A study of growth inhibition mechanism of vinegar drink on Candida albicans (식초음료의 Candida albicans에 대한 성장억제 기전에 관한 연구)

  • The purpose of this study was to investigate the antifungal inhibition mechanism of fruit vinegar drinks against Candida albicans. To evaluate the effect of vinegar drinks on the growth and morphological changes of C. albicans, we performed real-time PCR and phase contrast microscopy. All the groups added vinegar drink showed the inhibitory effect of C. albicans on growth compared to the control. The expression of genes ALS3, ECE1, HWP1, and Sap5 were decreased by vinegar drink. As a result of phase contrast microscopy, the group to which vinegar drink was added showed significant quantitative decrease, morphological change and inhibition of C. albicans. This study can be provided as basic data for the development of antibiotics by verifying the antifungal activity of vinegar drinks.

Antioxidant Activity of Vinegars Commercially Available in Korean Markets (국내 시판되는 식초의 항산화 활성)

  • The aim of this study was to determine the antioxidant compounds (polyphenolics and flavonoids) and to evaluate antioxidant activities using 2,2'-azino-bis-(3-ethylbenzothiazoline-6-sulfonic acid (ABTS) radical scavenging activity and reducing power in 19 vinegar samples. In general, antioxidant activities and antixoidant compounds in drinking vinegars were higher than those in seasoning vinegars. The highest polyphenolic content was found in balsamic vinegar (372.53 mg/100 mL) and also the highest flavonoid contents was in balsamic vinegar (114.40 mg/100 mL). Organic acid content in glacial acetic acid among 19 samples was found in highest amount. There was no relationships between antioxidant compounds/activities and organic acid content in vinegar samples. Therefore, it is assumed that antioxidant activity of vinegars is due to the polyphenolic and/or flavonoid contents of the vinegar samples.

Pouch-type Konjac jelly manufacture and quality characteristics of jelly-containing vinegar drinks (식초음료를 첨가한 파우치형 곤약젤리의 제조 및 품질 특성)

  • The quality characteristics of jelly-containing vinegar drinks were divided into three stages in this study. The jelly, which differs from the contents of the vinegar drink, sharply decreased the pH. After sterilization, hardness was significantly decreased, and the formulation was not maintained, which was considered the effect of low pH and high total acidity of vinegar drinks. Different experiments confirmed that pH and sterilization heating conditions were the major quality variables for gelation as both sodium citrate content and jelly hardness were correlated before and after sterilization. The hardness of the jelly, which differs in gel content, correlated with the increase in gelation content both before and after sterilization. Therefore, considering the spout jelly of a vinegar drink, pH of 3.5-3.7 and a content of glucomannan and caragenane mixed gel were considered appropriate to match the product's sensory properties.

Anti-oxidant Activities of Vinegar Beverage Containing Sasa quelpaertensis Nakai Extract (제주조릿대 추출액을 활용한 식초 음료의 항산화 활성 연구)

  • 제주조릿대 잎 열수 추출 진액을 첨가한 식초음료를 개발하기 위해 항산화 활성을 관찰하였다. 항산화활성은 DPPH radical 소거활성, Hydroxyl radical 소거 활성 실험을 진행하였다. Base 식초를 선택하기 위한 쌀 식초와 사과식초의 DPPH 라디칼 소거활성에서는 식초 원액에 비해 제주조릿대를 첨가하였을 때 쌀 식초는 최대 68.07%증가하는 것을 확인 할 수 있었고, 사과식초의 경우 78.74% 증가하는 것을 확인할 수 있었다. 맛, 향, 단가, 항산화활성을 통하여 사과식초를 Base식초로 선택하였으며, Base식초와 제주조릿대 진액의 혼합비를 결정하기 위하여 배합율에 따른 항산화활성 연구에서는, DPPH 라디칼 소거활성의 경우 제주조릿대의 비율이 높아짐에 따라 DPPH 라디칼 소거능 역시 증가하는 것을 확인 할 수 있었다. Hydroxyl 라디칼 소거활성의 경우, 제주조릿대 진액의 비율을 증가시킬 수록 활성이 조금씩 떨어졌으나, 대조군인 석류와 블루베리 식초에 비해서는 10%이상 높은 소거활성이 있는 것을 확인할 수 있었다.

Properties and sugar composition of an apple vinegar beverage containing oligosaccharides during storage (첨가당의 종류에 따른 저장 중 식초음료의 품질특성)

  • In this study, we prepared apple vinegar beverage with different acidity levels (low and high, LA and HA, respectively) containing fructooligosaccharide (FOS) or isomaltooligosaccharide (IMO). The changes in their properties and sugar composition during storage (at 40℃ for 6 months) with those of the control (sample containing sucrose, SUR) were compared. The reducing sugar content in all samples increased during the storage, except for IMO-LA, and SUR showed the highest values. More organic acids were found in the HA samples than in the LA samples. The browning degree, turbidity, and total phenolic content increased during storage in all samples although IMO-LA showed the least. The IMO amount was maintained in the sample during storage. However, most of the FOS and SUR were degraded into glucose and fructose. In conclusion, the properties of low-acidity beverages could be better maintained with the addition of oligosaccharides compared to SUR, and IMO was more suitable for this purpose than FOS, when considering functionality.

