Health-promoting Functional Properties of Commercial Sik-haes (시판 식해의 건강 기능 특성)

  • Sik-hae is a traditional Korean salt-fermented seafood having a low salt content and a high concentration of Lactobacillus, unlike most salt-fermented fish and fish sauce, which have a high salt content and low concentration of Lactobacillus. This study aimed to investigate the health-promoting functional properties of 10 types of commercial sik-haes. The results showed that for the commercial sik-haes studied, angiotensin-I-converting enzyme inhibitory activity, DPPH radical scavenging activity, α-glucosidase inhibitory activity, xanthine oxidase inhibitory activity, and sodium nitrite scavenging activity ranged from 29.0% to 46.3%, 35.5% to 65.4%, 0% to 20.0%, 20.1% to 78.8% , and 17.9% to 82.6%, respectively. Antimicrobial activity against Escherichia coli, Vibrio parahaemolyticus and Staphylococcus aureus was rarely detected. The results on healthy functional properties suggest that the commercial sik-haes are expected on the antioxidative activity in F-1-F-5, AP-1, BES, and S, xanthine oxidase inhibitory activity in the other 9 types expected for A, and sodium nitrite scavenging activity in the other 9 types expected for AP-2.

Characteristics of Korean Fish Fermentation Technology (우리나라 수산발효기술의 특색)

  • The evolution of Korean fish fermentation technology was reviewed from the old literatures and the on-going processes were surveyed. The principles involved in the traditional fermentation methods were explained by the recent scientific findings. The fish fermentation technology be classified into two groups; jeot-kal process, where. salt is the only material added to the fish for fermentation, and sik-hae process, where cooked cereals, garlic and red pepper powder are added to the salted fish. A total of 46 kinds of jeot-kal was identified in a survey, depending on the raw materials used. The characteristic feature of Korean jeot-kal process is to produce fermented products which still has original shape after 2-3 months of fermentation to be used for side-dishes of rice meal, as well as fish sauce by keeping these products for longer time (over 6 months) for severe ansymematic hydrolysis to be used for the subingredient of Kimchi (Korean fermented vegetable food). The taste of jeot-kal is formed by the protein hydrolymates due to the action of salt-tolerant Pediococcus, Bacillus, Halobacterlum etc. When the taste of jeot-kal deteriorates, yeasts appear to dominate. In ski-hae fermentation, the safety of preserved fish is kept by the rapid decrease in pH resulting from the acid fermentation of added cereals. The roles of cid forming bacteria and proteloytic bacteria are important. The fermentation is completed in 2 weeks and the excess production of acid during prolonged storage limits the taste acceptability. The fish fermentation technology in Korea stands at important position in Korean food science and technology. since the processes of jeot-kal and soysauce have same root in the principle of microbial proteolysis and the processes of sik-hae and Kimchi in the microbial acid production principles.

Host ranges and Temperature effects on the development of Liriomyza trifolii Burgess(Diptera: Agromyzidae) (아메리카잎굴파리의 기주범위 및 충태별 발육에 미치는 온도의 영향)

  • This study was conducted to investigate occurrence and host ranges of Liriomyza trifolii Burgess, American serpentineleafminer, in Chonnam province. Also, temperature effects on the development along with morphologicalcharacteristics in each instar of L. trifolii were studied. L. hifolii was observed from 22 species inthe 7 families. Gerbera, chrysanthemum and tomato were the most damaged host plants. Egg was transparentwhite with lengthlwidth of 0.27 mm10.25 mm while matured larva was yellow with that of 2.03 mm10.80 mmrevealing serpentine gallary under leaf cuticle. Pupa was light brown with that of 1.75 mrn10.74 mm and pupatedon the soil and/or leaf surface. Lengthlwing span of adult was 1.78 mm/3.43 mm. Number of oviposition/sucking punches by L. bifolii adult was 26.1% and 13.3% in tomato and gerbera leaves respectively. Feedingactivity of larval stage was highest at 2OoC. Developmental~threshold (DT) and effective accumulative temperatures(ET) on gerbera leaves were 11.2"C, 33.9DD in egg, 10.3'C, 38.6DD in larva, 10.7"C, 152.3DD inpupa, and 10.8"C, 222.8DD from egg to pupa. On tomato leaves, DT and ET were 13.6"C, 20.2DD in egg, 9.3"C, 43.7DD in larva, ll.O$^{\circ}$C, 114.3DD in pupa, and 11.6"C 178.2DD from egg to pupaDD in pupa, and 11.6"C 178.2DD from egg to pupa pupa.

