대학생의 디저트카페에 대한 경험가치가 고객충성도에 미치는 영향: 외식소비성향의 조절효과를 중심으로 (The Effects of Experiential Value of on Customer Loyalty in Dessert Café of College Students: Focused on Moderating Effect of the Eating Out Consumption Patterns)

  • The purpose of this study is to investigate the relationship between experiential value, customer loyalty and eating out tendency of dessert $caf{\acute{e}}$ in college students. This survey was conducted for college students who have used dessert $caf{\acute{e}}$ mainly in college areas where dessert cafes are concentrated in Seoul. The survey was conducted on August 17, 2017 to 28 August. A total of 250 copies of the questionnaires were distributed and 208 copies of valid data were used for the analysis. The results of the analysis are as follows. First, emotional experience value and service experience value were found to affect customer loyalty, and cognitive experience value did not affect customer loyalty. Second, the economic and health seeking type showed a positive(+) moderating effect between emotional experience value and customer loyalty, and negative(-) moderating effect between cognitive experiential value and customer loyalty. Next, atmosphere seeking type showed a moderating effect between service experience value and customer loyalty, and the eating out seeking type showed a moderating effect between emotional experience value and customer loyalty. Finally, convenience seeking type showed positive(+) moderating effect between cognitive experiential value and customer loyalty, and negative(-) moderating effect between service experience value and customer loyalty. Based on the results of this study, the dessert cafe operator can grasp the experience value of college students in order to secure college students who are using dessert cafe as loyal customers. In particular, the relationship between experience value and customer loyalty, it is expected to provide useful data for constructing a specific positioning strategy according to each segment market.

기장지역 향토음식점의 메뉴품질과 서비스스케이프의 IPA 분석에 관한 연구 (A Study on the IPA Analysis of Menu Quality and Servicescape of Kijang Area Local Restaurants)

  • 본 연구는 지역향토음식점의 메뉴품질 및 서비스스케이프에 대한 중요도와 만족도가 달라질 수 있을 것이라 판단하여 2015년 12월 1일~12월 31일까지 외식빈도가 가장 높은 12월을 선택하여 기장군내 지역향토음식점을 이용한 고객을 중심으로 반응 조사를 실시하고, 메뉴품질 및 서비스 스케이프의 중요도와 만족도를 비교 분석하여 마케팅 전략수립에 있어서 기초자료를 제공하고자 하였다. 메뉴품질 11개 항목과 서비스스케이프(servicescape) 18개 항목에 대한 요인분석(factor analysis) 결과, 신뢰도(cron-bach's a), 설명력(total cumulative), KMO는 모두 적합하게 나타났다. 마지막으로 메뉴품질 11개, 서비스스케이프 11개에 대한 중요도와 만족도에 대한 IPA 분석을 실시하였다. 연구결과, 메뉴품질에 대한 중요도와 만족도를 살펴본 결과, '지역특산물 위주로 메뉴가 구성되었다'는 평균값이 가장 높았다. 따라서 외래 관광객이나 부산시 거주자들을 지속적으로 유치하기 위해서는 현재 변형되어 판매하는 기장지역 향토음식을 옛부터 내려오는 기장의 전통맛과 조리법을 되살려야 할 것이며, 현재 판매되는 메뉴뿐만 아니라, 가정에서 즐겨먹는 기장에서 생산되는 식재료를 사용한 요리를 판매하는 향수마케팅기법을 사용해야할 것이다.

호텔, 급식 및 외식업소 조리부서에서의 6시그마 기법이 조리품질성과, 업무몰입 및 고객충성도에 미치는 영향 (The Effect of 6 Sigma Program on Culinary Quality Performance, Work Commitment, and Customer Loyalty in the Culinary Division)

  • A recurrent theme within the literature on the 6 Sigma program is the study of its effect on organizational performance. Therefore, the aim of this study was to investigate the effect of 6 Sigma on culinary quality performance, work commitment, and customer loyalty in the culinary division of hotels and family restaurants. The samples of this study included the employees of the culinary division of hotels and family restaurants that implemented or were about to implement the 6 Sigma program. A total of 248 questionnaires were analyzed with statistical methods of factor analysis, reliability test, and regression analysis. The findings of this study showed that the 6 Sigma program affected the culinary quality performance and work commitment of culinary division employees. Also, the 6 Sigma program, culinary quality performance and work commitment affected customer loyalty. Furthermore, work commitment affected culinary quality performance. Based on these research findings, it is required that the culinary division of hotels and family restaurants should incorporate the 6 Sigma program. For this purpose, good quality data should be collected with sufficient preparation procedures, and task force team should be made. Moreover, experts in this field should be cultivated, with the training of employees in mind. It is also crucial that the current quality of product and services be measured and that all the employees of the culinary division participate in the implementation of the 6 Sigma program. The intervention and heavy participation of the top management and head of the culinary division is expected for the successful implementation of 6 Sigma program.

