무순 추출물의 생리활성 효과

  • 무순에는 비타민 C가 많이 들어 있어 겨울철 비타민 공급원뿐만 아니라 디아스타제라는 효소가 들어 있어 소화를 촉진시키는 역할을 한다. 그 외에도 거담제 및 건위제 작용을 하고 음주로 인한 토혈해소, 천식에도 좋아 약용하기도 한다. 본 연구에서는 이용가치는 적지만 농가 소득증대에 기여 할 수 있으며 소화를 촉진시키는 무순, 또는 무싹기름이라고 일컬어지는 무순을 추출용매에 따라 생리활성 효과 분석하고 영양학적 가치가 가장 높은 시기의 무순을 선택함으로써 올바른 섭취의 기초자료를 마련하고 그 기능성을 확인하여 기능성 식품소재 및 기능성 화장품 소재로써의 활용을 검토하고자 하고자 한다. 무순을 4일, 8일, 12일에 따라 incubator에 배양하여 시기별로 채취하여 동결건조 한 후 70% Ethanol, 80% Methanol, 75% acetone, 열수로 환류 추출한 후 시료로 사용하였다. 각 용매 추출물에 대해 DPPH free radical 소거능 실험에서는 acetone 추출물에서 89.18%로 가장 높은 전자공여능을 나타냈으며 각각의 추출용매에서 성장 4일과 12일의 무순에서 높은 전자공여능을 보였다. 아질산염 소거능에서는 pH 1.2의 조건에서 가장 높은 아질산염 소거능을 보였고, 열수 추출물에서 89.70%로 가장 높은 소거능을 보였다. pH 4.2조건에서는 열수추출물의 소거능이 가장 좋았고, pH 6.0 조건에서는 가장 낮은 소거능을 보였으며, Ethanol 과 Methanol 추출물에서 23.55∼37.41%의 소거능을 보였다. SOD유사활성은 성장 8일에서 모두 낮은 활성을 보였으며, 성장 4일과 성장 12일의 무순에서는 큰 차이를 보이지 않았지만, Methanol 추출물중 성장 12일에서 27.41%의 SOD유사활성을 보였다.ic acid는 28.8∼51.7 mg%, 미강에서 321.4∼438.4 mg% 범위로 나타났다. 현미, 백미 및 미강에 함유된 총 폴리페놀의 함량을 표준 페놀화합물로 카테친을 사용하고 비색법에 의하여 측정하였을 때 오대 현미의 폴리페놀 함량은 78.4 mg%, 남평 현미 88.8 mg% 였다. 도정한 백미 중의 총 폴리페놀 함량은 30.3∼56.9 mg%, 미강이 541.5∼472.6 mg%의 범위였다. 이상과 같이 쌀에는 phenolic acid 및 총 폴리페놀이 상당량 함유되어 있으며 특히 배유보다는 강층에 많이 존재하므로 이들 성분의 효율적인 이용을 위한 쌀의 섭취방안이 필요한 것으로 나타났다. 유의적인 상관관계를 나타내고 있어 백편의 조직감은 Compression force 와 Work ratio로 대치할 수 있을 것이라고 사료된다. 수분함량은 기계적 검사보다 관능검사와 더욱 높은 상관관계를 나타냈다.내었다. 항균활성이 우수한 생약재를 농도별로 활성을 조사한 결과, 물 추출물과 10% Ethanol 추출물 모두 낮은 농도에서도 우수한 항균활성을 나타내었다.취와 함께 점질성 갈변물질이 생성되었다. 이와 같은 결과로 볼 때, BAAG의 처리는 BAAC의 경우보다 가격은 저렴하면서도 항균력은 우수한 천연 항균복합제재로써 농산물 식품원료에 적용하여 선도유지 기간을 연장할 수 있는 효과를 기대할 수 있었다. 과일 등의 포장제로서 이용할 가능성을 확인하였다.로 [-wh] 겹의문사는 복수 의미를 지닐 수 없 다. 그러면 단수 의미는 어떻게 생성되는가\ulcorner 본 논문에서는 표면적 형태에도 불구하고 [-wh]의미의 겹의문사는 병렬적 관계의 합성어가 아니라 내부구조를 지니지 않은 단순한 단어(minimal $X^{0}$ elem

Physico-Chemical Changes in Pork Bellies with Different Cooking Methods (조리방법에 따른 삼겹살의 물리화학적 특성 변화)

