Effect of Circulation Cycle of Nutrient Solution on the Dissolved Oxygen Concentration, and the Growth and Phytonutrient Contents of Leafy Vegetables Grown in DFT Systems (양액의 순환주기가 담액수경 엽채류의 용존산소 농도, 생육 및 식물영양소의 함량에 미치는 영향)

  • To determine the effects of circulation frequency of nutrient solution, three frequencies of 10min. on/10min. off; 10min. on/110min. off; and 10min. on/1,430min. off. treatments were applied to leafy vegetable production using deep flow technique (DFT) systems and their growth and phytonutrient content were investigated. In the 10min. on/I,430min. off treatment, dissolved oxygen concentration (DOC) 17 days after treatment decreased to 2.8mg. $L^{-1}$, known to be a low DOC that causes hypoxia, and thereafter decreased to 1.5mg. $L^{-1}$ 20 days after treatment. Fresh weight of 7 leafy vegetables in the 10min. on/1,430min. off treatment was lower by 0${\sim}$24% than those in the 10min. on/110min. off treatment, and those in the 10min. on/10min. off was higher by -2${\sim}$34% than those in the 10min. on/110min. off treatment as control. As the more frequent circulation was applied, the higher phosphorous content and the lower carbon to nitrogen ratio (C/N ratio) and total ascorbic acid contents were resulted. Results indicate that the circulation frequency of 110min, on/110min. off could be recommended for the production of the tested leafy vegetables in DFT systems.

시판 신선편이 채소류의 유통 중 품질변화 조사

  • 신선편이 채소류의 유통 중 품질변화를 조사하고자 대형 할인 매장에서 시판중인 8종의 포장된 제품을 구입하여 4$^{\circ}C$에서 냉장저장하면서 변화를 조사하였다. 선정 품목은 양상추, 양배추, 치커리, 버섯(양송이), 연근, 우엉, 도라지, 마늘로서 총 8가지 채소류를 대상으로 하였으며, 각 시료에 따라 엽채류는 2일, 버섯, 우엉, 도라지는 3일, 마늘은 4일, 연근은 5일 간격으로 다음의 항목을 조사하였다. 중량감소율, 경도, 가용성 고형분, pH를 측정하였으며, 색의 변화는 Hunter ‘a’, ‘b’ 및 ‘L’값으로 나타내었으며 표면의 갈변도를 기계적으로 측정하기 어려운 경우 마쇄 후 여액의 흡광도(420nm)로 측정하여 나타내었다. 이와 함께 포장지 내부의 기체조성 변화 측정을 통해 호흡특성을 함께 조사하였다. 중량감소율의 경우 모든 시료가 현저히 증가하였으나 진공포장된 연근, 우엉의 경우 중량감소율이 낮았으며, 특히 우엉은 호흡률이 높아 저장 6일째에 진공이 해제되었다. 마늘과 우엉의 pH는 감소하였고, 나머지는 전체적으로 증가하는 경향을 나타내었다. 특히 엽채류와 도라지의 O.D value의 증가와 버섯의 L value 감소가 현저하여 이 품목에서 갈변이 빠르게 진행됨을 알 수 있었다.

  • Three leaf vegetables, namely green lettuce, red lettuce (Lactuca sativa) and red-veined chicory (Cichorium intybus) were grown in minigreenhouses covered with two new functional films and conventional polyethylene film (PE). Seedlings of leaf vegetables were transplanted in a plastic troughs filled with soil-perlite mixture. Two functional films were made from polyolefin (PO) material. Measurement of optical characteristics showed that polyolefin films have better transmittance for the photosynthetic active radiation (PAR, 400-700nm) and higher absorptance for the ultraviolet radiation (UV, 300-400nm) in comparison with the conventional PE film. After three months of utilization higher loss in PAR transmittance was observed for conventional PE film. Leaf vegetables growth was enhanced and yield was increased in greenhouses covered by new functional films.

