Nitrate and Nitrite Content of Some Fermented Sea Foods and Vegetables (시판젓갈류와 채소류중의 질산염 및 아질산염함량)

  • Nitrate and nitrite, which readily produce N-nitrosamines by reaction with secondary amines, are widely distributed in natural products such as vegetables and cereals, and are also used as a color fixation in meat products or fish roes. This experiment was carried out to determine the contents of nitrate and nitrite in foods such as fermented sea foods and fresh vegetables purchased at markets in Korea. The contents of nitrate were $0.74\sim13.81\;ppm$ for fermented sea foods and $4.0\sim1,572.5\;ppm$for fresh vegetables. As for vegetables, the nitrate levels of edible herbs were relatively higher than those of greens, fruits and rootcrops. The nitrite contents in fermented demoisells(Chromis notatus), fermented shrimp, fermented small squid, fermented anchovy and salted Alaska pollack roe were very little, while those in fermented hairtail and fermented entrails were not detected. As for vegetables, nitrite levels found for cabbage and lettuce were relatively as high as 3.8 ppm and $2.5\sim2.9\;ppm$, respectively, but were not detected in Korean cabbage, green perilla leaf, pepper, garlic and burdock. Of vegetables, the nitrate values in the outer part of Korean cabbage, stems of water cress and leaves of green onion were higher than in the other parts. Little variety of the nitrate levels were found during 4 days storage. In the comparison of low temperature storage and room temperature storage, lettuce, pumpkin and spinach contained higher levels of nitrate at low temperature storage, while eggplant and green onion, at room temperature storage.

  • To obtain informations for construction of a mass culture system, factors affecting on the specific growth rate of marine Chlorella sp. purchased from the Chungmu Laboratory of the South Sea Fisheries Institute, the National Fisheries Research and Development Agency were investigated using a vertical tubular photobioreactor (VT-PBR) system. Optimal temperature, illumination intensity, air- and $CO_{2-}$ flow rate for Chlorella sp. were $20^{\circ}C$, 6,000 lux, 0,56 vvm and 0.028 vvm, respectively.

  • The effects of bamboo salt on quality of traditional Jeju fermented fish, $Jari-Jeot$ were investigated. Bamboo salt suppressed the activity of microorganism more effectively than salt. pH of $Jari-Jeot$ prepared with both of salt and bamboo salt increased gradually during storage. During fermentation there were little changes in color between salt and bamboo salt fermented $Jari-Jeot$. Salinity did not show obvious differences between samples. Water content increased in salt and bamboo salt fermented $Jari-Jeot$ due to the decrease of salinity. Hypoxanthine was the major component of ATP-related compounds in both salt and bamboo salt fermented $Jari-Jeot$. In $Jari-Jeot$ fermented with salt or bamboo salt, lysine, glutamic acid, proline, alanine, leucine, isoleucine, arginine and histidine were dominant amino acids which marked 69%~74% of total free amino acids, while trace amounts of taurine were detected.

  • 양파는 백합과에 속하는 여러해살이풀로 서남아시아의 페르시아가 원산인데 세계 각국의 온대지방에서 많이 재배하고 있다. 양파의 생약명은 옥총(玉憁)으로 피 속의 콜레스테롤을 떨어뜨리고 심장혈관의 혈류량을 증가시켜 성인병 예방에 좋다. 철원지역은 내륙지방이면서도 고도가 높아 기온차가 큰 대륙성 기후의 성격이 강하기 때문에 이 지역에서 재배한 양파는 남부지방에서 재배된 양파보다 당도가 높고 맛도 좋다고 알려져 있다. 인산질 성분은 특히 근의 발육을 촉진시키는 중요한 성분이다. 하지만 토양부의 인산성분이 수확 시까지 다량 지속되면 양분의 경합으로 뿌리부의 부패를 초래하기 쉽다. 따라서 수확기에 환원형 인산질을 중심으로 엽면시비 방법으로 영양균형을 유도하여 양파의 품질과 저장성을 향상시키는 것이 중요하다. 본 연구는 아인산(H3PO3)과 수산화칼륨(KOH)을 희석하여 산도조절 후, 아인산염으로 철원양파에 엽면 처리한 후 성분을 비교분석하였다. 본 연구에서 아인산염의 농도를 500, 1000, 1500배 희석하여 철원양파에 2018년 5월에 분무기를 이용하여 3회 엽면살포 한 후 6월 말경 수확한 후 HPLC를 이용하여 페놀화합물을 분석하였다. 그 결과 양파에서 중요한 물질 중의 하나인 큐에르세틴(quercetin)함량은 대조구(96.39 ug/g)에 비해 500배(179.70 ug/g), 1000배(150.27 ug/g), 1500배(105.95 ug/g) 처리구에서 높은 함량을 보였다. 또한 caffeic acid, p-coumaric acid, ferulic acid, rutin, kaempferol, 당도 함량은 처리구에서 대조구보다 높은 함량을 보였다. 따라서 아인산염 처리는 철원양파에서 페놀화합물의 함량을 높이는데 중요한 역할을 한다는 것을 알 수 있었다. 본 연구를 통하여 아인산염과 같은 환원형 엽면시비법을 이용하여 재배한다면 고품질의 기능성 양파를 생산할 수 있을 것이라 생각한다.

