A Study about Historical Research on Jebok(ritual robes) of Jirisan Namakje (지리산 남악제(南岳祭) 제례복식(祭禮服飾)에 관한 제언)

  • This study is intended to historical research the Jebok(ritual robes) of Jirisan Namakje. Joseon Dynasty established Five Manners as a country-ruling policy on the basis of Confucianism, the religious clothes-wearing method has been established through Sejong Silok Five Manners and the ritual robes system of all the government officials has been handed down to the end of Joseon Dynasty. The ritual robes of all the government officials was worn at the timed of the religious ceremony included ritual manners, and ritual robes are composed of Yanggwan, Ui, Sang, Jungdan, Peasul, Hwan, Wu(a cord, a leather belt, a belt, jade, a mace, Bangsimgokryeong, Mal, Ri, etc., and the rank was classified by the number of the veritical line of Ynaggwan, a leather belt, Hwan, Wu and jade and typeof a mace. "Jongmyouigwe" during the reign of king Sukjong described exactly the Uicha and textile of the ritual robes at that time, the textile Ui used Heukju as same as "Jegiakgidogamuigwe", and jade was used only in case of the first rank ritual official and other government officials did not wear jase. Also, it was revealed that all officials used a wooden mace, and in case of Husu, the first rank ritual official used Jikseong and other official used a picture.

A Study on the Birthplace of Kang Jeungsan, Gaekmang-ri, and Neighboring Areas from a Feng Shui Perspective: Focused on the Theory of Connecting Geomantic Veins (상제 강세지 객망리 일대의 풍수지리적 의미에 관한 연구 -지맥의 연결과정을 통한 형기론을 중심으로-)

  • This study is an integral exploration of Feng Shui associated with the area around the birthplace of Kang Jeungsan, a sacred site of Daesoon Jinrihoe which holds that the Supreme God descended in human form at that location (through Kang Jeungsan). Through an on-site Feng Shui survey, the main focus of the research method was to explore the Feng Shui configurations around Kang Jeungsan's birthplace especially as it pertains to the connections among geomagnetic veins which lead to the Mount Shiru area. As a method of investigation, this study explored the Feng Shui of Gaekmang-ri Village and the geomantic veins leading up to Mount Shiru. This involved examining the landforms, topography, water flow, and geomantic veins of the area to reveal the overall Feng Shui configurations. Throughout the course of that on-site survey, this study first examined Mount Duseung and Mount Bangjang, also known as Mount Yeongju (sometimes collectively known as Mount Samshin), Mount Dongjuk, Mount Mangje-bong, Mount Maebong, and Mount Shiru. Then, this study stated some of the underlying issues through a scholarly approach based on various theories such as traditional geographical texts and theories on mountain-growth and water-flow from the perspective of Feng Shui. In particular, attention was paid to theoretical aspects of the uninterrupted and undulating flow of the terrain leading to Shiru Mountain. As a result, from a Feng Shui point of view, the connected network geomantic veins in the area of Kang Jeungsan's birthplace and the feng shui features and conditions were all examined through an on-site survey. The survey results revealed that the area forms a large Feng Shui site due to the vast interconnectivity among all the mountains that extend from the Honam vein and form organic relationships with one another. This even includes Mount Samshin in Honam. Considering the geographical conditions that formed a site that enabled harmony between divine beings and humankind, the surrounding place names also provide allusions to the understanding of the birth of Kang Jeungsan as the descent of Supreme God into the human world through the historical figure, Kang Jeungsan. This area is an ideal spot with a propitious spatial arrangement in terms of its Feng Shui. Feng Shui analysis reveals the site to be a place that holds an earth energy-hub transmitting a great energy of nature that cannot be measured by human power alone.

Physiochemical Characteristics and Sensory Evaluation of Greenhouse Satsuma Mandarin (시설온주밀감의 이화학적 특성과 관능평가)

  • To assess the physiochemical characteristics of greenhouse Satsuma mandarin (Citrus unshiu Marc. var, miyakawa) produced in Cheju, were analyzed chemical compositions for fruits, external and internal factors influencing the edible quality. Changes in organoleptic value according to brix and acid content were also evaluated. The ratios of sucrose : glucose : fructose in citrus juice were 2 : 2 : 1.5. Citric acid as the main acid in the juice represented about 70% of total organic acid. Most of the amino acids were found to be nonessential amino acids. Deep yellow color of the citrus peel showed a significant relationship(r=0.563) with brix/acid ratio of the citrus juice, indicating the ripeness of the fruit. Since the acid content showed highly negative statistical relationship(r= -0.882) with the pH value of the juice, the pH value appears to be a simple indicator for the sourness of the fruit in the field test. The fruits were divided into 9 groups based on the brix/acid contents for sensory evaluation. The palatability patterns of each group changed depending on the acid content. The optimal ranges of brix/acid content for acceptable taste were 11 and $0.5{\sim}1.0$, respectively.

