Studies on Preparation and Quality of Oyster(Crassostrea gigas), Sea mussel(Mytilus coruscus) and Crab(Portanus tribuerculata) Extracts by Water Extraction (열수추출(熱水抽出)에 의한 어패류 추출물의 제조 및 품질)

  • In an attempt to develop natural seasoning materials by use of shellfishes and crustaceans, contents of taste components such as amino acids, nucleotide and its derivatives, the extractability of oyster (Crassostrea gigas), sea mussel(Mytilus coruscus) and crab(Portanus tribuerculata) were investigated. As a result of chemical analysis and sensory evaluation, the optimum condition of extraction could be concluded as extracting fresh or frozen raw materials for about 40 min. at $95^{\circ}C$ with 1.5 to 2 times of water by volume. The contents of free amino acids in the extractions were much in sequence as crab(1,886 mg%), mussel(765 mg%) and oyster(554 mg%), and the dominant amino acids in each extracts were identified as glutamic acid, alanine, glycine, proline and arginine in oyster, threonine, alanine, arginine, glycine and glutamic acid in mussel, arginine, proline, lysine, alanine and threonine in crab respectively. In addition, the major nucleotides affecting as taste enhancer of each extracts were estimated as inosine in oyster and crab, and inosine monophosphate in mussel respectively.

Morphological characterization of Vibrio alginolyticus specific bacteriophage isolated from fish farms on west coast of Korea (서해안 양식장에서 분리한 Vibrio alginolyticus의 특이 bacteriophage에 대한 구조적 특성)

  • Vibrio alginolyticus (V. alginolyticus), which is one of bacterial pathogens evoking severe infection in fish and shellfish as well as in human has been found at high frequency around all coast areas in Korea. Both V. alginolyticus and V. alginolyticus specific bacteriophage were isolated from sea water and various fishes from fish farms on west coast in Korea. In a morphological study based on electron microscope, the purified phage appeared to be composed of hexagon head of 60 nm and short tail of 20 nm. In the denatured SDS-PAGE analysis, the structural proteins of the phage were found to be 7 different protein fractions ranging from 37.8 to 198 kda. The kind of nucleic acid of the phage was ascertained to a double stranded DNA.

Analysis of Organotin Compounds in Fish and Shellfish from Guryongpo Harbor (구룡포항 어패류에 함유된 유기주석화합물 분석)

  • The concentrations of organotin compounds in fish and shellfish from Guryongpo harbor were analyzed. The concentrations of TBT, DBT and MBT in fish were in the range of $15.68{\sim}52.93\;ng/g$(average 28.65 ng/g), $13.95{\sim}72.16\;ng/g$(average 26.99 ng/g) and $37.73{\sim}133.59\;ng/g$(average 85.18 ng/g), respectively. The BT compound concentrations in intestine of fish were higher than those in muscle. Overall ranges of TBT, DBT and MBT concentrations in shellfish were $42.15{\sim}56.13\;ng/g$(average 50.94 ng/g), $34.16{\sim}52.82\;ng/g$(average 42.79 ng/g) and $41.25-72.60\;ng/g$(average 53.71 ng/g), respectively. The BT compound concentrations of shellfish were higher than those of fish. The concentrations of TPT and DPT in fish were $0.47{\sim}3.90\;ng/g$(average 2.33 ng/g) and $ND{\sim}0.56\;ng/g$(average 0.15 ng/g), but MPT was not detected. The concentrations of TPT, DPT and MPT in shellfish were in the range of $10.24{\sim}21.67\;ng/g$(average 17.45 ng/g), $3.32{\sim}4.78\;ng/g$(average 3.91 ng/g) and $0.11{\sim}0.36\;ng/g$(average 0.25 ng/g), respectively. In addition, the MBT ratio was highest among BT compounds, but the TPT ratio was the highest among PT compounds. Taken together, the concentrations of organotin compounds in fish and shellfish from Guryongpo harbor was not higher than those from other harbors in Korea.

  • This study examined Tthe cooking methods foroftraditional foods called such as Mieum, Misu, and Goeum from the from investigation of old cook books and ancient literatureis as follows. There We found were 7 types of Mieum that were cooked by mixing rice and cereals, while 3 types of Mieum were cooked by mixing cereals and herbal medicines to with thenuts. The Mieums that were cooked by mixing meat, fish, and shellfish, etc. to the herbal medicine ingredients like such as medical plants, etc were consisted of 8 types. Therefore, a total of 18 types of Mieum, Misu, and Goeum, etc were have been classified. Among the cooking methods of for Mieum, rice and grains were boiled for an extended longtime and filtered with a sieve to be used as the juicebroth. The Job's tears and millet, etc were mixed into water, or boiled after being made into a powder, soaked into water, and dried. The herbal medicine ingredients such as ginseng were boiled for an extended long time, and once the ingredients are were flown out cooked down, it the broth was filtered with asieve to be used the as a liquid extract. The meat, bone, and shellfish, etc were also boiled for a longn extended time, filtered with a sieve, and made into a juice broth to be used as a drinks from on occasion time to time. These drinks, called Mieum, Misu, and Goeum above, were healthy foods our ancestors used to enjoy for enjoyment drinking, and were also food for remedyies and sources of nutritionon. As Since the meal replacement foods to that replace meals that can be eaten right away while working and studying are needed, due to is required within the our busy schedules of in modern peoplesociety, thise literary investigation and the cooking methods for of Mieum, Misu, and Goeum, which that used to be are our traditional foods, can be are used as a basic research material for the development of convenient breakfast to meal replacements breakfast.

