학교영양사의 급식관리 직무에 대한 인식 및 전처리.가공식품 이용실태 -서울.경기.인천 지역을 중심으로- (A Survey on the Foodservice Management Job of School Dietitians and the Uses of Preprocessed and Processed Foods - Focused on Seoul, Gyeonggi and Incheon Areas -)

  • This survey's purpose was to understand the duties of the school dietitians' foodservice management and to identify the uses of preprocessed and processed food in Seoul Metropolitan area schools. The survey was distributed either via e-mail or in person to nutrition teachers and dietitians working at elementary, middle and high schools who participated in training sessions in Seoul, Gyeonggi and Incheon areas from December 2006 until June 2007. Four-hundred fifty-nine out of the total 760 schools that completed the surveys were analyzed. The following summarizes the main duties of school dietitians related to foodservice management: hygiene (100%), nutrition (99.8%), nutrition education (97.2%), cost (96.9%), and food production process control (96.3%). Preprocessed foods were ordered as the following: seafood (2.89) > poultry (2.78) > seeds (2.37), process foods comprised the following order: pastes (4.94) > kimchi (4.91) > dressing materials (4.50). Based on these results, elementary schools must improve methods for developing effective study materials for nutrition education which arc appropriate for each grade.

지구 비대칭 중력장이 정지위성에 미치는 효과 (RESONANCE EFFECT ON THE GEOSYNCHRONOUS ORBIT DUE TO THE NON-ZONAL GEOPOTENTIAL)

  • 지구의 중력장 중에서 비대칭 중력장이 정지위성의 궤도요소에 미치는 섭동을 계산하였다. 지구의 비대칭 중력장(non-zonal geopotential)에 의한 섭동이 인공위성의 궤도요소에 미츤 영향은 $J_2$항 또는 Luni-Solar섭동에 의한 영향보다는 작지만, 이 지구 비대칭 중력장 함수에는 sine값이 1이 되는 강한 공명항이 존재한다. 따라서 지구의 비대칭 중력장 중 이러한 공명항에 의한 정지위성의 궤도요소 변화를 구하였다. 지구의 비대칭 중력장에 의해서 섭동을 받는 궤도 이심률의 변화를 $e_c$$e_s$의 위상면상에서 나타냈고, 평균경도($L_c$)와 궤도 반장경(a)에 대한 변화양상도 구하였다.

  • 인공위성은 주차궤도(parking orbit)에서 최종궤도(final orbit)에 진입시키기 위해서는 많은 연료가 소모되고 또한 잔여 연료는 위성의 수명을 좌우하므로 궤도전이에 사용되는 연료의 효율을 극대화시키기 위한 한 가지 일환으로 지구의 비대칭 중력장이 궤도전이에 미치는 효과에 대하여 연구해 보았다. 주차궤도는 매우 낮은 고도에 위치하고 있으므로 지구의 비대칭 중력은 주차궤도로부터 최종궤도로 진입하기 위한 전이궤도(transfer orbit)에 비교적 커다란 영향을 미친다. 이러한 영향을 알아보기 위해 6가지 궤도요소 중에서 위성의 고도에 직접 관련이 있는 궤도의 이심률과 반장경의 변화를 토대로 위성의 고도와 속도의 변화량을 알아보았다. 그 결과 전이궤도의 원지점은 비대칭 중력장의 섭동으로 인해 고도가 증가하게 되고, 고도가 증가함에 따라 원지점에서의 속도는 감소하게 된다. 따라서 지구 비대칭 중력을 고려했을 경우에는 그렇지 않은 경우보다 연료의 소모가 적은 것으로 나타났다.

영양교육 실시교와 미실시교 초등학생들의 영양지식ㆍ식행동 및 영양소 섭취 상태 비교 연구 (A Comparative Study on Nutrition Knowledge, Eating Behavior and Nutrient Intake for Students at Elementary Schools with and without Nutrition Education Program)

  • This study was conducted to investigate the effect of the nutrition education on the nutrition knowledge, eating behaviour and nutrient intake of the children. Questionnaire and dietary record were executed to 105 children in the 4th and 5th grade in elementary school with nutrition education and 107 in the same grade without nutrition education. The results were as follows; In nutrition aspect, higher acknowledgement and precision level was observed(p<0.001) in the educated group. Higher practice will of nutrition knowledge, lower rate of skipping meal, better appetite were also observed in the educated group. In the aspect of food group intake, meatㆍfishㆍegg, tofu and bean, fruits, milk and milk products intake frequency were higher in the educated group. Most nutrient intake except fat and vitamin B₂ were observed to be higher in the educated group. Therefore, it was concluded that continuous nutrition education was recommended in order to put positive effect on the eating behaviour and nutrient intake of the children.

서울 지역 비구니 스님의 식생활과 건강상태에 대한 조사 연구 (A Study of Dietary Life and State of Health of Buddhist Nuns in the Seoul Area)

  • This survey was conducted to investigate the dietary behavior and health status of Buddhist nuns. In this study, 100 Buddhist nuns in Seoul were selected. The dietary survey was focused on the diet in winter. The age distribution was as follows; 24% of the subjects were in their 20s, 45% in their 30s, 23% in their 40s, and 8% in their 50's and over, respectively. The percentage of the subjects living in temples close to the downtown area was 77% and the rest resided in areas remote to the downtown area. Over fifty percent of the subjects were satisfied with their diet at temple. And 59% of the subjects were eating a snack more than once a day. The snacks included fruits (60%), raditional tea (20%), coffee (9%), bread and cookies (4%), md rice cakes (3%), etc. Among food groups, the intake of green-vegetables and fruits were the highest and intake of milk and bean products were low which may cause calcium and protein deficiency. Most of the subjects believed that their health conditions were average or above average. About 50% of subjects didn't exercise at all. The frequencies of gastro-intestinal diseases and anemia were extremely high. About 50% of subjects took some form of medicine. To improve their health and nutritional status, it is required that they practice a good dietary behavior, maintain a balanced diet, and exercise regularly.

