  • This experiment was conducted to investigate the effect of whole crop rice (WCR) based TMR on growth performance and carcass characteristics of Hanwoo steers. WCR "Yeongwoo"was harvested at yellow ripen stage and ensiled for 60 days. The crude protein (CP), acid detergent fiber (ADF), neutral detergent fiber (NDF), in vitro dry matter digestibility (IVDMD) and total digestible nutrient (TDN) content was 8.4 %, 28.0 %, 53.8 %, 72.4 % and 66.8 %, respectively. For silage quality, pH was 4.37 and lactic and butyric acid content were 2.84 and 0.04 % in DM. Sixteen Hanwoo steers (8-mon-old) were allocated into either a control (commercial TMR) and WCR-TMR (WCR-based TMR) group. The TMR were fed according to the feeding stage phase: growing (Initiate~14 month), early fattening (15 month~21 month) and late fattening (22 month~30 month). The body weight of control group increased (P<0.05) until early fattening stage, but late growing stage of WCR-TMR group was higher than that of control (P<0.05). Average daily gain (ADG) was significantly greater (P<0.05) in WCR-TMR group (total 0.78 kg/head) compared to control (total 0.66 kg/head) except for late fattening stage. The marketing weight and carcass weight were higher in WCR-TMR group (726 vs 765 kg; 417.8 vs 450.4 kg). The back fat thickness (11.75 vs 13.00 mm), Longissimus dorsi area (88.00 vs $89.88cm^2$) and yield index (65.87 vs 64.30) were not different between the two groups (P>0.05) and also no difference in meat yield grade (A : B : C = 2 : 4 : 2). Marbling score (4.00 vs 4.13), meat color (4.75 vs 4.75), fat color (3.13 vs 2.88), texture (1.25 vs 1.50) and maturity (2.00 vs 2.00) were not significant difference between the two groups and meat quality grade ($1^{{+}{+}}:1^+:1:2:3=0:2:4:2:0$) was also not different. In conclusion, TMR feeding based on WCR silage showed superiority in carcass yield and ADG compared to control TMR. It is considered that the use of WCR for feed is a necessary option for the substitution of the imported forages and the government's policy for rice production adjustment.

  • This experiment was conducted to the purpose of evaluating the effect of feeding on Korean Native Cattle to expand the production and utilization of whole crop rice (WCR). TMR (Total mixed ration) feed was prepared by using WCR produced in Pyeongtaek, Gyeonggi-do, and the growth capacity and meat quality characteristics of 16 Korean Native Cattle raised up to 29 months of age were investigated. The produced WCR silage for feed had a moisture content of 64.02% and a crude protein content of 7.54%, and was blended with about 45% during the growing season, and lowered to 35, 15 and 9%, respectively, in the fattening period (early, middle and late stages). The body weight of the WCR-TMR feeding group was significantly higher than that of the control in the middle and late fattening stage, and at the end (29 months of age), the control group was 631 kg/head, but the WCR-TMR feeding group was 647 kg/head, which was higher. The average daily gain was significantly higher in the WCR-TMR feeding group in the growing and early fattening period, and there was no difference in the mid- and late fattening period. In the whole period, 0.71 vs 0.75 kg/head/day, WCR-TMR feeding group was high. In terms of meat quantity, the back fat thickness of the control group (11.7 mm) was significantly thicker than that of the WCR-TMR fed group (9.3 mm) (P<0.05). There was no difference in Rib eye area, Carcass weight and Meat yield index (P>0.05). In terms of meat quality, the Marbling score was higher in the WCR-TMR feeding group (P<0.05), and there were no significant differences in Meat color, Fat color, Texture and Maturity. Considering the above results, TMR feeding mainly on whole crop rice silage for feed improved the productivity of livestock, but there was no significant difference in meat quality. Therefore, it is judged that it is necessary to produce and use the whole crop rice for feed in countries with poor forage conditions.

