Evaluation of Extruded Rice Product as Alternative to Lactose on Growth Performance, Diarrhea Score, Fecal E.coli and VFA in Weaning Pigs (유당 대체제로서 쌀 가공품의 수준별 첨가가 이유자돈의 성장 능력, 설사빈도 및 분내 대장균과 휘발성 지방산에 미치는 영향)

  • The object of this study was to investigate different levels of extruded rice product(Nutri-RS®) supplementation as an alternative to lactose on growth performance, diarrhea score, fecal E.coli and volatile fatty acid(VFA) in weaning pigs. Treatments were 1) Control(basal), L3(basal+3% extruded rice product), L6(basal+6% extruded rice product). The control diet in Phase I and Phase II contained 16 and 9% of lactose, respectively. For the feeding trial, a total of 81 crossbred pigs, averaging 7.56±1.18 kg body weight, were allotted to three treatments in three replicates with nine pigs per pen by RCBD. The experimental period was total 5 weeks. During the whole experimental period, there were no significant differences in growth performance, diarrhea score, fecal volatile fatty acid concentration among all treatments. Although there were no significant differences, pigs fed diet of L6 tended to show higher BW and ADG, ADFI, and fecal volatile fatty acid concentration compared to other treatments. Treatment L6 showed the lowest fecal E. coli count among all treatments(P<0.05). These results suggested that inclusion of extruded rice product has similar performance a with 6% of lactose in diet for weaning pigs and reduce approximately 9% production cost of weaning pig's diet. Therefore, extruded rice product could be utilized as an alternative feed ingredient to lactose in weaning pig’s diet.

Risk Assessment of Arsenic in Agricultural Products (농산물 중 비소 위해평가)

  • The present study was carried out to assess exposure & risk for Korean by total and inorganic As intake through agricultural products. Total arsenic analysis was performed using microwave device and ICP-MS. 50% MeOH extraction and anion-exchange HPLC-ICP-MS method has been used to determine arsenic species. 329 samples covering 20 kinds of agricultural products were collected from various retail outlets and markets across Korea. The concentration of total As was in the range of 0.001~0.718 mg/kg, while inorganic and organic arsenic species in all samples was not determined. For risk assessment, probable daily intake was calculated and compared with provisional tolerable weekly intake (PTWI, 15 ${\mu}g$/kg b.w./week for inorganic arsenic) established by JECFA. The median daily exposure to total and inorganic As by intake of agricultural products except rice was ranged 0.0002~0.012, 0.0001~0.001 ${\mu}g$/kg b.w./day, corresponding to 0.01~0.5%, 0.002~0.1% of PTWI, respectively. The median level of total and inorganic As intake through rice was 0.603 and 0.041 ${\mu}g$/kg b.w./day, and 28.1% and 1.9% of PTWI, respectively. Therefore, the level of overall exposure to arsenic for Korean through agricultural products was below the recommended JECFA levels, indicating of least possibility of risk.

Effects of Soaking Conditions on the Manufacture of Calcium Enriched Rice (침지조건이 칼슘 강화미 제조에 미치는 영향)

  • In order to investigate the transfer rate of calcium into rice and the effect of soaking conditions-temperature (20, 30, 40, 50 and $60^{\circ}C$, $X_1$), calcium concentration of soaking solution (0, 250, 500, 750 and 1000 mg/L, $X_2$) and soaking time (5, 10, 15, 20 and 25 min, $X_3$), moisture absorption rate, hardness and calcium content of rice after soaking were analyzed. When the soaking temperature and time were increased the moisture absorption rate also increased (p<0.01). Quadratic and interaction effects on the moisture absorption rate among variables were highly significant, within 5%. The predictive model for moisture absorption rate $(Y_1)$ was as follows: $Y=16.14+0.78X_1+1.24X_3-0.23X_1{^2}+0.14X_2{^2}-0.42X_3X_1-0.38X_3{^2}\;(R^2=0.9123)$. Hardness was decreased as soaking time and temperature increased. Calcium contents of soaked rice increased as temperature, the calcium concentration of soaking solution and soaking time were increased (p<0.01). Also the interactive effect between soaking time and calcium concentration of soaking solution was high. The predictive model for calcium content $(Y_3)$ was as follows: $Y_3=470.80+110.87X_1+123.47X_2+52.29X_3-7.42X_1{^2}-14.87X_2{^2}-9.49X_3X_2-20.57X_3{^2}\;(R^2=0.9840)$. From the results in this study, if adults and children take 400 g of calcium enriched rice with 600 mg/kg and $700{\sim}900\;mg/kg$, respectively, they can expect to take more calcium than the recommended intake without other calcium reinforcing agents.