  • The objective of this study was to investigate and evaluate microbial contamination levels of leafy greens (perilla leaf and lettuce) and its distributing conditions at different seasons (Feb, May, Aug, and Nov of the year 2011) in order to provide insight into any potential health hazards associated with consumption of these commodities. Leafy greens were collected from a farm located in Geumsan, Chungnam and wholesale markets (WM) and traditional markets (TM) located in Suwon. At the same time, temperature and relative humidity fluctuations experienced by the leafy greens during distribution from the farm to the distribution center were measured by a data logger. The contamination levels of perilla leaf and lettuce were determined by analyzing total plate count. Coliform groups, Bacillus cereus, Escherichia coli, Escherichia coli O157:H7, Salmonella spp., Listeria monocytogenes and Staphylococcus aureus were determined. The contamination levels of total aerobic bacteria, coliform groups and B. cereus in both vegetables sampled during May and August found to be higher than those sampled during February and November. E. coli O157:H7, Salmonella spp., L. monocytogenes were not detected in the vegetables analyzed in this study. There were no significant trends between samples at WM and TM in the contamination levels. Relative humidity of vegetables distributed from the farm to the distribution center showed over 90% during distribution regardless of measured seasons. In the case of background microflora on leafy greens, the density was significantly increased at 20, 30 and $37^{\circ}C$ during storage of 24h. E. coli O157:H7 and B. cereus inoculated on the leaves also showed similar increases in the storage tests. The microbial contamination levels determined in this study may be used as the fundamental data for microbial risk assessment.

Effect of Root Zone Restriction on the Growth Response and Phytonutrients Contents of Leafy Vegetables Grown in a DFT System (담액 수경재배시 근권제한이 엽채류의 생육 및 식물 영양소 함량에 미치는 영향)

  • Two leaf lettuces, chicory, endive, edible chrysanthemum, and pak-choi were hydroponically cultured under root restricted conditions in a deep flow technique system and their growth and nutritional values were investigated. Cylindrical plastic tubes with 100 mm height and diameters of 20, 25 or 30 mm were used for root restriction. Growth of all species was retarded by 25-95% as the roots zone was restricted. Pak-choi and edible chrysanthemum showed greater reduction in growth as compared with chicory and endive. Percent dry matter, C/N ratio, and contents of total ascorbic acid and total anthocyanin increased in the root restricted treatments. Contents of P and K decreased in the root restricted treatments, while contents of Mg, Fe, Mn, and Zn were not consistent among the tested species. Optimized root volumes to improve the nutritional values and to reduce the growth retardation varied depending on species of leafy vegetables. Tubes of ${\Phi}25mm{\times}100mm$ and ${\Phi}30mm{\times}100mm$ were suitable for chicory, endive and lettuce, and edible chrysanthemum and pak-choi, respectively. Results indicate that nutritional values of hydroponically-cultured leafy vegetables can be improved by root restriction.

Quality Changes of Fresh-Cut Leafy and Condiment Vegetables during Refrigerated Storage (신선편이 엽채류 및 조미채소류의 냉장저장 중 품질변화)

  • The objective of this study was to analyze quality changes during storage of fresh-cut produce (leafy vegetables and condiment vegetables) as a function of packaging and storage temperature. Fresh-cut produce was washed using a three step cleaning process and was packed in vacuum packaging (green onion, hot pepper, onion, baechu) and perforated film packaging (buchu and perilla leaf). The effects of packaging method and storage temperature on quality of fresh-cut produce were determined by analyzing total plate counts, E. coli, coliform groups, moisture content, pH, Aw, surface color, and exterior quality during storage at 4 and 10$^{\circ}C$. According to the results, surface color change and microbial growth were delayed during storage at 4$^{\circ}C$. Additionally, E. coli was not detected during storage. Generally, moisture content decreased in the perforated film packaging. Changes in surface quality such as skin browning, softening of tissue and chlorosis at 4$^{\circ}C$ were inhibited, whereas rapid vacuum annealing and changes in color and flavor were observed in the sample stored at 10$^{\circ}C$. The result indicated that overall quality of the fresh-cut produce at 4$^{\circ}C$ was well maintained. The perforation in packing materials did not significantly increase the number of microorganisms on buchu and perilla leaf. The proper packaging methods and temperature may beneficial effect on microbial safety, quality and thus result in longer shelf-life fresh-cut vegetables during distribution.