Comparison of Estimated Daily Dietary Intake of Dioxins in Coastal, Rural, and Urban District (어촌, 농촌, 도시 지역별 주민의 식품을 통한 다이옥신의 섭취량 추정)

  • The human population is mainly exposed to dioxins through the diet. The purpose of this study was to estimate the daily dietary intake of PCDDs and PCDFs in Korean adults residing in different regions. Subjects were recruited and divided into three groups according to the districts where they lived: rural (n=213), coastal (n=193), and urban district (n=187). Subjects were interviewed using a general questionnaire and 24-hour recall for dietary intake. The daily intake of dioxins was estimated through the use of the database of dioxins contents in 35 Korean foods. The average age of the subjects were 61.5 years for coastal district, 57.6 years for rural district, and 49.4 years for urban district. Daily energy intake was 1707.7 kcal for rural district, 1596.5 kcal for urban district, and 1493.8 kcal for coastal district. There was no significant difference in total food intake by regions. The intakes from fishes of coastal district, those from cereals, vegetables, meats, and seasonings of rural district, and those from sugars, pulses, eggs, seaweeds, milks, oils of urban area were higher than those of the other two districts. The daily dioxins intake of coastal district (0.70 pgTEQ/kg/day) was significantly higher than those of rural district (0.32 pgTEQ/kg/day) and urban district (0.46 pgTEQ/kg/day). The dioxins intake from cereals, pulses, vegetables, fishes of coastal district and those from eggs and milks of urban area were the highest among the districts. The daily dioxins intake was positively correlated with the intakes of meats, eggs, fishes, oils, and seasonings. Therefore, it could be concluded that the daily dioxins intake of coastal district is higher than that in other districts and the fish is one of the main sources in dioxin intakes. However, daily dioxins intakes of the three regions were below the level of tolerable daily intake (TDI).

Comparative Evaluation of Dietary Intakes of Calcium, Phosphorus, Iron, and Zinc in Rural, Coastal, and Urban District (농촌, 어촌, 도시 지역별 칼슘, 인, 철, 아연의 섭취상태 비교평가)

  • The purpose of this study was to compare the intake status of calcium, phosphorus, iron, and zinc of Korean adults residing in different regions. Subjects were recruited and divided into three groups according to the districts where they lived, which included rural (n=137), coastal (n=100), and urban district (n=117). Subjects were interviewed using a general questionnaire and 24-hour recall method for dietary intake. The average age of the subjects were 58.1 years for rural district, 57.7 years for coastal district, and 48.6 years for urban district. There was no significance in total food intake by regions. The food intakes from cereals, mushrooms, vegetables of rural district, that from fishes of coastal district, and those from sugars, milks, oils of urban area were the highest among three districts. The calcium, phosphorus, iron, and zinc intakes were $60.1\%,\;123.9\%,\;95.2\%,\;and\;73.1\%$ of RDAs, respectively. The calcium intakes as percentage of RDA in rural and coastal district were significantly (p<0.01) lower than that in urban district. A larger number of subjects from coastal or urban district ate under $75\%$ of zinc RDA compared to those from rural village. Major sources of dietary calcium in total subjects were anchovy, kimchi, milk, soybean curd, rice, ice cream, sea mustard, yogurt, loach, and welsh onion. Rice supplied $15.5\%$ for phosphorus, $22.1\%$ for iron, and $35.9\%$ for zinc of total intake. Except for rice, major sources of dietary zinc were pork, beef, small red bean, dog meat, chicken, jacopever, soybean curd, glutinous millet, and kimchi. In conclusion, the food and mineral intakes of adults differed according to the regions in which they resided. The food and nutrient intakes of coastal district were not satisfactory, and calcium and zinc intakes of three regions did not meet RDAs. Therefore, it is required unique and discriminatory nutritional education with each region for increasing intakes of calcium and zinc.