Growth performance and, blood metabolites and leukocytes of growing pigs fed with fermented hulless barley (발효 쌀보리의 급여가 육성돈의 혈중 대사산물, 혈구조성 및 생산성에 미치는 영향)

  • This study was conducted to investigate effect of feeding fermented hulless barley (FHB) on growth performance and blood metabolites in growing pigs. Forty-five pigs (LYD; initial body weight, $30.33{\pm}0.05kg$) were randomly allotted into three dietary treatments that consisted of 0, 0.5 and 1.0% of the FHB in the basal diets. The pigs fed 0.5% FHB showed higher average daily gain than the 0 and 1% FHB treatments, although there was not significant among the treatments. Similarly, average daily feed intake and feed conversion ratio were not different among the treatments. Blood white blood cells, neutrophil, lymphocyte, monocyte, eosinophil and basophil were ranged to reference values, but not difference among the treatments. Serum glucose was increased in the control compared with 0.5 and 1.0% FHB. However, parameters related to protein, lipid and mineral also were not different among the treatments. These results indicate the FHB has no significant effect of growth performance and metabolizable responses in growing-finishing pigs.

Reduction of Aflatoxin during the Cooking and Processing of Rice (쌀의 조리 및 가공 과정 중 Aflatoxin 감소에 관한 연구)

  • Aflatoxin is a secondary fungal metabolite and is a public health hazard because it is a human carcinogenic and has many deleterious effects in men and animals. Rice is one of the better substrates far the fungus which can produce aflatoxins. This study was performed to investigate aflatoxin reduction during the cooking and processing of rice. Aflatoxin was produced by Aspergillus parasiticus ATCC 15517 on well-milled rice (Japonica type) at the level of 13.2 ppb. Cooked rice, rice cakes (baek-sol-gi, plain steamed rice bread), fermented rice (sikhye, sweet rice beverage), and popped rice were prepared from the aflatoxin-contaminated rice. Aflatoxin content in the samples was determined by high performance liquid chromatography. The total aflatoxin level was decreased to 46.9% in the cooked rice, 85.6% in the rice cakes, 11.4% in the fermented rice, and 7.6% in the popped rice, respectively (p.0.05). This reduction brought the level of aflatoxins down to below the Standard and Specification of korea (10 ppb), except for the rice cakes. These results indicate that washing, steaming, fermentation, and popping of rice was helpful in reducing the aflatoxin level in the rice and the most helpful factors were high temperature & high pressure. More research is needed to understand why the preparation of rice cakes did not reduce the level of aflatoxin as much as the other cooking methods.

Development of Well-reconstituted Instantized Thin Rice Gruel (재수화능이 향상된 인스턴트 쌀 미음의 제조)

  • Instantized thin gruels have been popular to supplement patients who want nutritional, ready-to-eat, and easy-to-use products. In this study, rice-based thin gruels were developed by use of gelatinized rice powder which was manufactured by extrudating rice in a twin-screw extruder. Subsequently, the rice paste from the extruder were dried and ground into fine powder. The gelatinized rice powder was mixed with the powders of various grains, soy beans, nuts, oil seeds, and vegetables to formulate the instantized thin rice gruel with well-balanced nutrients (mixed powder). The mixed powder was granulated to improve reconstitution capability in a fluid bed spray granulator (granulated powder). Lipid and protein contents were higher by 0.9 and 1.9%, respectively, in the granulated powder whereas carbohydrate content was higher by 3.2% in the mixed powder. The calculated dispersibility was 93.7 and 77.0% for the granulated and the mixed powders, respectively. The reconstitution time was 122.3 and 305.3 for the granulated and the mixed powders, respectively. In conclusion, the granulation of the mixed powder improved the dispersibility. This study will be helpful to develop a variety of processed rice products and promote rice process industry.