Host Plants of Ectinohoplia rufipes (Coleoptera: Scarabaeidae) in Golf Courses and Effect of Damaged Leaves on the Attraction of Adults (주황긴다리풍뎅이 (Ectinohoplia rufipes)의 골프장 기 주식물과 피해 잎의 성충 유인 효과)

  • Host plants or Ectinohoplia rufipes (Motschulsky) (En) were investigated in golf courses and laboratory. E. rufipes adults fed on 61 plant species of 27 families out of 101 plant species of 41 families supplied in laboratory. In addition, twenty-seven plant species in 8 families were observed to be fed on from golf courses. Thus, total number of host plants of E. rufipes were 84 species in 29 families. E. rufipes adults preferred Japanese green alder (Alnus firma) , cherry apple (Malus sieholdii), cherry (Prunus serrulata var. spontanea) and sweet oliver (Osmantus asiaticus) in golf courses . The preference of E. rufipes adults with A. firma , P. serrulata vu. spontanea and O. asiaticus was bioassayed in laboratory. E. rufies adults preferred A. firma consuming 58.1% to O. asiaticus and p. serrulata vats. spontanea. The most number of E. rufipes adults was attracted to damaged leaf of A. firma by E. rufipes representing 45.3clo and followed by artificial damaged leaf representing 26.5% , untried feeding leaf representing 12.9% and undamaged leaf representing 4.0%. More E. rufipes adults were attracted to damaged leaf of A. firma by 67.5% than artificially damaged leaf by 30.5% or undamaged leaf treated with feces of E. rufipes by 2%.

Microbiological and Enzymatic Characteristics in Alaska Pollack Sikhae during Fermentation (전통 명태식해 숙성중의 미생물 및 효소학적 특성)

  • The changes of microflora and enzyme activities in Alaska pollack sikhae were evaluated in 3 different temperature conditions, 5$^{\circ}C$, 2$0^{\circ}C$ and alternating temperature (stored at 5$^{\circ}C$ after 10 days of fermentation at 2$0^{\circ}C$), respectively. The number of proteolytic bacteria and 2 lactic acid bacteria including Lactobacillus sp. and Pediococcus sp. increased rapidly up to 10 days and composed major portion of total viable cell (TVC) in sikhae fermented at 2$0^{\circ}C$, whereas those of TVC were occupied by Lactobacillus sp., Pediococcus sp. and yeast after 10 days of fermentation. The major species of microflora in sikhae fermented at alternating temperature were, composed of Lactobacillus, Pediococcus and Streptococcus after 10 days of fermentation. Especially, Leuconostoc sp. was kept up to 27 days at 5$^{\circ}C$ than other temperature conditions (16 days). The activities of protease and lipase in acidic region (pH 3.0) were higher at 2$0^{\circ}C$ than at 5$^{\circ}C$ due to sensitivity of temperature, although those of protease and lipase in neutral region (pH 7.0) were not found any differences in both temperatures. Changing temperature condition from 2$0^{\circ}C$ to 5$^{\circ}C$ in alternating temperature inactivated protease activity, whereas lipase activity was still maintained during fermentation.

Studies on the Sik-hae Fermentation Made by Flat-fish (가자미 식해(食醯)에 관한 연구)

  • Sik-hae is a traditional Korean fermented fish product which is made from flat-fish, garlic, salt, red pepper and millet. The changes in chemical composition, pH, acidity and the contents of Amino-N, VBN, TMA and organic acids were investigated during the fermentation of Sik-hae. The changes in the microflora, enzyme activity and the sensory quality including textural characteristics were also evaluated. The changes in the contents of crude protein, crude fat and moisture during Sik-hae fermentation were negligible. The pH of the product tended to decrease in the course of fermentation and it showed the minimum value of 4.5 after 7 days of fermentation. On the other hand the acidity continued to increase up to 2300mg % by 4 weeks of fermentation. Lactic acid was the major organic acid. The content of Amino-N in sik-hae gradually increased up to 673.6mg % by 2 weeks of fermentation, and then slightly decreased. The content of VBN increased rapidly during the first 2 weeks of fermentation, while little changes in TMA content was observed. The number of proteolytic bacteria increased slightly for the first 2 weeks and then rapidly decreased. The number of yeast and acid forming bacteria increased rapidly from the 4th day to the 14th day of fermentation and then decreased. Both lipase and protease activities showed the maximum at the 11th day of fermentation. The texture softening of the fish occurred after 1 week of fermentation and the adhesiveness appeared after 2 weeks of fermentation. Summarizing these results, the optimum fermentation time for Sik-hae from flat fish were 2 weeks at 2$0^{\circ}C$ and the quality of the product could be kept for up to 4 weeks in refrigerator.