Volatile Flavor Compounds in Commercial Vinegar Beverages Derived from Fruits (과일유래 시판 식초음료류의 휘발성 향기성분)

  • This study compared volatile flavor profiles of 4 commercial vinegar beverages (Italian vinegar beverage (IVB), Japanese vinegar beverage (JVB), Japanese Yuzu-Ponz (JYP), and Korean white wine vinegar beverage (KWVB)). Flavor components of vinegar beverages (VBs) were determined using SPME/GC/MSD. The profiles of VBs were as follows; IVB (11 acids, 17 esters, 10 alcohols, 8 aldehydes, 3 terpenes, 4 aromatic hydrocarbons, 9 ketones), JVB (7 acids, 8 esters, 9 alcohols, 7 aldehydes, 13 terpenes, 7 aromatic hydrocarbons, 1 ketones, 3 miscellaneous compounds), JYP (3 acids, 12 esters, 8 alcohols, 7 aldehydes, 63 terpenes, 6 aromatic hydrocarbons, 2 ketones, 5 miscellaneous compounds), KWVB (10 acids, 10 esters, 9 alcohols, 8 aldehydes, 2 terpenes, 5 aromatic hydrocarbons, 4 ketones, 2 miscellaneous compounds). IVB and JVB showed similar flavor compositions (acids, ketones and esters in particular), whereas major components in JYP and KWVB were terpenes (79.6%) and acids (81.0%), respectively. Five compounds including 2-phenylethyl acetate (floral, fruity, sweet odor), 2-phenylethanol (floral, rose odor), vitispirane (fruity odor), geranylacetone (fragrant odor) and acetic acid were identified as major components in balsamic vinegar beverages.

참외식초/농축액을 함유한 참외농축음료의 저장조건 모니터링

  • 현재 참외는 생산량의 대부분이 생과로 소비되고 있으나, 저장성이 낮아 새로운 가공식품 개발이 요구되고 있는 실정이다. 이에 참외식초/참외농축액을 함유하는 참외농축음료를 제조하였으며, 유통기간 동안 품질변화를 알아보기 위해 저장온도 및 저장시간에 따른 품질변화를 조사하였다. 배합조건에 따라 배합한 참외농축음료를 8$0^{\circ}C$에서 30분간 살균한 후 저장온도 및 시간에 따른 품질변화 및 관능적 특성변화를 모니터링하였다. 저장온도(20, 30, 40, 50, 6$0^{\circ}C$) 및 저장시간(0, 2, 4, 5, 8 week)을 독립변수(Xi.)로 하여 달리한 각 실험조건을 -2, -1, 0, 1, 2의 다신 단계로 부호화하고 실험조건을 설계한 다음 각 조건에서 저장된 참외음료의 품질특성(종속변수, Yn)을 모니터링하였다. 관능검사는 선정된 패널요원을 대상으로 4$^{\circ}C$에서 저장한 대조구와의 색상, 향, 맛 및 전반적인 기호도가 어떻게 달라지는가를 평가하였으며, 색도 및 갈색도를 측정하였다. 또한 제조된 참외 농축 음료를 저장하면서 미생물의 생육유무를 확인하기 위해 Petrifilm을 사용하여 미생물의 유무를 확인하였다. 참외식초/참외농축액을 이용한 참외농축음료를 제조하여 음료의 저장온도 및 저장시간에 따른 관능적인 특성 및 품질 특성을 모니터링하면서 저장성 실험을 통해 저장안전성을 평가한 결과 저장시간 및 저장온도에 따른 관능적인 색상은 1.6~4.0의 값을 나타내었으며, 향은 2.3~4.0의 값을 나타내었으며, 맛은 1.8~4.0의 값을, 전반적인 기호도는 2.1~4.0의 감을 나타내는 것으로 나타났다. 이화학적 품질 검사 결과, 색도L(백색도)값은 21.79~87.23, 색도 a(적색도)값은 -1.27~35.79의 값을 나타내었으며, 색도 b(황색도)값은 16.57~18.89의 값을 나타내었다. 갈색도는 0.386~3.214의 값을 나타내었으며, PH는 4.02~4.24의 값을 나타내었다. 일반미생물은 검사 결과 모든 조건에서 검출되지 않았다. 참외농축음료를 8$0^{\circ}C$에서 30분간 살균하여 미생물학적 품질 검사 결과 저장온도 및 저장시간에 따라 미생물이 검출되지 않았으며, 유통하기에 적합한 음료가 제조됨을 검증할 수 있었다.

Anti-fatigue effect of a cucumber vinegar beverage on rats after high-intensity exercise (고강도 운동을 실시한 흰쥐에 대한 오이식초음료의 항피로 효과)

  • We evaluated the effect of cucumber vinegar (CV) on fatigue accumulation in rats that performed high-intensity exercise. The rats were randomly assigned to 3 groups: sedentary control (SC), exercise control (EC), and CV. Body weights were higher in groups EC and CV than in group SC. Organ weights in group CV did not differ from those in group SC. Running time was significantly longer in group CV than in the other groups. Compared to group EC, cucumber vinegar administration markedly decreased serum concentrations of ammonia, inorganic phosphate, and ${{\small}L}$-lactate. The activities of serum creatine kinase and lactate dehydrogenase were significantly lower in group CV than in groups SC and EC. Glycogen contents in the muscle and liver were higher in group CV than in groups SC and EC. These results suggest that cucumber vinegar can serve as a functional ingredient in the development of a beverage to attenuate fatigue.