Discrimination of the geographical origin of commercial sesame oils using fatty acids composition combined with linear discriminant analysis (지방산 조성과 선형판별분석을 활용한 유통판매 참기름의 원산지 판별)

  • In this study, the fatty acid (FA) composition of commercial sesame oils (n = 62) was investigated using gas chromatography with flame ionization detector (GC-FID). Multivariate statistical techniques, including principal component analysis (PCA) and linear discriminant analysis (LDA), were applied to the chromatographic data of the FAs to discriminate the geographical origin of sesame oils. A statistically significant difference was observed in the content of C16:0, C18:0, C18:1, and C18:2 between domestic and imported sesame oils. A satisfactory recovery rate of 82.8-100.2 % was achieved for C16:0, C18:0, C18:1, C18:2, and C18:3. The correlation of C16:0, C18:1, and C18:2 in domestic sesame oils showed opposite trends compared to imported oils. The PCA plot demonstrated that sesame oils were clustered in distinct groups according to their origin. LDA was used to predict sesame oil samples in one of the two groups. C16:0 (Wilks λ = 0.361) and C18:1 (Wilks λ = 0.637) demonstrated the highest discriminant power for classifying the origin of the samples. The correct prediction rates were 88.9 % and 100 % for the domestic and imported samples, respectively. Further, 60 of the 62 sesame oil samples (96.8 %) were correctly classified, indicating that this approach can be used as a valuable tool to predict and classify the geographical origin of sesame oils.

A Study on the Traditionary Famous Scenaries of Jeju-island through T'amna-Sipkyung and T'amna-Sullyokto (탐라십경과 탐라순력도를 통해 본 제주 승경의 전통)

  • This paper attempts to look at the identity of the traditional famous sceneries of Jeju Island by investigating the relationship between 'Yeoung Ju-Sipikyung(瀛州十二景)', which are the representative beautiful scenes of Jeju Island, and two paintings 'T'amna-Sipkyungtdo(耽羅十景圖)' and 'T'amna-Sullyokto(耽羅巡歷圖)' by a grasp of the contents and meanings of these two paintings. The following are the results of the study. In the 'T'amna-Sipkyung', which is the origin of today's 12 beautiful sceneries of Jeju Island, Baekrokdam and Youngsil are both symbolic places and the backdrops against which Jeju's myths were formed. Jocheonjin, Seogwijin and Myoungwoljin, located near the seashores, are strategic footholds in protecting the territory of the island and connotatively contain its culture and history. Seongsan Ilchulbong, Sanbangsan, Chwibyeongdam and Cheonjeyeon Pokpo are not only the quintessentially beautiful scenes of Jeju but also belong to 'YeoungJu-Sipikyung'. And 'T'amna-Sullyokto', which describes the Jeju horses and tangerines that were presented to the king as tribute, offers scenic elements with a strong political tone and is related to the five scene of 'T'amna-Sullyokto', showing that 'defense' and 'tribute' are motives in choosing the sceneries of people's daily lives here. Jeju's daily scenes in particular have been continuously transmitted: 'Idyllic lives with the background of a tangerine orchard' are shown in 'Kowon Panggo' and 'Kyullim P'ungak', and Jeju horses grazing on pastures or being ridden in hunting trips are presented in 'Sanjang Kuma' and 'Kyorae Taeryop'. Besides Baekrokdam and Youngsil, which do not belong to Sunyeok(巡歷) corridor of minister Lee Hyoungsang, 'Yeoung Ju-Sipikyung', directly related to 'T'amna-Sipkyung', has six beautiful sceneries: Seongsan of Seongsan Ilchulbong, Baekrokdam of Baekrokmanseol, Younggok of Youngsilgiam, Sanbang of Sanbanggulsa Chwibyeongdam of Yongyeonyabeom and Seogwiso of Seojinnoseong. The image of 'Gosumokma', the tenth landscape of 'Yeoung Ju-Sipikyung', was expressed as it is, through 'Udojeomma' and 'Sanjangguma'. The ten beautiful sceneries of 'T'amna-Sipkyung' were also especially described in 'T'amna-Sullyokto', besides Baekrokdam and Youngsil, which do not belong to Sunyeok corridor. As the places and landscapes emphasized on 'T'amna-Sipkyungto' and 'T'amna-Sullyokto' in common have been transmitted by the politicians and ancestors of Jeju Island, they have become established as today's 'Yeoung Ju-Sipikyung', passing through correction processes. When considering this process of development, 'Yeoung Ju-Sipikyung' are worthy of heritage and traditional landscapes accomplished in a long difficult period based on investigation into beautiful Jeju Island and the love of the island people for their home.