Spatio-Temporal Distribution of Nutrients in the Surface Waters of Deukryang Bay 1. Seasonal Variation of Nutrients and Limiting Factors for Primary Production (득량만 표층수중 영양염류의 시공간적 분포특성 -1. 영양염류의 계절변화와 기초생산 제한인자-)

  • In order to see the seasonal variation of nutrients and the limiting factors to the primary production in Deukryang Bay, both dissolved inorganic nutrients and salinity were measured in the surface waters during the periods from July 1992 to March 1993. The mean value of salinity was the lowest in ?all and the highest in early spring. Dissolved inorganic nitrogen (DIN) was the highest in winter and the lowest in summer. However, both phosphate and silicate were the highest in summer and the lowest in fall. Salinity was generally higher in the outer region than in the inner region of the bay.DIN content was nearly depleted (less than $2{\mu}M$) in summer. From fall to spring, DIN content was nearly depleted in the inner region and relatively high in the outer region of the Day. Phosphate was the highest in summer showing an opposite distribution pattern to salinity, and it was nearly depleted (less than $0.1{\mu}M$) in fall and winter. In spring, however, phosphate content was slightly high in the outer region. Silicate content showed an opposite distribution pattern to salinity in summer. in other seasons, However, the distribution pattern of silicate was similar to the salinity. DIN seemed to be a limiting factor for the primary production at all area of the bay in summer and at the inner region in other season. However, phosphate seemed to be a limiting factor at all area of the bay in fall and winter and at the inner region in spring. Silicate may limit the production of diatoms at the inner region of the bay in winter and spying. Both phosphate and silicate showed a good inverse relationship with salinity in summer, which indicates inputs of these nutrients from the freshwater runoff. In the other seasons, both nitrate and silicate showed a positive linear relationship with salinity in the outer region of the bay, suggesting that these two nutrients were mainly supplied by the inflow of the offshore costal water which had high nitrate content associated with vertical mixing.

Chemical Characteristics of Water Types in the Korea Strait (해양 화학적 특성으로 본 대한해협의 수계)

  • Physical and chemical survey on western channel of the Korea Strait was made using oceanographic data from July 25 to July 31, 1983. Four water types were distinguished at western channel: runoff of the Nakdong River, Tsushima Current Waters, Keoje Coastal Waters, and Ulsan Coastal Waters. Influence of the Nakdong River was greater at Southern East Coast near Yeong-Do Island in Pusan than at Keoje Coast. General characteristics of these four water types were as follows : For runoff of the Nakdong River, transparency was within 3 m, water colour chinese yellow (number 11), surface temperature $18{\sim}19^{\circ}C$, salinity less than $31\%0$, surface dissolved oxygen (D.O.) $4.5{\sim}5.0ml/l$, contents of phosphate $0.25{\sim}0.5{\mu}g-at./l$ ; these values were the highest among these four water types. For Tsushima Current waters, transparency was greater than 15 m, waters color blue (number $2{\sim}4$), surface temperature about $23^{\circ}C$, salinity $32{\sim}33\%0$, and surface D.O. greater than 5,0 ml/l. Phosphate, nitrate and silicate were less than 0.25, 2.0, and $2.5{\mu}g-at./l$, respectively; these values were the lowest among these four water types. Keoje Coastal Waters had low temperature ranging $20{\sim}21^{\circ}C$ at surface, and high salinity greater than $33\%0$. D.O. was less than 5.0 ml/l, phoshpate, $0.5{\mu}g-at./l$ nitrate and silicate were less than $3.5{\mu}g-at./l$. Ulsan Coastal Waters had the lowest surface temperature among these four types; surface temperature was less than $16^{\circ}C$, salinity greater than $33.5\%0$, and D.O., phosphate and nitrate had very high values. It seems that these high values resulted from upwelling phenomena.

