The Nitrite-scavenging Effects by the Component of Traditional Tea Materials (기호음료 성분의 아질산염 소거작용)

  • The present study was conducted to investigate nitrite-scavenging ability of the components of traditional tea materials in Korea. The nitrite-scavenging ability was appeared in all the samples examined. Ethanol soluble fractions obtained from water soluble fractions of Cassiae torae semen, Perilla semen, Acantopanacis cortex and Zingiberis rhizoma exhibited higher the nitrite-scavenging effect than ethanol precipitate frecipitate fractions. While opposite results were obtained from those of Zizyphi fructus, Chaenomelis fructus and Schizandrae fructus in the nitrite-scavenging effect.

Changes on the Flavor Components in the Leaf Teas of Lindera obtusiloba BL. by Processing Methods (제조방법에 따른 생강나무(Lindera obtusiloba BL.) 잎차의 향기 성분의 변화)

  • This study was carried out to analyze to the flavor components of Lindera obtusiloba BL leaf teas by different processing methods. 81 kinds of flavor components in the masted tea, 78 in the roasted tea after steaming, 88 in the withered tea, 86 in the fermented tea, 72 in the steamed tea, and 89 in the air dried tea ware by GC/MS. Hydrocarbones in Lindera obtusiloba BL leaf teas were 45 kinds of $\beta-piepne$, and 16 kinds of alcohols such as Linalool, n-octanoal, phenyl acetaldehyde, $(-)-\alpha-terpineol$, elemol, and cholest-5-en-3-ol. 11 kinds of ketones sachas 2-ethyl-2- propyl-cyclohexanone, and 8 kinds of aldehydes sach as phenyl acetaldehyde, tetradecanal, 10-undecanal, 4-Bromo-2-methylbutanal were found. Esters were methyl 9,12,15-octadecatrienate, didodecyl phthalace, 1,2-benzenediccarbaboxy acid-bis (2-ethylhexyl)ester and phenols was 2,6-bis(1,1-dimethylethyl)-4-methyl-phenol.

Effect of Kimchi Materials on the Gas Formation and Vessel Pressure during Storage (재료조성이 김치의 저장 중 가스발생과 용기압력에 미치는 영향)

  • This study was conducted to investigate the effect of sub-ingredients of kimchi on the formation of carbon dioxide and vessel pressure. The pH, titratable acidity, formation of carbon dioxide and vessel pressure of kimchi prepared with different sub-ingredients were determined during storage at 10$^{\circ}C$. In the kimhi without GA, the pH decrease and acidity increase was slow during storage, but those of the kimchis without Gl, RP and SA were began to higher from 3th day after storage showed maximum values and was maintained 9th day after storage. The main sub-ingredient for formation of carbon dioxide was garlic and the gas formation was low in the kimchi without garlic. Vessel pressure in kimchi of the latter term of storage generally showed sub-atmospheric pressure and the more formation of carbon dioxide showed the more degree of sub-atmosphere.

Evaluation of Agronomic Characteristics Indigenous Germplasm for Development of High Quality and Yield of Ginger (Zingiber officinale Rosc.) (고품질 다수성 생강 품종육성을 위한 국내 유전자원의 농업적 특성 평가)

  • To obtained the basic information needed in the development of higher quality and yield of ginger, twenty-four indigenous colones of ginger were evaluated major agronomic characteristics under field and polyethylene house culture. There was highly significant differences in yield and 6-gingerol contents among the clones studied. Maximum yield was recorded in clone CG9579(3520kg/10a) followed by CG95134, CG9512, CG96109, CG9596, in field culture. The maximum 6-gingerol percentage was recorded in the clone CG9579 containing 4.44mg/g, and next was CG9583 4.35mg/g, CG95134 4.32mg/g DW. In addition, CG9503 and CG95105 clones showed more than 4,000kg/10a in polyethylene house culture.

Effects of Rhizome Size and Planting Space on the Growth and Yield or Ginger(Zingiber officinale Rosc.) in Greenhouse Cultivation (생강의 비닐하우스 재배가 생육 및 수량에 미치는 영향)

  • This experiment was carried out to investigate the influence of rhizome size and planting space on some agronomic characters and rhizome yield of ginger in greenhouse cultivation. The average air temperature was 9$^{\circ}C$ higher in greenhouse cultivation than in field. The average soil temperature also was 2-4$^{\circ}C$ higher in greenhouse. Plant height, leaf area, stem number and rhizome yield were significantly increased when cultivated at greenhouse compared to field. Under greenhouse the yield of rhizome in 30$\times$30cm planting space were appeared to be increase 121-183% compared with field cultivation. At the planting space of 60$\times$30cm, harvests were increased 76-82% comparing field cultivation. The most suitable rhizome size for planting at 30$\times$30cm planting space found to be 40g in greenhouse cultivation.

  • The suppressing effects of vinegar and ginger for fish odor were investigated by sensory test and gas chromatography. According to the results of sensory test. the fishy odor gradually decreased as the vinegar concentration increased. But the addition of more than 16m1 of vinegar per 100 g of mackerel tasted very sour and tough. The addition of 6 ml of vinegar 100go of mackerel tasted acceptable, TMA content of 100 g of mackerel was found to be $0.4{\sim}0.7{\;}mg$. It was identified by gas chromatography that the TMA content reduced as the vinegar concent ration increased. The amount of TMA in the mixture of TMA and phenolic fraction of ginger was reduced to 67.5 % after standing 4 hours.

