Production and Characteristics of Protein Hydrolysate from Sharp Toothed Eel (Muraenesox cinereus) (갯장어 효소 가수분해물의 제조 및 특성)

  • Protein hydrolysate was prepared as a natural flavor stock from the sharp toothed eel (Muraenesox cinereus) mince using com-mercially available proteolytic enzymes, Alcalase, Neutrase, Protamex, and Flavourzyme. A 6 hr hydrolysis of mince, to which water of the equal weight of the mince was added, with $2\%$ (w/w, protein weight) Elavourzyme at $50^{\circ}$ yielded a hydrolysate of the highest acceptability. Removing the access lipid in liquified hydrolysate (not dehydrated) after enzyme hydrolysis, five times repetitive extraction using n-hexane (liquified hydrolysate : n-hexane=4 : 1, v/v) was effective, resulting in less than $1\%$ lipid content of the dehydrated-hydrolysate. The amino acid composition of the hydrolysate (prepared with Flavourzyme) was similar to that of the starting material. Hydrolysis led to an increase in concentration of not only total free amino acid but also free amino acid such as serine, glutamic acid, alanine, and methionine responsible for umami taste, especially up to about 40 times for methionine. Major free amino acids in amount were leucine, phenylalanine, valine, alanine, and isoleucine and they comprised about half of the total free amino acids, Moisture adsorption, fat adsorption, emulsifying capacity, and foaming capacity of the hydrolysate were 870.1 $\pm$ $7.9\%$, 352.0$\pm$ $5.3\%$, 50.3 $\pm$ $1.2\%$, and $87.5\pm$ $2.5\%$, respectively, and solubility was 83$\~$$84\%$ at acid pH range of 2$\~$4.

Growth Performance and Carcass Characteristics of Two Different Broiler Strains by Different Levels of Metabolizable Energy (사료 내 대사 에너지 수준 차이가 계통이 다른 육계의 성장과 도체 특성에 미치는 영향)

  • The objective of this study was to evaluate the effects of different levels of dietary ME on growth performance and carcass characteristics in two different strains of broiler chicken. A total of one thousand, 1-day-old A strain and R strain male chicks were randomly assigned into 8 treatments in a $2{\times}4$ factorial arrangement. They were fed iso-nitrogenic (CP 21%) crumbled diets formulated to contain metabolizable energy (ME) 2,950 to 3,250 kcal/kg in increment of 100 kcal/kg in the starter phase (1 to 21d) and iso-nitrogenic (CP 19%) pelleted diets containing same ME levels as in the finishing phase (22 to 38d). The body weight (BW) gain of chicks fed the lower ME diets (2,950 or 3,050 kcal/kg) were higher than those of the higher ME groups. The dietary energy level showed significant effects on feed intake and feed conversion rate (FCR) from 1 to 38 days of age (p<0.05). With the increment of dietary energy, feed intake tended to be reduced, whereas FCR was improved in the two strains of broiler chickens. The lowest FCR was observed at 3,250 kcal/kg diet groups in both of the two strains from 1 to 38 days of age. Feed intake and BW gain during 38 days were significantly affected by the strain factor. Increasing dietary energy up to 3,250 kcal/kg had no effect on the relative weights of breast meat and abdominal fat. The dietary energy and strains showed significant effects on the dressing percentage. There were no significant differences in various blood profiles except for GPT activity.

  • Korean native goats were used for meat production test, and summarized resalts are as follows. 1. The amounts of feed consumed for Korean Native Goat were significantly higher at day than at night. 2. The feed intake was decreased and live weight gain was lower for the summer period. 3. The concentrate consumption was increased when poor quality of pasture and native grass. 4. Compared between single bran feeding group$(T_2)$ and mixed grain feeding group$(T_3)$, the roughage consumption were similar in both groups. 5. By the use of feeding standard for feeding of Korean Native Goat, the feed convertion of T.D.N, D.C.P, and M. E were decreased. 6. It is necessary to periodically protect from contamination parasitic such like stomach worm, liver flack, nodula worm disease and coccidiosis. 7. The carcass rates of goat at 11-12 months age were higher in $T_3$ feeding group as 44.56% compared with $T_2$ feeding group as 42.17% and tethering group as 35.1% and also the dressed carcass percentage were 33.89%, 30.25% and 29.92% respectively. 8. By increasing the amouat concentrate feeds, fat content in muscle was increased but moisture and ash contents were decreased. 9. The fat caused unacceptable flavour was about 4 percent of total dressed goat meat. 10. Among the spices, clove and pepper were better to improved meat flavour for sausage and can meat processing 11. It was known that the quality of goat meat was suitable for meat processing.

