A study on development and nutrient analysis of traditional food in the Sunchang area (순창지역의 전통음식 개발 및 영양평가)

  • The purpose of this study was to investigate development and nutrient analysis of traditional food in the Sunchang area. A total 6 kinds of set tables was excavated from storytelling. Among set tables, taste and season food were the best in Sunchang gochujang hanjeongsik and Sunchang arirang season table. Shape color, smell, and commercialization possibility and differentiation were best in Sunchang arirang season table. Mole Ratio of sodium and potassium was 1:1 in Sunchang gochujang hanjeongsik and Sunchang arirang season table. The calcium contents in Sunchang gochujang hanjeongsik and Sunchang arirang season table were higher than other traditional foods. This result indicated that Sunchang gochujang hanjeongsik and Sunchang arirang season table are useful for traditional functional food. Also, it is highly suggested to make a database system about local food and standardization of traditional foods cookery.

  • 순창고추장의 역사는 지금부터 250여년밖에 안된 것으로 이야기된다. 그러나 이미 1600년대에 순창고추장 만드는 법이 나오고 있으며, 구전이지만 고려말 이성계가 순창고추장을 맛본 이야기가 있다. 이 글에서는 여러 기록들을 통하여, 고추장의 역사는 지금부터 2000여년, 그리고 순창고추장의 역사는 1000여년으로 보았다.

  • 고추장의 고장 전북 순창(淳昌)에는 고추장보다 몇 배 더 값진 진품이 있다. 다름 아닌 순창 고추장장아찌를 두고 하는 말이다. 순창시내를 지나다 보면 가는 곳마다 원조 고추장집들이 줄지어 있고 고추장과 함께 다양한 장아찌들이 진열되어 있는 모습을 쉽게 만나볼 수 있다. 이와 같은 순창의 장 문화는 내륙 깊숙이 들어앉은 알맞은 높이의 지리적 환경과 오염 없이 맑은 공기, 뛰어난 수질 때문인 것으로 알려지고 있다. 그래서 어떤 농작물이든 맛이 확실하고 그 효능이 뛰어나 사람이나 가축이 모두 건강하고 장수한다. 고추장장아찌는 진귀한 만큼 순창의 일반적인 고추장처럼 널리 알려져 있지는 않다. 더욱이 급격한 식생활의 변화속에서 자칫 잊혀갈 염려도 없지 않다. 보다 깊은 과학적 접근과 탐색이 이뤄져야 할 일이다.

The Network Changes and Adjustments in the Sunchang Fermented Soy Industry (순창 장류산업 네트워크의 변화와 조정)

  • The purpose of this study examines interaction between region and industries through industrial networks of the regional resource-based industry. To achieve this goal, the fermented soy products industry in Sunchang is selected as a case study. This study traces the process of adjustment of firm-activity networks. And then, it scrutinizes the coevolution process between region and industry. It shows that the fermented soy products industry in Sunchang is embedded in the region and it strengthens regional development potentials for the local/regional economy.

SHRIMP U-Pb Ages of the Namwon and Sunchang Granites (남원화강암과 순창화강암의 SHRIMP U-Pb 연령)

  • The Namwon and Sunchang granites are neighbouring plutons intruding the Yeongnam massif and the Okcheon metamorphic belt, respectively in the southwestern part of the Korean peninsula. In this study, SHRIMP zircon U-Pb ages are determined from these plutons. The results show that the emplacement age of the Namwon granite is $185.8{\pm}0.9(2{\sigma})$ Ma. We obtained $175.0{\pm}2.0(2{\sigma})$ Ma from the northern part and $179.8{\pm}0.9(2{\sigma})$ Ma from the central part of the Sunchang granite, yielding $177.4{\pm}1.3(2{\sigma})$ Ma as the average age of the pluton. Such age results confirm that the Honam shear zone, which cause marked deformation of the Sunchang granite, was active after ca. 175 Ma.

Technological Convergence and Knowledge Network in Rural Area: Fermented Soy Product Manufacturing Industry in Sunchang, Korea (농촌지역 산업 기술지식의 융합과 지식 네트워크: 순창군 장류산업을 중심으로)

  • This study aims to analyze knowledge extension and diffusion trend among industries through technological convergence in non-Capital rural areas. A case of Sunchang, Korea examines knowledge extension trend of fermented soy product manufacturing industry. Patent application data are used to make technology convergence analysis and knowledge network analysis. Patent analysis results show that there are differences of knowledge extension trend between the whole country and Sunchang. Technologies of fermented soy product manufacturing in Sunchang is inclined to extend toward technologies related to fermented microorganism. Contrary to the whole country, knowledge extension in rural area like Sunchang is converged to technologies suitable for specialized but limited regional assets and human resources. Core actors of knowledge network of fermented soy product manufacturing in Sunchang are mainly public organizations such as local government, universities, and agencies or institutes. Recently technology sharing and extension is likely to occur through the cooperation between associative corporations and public organizations.

  • 뜨거운 뙤약볕이 내리쬐는 7월의 어느 날, 더위를 식혀줄 달콤한 단비가 내렸던 날이었다. 농장탐방을 하기는 아쉬운 날씨라고 생각했지만, 순창터미널 앞에선 정해인 대표 내외가 반갑게 맞이해주었다. 전라북도 순창에서 10개동 2만3천여수 규모의 농장을 운영하고 있는 해인농장의 정해인 대표. 정성스레 길러낸 오리는 많은 사람들에게 인정받아 지난해 농업인의 날 장관표차을 받기도 했다. 더욱더 궁금해진 그의 사육노하우와 생각들을 들으러 해인농장을 찾았다.

Petrogenetic Study on the Foliated Granitoids in the Chonju and the Sunchang Area(I) -In the Light of Petrochemical Properties- (전주 및 순창지역에 분포하는 엽리상화강암류의 성인에 대한 연구(I) - 암석지화학적 특성을 중심으로 -)

  • In order to understand the processes involved in the petrogenesis and the differentiation of the primary magma spectrum, a petrological and geochemical properties were investigated for the Chonju and the Sunchang foliated granites, which are located in the southwestern part of the Okchon zone and extends up to the northwestern boundary of the Ryongnam massif as two subparallel batholiths. Major element analyses show that the Chonju and Sunchang foliated granites are classified petrologically into a weakly to strongly peraluminous or calc-alkaline, but do not fit neatly into either of the I/S-type or magnetite/ilmenite-series classification schemes for granites, although the I-type and magnetite-series characteristics seem to be predominant based on the major element chemistry. In normative compositions, the Chonju granite is petrographically evolved from granodiorite to granite, whereas the Sunchang granite is from granodiorite to quartz monzodiorite. It seems to suggest a difference of the magmatic evolution processes such as crustal assimilation and/or fractional crystallization in magma. The REE patterns of both batholiths show high similarity and strongly fractionated REE distributions which show high $(Ce/Yb)_N$ ratios and little or no Eu anomalies. These REE patterns correspond broadly to those seen in the pre-Cretaceous granitoids of Korea. Apparently, the evidences obtained from the bulk compositions strongly suggest that the two foliated granitoids were formed by partial meltings of a relatively restricted and similar, may be common, source material which contains a continental crust component having an igneous composition, and have undergone a similar magmatic differentiation processes.
