Study on Incidence and Improvement of Food Allergies for Prevention of Damage in Adolescents and Adults (청소년과 성인의 식품 알레르기 예방을 위한 식품 알레르기 발생 실태 및 개선안 연구)

  • This study examined the actual state and future improvement of food allergies in adolescents and adults in order to prevent damage. In this survey, proportions of females, people in their 40s, college graduates, and office workers and housewives with allergies were higher than other groups. Exactly 41.1% of participants responded that they had experienced food allergies while 58.9% responded that they had not. According to their responses, the most common food allergy symptom involved the skin while whole-body allergic reactions were rare. Most respondents answered that frequency of their food allergies was two or three times. There was a variety of allergenic foods, including fast food, eggs, mackerel and milk, and instant food was ranked as the most allergenic food. Therefore, in order to protect consumers from damage caused by food allergens, the food allergen labeling system must be improved. A better food allergen labeling system should be implemented to avoid potential risks of allergic reactions and ensure national food safety.

Minerals (Calcium, Iron, Zinc) Analysis and Interaction of Emphasized Nutrition Indication on Products (영양강조표시제품의 무기질 (칼슘, 철, 아연) 함량 분석과 상호작용에 대한 연구)

  • The present study aimed to calcium (Ca), iron (Fe) and zinc (Zn) contents were compared with reference values indicated on the nutrition label of nutrition emphasized food. Also, this paper will briefly review and evaluate what is currently known about Fe-Zn and Ca-Fe interaction. Ca, Fe or Zn-emphasized product, including cereal, snack, soy milk, chocolate product, other cocoa product, sugars product, beverage and tea were analyzed. The contents of Ca, Fe, and Zn in samples after dry-ashing were examined by ICP. The measured Ca (n = 42), Fe (n = 13), Zn (n = 6) values were ranged 87~176%, 98~167%, 98~275% of reference value indicated product, respectively. All samples were ranged more than 80% of the reference value, which were complied with food regulation. High intake of Ca has been shown to adversely affect Fe absorption and the negative effect of Fe on Zn absorption is well known. Therefore, it is important to consider Ca-Fe and Fe-Zn absorption interaction, when Ca, Fe or Zn-emphasized product produce and nutrition labeling policy should be managed regularly with continuous monitoring.

  • This study focused on the recognition and information need for GMO(Genetically Modified Organism). The data were collected from 350 adults living in Daegu and Busan by means of a self-administered questionnaire. Frequencies and chi-square tests were conducted by SPSS Windows. The results of the survey were as follows: (1) the concerns about GMO were high but recognition was low. (2) many respondents were worried about the safety of GMO. (3) many people desired the labelling of GMO, and (4) the need for information about GMO was high and most respondents wanted to be informed about safety of GMO. This study suggests that the consumer education about GMO should be conducted through mass media and consumer protection organizations.

A Study on Fat Content in Commercial Retort Foods - Crude Fat, Saturated Fatty Acid and Trans Fatty Acid - (시판 레토르트식품의 지방함량 조사 - 조지방, 포화지방, 트랜스지방산 중심으로 -)

  • The aim of this study was to provide nutrition information to consumers by analyzing crude fat, saturated and trans fatty acids in commercial retort foods (n=70). The following sauce products of curries (n=21) and black-bean-sauces (n=16), other sauces (n=17) and instant cooking foods (n=16) were collected. Crude fat contents were quantified with the Rose-Gottlieb method using acid digestion. While saturated and trans fatty acids were examined by gas chromatography with a flame ionization detector (FID). Crude fat, saturated and trans fatty acid content ranges were $0.47{\pm}0.42{\sim}12.80{\pm}0.07g/100g$, $0.24{\pm}0.02{\sim}17.41{\pm}0.41g/100g$, $0.00{\pm}0.00{\sim}0.46{\pm}0.05g/100g$, respectively. Maximum recovery of analysis values was crude fat (119.7%), saturated fat (119%) and trans fatty acid (90%) compared the actual amounts based on the reference value indicated on the nutrition label. The analyzed samples were found to be compliant with nutrition label standard, because the contents of crude fat, saturated fatty acid, trans fatty acid were less than 120% of the reference value indicated on the nutrition label in retort foods. Therefore, the nutrition information on retort foods available to consumers was found to be trustworthy.

A Study on the Current Status of Calcium fortification in the Processed Foods in Korea (우리나라 가공식품의 칼슘강화 현황에 관한 조사 연구)

  • The objective of this study was to investigate the current status of calcium fortification in processed foods for obtaining basic data on nutrition fortification policy and nutrition labeling, Surveyed samples were the products fortified wish calcium among processed products sold in department store and large mart in Seoul from Aug. 1998 to Aug. 1999. But supplementary health food or special nutritious food and weaning food and infant formula were excluded from them. We examined the kinds and numbers of added nutrients except calcium and the amounts of calcium per 100 g product and nutrient labeling of calcium-fortified foods. Surveyed products were 81 foods and they were grouped in grain products, milk and milk products, processed meat and fishes, ramyuns, retort pouch foods, fruit juice and drinks. and others. Calcium fortification was found in wide food groups, especially in snack foods and carbonated beverages. In relation to surveyed products, most of them were fortified with only calcium. The number of added nutrients in the product were relatively various in comparison with each food groups. In addition to calcium, the most frequently added nutrient was DHA, and were followed vitamin, mineral, oligosacchride, fiber, etc. This result showed that the kind(s) and the number(s) of nutrient added to product did not consider nutrition balance of calcium-fortified foods. Units of calcium content were decided by companies, therefore consumers confused labelled content with mouth dose of calcium and the comparison of the amounts added calcium among products was difficult. The amounts of calcium in products were from 16.4 to 1226 mg Per 100 and from 2.5 to 27.6% RDA (recommended daily allowance) per serving size. The amounts of calcium in many products were less than 10% RDA per serving size, whole appraisal about fortified content was needed. And for nutrient labeling on calcium, they used various term whether it is approved by law or not.

  • Now a days, people eat outside of the home more and more frequently. Menu labeling can help people make more informed decisions about the foods they eat and help them maintain a healthy diet. This study was conducted to develop menu labeling system using Nutri-API (Nutrition Analysis Application Programming Interface). This system offers convenient user interface and menu labeling information with printout format. This system provide useful functions such as new food/menu nutrients information, retrieval food semantic service, menu plan with subgroup and nutrient analysis informations and print format. This system provide nutritive values with nutrient information and ratio of 3 major energy nutrients. MLS system can analyze nutrients for menu and each subgroup. And MLS system can display nutrient comparisons with DRIs and % Daily Nutrient Values. And also this system provide 6 different menu labeling formate with nutrient information. Therefore it can be used by not only usual people but also dietitians and restaurant managers who take charge of making a menu and experts in the field of food and nutrition. It is expected that Menu Labeling System (MLS) can be useful of menu planning and nutrition education, nutrition counseling and expert meal management.

  • 축산법 시행규칙이 일부개정(안)이 입법예고('11. 1.13~2.7) 됐다. 이는 국내산 축산물에 대한 품질경쟁력 강화 및 고비용의 생산체계를 개선하기 위해 축산물 등급판정기준 및 표시방법 일부를 개정하고 현 법률 운영상 나타난 미비점을 개선 보완하기 위함이다. 농림수산식품부는 오는 4월 1일부터 시행을 예고했다.