The Food and Nutrient Intakes on weekdays and weekends Among High School Girls in Seoul (서울 지역 여자고등학생의 주중과 주말의 식품 및 영양소 섭취에 관한 연구)

  • The food and nutrient intakes on weekdays and weekends was examined with 196 high school girls residing in Seoul using the 3-day food record. Frequency for skipping breakfast was higher than that for lunch and dinner. Frequencies for skipping breakfast and lunch were significantly higher on weekends than on weekdays (p < 0.05). The daily average food, vegetable food, and animal food intakes were 1,074.8 g, 680.0 g, and 317.3 g, respectively. The total food and vegetable food intakes on weekdays were significantly higher than on weekends (p < 0.05). The daily average dietary variety score (DVS) was 20.5, and was significantly higher on weekdays (23.3) than on weekends (15.1)(p < 0.05). The daily averages of energy, protein, fat and carbohydrate intake were 1,732.9 kcal, 68 g, 56.2 g, and 240.9 g, respectively. Energy, protein, carbohydrate, phosphate, iron, sodium, potassium, thiamin, niacin, folate and vitamin C intakes were significantly higher on weekdays than on weekends (p < 0.05). Fat intake was significantly lower on weekdays than on weekends (p < 0.05). The daily average percentages of energy intake from carbohydrate, protein, and fat were 55.4%, 15.6%, and 29.0%: 56.1%, 15.8%, and 28.2% on weekdays and 54.7%, 15.3%, and 30.1% on weekends, respectively. The percentages of energy intake from carbohydrate on weekdays and weekends were below 60%, and that from fat was above 28% on weekdays and weekends. The daily averages of energy, vitamin A, riboflavin, niacin and phosphate intake were above 80% as compared with the estimated energy requirement (EER) or the recommended intake (RI). The intakes of calcium, potassium and folate were below 50% as compared with the adequate intake (AI) or (RI). The daily average mean adequacy ratio (MAR), an index of overall dietary quality, was 0.77, and significantly high school girls was worse on weekends than on weekdays.

Dietary folate intake and food sources of children and adolescents in Chungcheong area - Using nutrient database revised by measured folate in selected foods (충청 인근지역 어린이, 청소년의 엽산 섭취량과 급원식품 - 일부 식품의 엽산 분석으로 수정한 데이터베이스 활용)

  • Purpose: The purpose of this study was to estimate dietary folate intake and food sources of children and adolescents using a nutrient database revised based on measured folate in selected foods. Methods: Folate content in 51 foods known as folate sources was measured by microbiological assay after trienzyme extraction. Folate intake was estimated from a part of the data of 'Dietary Intake Survey of Infants, Children and Adolescents in 2007~2008' conducted by the Korea Food and Drug Administration (KFDA) and the Korea Health Industry Development Institute (KHIDI). The study subjects were 567 children aged 1~19 years living in the Chungcheong area who completed two 24-hour recalls. Results: Folate values were revised by replacing the values in the current database with the analyzed values except when the value in the current database was between the analytical values or was not different from the mean analytical value by more than 10%. Among the revised values of 40 food items, folate values of 36 foods were lower than the current values. Mean folate intakes estimated with the revised database were approximately 70~80% lower than those estimated with the current database. Mean folate intakes of males aged 12~14 and females aged 12~19 were lower than the 2010 Recommended Nutrient Intakes (RNIs). Chicken's eggs, Kimchi, rice, mandarin, and laver were found to be main food sources of folate. Conclusion: In this study, mean dietary folate intakes were lower than those estimated with the current database. Further analyses for folate content especially in cooked foods commonly consumed in Korea are needed using a reliable assay in order to accurately assess folate intake of the Korean population. In addition, nutrition education should be provided for adolescent females in order to increase consumption of folate-rich foods.

