A Study on the Relationships Between Demographic Characteristics of Entrepreneurial Candidates, their Developmental Level of Entrepreneurial Traits and Choice of Business Field (예비 창업자의 인구학적 특성과 창업성향 발달도 및 창업업종 선정에 관한 연구)

  • The purpose of this research is to do exploratory analysis on the relationships between demographic characteristics of entrepreneurial candidates and their developmental level of entrepreneurial traits as well as the choice of business field. We analyzed gender, age, and educational level of the entrepreneurial candidates and their developmental level of entrepreneurial traits such as achievement tendencies, degree of awareness, planning skills, sincerity, interpersonal relationship, and problem-solving skills. Industry fields were classified into 4 types: restaurants, retail, services, internet business. Descriptive statistical analyses, logistic regressions, and variance analyses were performed about the sample data gathered from 1,441 persons since the year 2002 to 2014. Males and highly educated above university preferred service industry than restaurant, retail, and internet business. Females preferred internet business, retail, and restaurants than service industry field. The young persons under 20 showed higher probability to choose internet business. The college level and high school graduates preferred retail and restaurants than service industry. The developmental level of entrepreneurial traits were higher in male and highly educated. By this study, we could find the divide between groups with high and low probabilities of failure: restaurants and retail field showed higher failure probability than service industry in the business fields of self-employed. Furthermore, we could identify that entrepreneurial traits also had been developed differently depending on the groups. It is necessary to refrain from entering into the fields with high failure probabilities as well as to provide supporting policies to build the systems and environment to reduce the cases to begin new business without special knowledges and know-hows. The competency development training should be provided in the early stage of start-ups considering their entrepreneurial traits and aptitudes. Not only the assessment of the entrepreneurial traits but also professional counseling from initial stage are necessary.

  • The gap(P-E)-model is based on the disconfirmation paradigm that tries to under stand the effect of the gap between before purchase expectations and after purchase perceptions of the product performance on dependent variables such as customer satis-faction. But Bhote proposed multiply($I{\times}P$)-model instead of gap(P-E)-model in 1998. This paper is focused on Bhote's multiply($I{\times}P$)-model in food service industry. The purpose of this research is to test whether DINESERV's 5-dimensions by multiply($I{\times}P$) model fits in explaining satisfaction, revisit intention and customer loyalty. The F-value of regression model was used to test the fitness of regression model of the multiply($I{\times}P$)-model. Through analysis, it was found that the multiply($I{\times}P$)-model fits.

  • Frequent closures among self-employed individuals lead to national economic losses. Given the high closure rates in the restaurant industry, predicting changes in this sector is crucial for business survival. While research on factors affecting restaurant industry survival is active, studies predicting commercial district changes are lacking. Thus, this study focuses on forecasting such alterations, designing a deep learning model for Seoul's administrative district commercial district changes. It collects 2023 and 2022 second-quarter variables related to these changes, converting yearly fluctuations into percentages for augmentation. The proposed deep learning model aims to predict commercial district changes. Future policies, considering this study, could support restaurant industry growth and economic development.

  • This study is focused on the image benefit cost criterion value and the pure image benefit figure of the local food service industries, V, T, and O based on the theory and factor-analyses of food service industry. To accomplish the aim of this study, theoretical and positive research methods have been applied. The steps of food service image decision projects for the activating of identification on food service have been examined through theories and positive analyses. As the results, 'the image of menu service' appears to be the most effectual factor on the pure image benefit score, which is the priority order of the project planning for the food service image marketing of Jeonju area. As for the image benefit cost criterion value, 'the image of managemental service system', 'the image of approachability', and 'the service of internal surroundings' have been proved to be the most effectual factor in V, T, O respectively. On the other hand, this study shows that V manages its image of food service most effectually with 1.7 billion won, T with 96 million won, O with 7.2 million won for the image marketing strategy.

  • An implementation of 6 sigma in foodservice management was introduced from 2000. However they could not achieve full advantages of 6 sigma management because of short period of implementation time, and the critical problem is employees' complaints and their oppositions. The purpose of this study is to analyze the relationship of 6 sigma and organizational commitment in the foodservice industry. In this study, we found that organizational commitment improve with the implementation of 6 sigma. 6 sigma's essential factors have influenced on the organizational commitment.