  • The studies were carried out to know shade tolerance of the plants for the urban forest aromatic bath. The one to two year old potted seedlings were grown under the one of the five light conditions such as 100%, 50%, 30%, 10% and 2% of the full sun light intensities. Pinus densiflora S. et Z., P. sylvestriformis (Takenouchi) Chien., Thymus quinquecastatus Celak, Lonicera japonica Thunb, and Zingiber officinale Roscoe showed decreasing tendencies in height and root collar diameter growth, and dry mass production as the light intensity decreases. Exceptionally Thuja koraiensis Nakai showed the best growth in the 50% of full sun light intensity. Athyrium yokoscense (Fr. et Sab.) H. Christ showed better growth in the relative light intensity of 10 to 15% than in the in the relative light intensity of 25 to 30% in the bath green house.

Effect of Green Manure Crops Incorporation for Reduction of Pythium zingiberum in Ginger Continuous Cultivation (생강연작재배지에서 Pythium zingiberum 경감을 위한 녹비작물 재배효과)

  • This experiment was carried out to evaluate the effects of green manure crops on the changes of chemical properties and microorganisms in soil of continuous ginger cultivation. The biomass and nitrogen absorption of green manure crop were the highest in crimson clover. After cropping, soil phosphate content was the lowest in orchard grass, however, T-N content was the highest of hairy vetch > crimson clover > orchard grass. Also real-time PCR analysis was conducted to measure density of Pythium zingiberum in soil of before and after incorporation of green manure crop. Density of P. zingiberum was the lowest of all the green manures. In this results are summarized that green manure cropping reduced salt accumulation and density of P. zingiberum in continuous ginger cultivation.

  • Lindera obtusiloba Blume (LO), which is widely distributed in Korea, Japan and China, has traditionally been used as a popular folk medicine for the treatment of fever, abdominal pain, bruise and extravation. The purpose of this study was to examine the toxicities of the single and 14-day repeated doses in Sprague-Dawley rats orally administrated with LO at doses of 0, 500, 1000, 2000 (14-day repeated toxicity test) and 5000 (single toxicity test) mg (dry weight)/kg of body weight/day. The results showed that there was no difference in body weight change, food intake, water consumption, or organ weight among different dose groups. Also we observed no death and abnormal clinical signs during the experimental period. Between the groups orally administered LO and the control group, there was no statistical significance in hematological test or serum biochemical values. There were no evidences of histopathological alteration as well as abnormal gross finding mediated by single and 14 days treatments with LO. These results suggest that no observed adverse effect level (NOAEL) of the oral application of LO was considered to be more than 2000 mg/kg in rats under the conditions employed in this study.

Antioxidant and Antimicrobial Activities of Ethanol Extract from Six Vegetables Containing Different Sulfur Compounds (황 함유 채소 에탄올 추출물의 항산화 및 항균활성)

  • This study investigated the antioxidant activities, and antimicrobial activity $in$ $vitro$ of an 80% ethanol extract from garlic, daikon, leek, ginger, onion, and green onion, which are widely-used ingredients in Korean food that contain sulfur. The total polyphenol content in ginger and leek extracts showed a high value ($233.63{\pm}4.59$ and $220.98{\pm}10.56$ mg/g GAE) and onions, leeks, garlic, and daikon followed by with $69.07{\pm}1.42$, $68.83{\pm}2.11$, $19.41{\pm}0.40$, $19.05{\pm}03.32$ mg/g GAE, respectively. DPPH radical scavenging activity was highest with ginger extracts ($1.57{\pm}0.15$ mg/mL as $IC_{50}$) followed in order of decreasing activity by leeks, onions, daikon, green onions, and garlic. The results of ABTS radical scavenging activity and FRAP value showed higher antioxidant activity in extracts from ginger and leek. The order of vegetables with most to least prevalent ABTS radical scavenging activity was green onions, onions, garlic, and finally daikon. From greatest to least FRAP value, the relevant vegetables were green onions, onions, daikon, and garlic (p<0.05). Ginger extracts showed promise against seven strains of microbes: $Bacillus$ $cereus$, $Bacillus$ $subtillis$, $Staphylococcus$ $aureus$, $Lactobacillus$ $plantarum$, $Escherichia$ $coli$, $Salmonella$ $enterica$, and $Pseudomonas$ $aeruginosa$. Garlic extracts (5 mg/disc) showed strong antimicrobial activity against $B.$ $cereus$ (22.3 mm) and $E.$ $coli$ (24.3 mm). Extracts of both onion and green onion showed antimicrobial activity against only $E.$ $coli$ (12.7 and 10.3 mm) and $B.$ $cereus$ (12.0 and 12.5 mm) at 10 mg/disc, and the inhibition zone diameter from extracts of garlic and leeks were 18.0 mm and 10.4 mm vs. $L.$ $plantarum$ at 10 mg/disc. This study showed positive antioxidant activities for ginger and leeks, and positive antimicrobial activities for leeks and garlic. These sulfur-containing vegetables are widely used in Korean food. Leeks especially could serve as a functional food preservative.