Nutritional value of black soldier fly, Hermetia illucens (Diptera: Stratiomyidae) as a feed supplement for fish (물고기 사료로서 동애등에의 영양학적 가치)

  • The experiment was conducted to determine the value of black soldier fly (Hermetia illucens) larvae and pupae as feed supplements for fresh-water fish (Carassius auratus). Black soldier fly larvae grown on food waste were fed to fresh-water fish, live larvae alone, dried larvae, dried pupae and combination with commercial fish diet. A 16-week feed trial was conducted to determine whether black soldier fly larvae could be used as a feed supplement in fresh-water fish. The growth performance indicated that fish fed the live larvae ranked consistently higher, and in combination with commercial fish diet and dried larvae and pupae were next higher. The finding of this study suggest that black soldier fly larvae and pupae may be valuable feedstuff in commercial fish production.

Thermal Koji Hydrolysis for Rapid Fermentation of Soy Sauce (간장의 속성제조를 위한 간장국의 고온분해)

  • This study aims to construct the conditions of thermal hydrolysis (40, 45, 5$0^{\circ}C$) of koji for the purpose of rapid soy sauce fermentation. Koji hydrolysate was stable for fermentation, when koji hydrolyzed at 4$0^{\circ}C$ with 12% NaCl or at 45$^{\circ}C$ with 8% NaCl. The highest extracted total nitrogen was 1.75%, when the salt level was 9% and at 45$^{\circ}C$. The amount of reducing sugar was 7.2% and that of formol nitrogen was 0.9% when NaCl concentration was 12% and at 45$^{\circ}C$. The viscosity of koji hydrolyzate was in good condition with 15% NaCl and at 45$^{\circ}C$ until after 12days. On the other hands, free amino acid extracted from koji hydrolyzates showed the highest levels of 3268mg% at 45$^{\circ}C$. Free amino acids consisted of glutamic acid, leucine, arginine, aspartic acid, lysine, valine and phenylalanine which dominated 50% of total amino acids.

제주전통두부(′마른두부′)를 개량한 식품조리 가공용 소재두부의 개발

  • ㆍ 제주전통두부 제조에 따른 지역별 원료대두의 전처리 공정은 \circled1 생두부 -> 수침 -> 맷돌분쇄, \circled2 생두부 -> 맷돌분쇄 -> 수침 그리고 \circled1과 \circled2를 병행한 방법이 있었다. ㆍ비지제거공정의 경우 비지를 제거하는 지역과 비지를 제거하지 않는 지역(성읍)이 있었으며, 비지분리를 위한 첨가제로 돼지기름(내도) 또는 돼지기름과 쌀겨를 혼합(선흘)한 경우가 있었으며, 비지분리 횟수는 지역에 따라 1~3회 정도의 차이가 있었다. ㆍ 가열공정 중 가열용기는 가마솥을 사용하였고, 누름방지제로는 대부분의 지역에서 돼지기름을 사용하였고 일부 지역에서는 들기름을 사용하였다. ㆍ 응고공정 중 응고제로 해안선 지역에서는 해수를 사용하였고, 중간산 지역에서는 소금물을 이용하였으며, 염전이 있는 지역에서는 간수를 사용하였다. ㆍ 성형시간은 60~720분이었으며, 냉각은 수냉이 아닌 방냉을 하였다. 제주 전통두부는 주로 잔치, 상례, 기제사, 명절 등 대소사에 사용하였으며 대부분 가열조리하지 않고 섭취하였다.

한우에서 추출한 Myosin B의 Pepsin 가수분해물의 Ultrafilteration에 의한 Angiotensin Converting Enzyme(ACE) 저해 활성 분석

  • 한우의 Myosin B 단백질을 단백질 가수분해 효소인 pepsin으로 처리한 다음 단백질의 함량과 혈압상승 펩티드 생성효소인 angiotensin-I converting enzyme(ACE)에 대한 저해활성을 측정하였다. 등심이 우둔에 비해 단백질의 함량이 높았으며, 가수분해 처리 후 우둔과 다르게 등심은 3시간 가수분해 처리구에서 단백질의 함량이 높게 나타났다. ACE 저해활성은 등심에서는 3시간, 우둔에서는 6시간동안 가수분해시켰을 때 ACE 저해율이 유의적으로 가장 높게 나타났으며, 3, 6시간동안 가수분해시켰을 경우 부위 별로 유의적인 차가 있었으나(p<0.05), 0, 1시간동안 가수분해 시켰을 때는 부위간의 유의적인 차는 없었다(p>0.05). ACE 저해율이 가장 좋은 가수분해 처리구를 ultrafiltration시킨 결과, 저분자 peptide 상태의 가수분해물이 고분자에 비하여 ACE 저해율이 높은 것으로 나타났다. 차후 ACE 억제활성도가 높은 단백질을 분리하여 가장 우수한 분획을 찾아 아미노산 염기서열을 밝혀 고혈압 억제제로 합성 개발하는 연구를 추진할 예정이다.