Nutritional and Physiologically Active Characterizations of the Sea Squirt Halocynthia roretzi Sikhae and the Seasoned Sea Squirt (멍게(Halocynthia roretzi) 식해 및 조미 멍게의 영양 및 생리활성 특성)

  • This study was carried out to investigate nutritional and physiologically active characterizations of sikhae and the seasoned products from the sea squirt Halocynthia roretzi. The total taste values of sikhae fermented for 4 and 5 days were 10.9 and 15.4, respectively, which was lower than for commercially seasoned sea squirts. The sikhaes contained mostly glutamic and aspartic acids. The total amino acid contents of sikhaes fermented for 4 and 5 days were 5.5 and 6.0 g/100 g, respectively, which were lower than those of commercial seasoned-sea squirts or similar. An amount of 100 g of sikhae and its seasoned products contained P, K, Mg and Fe, and these minerals, which are deemed good for our health, were at 10% above the recommended daily requirements. The functional properties of sikhae fermented for 4 and 5 days were as follows: for ACE inhibiting activity, 69 and 69.5%, respectively; for antioxidative activity, 28.9 and 29.3%, respectively; for xanthine oxidase inhibitory activity, 52.8 and 53.1%, respectively; and for ${\alpha}$-glucosidase inhibitory activity, 2.4 and 1.4%, respectively. Antimicrobial activity of the 5 day fermented sikhae against Vibrio parahaemolyticus and Staphyloccus aureus was detected in 8 mm and in 7 mm against Escherichia coli.

Fermentation characteristic of Yeongdeok Bobsikhae to which a natural substance (Bellflower) was added (길경을 첨가한 영덕밥식해의 발효 특성)

  • Bobsikhae and Bellflower tea-added Bobsikhae samples were prepared. Their general ingredients and useful ingredients were analyzed. Among the general ingredients of the two samples, the crude protein, crude fat, crude ash, and carbonhydrate contents, but not the water, were found to have been higher in the Bellflower tea-added Bobsikhae. To summarize all the results of this study by comparing Bobsikhae with Bellflower tea-added Bobsikhae that used the Bellflower root with edible and medicinal values, their general ingredient contents were similar, but the lactic acid bacteria all tended to be higher in the Bellflower tea-added Bobsikhae. The results of the sensory evaluation showed that the overall taste and general acceptability were better in the Bellflower tea-added Bobsikhae than in the Bobsikhae. Thus, the Bellflower tea-added Bobsikhae is considered ideal for further commercialization. However, it was determined that further studies will be required to show if the bioactive substance would be influenced by the fermentation in the production progress of the Bellflower tea. Such findings and their application to the product development are expected to contribute much to the popularization of Bobsikhae.

Occurrence and Ecological Characteristics of Ostrinia furnacalis Guenee, in Adlay Field (율무 재배지(栽培地) 조명나방 발생생태(發生生態))

  • This study was carried out to investigate the occurrence and ecological characteristics of Ostrinia furnacalis(Guenee) in Yonchon, northern part of Kyonggi province, where it is main production region of adlay in Korea. The Asian corn borer in adlay field had three generations a year. The first stage of adult activity was greatest from middle May to late June, the second from late July to middle August and the third from late August to middle September. The egg period was $3{\sim}4$ days. The longevity of adult was $7{\sim}11$ days. The days of each development stage from egg to adult were $51{\sim}61$, $33{\sim}42$ and $29{\sim}37$ days in 1st, 2nd and 3rd generations, respectively. The overwintering stage of Asian corn borer was the last instar larvae and it overwintered in the adlay stubbles.

The Potential Probiotic and Functional Health Effects of Lactic Acid Bacteria Isolated from Traditional Korean Fermented Foods (한국 전통발효식품에서 분리한 유산균의 프로바이오틱스 특성 및 건강기능성 연구)

  • This study investigated the probiotic properties and physiological activities of Korean fermented foods such as sikhae, young radish kimchi, and bean-curd dregs. Among the isolated lactic acid bacteria, Pediococcus inopinatus BZ4, Lactobacillus plantarum SH1, Lactobacillus brevis SH14, Pediococcus pentosaceus YMT1, and Leuconostoc mesenteroides YMT6 demonstrated a greater than 60% survival rate at pH 2.5, along with an excellent survival rate even at 0.3% bile acid. These five bacteria showed strong flocculation ability in autoaggregation and coaggregation tests, indirectly clustering useful micro-organisms and inhibiting the attachment of pathogenic bacteria. In a cell surface hydrophobicity test, these bacteria showed adhesion to three solvents (ethyl acetate, chloroform, and xylene) and high hydrophobicity, thereby indicating excellent indirect cell adhesion to intestinal cells. The cell-free supernatants and intracellular extracts of the five lactic acid bacteria showed antioxidative activity in the form of 2,2-Diphenyl-1-picrylhydrazyl and 2,2'-Azino-bis (3-ethylbenzothiazoline-6-sulfonic acid) radical scavenging ability and lipid peroxidation inhibition. Antimicrobial activities were also observed in four pathogenic bacteria, namely E. coli KCTC 2571, H. pylori HPKCTC B0150, L. monocytogenes KCTC 13064, and S. aureus KCTC 1916. These results demonstrate that these five lactic acid bacteria could be used as probiotics with antioxidant and antimicrobial properties.