  • This study was carried out to suggest an effective cooking method for pork bellies to decrease intake of animal fat. The physico-chemical characteristics of pork bellies cooked by different methods (boiling, steaming, baking and frying) were investigated. The moisture contents of cooked meats decreased but crude lipid contents increased. The cooking losses, moisture drain rates, and lipid drain rates were high after frying and boiling. The pH values increased markedly with boiling and both the acid value and the refraction index of the fat significantly increased with frying. The hardness, gumminess, and chewiness of the meat increased considerably with boiling, but decreased notably after frying. The springiness decreased very much with boiling and cohesiveness greatly increased with steaming. The CIE $L^*$ (lightness) value increased notably with steaming but decreased markedly with frying. The CIE $a^*$ (redness) value decreased markedly with all cooking methods, especially boiling, and the CIE $b^*$ (yellowness) value decreased with both boiling and steaming but increased with both baking and frying. The fatty acids of fat from the raw pork bellies were primarily oleic acid (42.4%), palmitic acid (23.9%), and linoleic acid (16.1%). The ratio of total monounsaturated fatty acids to total saturated fatty acids was 1.190 and the ratio of total polyunsaturated fatty acids to total saturated fatty acids was 0.446. In addition, the composition of fatty acids was not significantly changed with any cooking method except frying. Therefore, boiling is the effective cooking method for pork bellies to decrease intake of animal fats.

남은 음식물을 첨가한 펠렛사료가 오리의 생산성 및 육질에 미치는 영향

  • This experiment was conducted to investigate the effects of pelleted food waste on performance and meat quality of broiler ducks. One hundred-forty four broiler ducks were divided into 4 groups with 3 replicates per treatment for 5 weeks. Dietary levels of food waste 0%, 25%, 50% and 75% were included in experimental diets Daily weight gain was significantly increased by addition of food waste 25% and .50%, whereas decreased(P<0.05) by addition of 75% food waste. Feed intake were not affected by the pelleted food waste supplementations. Feed efficiency was improved(P<0.05) by the addition 25% food waste, however, there was depressed(P<0.05) by the addition of 75% food waste. Carcass weight was significantly decreased(P<0.05) by the addition 75% food waste. Moisture composition of breast meat were not significantly different by 25% and 50% food waste, however, there was significantly increased by 75% food waste. As the food waste level was increased, lipid and protein composition in beast meat was significantly decreased As the food waste level was increased. pH of beast meat was increased, whereas lightness and redness of meat color were decreased. Cholesterol content was significantly decreased(P<0.05) by addition of food waste. Odor and appearance of sensory evaluation was depressed by addition of food waste, whereas taste of sensory evaluation was improved by addition of food waste. There was no pathological findings from liver, spleen and kidney in slaughtered ducks. The results of this study suggests that pelleted food waste 25% and 50% improved broiler ducks performance and meat quality in broiler ducks.

Effects of Ammoniation or Supplementation of BHT, CTC, and Probiotics to Moldy Corn on the Performance of Broiler Chickens (곰팡이 쓴 옥수수를 사용할때 Ammonia 처리와 BHT, CTC, Probiotics의 첨가가 육계에 미치는 영향)

  • In order to study the effect of feeding moldy corn in the feed and to compare the efficacy of several antidotical treatments, a feeding trial was conducted using broiler chickens. Ground yet low corn was adjusted to contain 20% moisture and then incubated at 35$^{\circ}C$ for 20 days. The number of fungi increased from 11${\times}$10$^4$/g to 42 10$\^$7/g on incubation but aflatoxins (B$_1$, B$_2$, G$_1$, G$_2$) were not detected by TLC test. Moldy corn was included in the experimental diets at the level of 7% with various treatments. Thirty six hatched male broiler chickens were divided into 6 groups and each group was placed for 4 weeks on one of the following treatments: Fresh corn, Moldy corn, Ammoniated (1.5%) moldy corn, Moldy corn+BHT (0.1%), Moldy corn CTC (100ppm) and Moldy corn+Probiotics. Weight gains of the birds fed Ammoniated moldy corn diet, Moldy corn+Probiotics dist and Moldy corn+CTC diet were greater by 6.1%. 7.6% and 3.9% respectively than those fed Moldy corn diet. The feed efficiencies of Moldy corn+Probiotics diet and Moldy corn+CTC diet were better than those of Moldy corn diet. Dry matter contents of the livers of the birds fed Ammoniated moldy corn diet, Moldy corn+BHT diet and Moldy corn diet were lower than those of other treatments. Proteion contents of the livers of the birds fed Moldy corn diet, Moldy corn +CTC diet and Moldy corn+BHT diet were lower than those of other treatments. Moldy corn tended to increase fat content of the livers.

