Storage Effects of Seawater and Tapwater Ice For Freshness of Mackerel(Scomber japonicus) (고등어 신선도 유지를 위한 해수와 담수 얼음의 저장효과)

  • This study was conducted to see the effect of maintaining the freshness of mackerel caught offshore, through the chemical analysis method in seawater slurry ice(SS), sea water cube ice(SC), tap water slurry ice(TS) and tap water cube ice(TC). Among each ice mass, bacteria were below the drinking water standard and ammonia nitrogen was over the threshold of 11 mg/l in sea water. The turbidity of the seawater was severe compared to that of fresh water. Proximate compositions showed 72.7% moisture content, 20.5% protein, 5.25% lipid, and 1.3% ash content. Sea slurry ice was kept low in pH compared with fresh water ice. VBN increases were inhibited in all reservoirs at the beginning of the storage. Generally Sea ice was kept lower VBN value than the fresh water ice.

Freshness Preserving of 'Shingo' Pear using Corrugated Paperboard Box Laminated with Functional MA Film (기능성 골판지 상자로 포장한 '신고' 배의 신선도 유지효과)

  • Weight loss of fear packed with corrugated paperboard box(FC) laminated with functional MA film after 60 days storage at 5$^{\circ}C$ was 1.0%, and that of LDPE, CE film was 0.6-0.7%, while that of control(Corrugated Paperboard box) was 2.8%. Total ascorbic acid content of pear ill MA films and FC package was higher than that of control. Titratable acid of control changed 37%, but that of the others packages changed below 27%. Soluble solid content of control changed 27%, while the others changed below 2%. Reference in overall appearence of pear were not found among packaging methods. Corrugated paperboard box(FC) laminated with Functional MA film can be used as packaging material for pear packaging.

  • There are coexisting various kinds of data in the large scale database system, the maintenance problem of freshness of data is emerging important issue that provide correctness and usefulness information to users. Most solution of this problem depends on how execute effectively required refreshing query within timely time. In this paper, we propose the refreshing scheduling algorithm to retain the freshness of data and fairness of starvation of requested refresh queries. Our algorithm recompute a rate of goal refreshing a every period to assign execution time of requested refreshing query so that we can keep the freshness and fairness of data by using proposed algorithm. We implement the web sites to showing the results of refreshing process of dynamic and semi-dynamic and static data.

  • This study is aimed at giving directions for the development of fresh food delivery packaging design in the domestic e-commerce market. First literature study of food consumption trend, cold chain system and zero waste campaign related to e-commerce food market. Second, packaging designs of e-commerce fresh food in domestic and foreign were analyzed and also the prospective studies were checked to find out the future direction of packaging designs. Studies show that the packaging design of delivery for fresh food should not only be kept freshness, also consider the usefulness, convenience and environmental protection from various angles.

Freshness Extension of Tomatoes by Packaging Methods (포장 방법에 따른 토마토의 품질변화)

  • This study was measured weight loss, total ascorbic acids, titratable acidity and soluble solids contents to investigate the effect of EPS(expended polystrene foam) box, double wall corrugated paperboard box and LDPE film pouches during storage at 25oC. The rate of weight loss was 5.9% in corrugated paperboard box after 7 days, but those of 20LD, 40LD film and EPS box were 1.1, 1.0, and 1.1% , respectively. Total ascorbic acid content of EPS box was 20% higher than that in corrugated paperboard box, but the obvious differents were not observed among the LDPE film pouches and EPS box. The titratable acidity was decrease during storage, but total soluble solids content was increase. Overall appearences of LDPE pouches and EPS box were better than those of corrugated paperboard box.

농식품 작업장의 오염 실태 조사

  • 최근 식생활의 다양화와 식품 안전에 대한 관심 증가에 따라 식품 공장의 청정화와 작업장의 위생 관리에 대한 노력이 많이 이루어지고 있다. 그 중에 서도 농식품 분야에서는 최근 들어서 신선한 과일과 채소류를 식품소재로 이용한 신선편이 가공 농산물의 수요가 늘어나고 있다. IFPA(The International Fresh-cut Produce Association)의 정의에 따르면 신선편이 농식품은 박피되거나 절단되어져 신선함을 유지한 채로 소비자들에게 높은 영양과 편이성 및 풍미를 제공하는 포장형태의 100% 이용 가능한 과일 및 채소제품을 말한다. 이러한 신선편이 농식품은 식재료공급에 있어 안전성 및 편이성이 있으나 수확 후 처리시설에 대한 위생 개념이 도입되지 않고는 양질의 식재료를 공급하는 것은 어렵다. 그러나 신선편이 농식품은 살아있는 생체 조직으로 박피, 절단 등의 과정을 거치면서 세포가 파괴되어 급격한 품질 변화가 나타 날 수 있으며, 최소한의 비가열 가공공정만을 거치게 되므로 식품원료 내에 존재하는 미생물이 그대로 유지 될 수 밖에 없는 문제점을 가지고 있다. 또한 일반적으로 선선편이 제품의 가공과정에서 절단 처리시 표면에 묻어 있던 미생물이 과육 부위로 옮겨지면서 식품 세포 조직의 체액을 영양성분으로 활용하여 급격히 증식함으로서 식품의 변질을 일으키거나 섭취시 질병을 일으킬 수 있는 가능성이 있다. 특히, 신선편이 농식품 중에서 가장 많이 소비되는 엽채류는 수확 직후 잎 표면에 토양과 물에 의한 다양한 미생불이 부착되어 식품의 변질 가능성이 크다. 그러므로 농산물의 유통 및 보관단계에서 미생물 오염 가능성이 있기 때문에 신선편이 농식품은 원료 구입 후 제품 생산 및 포장에 이르는 과정에서 각 작업 단계별 위해요소를 분석하고, 식품 안전성을 확보하여 철저한 위생 관리가 중요하다. 따라서 본 자료는 농식품 작업장중 세척공정을 거치는 신선편이농산물과 세척공정을 거치지 않는 신선농식품 작업장에 대한 위생관리 및 관련 설비 기술 개발을 위한 기초 자료로 활용하고자 현재 운영중인 작업장을 중심으로 직접 현지 조사한 자료이다.

Freshness of Tomatoes Cultivated in Egypt by Packaging Functional MA film (기능성 MA 필름으로 포장한 이집트산 토마토의 신선도)

  • To investigate the effect of functional MA film packaging on tomatoes produced in Egypt packed 7 kg corrugated paperboard box during 7 days of storage at room temperature, the weight loss, titratable acidity, soluble solid content(SSC, $^oBrix$), vitamin C and the rate of decay were measured. The weight loss in 0.06 mm functional MA film was 1.5%, but was 3% in non-packed tomatoes after 7 days of storage. The titratable acidity and SSC in functional MA film was kept higher than that of non-packed tomatoes and vitamin C and the rate of decay in functional MA film was changed lower than the others.

  • This study was measured weight loss, total ascorbic acid, titratable acidity, and soluble solids content to investigate the effect of EPS(expanded polystyrene foam) box, LDPE film pouches and double wall corrugated fiberboard box during storage at $20^{\circ}C$. Weight loss of apple packed with corrugated paperboard box after 40 days storage was 5.7%, and those of LDPE, CE film and EPS box were 0.2-0.5%. Ascorbic acid content of apple packed with LDPE, CE, EPS was higher than that of control. Titratable acidity and total soluble solid content of control were changed 40% and 10%, and the EPS were changed 27% and 4%, respectively. Overall appearances of 'Fuji' apple packed with LDFE, CE and EPS were better than that of control.