  • Sixty Hanwoo steers(15 months of age; 409±29.2 kg of BW) were used to evaluate the effects of dietary vitamins A and D restriction on carcass characteristics. Steers were allotted randomly to 1 of 4 treatments: Control(diet supplemented with vitamins A, D and E), -A (diet supplemented with vitamins D and E), -D(diet supplemented with vitamins A and E) and -AD(diet supplemented with vitamin E only). Steers were fed the experimental diet for a period of 8 months(until 23 months of age), and then supplemented with vitamins A and D at 0.05% of the diet(as fed-basis) from 24 to 26 months of age, and at 0.1% of the diet from 27 to 31 months of age(harvesting time). Dietary restriction of vitamins A and D did not affect DM intake, daily gain and feed conversion ratio. But the concentration of serum retinol was significantly(P<0.05) decreased by vitamin A restriction with the lowest concentration being seen at 23 months of age(345.0 ㎍/L and 326.7㎍/L for control and -D treatment versus 169.3 ㎍/L and 175.4 ㎍/L for -A and -AD treatments). The serum concentration of 25(OH)D3 was also decreased significantly(P<0.05) by vitamin D restriction and the lowest concentration was seen at 18 months of age(53.7ng/ml and 61.8ng/ml for control and - A treatment versus 24.0 ng/ml and 24.5 ng/ml for -D and -AD treatments). After the restriction period of vitamins A and D, the concentrations of retinol and 25(OH)D3 for - A, -D and -AD treatments were recovered at those of control. Dietary restriction of vitamins A and D did not affect carcass weight, backfat thickness, ribeye area, quality grade and yield grade. But marbling score was significantly increased by vitamin A restriction compared with control(6.73, 6.87 and 5.73 for -A, -AD and control, respectively). The results of the present study suggested that dietary vitamin A restriction could improve marbling score in Hanwoo steers.

  • This experiment was carried out to investigate the effects of dietary vitamin C and E on carcass characteristics of Hanwoo steers. Thirty seven Hanwoo steers were randomly assigned to one of four treatments. The four treatments were control(vitamin E 20 IU/kg feed), vitamin C(vitamin C 0.1%/kg feed and vitamin E 20 IU/kg feed), vitamin E(vitamin E 220 IU/kg feed) and vitamin C plus E(vitamin C 0.1%/kg feed and vitamin E 220 IU/kg feed). Hanwoo steers were fed experimental diets for 3 months of the last finishing period. Animals fed the diet containing vitamin C plus E had higher(P<0.05) yield grade than those fed the other diets but quality grade was not different between animals fed the control diet and vitamin-supplemented diets. Proximate analysis in longissimus dorsi was not different between animals fed the control diet and vitamin-supplemented diets. Vitamin C concentration in longissimus dorsi was higher (P<0.05) in the animals fed the vitamin C diet and the vitamin C plus E diet than in those fed the control diet and the vitamin E diet. Vitamin E concentration in longissimus dorsi was higher(P<0.05) in the animals fed the diet supplemented with vitamin E and the diet supplemented with vitamin C plus E than in those fed the control diet and the vitamin C diet. Animals fed the diet supplemented with vitamin C was higher(P<0.05) in myristic acid, palmitic acid, palmitoleic acid and oleic acid in the longissimus dorsi than those fed the other diets, but linoleic acid in longissimus dorsi was higher(P<0.05) in the animals fed the vitamin E diet than those fed the other diets. However, saturated fatty acid and unsaturated fatty acid were not different between animals fed the control diet and vitamin-supplemented diets.

  • This study was conducted to compare among bull, steer and heifer on growth performance, blood composition and carcass traits according to fattening phase in Hanwoo. 12 month of aged 4 bulls ($339.8{\pm}18.5kg$), 4 steers ($309.8{\pm}13.2kg$), and 3 heifers ($290.0{\pm}16.7kg$) were allocated in the stalls with individual feeding system during 20 months. Average daily gain was not different among the treatment groups during early fattening phase, but higher in the bulls and lower in the heifers after mid-fattening phase (p<0.05). The difference of body size by animal groups appeared from 24 month of age, and wither height and body length of Hanwoo heifer were the smallest (p<0.05) among treatment group. But wither height was not difference among treatment groups at 32 month of age. At 12 month of age, concentrations of serum cholesterol, triglyceride, glucose and total protein were higher in the heifers compared to other groups, and serum GPT (Glutamic pyruvic transaminase) was the highest (p<0.05) in the bulls, and serum GOT (Glutamic oxaloacetic transaminase) was the highest (p<0.05) at late fattening phase in the bulls. Meat yield index was similar between the bulls and the heifers, and the lowest (p<0.05) in the steers. Marbling score was significantly higher (p<0.05) in the steers and the heifers than in the bulls, and meat quality was the best in the steers among treatment groups. The results of this experiment might be used as a basal data on difference between gender in revision of Korean feeding standard for Hanwoo.

  • This study was conducted to investigate the genetic correlations among the traits used to select young bulls and proven bulls in Hanwoo Performance and Progeny Test Program in Korea. For the estimation of heritabilities and correlations among the growth traits of bulls and carcass traits of progeny steers, 2,532 records of performance tested bull calves and 1,819 records of progeny tested steers were collected from Livestock Improvement Main Center (LIMC), National Agricultural Cooperative Federation (NACF). Fixed effects of mixed model for each traits were selected by using stepwise regression analysis and prior values of variance components were estimated by MTDFREML. The prior values of variance components were estimated with pairwise 2 traits model followed by single trait analysis. The estimated heritability of backfat thickness(BF), dressing percentage(DP), loin-eye muscle area(LMA), marbling score(MS) and weight at 12 months(WT12) was 0.51, 0.32, 0.27, 0.33, 0.50 and 0.26, respectively. Genetic correlation of WT12 of bull calves with backfat thickness, carcass weight and loin-eye muscle area of steers was positive correlation as 0.05, 0.35 and 0.21, respectively. However genetic correlation of WT12 with DP and MS showed negative correlation as 󰠏0.09 and 󰠏0.27, respectively and these negative genetic correlations implies that bulls that may be superior in carcass traits can be lost at the first step of selection and current selection method should be modified to solve this problem.