  • Biological and chemical characteristics and trophodynamics in the frontal zone were investigated in the southern waters of Korea, Temperature, nutrients (dissolved inorganic nitrogen, $PO_4^{3-}-P$, and $SiO_2^{-}-Si$) chlorophyll a and zooplankton were collected and analyzed along the two transects, the frontal zone and the non-frontal zone, in April, 1994. Nutrients were higher in the non-frontal zone than in the frontal zone. But chlorophyll a concentration was high in the frontal zone, particularly at the 20 m depth of the main frontal station (St. TII-2), where was located at the junction between the stratified layer and the non-stratified layer with the lowest nutrients. Zooplankton was more abundant in the frontal zone than in the non-frontal zone, particularly at the innermost station of the frontal zone. Copepods showed high composition rate more than $90\%$ at all stations except the main frontal station (St. TII-2). At the main frontal station (St. TII-2), euphausiids and siphonophores were dominated. Chlorophyll a revealed a significant relationships with $SiO_2^{-}-Si$ in both transects and copepods in the non-frontal zone. Copepods also showed very close relationship with siphonophores in the frontal zone. This suggests that the abundance of copepods could be controlled as bottom-up in the non-frontal zone and as top-down in the frontal zone.

  • The formation and dissolution of hydroxides, carbonates and hydroxyapatite (HAp), which depend on the pH of solution, are important factor for the preparation of homogeneous and fine HAp, $Ca_{10-x}(HPO_4)_x(PO_4)_{6-x}(OH)_{2-x}(x=0)$, ceramic powder from the $Ca-PO_4-H_2O$ system. Since the solubility of each complex ion is a linear function of pH, the solubility diagram can be obtained by plotting the logarithmic molar concentrations calculated from the values of the equilibrium constants and solubility products for hydroxides, carbonates, and hydroxyapatite. The optimum pH condition for the formation of single phase $Ca_{10-x}(HPO_4)_x(PO_4)_{6-x}(OH)_{2-x}(x=0)$ powder in $Ca-PO_4-H_2O$ system at $25^{\circ}C$ was estimated as $10.5{\pm}0.5$ through the theoretical consideration. The HAp powder dried at $80^{\circ}C$ showed a fine agglomerated particles with a size of 75 nm. The HAp powder calcined at $1,000^{\circ}C$ consisted of nearly homogeneous particles with a size of 450 nm. Even though the dried HAp particles consisted of agglomeration, mechanical properties were superior due to fine microstructure after sintering.

  • 본 논문은 왕겨, 호두각 등의 원료를 대상으로 수산화카륨등으로 활성화시키므로써 높은 비표면적과 세공율을 갖는 활성탄을 제조하고, 제조된 활성탄을 이용하여 이산화탄소 흡착능을 연구하였다. 최근 높은 비표면적과 세공부피를 갖는 활성탄에 대한 연구는 매우활발히 일어나고 있으며, 수소, 메탄 등의 저장과 이산화탄소 분리공정의 적용성을 위한 연구가 활발히 수행되고 있다. 제조된 활성탄의 표면개질을 통한 이산화탄소의 흡착능의 증대와 탈착효율의 증대를 위하여 각종 금속염이 미치는 영향을 연구하였다. 금속염의 종류와 처리량 및 아민등의 유기물에 의한 변화를 고찰하였다.