Effects of Adding Bamboo leaves Powder on the Quality of Jeolpyon (댓잎분말을 첨가한 댓잎절편의 일반성분 및 품질특성)

  • This study investigated the effect of bamboo leaf powder, added at content of 0%, 3%, 6%, 9% and 12%, on the quality and sensory characteristics of rice cake imprinted with flower pattern (Ed-there is no respecitive comparison here) The chemical composition as a whole was 3.07${\pm}$0.12% of moisture, 5.87${\pm}$0.02% of crude protein, 2.52${\pm}$0.05% of crude fat, 23.70${\pm}$0.07% of crude fiber and 7.73${\pm}$0.02% of crude ash. With increasing amount of added bamboo leaf powder, the hardness and chewiness of the cake were significantly increased(p<0.05), while the cohesiveness, springiness and adhesiveness were decreased. In chromaticity, the L-value, the indicator of brightness, was significantly decreased with increasing bamboo leaf powder content. The a-value, the indicator of redness, was significantly lower than the chlorophyll color (p<0.05). The b-value, the indicator of yellowness, was increased indirect proportion to the content. In sensory test, the sensory characteristics such as color, flavor, taste and chewiness were all stronger with increasing powder content, whereas the softness and dampness were weaker. The greatest overall satisfaction was achieved by the sample group of cake with 6% preference added powder.

Effect of Resistant Starch on Body Weight and Defecation in Loperamide-induced Constipated Rats (저항전분 투여가 loperamide 유도 변비 쥐의 체중변화와 배변상태에 미치는 영향)

  • The present study was conducted to evaluate the effects of resistant starches (RS2, RS3) on weight change and defecation states in rats with constipation induced by loperamide. Sixty male Sprague-Dawley rats were divided into the following six groups: normal control-5% cellulose (NC), constipated-5% cellulose (CC), constipated-5% pectin (CP), constipated-5% RS2 (CR2), constipated-8% RS2 (CR2-H) and constipated-5% RS3 (CR3). The animals were fed AIN76-based experimental diets for 5 weeks. Supplementation of RS2 and RS3 resulted in significantly lower feed efficiency ratios and body weight gain as compared to cellulose supplemented group. Large intestine length was significantly longer in the resistant starch and cellulose groups than in the pectin group. Relative fecal weight to feed intake was significantly higher in the RS3 resistant starch group than in the pectin group, and the appearance of feces was similar to that of the cellulose group. Supplementation of RS3 or cellulose significantly shortened gastrointestinal transit time in the constipated rats as compared to pectin. The results of the present study demonstrated that resistant starch supplementation, especially RS3, may help in depress body weight gain and alleviate constipation through an increase of fecal weight and shortening gastrointestinal transit time in constipated animals.

Effects of Opuntia ficus-indica Complexes B(OCB) on Blood Glucose and Lipid Metabolism in Streptozotocin-induced Diabetic Rats (손바닥선인장 복합물이 당뇨 쥐의 혈당 및 지질대사에 미치는 영향)

  • This study was conducted to examine the effects of Opuntia ficus-indica complexes(OCB) on the intake of water and food, body weight, blood glucose levels, glucose tolerance and lipid metabolism in streptozotocin(STZ)-induced diabetic rats. Thirty-two male Sprague-Dawley rats were assigned to four different groups; non-diabetic control(NC), diabetic control (DC), diabetic OCB of 2%(OCB-2), and diabetic OCB of 5%(OCB-5). The animals were fed on each experimental diet for 3 weeks. The DC, OCB-2 and OCB-5 groups showed a higher intake of water and food than the NC group. The fasting blood glucose levels were 100 $ mg/d{\ell}$ and 416 $ mg/d{\ell}$ for the NC and DC groups, respectively. The OCB-5 group presented a significantly low fasting glucose level of 21%(P<0.05), while OCB-2 group had a decrease of 13% compared to the DC group. As for the results of the glucose tolerance test, the highest blood glucose level was observed for all the groups at 30 minutes after the glucose injections as well as higher plasma insulin levels in the OCB-5 group. Plasma total cholesterol, triglyceride, non-esterified fatty acids(NEFA) and LDL-cholesterol concentrations were also lower in the OCB-2 and OCB-5 groups. The experimental diet did not affect the HDL-cholesterol levels. The overall results suggest that the higher intake of food by the OCB-2 and OCB-5 groups improved the blood glucose levels and lipid metabolism in STZ-induced diabetic rats.