Quality Characteristics of the Meat Products Reached Expiration Date in Korean Market (유통기한이 임박한 한국산 식육제품의 품질 특성)

  • This study was carried out to compare microbiological and hygienic quality characteristics of the products reached expiration date among meat products distributing in markets. A total of 20 meat products(6 hams, 3 bacons and 11 sausages) were examined for analyses of pH, Aw, TBARS, VBN, total aerobic microbial counts, and meat colors. The pH values of samples were between 5.33 and 6.59. The water activity (Aw) of samples ranged 0.90-0.93. TBARS and VBN values of samples were 0.11-0.59 and 2.37~14.75, respectively. The contaminated levels of total aerobic bacteria were less than 2.80 CFU/g. In meat color, L*, a*, and b* values of samples were in the range of 56-72, 5.2-34 and 0.7-16, respectively. It is suggested that the quality difference of meat products is attributed to the different additives and manufacturing processes. Therefore, we suggest that the results of this study are not only applied for evaluation of the microbiological and hygienic safety but also served as fundamental information for re-establishing the shelf-life of meat products.

Preparation and Keeping Quality of Canned Liquid Smoked Oyster Products (훈액처리에 의한 굴 통조림의 품질개선에 관한 연구)

  • In order to improve the quality of canned oyster, canned oyster in oil as control, canned smoked oyster in oil and canned liquid smoked oyster in oil were prepared, and the masking effect of green meat and the stability of their qualities during storage were examined. Three kinds of canned oyster products showed little change in pH, VBN and TBA during 4 months storage in room temperature. In texture of the products, however, hardness and toughness of all the products decreased slightly after 3 months storage, while elasticity and cohesiveness did not change largely up to 4 months storage. Green meat appeared on the surface of canned oyster in oil as control after 30 days storage. And the masking of green meat could be achieved more effectively by dipping treatment of meat for 30 seconds in smoke flavor(Smoke-EZ, Alpha Foods Co., Ltd.) solution than conventional smoking process.

Quality Analysis of Viscera of Alaska Pollack Treated on Vessel for Raw Materials of Changran-Jeotgal (선상에서 처리한 창란젓갈 원료에 관한 연구)

  • The study was attempted to detemine the ratio of stomach and intestine to viscera gathered on catching vessels, the critical level of VBN content as a freshness quality of viscera of Alaska pollack for raw materials of Changran-jeotgal. It also examined the changes of VBN values, pH and viable tell counts during the fermentation. Then sensory evaluation of the fermented products, Changran-jeotgal, was done according to the freshness of raw materials used. The ratio of stomach and intestine to the gathered viscera on the vessel was about $72\%$, while that of round state of Alaska pollack was about $18\%$. There was no significant relationship in VBN content between fish muscle and viscera. It suggests that VBN content is not a reasonable freshness criteria in viscera but in fish muscle. However, if we use the VBN content as a freshness criteria of viscera for raw materials of Changran-jeotgal, less than $70mg\%$ of VBN value could be recommended. According to the experimental results, the product yields and sensory evaluation scores were no good not only for economical evaluation but also for consumption.

Text Mining-Based Analysis for Research Trends in Vocational Studies (텍스트 마이닝을 활용한 직업학 연구동향 분석)

  • This study attempts to understand the overall research trends in Vocational Studies using a text mining method, which is a means to analyze big data. The findings of the research show that Vocational Studies in Korea has been directly influenced by global economic crises, as evidenced by its exponential growth after the 1997 foreign exchange crisis that resulted in a bailout from the IMF. In addition, the topics of research have been shifting from such macro subjects as government policies and systems to such micro topics as individual career development. Moreover, the perspective of research is being moved from the socially vulnerable, including women and the disabled, to the economically marginalized, including retirees and the unemployed. As for the research targets, college students overwhelmingly outnumbered primary and secondary school students. However, few cases analyzed the clinical outcomes of career counseling or attempted to process job information and study the history of jobs. This research is limited in that it only analyzed journal abstracts. Nonetheless, it is meaningful because it used topic analysis, one of the text mining methods, to give a complete enumeration of all articles available for search, thereby crafting a framework of quantitative analysis methodology for Vocational Studies. It is also significant in that it is the first attempt to analyze themes in every stage of the development of Vocational Studies.