Association of food intake with serum levels of phosphorus and potassium in hemodialysis patients (혈액투석 환자의 일상식품군 섭취량에 따른 혈청 인, 칼륨 농도의 상관성 분석)

  • Purpose: Elevated serum phosphorus and potassium levels are a major problem for hemodialysis (HD) patients. Hyperphosphatemia and hyperkalemia are closely related to intake of dietary phosphorus and potassium. Methods: This study was conducted in order to investigate the effects of food consumed on serum phosphorus and potassium levels in 48 HD patients (20 males and 28 females). We collected anthropometric data, biochemical parameters, and dietary data of the subjects. Dietary data for usual intake were obtained by use of a food-frequency questionnaire (FFQ) consisting of 21 food items. Results: The mean body mass index (BMI) was $22.2{\pm}3.0kg/m^2$, mean serum phosphorus level was $4.50{\pm}1.52mg/dl$, and mean serum potassium level was $4.74{\pm}0.73mEq/l$. Hyperphosphatemia (> 4.5 mg/dl) was found in 45.8% of subjects, and hyperkalemia (> 5.0 mEq/l) in 35.4%. Subjects who took medication only were 56% of total, and those who took medication with dietary therapy were 27%. Patients with medication and dietary therapy showed significantly lower serum phosphorus levels compared to patients with medication only (p < 0.05). Mean duration of HD was $7.9{\pm}7.3$ years and it showed positive correlation with serum potassium levels (p < 0.05). Serum phosphorus levels showed positive correlation with intake of mixed grains and soybean milk (p < 0.05). Serum potassium levels showed positive correlation with intake of mixed grains (p < 0.01), potatoes, fish, and high-potassium vegetables (p < 0.05). On the other hand, intake of white rice showed negative correlation with serum potassium levels (p < 0.05). Conclusion: The results of our study suggest that intake of white rice rather than mixed grains is an important factor in sustaining normal serum phosphorus and potassium levels. In addition, limiting intake of soybean milk, potatoes, and fish to under three serving per week is recommended. Finally, conduct of a strict dietary therapy along with medical treatment is desirable because inappropriate food intake increases serum phosphorus and potassium levels to a higher than normal range.

Risk Assessment Aluminum Levels of Circulating Agricultural Products in Korea (국내 다소비 농산물의 알루미늄 농도 모니터링 및 농산물 섭취로 인한 위해도 평가)

  • BACKGROUND: This study was carried out to collect occurrence data on aluminum in 12 type agricultural products and assess dietary exposure risk to the Korean population health for aluminum concentration in agricultural products.METHODS AND RESULTS: Aluminum analysis samples were performed using microwave device and Inductively Coupled Plasma Optical Emission Spectrometer. The LOD(Limit of Detection) for aluminum was 0.851 μg/kg, while the LOQ(Limit of Quantitation) was 2.838 μg/kg and recovery was 97.6% for aluminum. The average levels of aluminum in mg/kg were 0.526 for rice, 0.546 for Korean cabbage, 1.316 for corn, 6.207 for soybean, 0.549 for sweet potato, 0.257 for potato, 6.963 for spinach, 1.213 for carrot, 0.524 for garlic, 0.950 for radish, 1.015 for leek, and 3.511 for Welsh onion. The dietary exposures of aluminum through usual intake were polished rice 89.31 μg/day, Korean cabbage 33.14 μg/day, corn 0.66 μg/day, soybean 3.72 μg/day, sweet potato 6.86 μg/day, potato 4.96 μg/day, spinach 45.96 μg/day, carrot 6.79 μg/day, garlic 2.36 μ g/day, radish 7.32 μg/day, leek 2.23 μg/day and Welsh onion 43.89 μg/day, taking 0.57%, 0.21%, 0.00%, 0.02%, 0.04%, 0.03%, 0.04%, 0.04%, 0.02%, 0.05%, 0.01% and 0.28% of PTWI(2 mg/kg b.w./week), respectively.CONCLUSION: The levels of overall dietary exposure to aluminum for Korean population through intake of agricultural product was far below the recommended JECFA level, indicating of least possibility of risk.
