove while viability of the cells were decreased during 24 days of storage. During frozen storage at -20$^{\circ}C$, the viability of L. monocytogenes and S. typhimurium decreased about 4 log cycles during 3 days of early period of storage at 0.1% clove. There were no major changes in the population of L. monocytogenes and S. typhimurium in TSB with different concentrations of clove during frozen storage.

Development of an Automatic Hypertext Indexer for Dynamic Information Storage (동적 정보 저장을 위한 자동 하이퍼텍스트 색인 기법의 개발)

  • The hyperlinks to related nodes should be changed when we insert, or modify an information in a hypertext database. We can find more informations by means of hyperlinks that are based upon hypertext indexes. Therefore, the management of the hypertext indexes is an important component for dynamic information storage. In this paper, we suggest a method to manage the hypertext indexes and to determine hyperlinks automatically by using a dynamic indexer. We also construct index, stopword, and postposition dictionaries, an inverted index file, and a thesaurus to help the dynamic indexer.