Effects of Deletion of Ca Supplement (limestone) on Growth and Beef Quality in Hanwoo Finishing Steers (한우 비육후기 사료에 칼슘 첨가제(석회석) 제거가 성장 및 육질특성에 미치는 영향)

  • A study was conducted to determine the effects of feeding a diet containing no Ca supplement (limestone) during the late finishing period on growth, marbling and serum 1,25-dihydroxy vitamin $D_3$ level in Korean native cattle. Twenty-four steers (20${\sim}$24 mo of age) were divided into two groups of 12 each: one group assigned to a control diet (concentrates containing 2.5% limestone) and the other to a diet containing no calcium supplement. They were allowed to have free access to diets (concentrates and orchard grass hay) and water during the entire feeding period (223 d). Serum $Ca^{2+}$, Ca and P concentrations were not influenced by diets, but serum 1,25-dihydroxy vitamin $D_3$ concentrations determined 2 or 6 mo after the beginning of feeding the experimental diets were higher (P<0.01) in steers fed the diet without Ca supplement than in those fed the control diet (78.3 vs 51.7 and 80.3 vs 51.1 pg/mL, respectively). Steers fed the diet without Ca supplement tended to have a higher intake of concentrates, but a lower intake of hay, compared to those fed the control diet. Average daily gain was higher (P<0.05) in steers fed the diet without Ca supplement than in those fed the control diet. Feeding the diet without Ca supplement remarkably (P<0.01) increased the marbling score (5.1 vs 2.2) and the muscle (M. longissimus dorsi) fat content (10.2 vs 6.7%) with a concomitant decrease in moisture content (67.6 vs 70.4%), compared to feeding the control diet. Ribeye area was increased (77.2 vs 82.8 $cm^2$) with the diet without Ca supplement, compared to the control diet (P<0.05). Meat color, pH and water-holding capacity in longissimus muscle were not different between the two groups. The Warner-Brazler Shear (WBS) force of the longissimus muscle was slightly (P=0.08) lower in steers fed the diet without Ca supplement than in steers fed the control diet (2.9 vs 3.2 kg/1.27-cm diameter core). Sensory evaluation showed that feeding the diet without Ca supplement slightly (P<0.05) improved tenderness (4.9 vs 4.5) and flavor (4.9 vs 4.6), compared to feeding the control diet, but juiciness was not affected by diets. Results showed that deletion of Ca supplement from finishing diets is beneficial, increasing growth and marbling partly through an increased energy intake and induced 1,25-dihydroxy vitamin $D_3$ synthesis that may increase intracellular $Ca^{2+}$ concentration and in turn fat synthesis.

A Study on the Problems of Eating Habits of Mordern People and Suggesting Alternatives to Overcome Diseases: A Review of the Five Blue Zones, Based on the Roma Linda Region in the USA (현대인의 식습관 문제점 인지와 발생 질병극복을 위한 대안 제시: 5대 블루존 중 미국 로마린다 지역을 중심으로)

  • The purpose of this study was to propose an alternative for the eating habits of modern people and coping with the diseases. The purpose of this study was to apply the principles of eating habits of people living in Roma Linda to modern dietary life and to help healthy life and prevent disease. The period of this study was from May 1, 2016 to February 28, 2018. Literature search was conducted using Pubmed and Korean academic web sites. Based on the recognition of wrong eating habits, we classify and classify diseases according to eating habits. A total of more than 100 papers were selected and 60 papers and a database were prepared. People living in Roma Linda have eight health principles. The Roma Linda practiced balanced nutritional intake, sufficient exercise, adequate water intake, sunlight, temperance (abstinence from alcohol etc.), fresh air, adequate rest, and trust in eating habits. People living in Roma Linda have a high intake of vegetables, fruits and nuts. People living in Roma Linda are educated about nutrition, and among them, there is a low prevalence of coronary heart disease and cancer, because they mostly do not smoke or drink alcohol. Unhealthy eating habits and dietary behavior are associated with many diseases. Many chronic, degenerative diseases are due to bad eating habits and stress. If you take good food habits of people living in the Roma Linda area and practice it steadily, it will have a great effect on disease prevention.

Effects of Dietary Fiber Isolated from Synurus deltoides on Constipation in Loperamide-Induced Rats (수리취 식이섬유가 Loperamide로 유발된 변비에 미치는 영향)

  • The effects of dietary fiber isolated from Synurus deltoides on constipation induced by loperamide (4 mg/kg/day) were investigated. Food intake and body weight both decreased in the 5% S. deltoides dietary fiber and loperamide-treated group (SD5) and 10% S. deltoides dietary fiber and loperamide-treated group (SD10), whereas fecal water contents increased by 2.4 and 3.4-fold in the SD5 and SD10 groups, respectively. The concentrations of total-cholesterol, HDL-cholesterol and triglyceride in the sera of the SD5 and SD10 groups were lower than those in the control (C) group. However, the biochemical parameters, GOT (glutamic oxaloacetic transaminase), GPT (glutamic pyruvic transaminase), and glucose levels, were not affected by the level of S. deltoides. In addition, the concentrations of total-cholesterol and triglyceride in the livers of the SD5 and SD10 groups were also significantly lower than those in the control group. These results suggest that dietary fiber isolated from S. deltoides might ameliorate constipation symptoms, and lower lipid concentrations in the blood and liver.