  • 신(新)산업 발굴 및 신(新)고용창출을 위한 대안으로 창업정책이 확대 및 확산되어 지고 있다. 이러한 시대적 상황 속에서 창업의 성공을 높이기 위한 교육이나 연구가 계속 되고 있다. 이를 위해서는 직업을 선택하거나 새로이 창업을 하고 조직에서 각자의 역할을 진행하는 과정에 개개인이 타고나고 특성들에 대한 고민이 함께 되어야한다. 경제성장 및 정량적 고용창출의 목적을 넘어 창업가들이 직업적 가치를 위한 자아실현 관점에서 창업가 육성을 고민해야 할 시점이 될 것이다. 이러한 만족스러운 직업을 갖게 하는 것이 진정한 의미에서의 국가의 역할이라 할 수 있을 것이다. 즉, 창업가 육성에 관한 관점을 소유권과 시장보호 및 개척의 관점을 넘어 국민의 생애 만족도를 높이기 위한 창업교육과 정책에 관한 연구가 필요하다. 본 연구에서는 창업 시 만족도와 성과에 영향을 줄 수 있는 창업가의 개인적 특성 중 성격 5요인(BIG5)을 중심으로 기업가정신과 성과에 어떠한 영향을 미치는지 살펴봄으로서 개인의 어떠한 특성이 주요하게 작용하는지 분석하고자 한다. 이를 위해 국내 창업의 다수를 차지하고 있으면서도 어려움을 겪고 있는 소상공인 중 외식업, 의류업, 커피전문점, 미용업 등의 자영업자를 대상으로 본 연구를 진행하였다. 연구를 통해 창업성과를 높이기 위해 성격 5요인이 모두 중요하게 작용함을 확인할 수 있었다. 개방성과 친화성을 바탕으로 만족도를 높은 창업자를 육성하고 외향성과 성실성을 높인다면 실질적인 재무성과로 연결시킨다면 창업의 성공을 높일 수 있을 것이다. 앞으로 창업교육과 정책 방향의 토대를 마련하기 위한 창업자 개인의 특성에 관한 다양한 연구가 시도되어야 할 것이다.

The Effect of Web Ad Components on Consumer Attitude and Purchase in Food Service Industry (외식업 웹광고 구성요소가 소비자의 수용태도 및 구매효과에 미치는 영향)

  • This study examined the effects of Web ad components on customer attitude and purchasing decisions in 300 individuals who visited family restaurant Websites. The results are summarized as follows: First, Web ad components such as content, design, and interactivity had effects on the cognitive attitudes of the customers. And design, accessibility, and Web functionality had significant effects on the customers' emotional attitudes. In addition, content, navigation, and Web functionality had significant effects on the customers' behavioral attitudes. Lastly, the cognitive, emotional, and behavioral attitudes of the customers had significant effects on their purchases. From these results, design elements such as content, color, and menus, along with user interactivity for information are considered helpful components of a food service Web ad for customer cognition of the restaurant's information. In addition, aspects of Web functionality such as the food service's Web ad set-up, or the protection of personal information, the color design and menu, as well as accessibility for easy use, are all helpful in terms of gaining a customer attitude that is friendly and preferential towards a restaurant's menu items.

A Study on the Relationships among Training Motivation Factors, Employees' Training Satisfaction, and Job Satisfaction in Foodservice Operations (외식업 종사자의 훈련동기요인, 교육만족도, 직무만족도 간의 관계에 관한 연구)

  • Investment in training by a company can lead to the retention and motivation of its valued staff and promote high self-fulfillment by providing career development. The objectives of this research were (a) to test the perceived satisfaction with a training based on respondents' socio-demographic characteristics, (b) to investigate training motivation factors affecting employees' training satisfaction, (c) to assess how training motivation factors affect the employees' satisfaction, and (d) to indicate the relationship between training satisfaction and the employees' job satisfaction. Additionally, by developing an employees' training motivation model and conducting multiple regression analysis, two types of motivation factors, intrinsic motivation and extrinsic motivation, were shown to be positively related to employees' training satisfaction. Subsequently, this employees' training satisfaction was a significant determinant factor for improving job satisfaction.