외식기업의 사회적 책임 활동이 고객의 인지된 서비스 품질(DINESERV)에 미치는 영향 (The Effects of Corporate Social Responsibility in the Foodservice Industry upon Customers' Perceived Service Quality Using DINESERV)

  • This study suggested a theoretical research system on the effects of corporate social responsibility in the foodservice industry upon perceived service quality. Self-administered questionnaires were completed by 509 customers and the data were analysed by frequency, factor analysis, reliability analysis, correlation analysis and multiple regression analysis. The primary results are as follows - Three corporate social responsibility (CSR) factors were obtained - economic responsibility, legal.ethical responsibility and philanthropic responsibility. In addition, five factors were obtained from the factor analysis of perceived service quality - tangibility, reliability, responsiveness, assurance and empathy. Correlation analysis showed a significant correlation between the CSR factors and the customers' perceived service quality factors. Multiple regression analysis, to verify the hypothesis, showed that CSR in the foodservice industry had a significant influence upon customers' perceived service quality; therefore, the research hypothesis was adopted. CSR, which had an effect on tangibility out of the minutely-perceived service quality factors, was indicated in the order of economic responsibility, legal ethical responsibility and philanthropic responsibility. Responsiveness, reliability, and assurance were influenced by legal ethical responsibility, economic responsibility and philanthropic responsibility, respectively, in order. Also, empathy was surveyed to be influenced by legal ethical responsibility, philanthropic responsibility and economic responsibility in order. Consequently, customers' evaluations of perceived service quality may be inferred to have positive effects when the customer recognizes whether the foodservice company performs social responsibility.

외식업체에서 제공되는 음식 및 서비스 품질에 대한 고객의 기대도와 만족도에 관한 연구 (A Study on the Customers' Expectation & Satisfaction for Food and Service Quality in Restaurants)

  • This study is to select food offered with higher frequency at restaurants such as hamburger, pizza, chicken, gimbap(boiled rice rolled in laver with seasonings stuffed), and calgooksu(Korean traditional noodles); identify customers' expectation and satisfaction levels on food and service quality and analyze correlation according to each food. The survey was conducted from March 1 to March 24, 2000, by distributing questionnaires. Statistical data analysis was completed using SPSS for t-test, ANOVA, Pearson's correlation analysis. The results of this study were as follows: 1) It is revealed that overall average satisfaction levels on food quality according to individuals' trait came out significantly low compared to their expectation levels, and that balance in nutrition and reasonable prices had problems in relation to food quality. 2) Customers' expectation levels on food quality came out the highest with calgooksu and gimbap, and their satisfaction levels came out the highest with pizza. 3) Customers' overall average expectation levels on service quality showed a very high point, while their satisfaction levels showed a low point with significance. 4) Hamburger was poor in hygiene; pizza showed the highest satisfaction levels over its quality with significance, and calgooksu and gimbap showed very low satisfaction levels over their service quality. 5) Correlation between customers' expectation and satisfaction levels over the nutritional balance and proper taste of the food quality came out significant. 6) Pizza and chicken showed significant correlation with regard to atmosphere, service, and hygiene variables (p<0.01).

외식산업에서 약선(藥膳)음식의 인지도 (Acknowledgement of Herbal Foods in Foodservice Industry)

  • 21세기 새로운 음식의 컨셉으로 건강에 관한 관심증대로 한약재를 이용한 기능성 음식, 약선음식, 한방음식이 대두되고 있다. 본 연구는 약초 및 식품의 효능, 약선음식에 대한 인지도를 파악하여 건강에 가장 관심이 많은 40-50대 고객들을 지속적으로 유인하고 유지하기 위한 가이드 라인을 제시하고자 한다. 한방음식을 영양가가 많고, 성인병 예방과 장수에 도움이 되는 것으로 인지하고 있다. 식품의 효능에서 마늘(암 예방, 노화방지), 미역(피를 맑게하고 혈압하강작용), 은행(천식, 해독작용)에 대해 잘 알고 있고, 약초효능에서 쑥, 인삼, 로얄젤리의 효능을 높게 인지하고 있다. 연구결과를 토대로 한 시사점으로는 첫째, 계절에 따라 약선차를 음료수로 제공한다. 둘째, 밥에 여러가지 곡식, 한약재, 야채를 넣어 매일 섭취가능하게 한다. 예를 들어 마늘과 은행을 넣은 영양 돌솥밥, 고구마 차수수밥이 있다. 셋째, 약초 및 식품 효능의 구체적인 설명을 메뉴판에 넣어서 소비자의 관심과 호기심을 유도한다.