  • Dibenzo-18-crown-6(DBC) 및 dicyclohexyl-18-crown-6(DCC)를 이온의 운반체로 하는 여러 유기액체막을 통해 수소이온의 운반속도를 25$^{\circ}$C에서 측정하였다. 운반속도는 용매의 유전상수에 크게 영향을 받는데 이를 액체막 내부에서 이온 화학종이 가진 Born의 포텐셜 에너지 장벽을 들어 고찰하였다. 또한 음이온의 크기도 운반속도에 영향을 주었는데 이는 Born식으로 부터 새로이 유도된 이론적인 결과와 잘 일치하였다.

서울ㆍ인천지역 초등학교 급식담당자의 환경보전을 위한 음식물쓰레기 처리 및 급식관리 실태 조사 (A study on Disposal of Food Waste and Fooa Service Management by Elementary School Lunch Program Manager in Seoul and Incheon)

  • The purpose of this study was to investigate the status of school lunch program managers' disposal of food waste and food service management in elementary school lunch program. Questionaries were distributed to 243 school lunch program managers of elementary schools in Seoul and Incheon area. The statistical analysis of data was completed using SPSS program. The results were summarized as follows. The average score of school lunch program managers' environmental conservation consciousness was slightly high, which was found to be 4.0. Most food waste was mainly vegetables. The primary recycling methods of leftovers from the school food service operations were to using them as livestock feed(84.7%). The best way of food waste treatment recognized by school lunch program managers' was utilizing it as fodder for animals or fertilizer(54.1%). The average score that school lunch program managers' achieved in terms of food nice management considering environmental conservation was 3.8. The school lunch managers' opinions imposing environmental regulation on the corresponding firm was very strict. Based on the observed results, several recommendations are suggested:practical food management guideline and its related proper information, foodbank program.

항력에 의한 속도 손실 및 궤도 수명 예측 (Velocity Loss Due to Atmospheric Drag and Orbit Lifetime Estimation)

  • 고도 800km 이내의 저궤도 위성에 가장 큰 영향을 주는 요소는 지구 대기 항력이다. 지구 저궤도의 대기 밀도는 해수면의 대기 밀도에 비하여 매우 낮지만 항력에 의한 영향이 매 주기 마다 누적되면서 근지점에서 속도가 점진적으로 줄어든다. 근지점에서의 속도 감소는 곧바로 원지점의 고도 감소를 가져오게 되고 이심률이 작아지면서 최종적으로 원궤도로 바뀌게 된다. 본 논문에서는 이러한 대기 항력 및 수명 계산 방법에 대하여 기술하였다. 또한 항력의 크기를 결정하는 대기 밀도에 관해서 알아보고 KSLV-I에 사용될 킥모터와 위성의 수명을 Satellite Tool Kit 프로그램으로 계산하였다.

학교 급식관리 및 영양교육에 대한 행정담당자 및 영양사의 의식 실태 조사 연구 (A Study on Consciousness of Administrator and Dietitian for School Food - Service Management and Nutritional Education)

  • School food service must be operated as the part of the education. But it seems that it is not to be considered as an important educational field from the perspective of educational administration. This study was conducted to suggest the effective plan to improve the quality of the school food service system. Questionaries were distributed to 51 administrators and 85 dieticians of primary schools in Incheon area from Aug 7th to Aug 31st 2000. Drawbacks of school food service system cited from the survey results were insufficient support from the authorities both in policy and in budget and shortage of specialists for food service administration. Both dieticians and administrators acknowledged that available facilities required for the school food service were insufficient. 85.9% of dietition and 51.0% of administrators thought dietition of school food service to be suitable for nutrition education. For effective nutrition education, they suggest to have teachers taking in charge of nutrition education, to have teaching system related with school food service and to develope visual auditorial teaching material. For improvement of the quality of school food service, it is necessary to acquire sufficient budget and political support from the government and to have specialists for food service administration. And regulations promoting dieticians to be teachers of nutrition education is required to be introduced in the near future.

서울.인천 지역 학교 영양사의 직무 스트레스 요인이 심리적 직무 스트레스 수준과 직무 만족에 미치는 영향 (Effects of Job Stress Factors on Psychological Job Stress and Job Satisfaction Levels of School Dietitians in the Seoul and Incheon Area)

  • The effects of job stress factors on psychological job stress and job satisfaction levels of school dietitians were evaluated. Questionnaires were distributed to 163 elementary school foodservice dietitians in the Seoul and Incheon area. Statistical data analysis was completed using the SPSS program. The highest stress factor was the importance of the job followed by role ambiguity, autonomy and identity, communication and participation. When dealing with job stress, the subjects showed improved and positive behaviors when communicating and participating with each other. The analysis of the relationships between job stress factors and job satisfaction revealed that the importance of the job had a negative effect on jog satisfaction. while role conflict and overload, personal relationships, and experience accumulation had positive effects. Ample occupational experience and background had highly positive effects on school dietitians' job satisfaction level whereas negative results were shown concerning circulated appointments(p<0.01). Based on these results, we suggest that role conflict and overload should be reduced in order to lower job stress levels and enhance job satisfaction levels.