Studies on the Preparation of Pheasant Meat Extracts by Protease (효소에 의한 꿩고기 가수분해물의 제조)

  • Ths studies was carried out to investigate the processing possibility of pheasant meat extracts treated with proteases. The crude protein, aminonitrogen, degree of hydrolysis, yield and amino acid composition of pheasant meat extracts when it was treated with proteases at various temperature and reaction time were analyzed. The crude protein contents of pheasant meat extracts processed in $130^{\circ}C$ were more than when it was done in $100^{\circ}C$, but the contents of aminonitrogen were not quite different between two processing temperature. The content of crude protein and aminonitrogen when pheasant meat was hydrolyzed with protease NP and prozyme A. The yields of pheasant meat extracts, when pheasant meat were treated at $100^{\circ}C$ and $130^{\circ}C$, were from 2.24 to 7.10% and from 5.51 to 10.45%, respectively. And the yield of extraction depended on extraction temperature, kinds of enzyme, amount of enzyme, extraction time. The content of aminonitrogen in pheasant meat extracts treated with enzyme was much higher than any other treatments. And it depended on amount of enzyme, extraction time and temperature. The amount of the amino acids in pheasant meat extracts treated by protease NP were eminently higher than by heat at $100^{\circ}C$ or $130^{\circ}C$.

  • In order to obtain the basic information for new food product development from pheasant, wild duck(chhungdung), and Ogol fowl, which are called as special poultry, general components,fatty acid amino acid and minerals composition were analyzed. 1). The general compositions were 71.2-74.1% of water, 23.3-26.4% of protein, 1.0-2.4% fat, and 1.1-1.4% of ash in the pheasant, 73.8-76.4% of water, 18.6-19.6% of protein, 2.7-6.8% of fat, and 0.8-1.6% of ash in the wild duck, and 71.4-72.3% of water, 20.8-22.7% of protein, 1.9-6.3% of fat, and 1.0-1.2% of ash in the Ogol fowl, repectively. 2).In the pheasant and wild duck meat, the composition of unsaturated and saturated fatty acid were 60-64%,36-40%, respectively, and olec, palmitic, linolec, and stearic acid were most abundant in this order. But, in Ogol fowl, 72-76% and 24-28% were belong to the unsaturated fatty acid, respectively. 3). Amino acid contents in its order of relative amount were glutamic acid, alanine, aspatic acid, and glycine for the pheasant, glutamic acid, glycine, alanine, and aspatic acid for the wild duck, and lysine, glutamic acid, and aspatic acid for the Ogol fowl, repectively. 4).The mineral composition in the pheasant and wild duck were potassium, phosphorus, sodium, magnesium, and calcium, but in the Ogol fowl, potassium, sodium, magnesium, phosphorus, calcium were the most abundant in this order, repectively.

Determination of Risk Ranking of Combination of Potentially Hazardous Foods and Foodborne Pathogens Using a Risk Ranger (Risk Ranger를 활용한 잠재적 위해식품과 미생물 조합에 대한 위해순위 결정)

  • Risk ranking must be determined for various hazards/food combinations to conduct microbial risk management effectively. Risk Ranger is a simple, easy-to-use calculation tool developed in Microsoft Excel and designed to rank the risk (low, medium, and high) for semi-quantitative microbial risk assessment. The user is required to answer 11 questions in Risk Ranger related to 1) severity of the hazard, 2) likelihood of a disease-causing dose of the hazard being present in the meal, and 3) the probability of exposure to the hazard in a defined time. This study determined the risk ranking for twenty three combinations of foodborne pathogens/potentially hazardous foods (PHFs) using a Risk Ranger. In this study, pathogenic E. coli in fresh cut produce salad was scored as 79, which was the highest rank among the 23 combinations of the foodborne pathogens and PHFs. On the other hand, zero risk was obtained with V parahaemolyticus in sushi, Salmonella in meat products and E. coli O157:H7 in hamburger patties. Although Risk Ranger is very simple method to rate the risk of foodborne pathogens and PHFs combination, the accuracy of result was mainly affected by the availability and accuracy of data in the literature. According to the result of literature review, the data are needed for contamination rate of raw materials, consumption amount/frequency of PHFs, and the effect of processing on pathogen. Risk ranking must be continuously revalidated with new data.