Effect of Short-term Nutrition Education Camp on Food and Nutrient Intakes of Obese Children (단기간 영양교육 캠프가 비만아동의 식품과 영양소 섭취에 미치는 영향)

  • The purpose of this study was to evaluate the effect of short-term nutrition education camp on food and nutrient intakes of obese children. The subjects of the study were 30 obese children in Gumi city who have obesity index over $130\%$. The food consumption of the subjects was surveyed for three days before the camp, for eleven days during the first camp and for three days after the second camp, by food record method. The mean intakes of energy and carbohydrates in obese children were significantly decreased during and after the nutrition education camp, and that of vitamin C was significantly increased after the camp. The mean daily total food intake of the subjects was gradually decreased from 1646.4g before the camp to 1438.6g during the camp and 1412.66g after the camp. Energy and fat intake ratios from grains and milks were significantly decreased after the camp compared with that before the camp, and the energy intake ratio from grains, milks and eggs was significantly low during the camp. The protein intake ratios from grains, potatoes, vegetables and fishes were significantly increased after the camp. The calcium intake ratios from potatoes and milks were significantly increased during and after the camp, and the ratio from eggs was significantly decreased after the camp. The iron intake ratios from potatoes and fishes were significantly increased during and after the camp, and the ratio from grains was significantly low during the camp. The results of the study demonstrated that the short-term nutrition education program positively affected the overall food consumption and nutrients intakes of obese children.

  • 이번 호부터는 실험용동물과 관련해서 원생동물부터 포유류까지 광범위하게 다루고자 한다. 특히 동물뷴류법과 관련하여 그 분류에 있어서 표현이 쉽지 않아 한자어와 영어를 병용해서 기재하고자 한다. 특히, 이번호에서는 사료 외에 이료(먹이)라는 말이 등장한다. 영어에서는 둘다 feed, diet ration이지만, 일반적으로 사료라고 하는 경우에는 feed, 그리고 나머지 둘은 1일 즉,하루 분이라는 양적 개념이 포함되어 있다. 어패류에게 주는 먹거리를 전부 먹이라 하였지만, 배합사료의 보급과 함께 자연계에 존재하는 것을 먹이(천연먹이)라 하였다. 「사료의 안전성의 확보 및 품질의 개선에 관한 법률」에서는 「가축 등의 영양소 제공을 목적으로 사용 하는 것」을 사료라고 정의 하고 있다. 일반적으로 2종류 이상의 것이 인위적으로 혼합된 것을 사료라고 한다. 어류의 양식에 사용되는 정어리나 까나리(냉동품도 포함)는 생미끼, 종묘 생산에 이용되는 담륜층이나 Artemia salina등과 같은 플랑크톤은 생물먹이라고 하고 있다. 사료나 먹이를 최근에는 급이라고 한다.

A Study on Contamination of Fish Sold at Wholesale Market in Seoul Area -Material Collected from Seoul Karak Fish Market- (겨울철에 시판되는 어패류에 있어서의 E. coli와 Coliform에 관한 연구 -서울시 가락동 농수산물시장을 중심으로-)

  • A study was conducted to determine contamination status of fish sold at wholesale market in Seoul. A total of 79 samples (35 different kindry fish) were collected from the wholesale market. E. coli and coliform group bacteria were cultured and tested for sensitivity against antibiotics. The results are summarized as follows; 1. E. coli was isolated from 23 out of 79 samples (29.1%), and coliform groups from 53 out of 79 (67.1%). 2. Of coliform group, Citrobacter freundii was the most common and Enterobacter clacae was the next. 3.23 E. coli strains isolated from fishes were resistant to Oxacillin, Erythromycin and Lincomycin, meanwhile 23 E. coli strains were sensitive to Cefoperazone, Ceftazidime, Imipenem, and Ciprofloxacin.

장염 Vibrio 균의 월동에 관한 연구

  • 여름철에 빈번히 발생하는 세균성 식중독의 주요 원인세균의 하나인 장염 Vibrio 균에 대한 연구 보고는 국내외적으로 많지만 우리나라에서는 수온이 $10^{\circ}C$ 이하인 겨울철에는 일반적으로 검출되지않는다고 알려져 있다. 따라서 이 균의 활동성을 알아보기 위하여 부산 용호만 일대에서 평균기온이 $0^{\circ}C$ 부근인 1978년 1월과 2월에 해수, 저질패류를 채취하여 시험한 결과를 보고하는 바이다. 1) 해수 500mι씩을 membrane filter paper로 처리하여 증균배양한 결과 10회중 3회에서 장염 Vibrio 균이 검출되었다. 2) 저질의 경우는 8회중 7회, 패류의 경우에서는 10회중 2회에서 이 균이 분리되었다. 3) 결론적으로 장염 Vibrio 균은 연안의 저질에서 활동하는 사실을 알 수 있었으며, 여름철이 아닌 겨울철에도 생선어패류에 있어서는 장염 Vibrio 균에 의한 식중독을 완전히 배제할 수 없음을 알수 있었다.