  • In order to establish the optimal thawing condition of frozen fork, hot-air thawing and microwave thawing were evaluated at various conditions. In hot-air thawing, the higher the air temperature and the lower the meat surface temperature, the grater the thawing rate was. In microwave thawing, the grater the power and the lower the meat core temperature, the faster the thawing rate was. Comparing the two methods, microwave thawing was found to be significantly faster than hot-air thawing. TBA value and cooking loss were higher in hot-air thawing than that of refrigeration thawing or microwave thawing. Total extractable protein tended to be lower in hot-air thawing than that of the other two thawing methods. WHC decreased with the increase of hot-air and meat surface temperature whereas no significant difference was observed in microwave thawing regardless of the thawing conditions. Total microbial counts of thawed meat by the hot-air or microwave thawing were lower than that of refrigeration thawing.

  • This experiment was prosecuted to estimate the carcass traits and their relationships in Hanwoo steers. The mean carcass weight(CWT), back fat thickness (BFT), meat, bone, intra- muscular fat (IMF) and eye muscle area (EMA) of steers were 300.27 kg, 9.23 mm, 58.99%, 12.92%, 28.08% and 74.00 $cm^2$, respectively. The pHB(before aging), pHA(after aging), cook loss before aging($CL_B$) and cook loss after aging ($CL_A$) were 5.32, 5.60, 16.43% and 19.21%, respectively. It was also found that the MS and FC were 3.67 and 3.17, respectively. The EMA and quantity index (QIX) were positively correlated with CWT, meat% and bone% but negatively correlated with IMF%. The BFT was positively correlated with CWT and meat% but negatively correlated with bone% and IMF%. The pH (both before and after aging) was negatively correlated with CL (both before and after aging), water loss during freezing (WLF) and FC. The muscle score(MS) was negatively correlated with CL but positively correlated with WLF and FC. The ARM, HRD, CHW and CTM increased with the increasing of fat% and sharply decreased with the increasing of meat% in the carcass.

  • A study on tile processing of liquefied fish protein with a long self life and good solubility has been carried out for the effective utilization of sardine. The whole sadine was chopped, homogenized with same amount of water and then hydrolyzed by the addition of commercial proteolytic enzyme. The hydrolysate was centrifuged and the supernatant was decolorized with active carbon, desodorized by azeotropic distillation with toluene, xylene and cyclohexane. The liquefied sardine protein was then concentrated by rotary vacuum evaporator with the addition of starch. The use of $0.2\%$ commercial proteolytic enzyme to the weight of the whole sardine showed the optimum hydrolysis ratio at $55^{\circ}C$ for 4 hours. The liquefied sardine protein could be decolorized and also desodorized by the treatment with $15\%$ active carl]on at room temperature for 30 minuted. In the view point of lipid concentration and the solubility of the product, the liquefied sardine protein prepared by enzymic hydrolysis from the sardine protein concentrate was better than that prepared by enzymic hydrolysis from the whole sardine and sardine protein concentrate.

  • In order to investigate the effect of floor condition on the fattening performance of cattle, sixteen finishing Hanwoo steers of weighting 570kg were fed for 16 weeks to slaughter on two types of sawdust bedding pen oriented to the south(SP) and the north(NP) then obtained following results. The floor condition of SP roofed by transparent material was dry and flat during overall experimental period, whereas, that of NP roofed by solid slate was muddy and rough even in summer and fall, and then frozen in winter period resulted in interfering with the locomotion and resting behavior of steers. Average daily dry matter intake of steers was not different between tow treatments, however, the average daily gain of steers in NP and SP was 0.64kg and 0.75kg, respectively, meaning that gained 14.3% less for the NP group(p<0.05), accordingly, feed requirement(feed/gain) and TDN/gain increased by 15.9% and 15.5%, respectively. No significant differences were found in slaughter weight, carcass weight, dressing percentage, meat yield index and meat quality traits between two treatments. In conclusion, this study revealed that poor floor condition of feeding pen could decrease weight gain and feed efficiency of cattle by increasing energy consumption for locomotion and conductive energy loss while resting on the floor surface. These results indicates that housing orientation of cattle shed and the selection of roof material are important factors in beef cattle production.