  • 호텔 기업은 경영 방법 및 판매 이익을 향상시키기 위해서는 서비스를 개선해야만 달성할 수 있으며, 호텔 및 외식업 시장의 관리 시스템에 대한 부족한 것들과 비교되는 부분들이 많은 실정이다. 그 분석 결과에 대한 내용은 다음과 같습니다. 자유스럽고 열린 호텔 기업 문화는 외부 환경 변화에 유연하고 탄력적으로 대처하며 좋은 기업 문화는 직원, 고객, 원가, 재고 관리에 효율적인 결과를 창출한다. 호텔 레스토랑 성향은 효과적인 서비스 질, 경영 관리에 중점을 두고 호텔 경영 방식은 다른 서비스 질과 품질 및 조직성과 영향을 미치는 것으로 분석되었다. 추후에 호텔 경영 방식에 따라 경쟁 우위 확보를 강화해야 기업이 살아남는 방법 중의 하나이다. 호텔 기업에 대한 다양한 연구가 계속되고 결과가 호텔 경영진이나 종사자들에게 도움을 줄 것으로 기대한다.

기술수용모델을 이용한 외식 O2O 서비스 특성이 고객신념에 미치는 영향 연구 (The Effect of Food Online-to-Offline (O2O) Service Characteristics on Customer Beliefs using the Technology Acceptance Model)

  • As a single-person household emerges as an important consumer group, an Online-to-Offline or Offlineto-Online(O2O) service market is rapidly growing. This study attempted to verify the effects of convenience and webrooming characteristics of O2O service using the Technology Acceptance Model (TAM). The purpose of this study was to investigate the effects of the convenience and webrooming of food O2O service on users' perceived ease of use and perceived usefulness, and the effects of perceived ease of use and perceived usefulness on purchase intention of O2O services. Using a convenience sampling technique, an online survey was conducted through Google survey from April 16 to April 30, 2017 and was distributed to 447 O2O service users. A total of 320 questionnaires were included in the final analysis. The results showed that convenience had a significant effect on users' perceived ease of use as well as perceived usefulness. In addition, users' perceived ease of use had a significant impact on users' perceived usefulness. Finally, both perceived ease of use and perceived usefulness positively affected users' purchase intention of O2O services. These findings suggest that differentiated events, promotions, and store information should be provided when launching O2O service because webrooming is a more important factor in enhancing perceived usefulness than the perceived ease of use.

외식 서비스 제공자의 서비스 품질 인식이 고객 충성도에 미치는 영향 (Effect of the Service Providers′Perceived Service Quality on Customer Loyalty in Restaurants)

  • Due to the diversification of the food industry and its heightened competition, the marketing strategy to be required the most would be to improve competitiveness by enhancing customer loyalty as a resulting variable of customer satisfaction. Thus, this study, taking a food service provider as a subject, is to find factors and the scope of the perceived quality ; and to analyze how far the perceived service quality factor as such could explain customer′s overall satisfaction and customer loyalty ; finally to provide basic data for establishing a customer satisfaction marketing strategy as related to customer loyalty. The results of the study are as below. 1) 25 factors of service quality perceived by a food service provider have been categorized into 8 independent dimensions through factor analysis. Each of them are named ′Employee attitude′, ′Cleanliness′, ′Reputation′, ′Reliability′, ′Food′, ′Price′, ′Convenience′, ′Variety′, all of which explain 64.3% of the service again quality perception level. 2) After classifying customers into 3 groups according to two criteria -"will buy the service again" and "will suggest it to others" and making a pair of service providers with each customer, each customer loyalty group compared the service quality perception factor of the food service provider. The result was that the group having both the " will buy the service again" and "will suggest to others" criteria, that is, with higher loyalty, tend to have higher points than other group s in the dimension of ′Employee attitude′ and ′ Cleanliness′(p〈0.05), which means these two dimensions are closely related to customer loyalty. 3) From a regression analysis for the service quality perception level of the food service provider and overall satisfaction, it has been found that : the regression models are different for each group, that ′Employee attitude′ seems to be related more closely to the group with higher loyalty(p〈0.05); that the ′Price′dimension is found to be a meaningful factor to the group categorized not having "will buy the service again" and "will suggest to others" criteria(p〈0.05).

  • 본 연구의 목적은 커피전문점의 물리적 환경, 브랜드 이미지 및 재방문의도 간의 구조관계를 파악하고, 추가적으로 감정반응의 조절역할에 대하여 분석하는 것이다. 본 연구의 실증분석에 따른 연구 결과는 다음과 같다. 첫째, 물리적 환경은 공간성, 청결성, 쾌적성, 매력성 요인으로 분류되었고, 물리적 환경 요인 모두 브랜드 이미지에 유의한 영향을 미치는 것으로 나타났다. 둘째, 물리적 환경은 재방문의도에 유의한 영향을 미치는 것으로 나타났다. 셋째, 브랜드 이미지는 재방문의도에 유의한 영향을 미치는 것으로 나타났다. 넷째, 감정반응은 물리적 환경 중 매력성 요인과 브랜드 이미지 간의 영향관계에서 조절효과가 있는 것으로 나타났다. 마지막으로 본 연구는 결과를 토대로 물리적 환경, 브랜드 이미지, 재방문의도 및 감정반응을 향상시키기 위한 전략적 시사점을 제시하였다.
